Gelatin films functionalized by lignocellulose nanocrystals-tannic acid stabilized Pickering emulsions: Influence of cinnamon essential oil

Hongjie Dai,Yuan Chen,Hai Chen,Yu Fu,Liang Ma,Hongxia Wang,Yong Yu,Hankun Zhu,Yuhao Zhang

The Pickering emulsions containing cinnamon essential oil (CEO) stabilized by lignocellulose nanocrystals-tannic acid (LCNC-TA) complexes were used to improve properties of gelatin film. The influences of various volume proportion mixed oil (sunflower oil/CEO 1:0, 5:1, 2:1 and 1:1) were investigated. Introducing CEO reduced the droplet size approximately from 57 to 30 μm, facilitating droplet distribution in film matrix. With increasing CEO proportion, the surface structure of emulsion films became uniform without micropores or cavities, showing good compatibility with film matrix during film-forming process. Furthermore, increasing CEO proportion improved tensile strength (TS, 3.75–4.61 MPa) and water vapor permeability (WVP, 9.16 × 10 −12 –7.61 × 10 −12 g·cm −1 s −1 Pa −1 ) of emulsion films. Besides, the UV blocking, antioxidant and antibacterial properties of emulsion films improved as CEO proportion increased. Compared with the control gelatin film, the loss of CEO in emulsion films effectively decreased through pre-embedding approach by Pickering emulsion method.

Breathable gelatin films with saline-triggered adhesion for wireless sleep and cardiac monitoring

Jian Luo,Yuli Wang,Junhong Yi,Zonglei Wang,Wenqing Yan,Jiawei Yang,Leqi Li,Xinyuan Ye,Mingzhe Wang,Pengcheng Zhou,Qingyuan Sun,Yi Liu,Zichong Ji,Zongman Zhang,Zhihui Pan,Yan Wang

Robust, long-term electrophysiological monitoring demands epidermal electrodes that breathe like skin, adhere to demand, and survive the repetitive strains of daily life. Here, we present a 2.4 μm-thick, transparent, and gas-permeable epidermal electrode that adheres to human skin upon brief wetting with saline solution. The electrode is fabricated through a simple, scalable method using a gelatin matrix composed of gelatin, glycerol, citric acid, and water, reinforced by an electrospun polyurethane nanomesh. This construction yields an interfacial adhesion energy of 1.7 mJ cm −2 and excellent breathability with a water vapor transmission rate of 1339.3 g m −2 day −1 . The film withstands more than 1500 cycles of 60 % uniaxial strain and still exhibits an adhesion energy of 0.8 mJ cm −2 after 48 h of skin attachment. The skin-electrode interface maintains a low contact impedance of 36.7 kΩ at 100 Hz even after 48 h of continuous wear. These properties enable stable and high-fidelity recording of electroencephalogram, electromyogram, and continuous electrocardiogram signals for over 36 h under daily activities, including lab work, commute, meal, nap/sleep, and desk work. The electrode performance remains consistent even after 30 days of ambient storage. We further demonstrate wireless electroencephalogram and electrocardiogram signals acquisition during one full night of sleep, enabling accurate and automatic sleep stage classification based on electroencephalogram spectral features and heart rate dynamics. Together, these results establish the ultrathin gelatin film as a practical platform for real-world, long-term electrophysiological monitoring and point toward its broader use in personalized healthcare wearables.

Bacterial cellulose/gelatin-based pH-responsive functional film for food freshness monitoring

Shuo Yang,Qijun Ding,You Li,Wenjia Han

Food safety is related to public health and environmental safety. Therefore, it is necessary to develop accurate and effective detection methods to assess food quality and safety. In this study, a pH-responsive functional film (BC/GA/FITC/PCA) was generated for the real-time and visual monitoring of shrimp freshness. Bacterial cellulose /Gelatin (BC/GA) was used as a film-forming matrix, and fluorescein isothiocyanate (FITC) and red cabbage (PCA) were used as the response signals. The addition of FITC and PCA increased the shading capacity (< 30 %) and antioxidant properties (22.8 %) of the films. WCA (82.73 ± 0.95°), WVP (1.48 × 10 −11  g·cm/cm 2 ·s·Pa) and OTR (2.42 × 10 −15  cm 3 ·cm/cm 2 ·s·Pa) indicated that the film possessed water resistance and oxygen barrier properties. When exposed to daylight, the film underwent a color transition from purple to green as the ammonia concentration increased. In addition, the blue-green fluorescence of the films gradually increased and the detection limit was low (170 ppb). In particular, the change in film color caused by shrimp spoilage corresponded to the TVBN value. This study work provides a new strategy for controlling and monitoring food safety and has a wide range of applications in the fields of food-active packaging and smart packaging.

