Corn starch (CS)/chitosan (CH) composite film attained higher stability by incorporating rose anthocyanins (RACNs)-encapsulated potato amylopectin nanoparticles (APNPs) as pH indicator applied for shrimp freshness detection. Apart from the physical-chemical characterization of nanoparticles, the effects of different rose anthocyanins-encapsulated by potato amylopectin nanoparticles (ANPs) contents on the mechanical strength, barrier properties and indicative performance of the films were explored. The results illustrated that the mean size of the ANPs was 192.7 nm and their zeta potential was maintained at −6.70 mV, which had the encapsulation efficiency of up to 89.7% and presented as dendritic. At the same time, the addition of ANPs formed new hydrogen bonds with matrix and a tighter network structure, improving film mechanical properties and its barrier to water vapor and light. The pH-responsive films also exhibited sensitivity to ammonia of 28.67% in 30 min and reversible pH-sensing in five alternating CH 3 COOH–NH 3 exposure cycles. During 14-day storage, CS/CH/ANPs films showed higher stability than those with free RACNs at both 4 °C and 25 °C, whose color stability appeared positively correlated with ANPs. Meanwhile, pH-responsive films with ANPs exhibited obvious color changes from pink-colorless-yellow at 4 °C to reflect the deterioration of shrimp, foreshadowing their excellent potential in smart packaging for seafood freshness monitoring.

Resistant starch (RS) has the advantage of reshaping gut microbiota for human metabolism and health, like glycemic control, weight loss, etc. Among them, RS3 prepared from pure starch is green and safe, but it is hard to achieve structural control. Here, we regulate the crystal structure of starch with different chain-length distributions (CLDs) via extrusion at low/high shearing levels. The change in CLDs in extruded starch was obtained, and their effects on the fine structure (Dm,dBragg,dLorentz, degree of order and double helix, degree of crystal) of RS and its physicochemical properties were investigated by SAXS, FTIR, XRD and13C NMR analyses. The results showed that the RS content under a 250 r/min extrusion condition was the highest at 61.52%. Furthermore, the crystalline system induced by high amylopectin (amylose ≤ 4.78%) and a small amount of amylose (amylose ≥ 27.97%) was favorable for obtaining a high content of RS3-modified products under the extruding environment. The control of the moderate proportion of the A chains (DP6–12) in the starch matrix was beneficial to the formation of RS.

This study investigated the impact of polymeric proanthocyanidins (PPC) on the physicochemical characteristics of maize starch with varying amylose content, and their potential interaction mechanism. PPC with a lower content (1 %) reduced the viscoelasticity of the high amylose maize starch (HAM) system, inhibited amylose rearrangement, and enhanced its fluidity. However, excessive PPC restrained the interaction between PPC and amylose. In contrast to HAM, PPC improved the gelation ability of waxy maize starch (WAM) as PPC concentration was raised. PPC suppressed the recrystallization of starch during storage, and PPC had a superior inhibition influence on the retrogradation of WAM in comparison to HAM. This indicated that amylopectin was more likely to interact with PPC than amylose. Hydrogen bonds were the main driving force between PPC and starch chains, which was clarified by Fourier transform-infrared, nuclear magnetic resonance, X-ray diffraction, iodine bonding reaction, and dynamic light scattering data. Additionally, the mechanism of interaction between PPC and the two starch components may be similar, and variance in physicochemical attributes can be primarily credited to the percentage of amylose to amylopectin in starch.

Chlorogenic acid (CA) performs numerous bioactivities; however, its usage is currently limited because of low stability and poor bioaccessibility. In this study, a amylopectin-CA complex was formed. FTIR studies confirmed that the new complex formed via hydrogen and CH–π bonding, and was involved with the reorganization of the skeletal α-1,4 glucosidic linkages of amylopectin. DSC and XRD studies suggested that complexation affected starch crystallinity and increased the size of the amorphous region. Under high temperature, complex degradation followed first-order reaction kinetics whereas under low acidity, the complex retained maximum CA content at pH 2.5. In vitro gastrointestinal (GI) digestion studies showed that maximum digestion of the complex took place during the gastric phase (39%). In addition, 81.14% of the retained CA was absorbed after GI digestion. In conclusion, amylopectin complexation may improve the stability of CA during digestion and under various food-processing operations.

Cationic starch serves as a prevalent wet-end additive in the papermaking industry. Yet, the definitive effects of the ratio between the two principal components—amylose (AM) and amylopectin (AP)—and the degree of substitution (DS) on the mechanical strength enhancement of paper sheets remain incompletely understood. This study synthesizes a series of quaternized amylose (QAM) and quaternized amylopectin (QAP) with varying DS levels and blended these derivatives in diverse ratios. Subsequently, these mixtures are integrated into pulp suspensions to ascertain the DS and the AM-to-AP ratio that optimize paper strength. These results indicate that a QAM-to-QAP blend with a DS of 0.08 at a ratio of 2:8 yielded the most pronounced improvement in paper mechanical properties. This precise formulation significantly enhances tensile, burst, and tear strength indices, increasing by approximately 55.0%, 44.4%, and 78.4%, respectively, under the most favorable conditions and with an additive dosage of 1 wt.%. This investigation provides substantive and actionable knowledge for selecting starch additives in the wet-end of papermaking, which can significantly augment the efficiency and efficacy of paper manufacturing processes.