Enhanced barrier and antioxidant properties of gelatin films by structural-colored bioactive materials for food packaging

Sitong Liu,Shihao Qiao,Juncheng Zhu,Yuxin Yang,Hai Chen,Hongjie Dai,Hankun Zhu,Yong Yu,Liang Ma,Yuhao Zhang,Hongxia Wang

Neoteric functional gelatin films were fabricated based on structural-colored bioactive materials and applied in practical food application. The bioactive materials could induce the excellent shear-thinning structure and benefit the spreading, leveling and thus the film forming process. From FTIR, XRD, zeta potential, SEM and AFM, the hydrogen bonding and electrostatic interaction between bioactive materials (monascus red, phycocyanin, and safflower yellow) and biopolymers, could cause the compact network structure and improve the performance of final films compared to the films without bioactive materials, including chromatic appearance, mechanical characteristics (increasing tensile strength by 625.27%, 184.10% and 296.00%, respectively), barrier properties (decreasing oxygen transmittance rates by 96.27%, 85.81% and 94.58%; and increasing light opacity by 216.56%, 54.91% and 174.04%, respectively), and antioxidant activity (increasing ABTS free radical scavenging property by 92.24%, 110.12% and 111.70%, respectively). During blueberries preservation, the functional films could effectively delay the weight losses and hardness reduction. When packaging food ingredients, functional films could be cooked together with rice and oats for obtaining excellent-looking porridge with special masticatory sensation, and have little effects on the odors (electronic-nose). Therefore, gelatin films incorporated with bioactive materials could potentially act as fresh-keeping packaging or direct eating/cooking packaging, and exhibit environmental-protective merits and recyclability, holding promises as an alternative for plastic packaging.

Active food packaging based on chitosan-gelatin nanocomposites functionalized with bioactive nanoparticles: fabrication, properties, and application in seafood preservation

Hui Sun,Meihui Zhao,Liming Zhang,Zhongyuan Liu,Xueying Zhang,Haohao Shi,Jiamei Wang,Seid Mahdi Jafari,Guanghua Xia

Addressing the dual challenges of perishable food waste and plastic packaging pollution necessitates innovative solutions. This study developed eco-friendly active films by embedding functional nanoparticles (ZCDG NPs, synthesized from zein, curcumin, dihydroquercetin, and gum Arabic) into a chitosan-gelatin (CS/Gel) matrix (CS/Gel-ZCDG-NPs films). Structural analysis (SEM, AFM) showed a smooth, dense, biocompatible microstructure. The nanocomposite films significantly outperformed CS/Gel films in key properties: Tensile strength has been increased from 2.80 MPa to 5.40 MPa, a 92.8 % increase. The water vapor permeability decreased by 80.72 %, the oxygen permeability decreased by 33.05 %, and the ultraviolet-visible transmittance in the visible light range was reduced to 48 %. FTIR confirmed ZCDG NPs integration into the hydrocolloid network via electrostatic interactions and hydrogen bonding. This integration synergistically boosted functional activities, providing potent antibacterial efficacy (>90 % inhibition of E. coli and S. aureus ) and high antioxidant capacity (88.6 % DPPH, 81.4 % ABTS scavenging). As an active, potentially biodegradable packaging, CS/Gel-ZCDG NPs films effectively extended the refrigerated shelf life of Golden pompano and Penaeus vannamei by up to 6 days at 4 ± 1 °C. More importantly, the changes in total volatile basic nitrogen (TVB-N value decreased by 35.76 % and 26.65 %) and lipid oxidation degree (TBARS value declined by 78.96 % and 47.83 %) on the 8th day can prove the preservation effect. This study describes the synergistic enhancement process of functional nanoparticles in composite packaging materials and introduces a new food preservation material.

Novel Hyperbranched Dialdehyde Carboxymethyl Cellulose-Grafted Gelatin Films as Potential Natural Antibacterial Materials

Li Yan,Xugang Dang,Mao Yang,Wenjia Han,Yanchun Li

Carboxymethyl cellulose (CMC) has potential applications in food packaging given its good processibility and biological properties. In this research, dialdehyde carboxymethyl cellulose (DCMC) was first modified with polyamidoamine (PAMAM G0) to synthesize hyperbranched dialdehyde carboxymethyl cellulose (HPD). Then, a novel hyperbranched dialdehyde carboxymethyl cellulose-grafted gelatin (HPD/Gs) film was obtained by the “one-pot” method. The structural characteristics, degree of cross-linking, thickness, swelling behavior, water solubility, water vapor permeability, surface morphology, hydrophilicity, mechanical strength, antibacterial properties, and biocompatibility of HPD/Gs were characterized by using Fourier transform infrared (FTIR), scanning electron microscopy energy-dispersive X-ray spectroscopy (SEM-EDS), X-ray diffractometry (XRD), thermogravimetric analysis/derivative thermogravimetry (TGA/DTG), differential scanning calorimetry (DSC), and other analysis technologies. The results revealed that the prepared HPD/Gs film showed good thermal stability and mechanical properties. In particular, when the mass ratio of HPD to G was 1:1.5, the cross-linking degree, swelling behaviors, water vapor permeability (WVP), water contact angle, tensile strength, and elongation at break of the HPD/1.5G film reached 42.757%, 109.114%, 46.71 g·mm/m2·day·kPa (1 day), 115.4 ± 4.5°, 1.77 MPa, and 320.93%, respectively. Moreover, the HPD/Gs films had good cytocompatibility and antibacterial properties against Staphylococcus aureus and Escherichia coli. The research indicated that the designed HPD/Gs are a type of green antimicrobial material with potential value.

Citrus oil gland and cuticular wax inspired multifunctional gelatin film of OSA-starch nanoparticles-based nanoemulsions for preserving perishable fruit

Ying Xie,Ke Ding,Saiqing Xu,Haishan Xu,Shuai Ge,Xia Chang,Huan Li,Zijun Wang,Zisheng Luo,Yang Shan,Shenghua Ding

Inspired by the citrus oil gland and cuticular wax, a multifunctional material that stably and continuously released the carvacrol and provided physical defenses was developed to address issues of fresh-cut fruits to microbial infestation and moisture loss. The results confirmed that low molecular weight and loose structure of starch nanoparticles prepared by the ultrasound-assisted Fenton system were preferable for octenyl succinic anhydride modification compared to native starch, achieving a higher degree of substitution (increased by 18.59 %), utilizing in preparing nanoemulsions (NEs) for encapsulating carvacrol (at 5 % level: 81.58 %). Furthermore, the NEs-based gelatin (G) film improved with surface hydrophobic modification by myristic acid (MA) successfully replicated the citrus oil gland and cuticular wax, providing superior antioxidant (enhanced by 3–4 times) and antimicrobial properties (95.99 % and 84.97 % against Staphylococcus aureus and Escherichia coli respectively), as well as the exceptional UV shielding (nearly 0 transmittance in the UV region), mechanical (72 % increase in tensile strength), and hydrophobic (WCA 133.63°). Moreover, the 5%NE-G@MA film inhibited foodborne microbial growth (reduced by 50 %) and water loss (controlled below 15 %), extending the shelf life of fresh-cut navel orange and kiwi. Thus, the multifunctional film was a potential shield for preserving perishable fresh-cut products.

Effect of different types of nanocellulose on the structure and properties of gelatin films

Perpetual Ogechi Onyeaka,Hongjie Dai,Xin Feng,Hongxia Wang,Yu Fu,Yong Yu,Hankun Zhu,Hai Chen,Liang Ma,Yuhao Zhang

The use of nanocellulose to enhance the performance of biopolymer films is a recent trend in food packaging. This current study aims to investigate the impact of incorporating different morphologies of nanocellulose, namely cellulose nanofibrils (CNFs), cellulose nanospheres (CNSs), and cellulose nanocrystals (CNCs), on the structures and properties of gelatin film. The FTIR confirmed the formation of triple helix structures among CNF and CNC groups due to more hydrogen bonds generated between cellulose and gelatin molecules compared to CNSs. SEM analysis revealed a uniform distribution of CNCs in gelatin but aggregated with an increase in CNC contents, while CNF and CNS groups exhibited aggregation of cellulose upon the surface of gelatin because the vast surface area of nanospheres along with the nanofibrils structure led to irregular dispersion of cellulose (especially CNSs). In comparison to the CNF5% and CNS groups, CNC and CNF2% (w/w) groups greatly improved the mechanical characteristics of the gelatin films to 131.27% EAB and 20.71 MPa TS due to strong hydrogen bond interaction, more triple helix structures, and the relatively thorough dispersion of cellulose in the gelatin film. The incorporation of nanocellulose reduced the solubility and transparency of the gelatin films. Of all the films, CNC2% film exhibited a significant reduction of water vapor permeability due to the facile and even dispersion of CNCs in the gelatin network structure. Adding nanocellulose had little impact on the gelatin films’ heat stability. Therefore, the current work may be a new viable strategy for the construction of a novel molecular network system for enhancing the effectiveness of gelatin film containing lower content of CNCs.

Effect of electrostatic repulsion on barrier properties and thermal performance of gelatin films by carboxymethyl starch, and application in food cooking

Shihao Qiao,Juncheng Zhu,Yuxin Yang,Hongjie Dai,Yu Fu,Hai Chen,Liang Ma,Yuhao Zhang,Hongxia Wang

Carboxymethyl starch (CST) was introduced to improve gelatin films and its practical application as edible high-performance films for food packaging and cooking was also investigated. The gelatin films modified by carboxymethyl starch exhibited the transparent appearance, tensile strength , barrier properties (oxygen, water vapor and UV light), and thermal performance (TGA, thermal shrinkage and heat-sealing strength). Resulting from the effect of electrostatic interaction modes on the properties of films, electrostatic repulsion could surpass electrostatic attraction in improving the tensile strength, oxygen barrier property and thermal stability of the films probably due to extensive physical entanglement without aggregation. Analysis of FTIR , zeta potential , interfacial dilatational rheology , shear rheological properties, XRD, Raman, SEM and AFM suggested that hydrogen bonding and electrostatic repulsion contributed to the excellent performance. The packaged food could also be cooked with the prepared film for porridge; and the film slightly influenced the shear rheological properties of porridge and imposed little effect on the odors (Electronic-Nose) of porridge. Hence, the gelatin films modified by carboxymethyl starch could potentially work as the edible inner packaging or the edible quantitative packaging for food, offer convenience for consumers, reduce the packaging waste and avoid an extra burden on environment.