Three-dimensional (3D)-printed intestinal stents based on thermoplastic starch (TPS)/polylactic acid (PLA) are a promising biodegradable alternative to conventional metal stents. However, the influence of the structure and conformation of starch on the properties of 3D-printed TPS/PLA intestinal stents requires clarification. This study evaluated the effects of the amylose/amylopectin ratio of starch on the molecular orientation, molecular interactions, crystallization behavior, microstructure, and thermodynamic, mechanical and hydrolysis performance of 3D-printed TPS/PLA intestinal stents. The molecular orientation of starch was determined during the preparation of the filaments for 3D printing. The 3D printing process promoted intermolecular interactions by further improving the molecular orientation, and enhanced the short-range order and crystallinity of the starch molecules. Decreasing the amylose/amylopectin ratio enhanced the short-range order of the starch molecules by increasing molecular orientation, which improved the circumferential compression performance of the 3D-printed intestinal stents but not the axial compression performance. However, the reduction in plasticized starch particles and improved PLA continuity caused by decreasing the amylose/amylopectin ratio contributed to improving the circumferential and axial compression performance as well as the anti-hydrolysis performance. These findings highlight the potential of starch to replace PLA as an inexpensive raw material for the development of high-performance biodegradable 3D-printed intestinal stents.

Conductive hydrogels have great potential for applications in flexible wearable sensors. Recently, biopolymer-based hydrogels have attracted much attention due to the growing demand for sustainability and eco-friendliness. Among the biopolymers, starch has been used for the sensing materials due to its low-cost, biocompatibility and biodegradability. Nevertheless, it is still a challenge to develop multifunctional starch-based hydrogels with good mechanical properties, high conductivity and sensitivity. In this work, a physicochemical dual-crosslinked hydrogel was developed by combining a deep eutectic solvent (DES), amylopectin and poly(acrylamide-acrylic acid). The internal structure of the hydrogel was studied by multi-scale characterizations, including scanning electron microscopy (SEM), Fourier transform infrared spectroscopy (FTIR), Raman spectroscopy and X-ray photoelectron spectroscopy (XPS). Moreover, density functional theory (DFT) calculation was applied to analyze the relationship between the structure and properties of the hydrogel. Finally, a wearable sensor was finally constructed based on the optimized hydrogel with a sensitivity (gauge factor) up to 12.08 and used for acquiring reliable data from detecting subtle expressions, swallowing and human joint motions. Furthermore, the wearable sensor demonstrated good sensitivity to compression and temperature. This study provides a novel starch-based hydrogel as a candidate for advanced wearable electronics and lays a theoretical foundation for versatile applications of DESs in the development of high-performance biopolymer-based materials.

In this study, 28 rice starches with varying amylose contents ranging between 0.64 % ~ 41.19 % were analyzed using size-exclusion chromatography (SEC), fluorophore-assisted carbohydrate electrophoresis (FACE), and high-performance anion-exchange chromatography (HPAEC). All methods reproduced canonical multi-modal chain length distribution (CLD) but differed in reliability: SEC was limited by band broadening, HPAEC resolved medium chains but became noisy at very high degree of polymerization above ~68. In contrast, FACE combined high resolution of short and long chains with mild processing, providing the most robust and reproducible profiles, which is further confirmed by the analysis of compact, short-chain-rich topologies in low-amylose starches. Importantly, no statistically significant correlations were detected between FACE-derived CLD parameters and the in vitro digestion parameters of freshly cooked rice under the present sample size, highlighting the need for integrated approaches to link starch molecular structure with functional properties.

Starch is an important raw material in the food industry, and the ratios of amylose to amylopectin within it is closely related to the quality of starch products. Therefore, the development of rapid detection methods for the amylose/amylopectin ratios in starch is a practical demand to meet industrial development. Consequently, the development of a rapid, sensitive, and portable detection method is of great significance. In this study, an electrochemical detection method for the amylose-to-amylopectin ratios was established by utilizing alcohol dehydrogenase (ADH) and pullulanase to fabricate an ADH@pullulanase-AuNPs biosensor. Specifically, protein-metal nanoflowers were synthesized by regulating the interactions of Cu 2+ and PO 4 3− with the enzymes to achieve the spatially localized immobilization of ADH and pullulanase; meanwhile, AuNPs were modified to enhance electrical conductivity. Additionally, the applicability of this method to rice products was investigated. The experimental results showed that the ADH@pullulanase cluster exhibited a porous flower-like structure, good enzymatic activity, and excellent electrochemical performance. Under optimal conditions, this method exhibited a wide linear range (1 × 10 −6 –1 × 10 −4 mol/L) for the amylose/amylopectin ratios, a low limit of detection (0.5 × 10 −6 mol/L), and a short detection time (< 10 min). When applied to the detection of rice products, the average relative deviation between it and the iodine colorimetric method was 6.9%. The successful development of this method provides a technical reference and theoretical basis for the on-site rapid and sensitive detection of the amylose/amylopectin ratios.

Three-dimensional (3D) porous graphene oxide-maize amylopectin (GO-MA) composites with controllable pore-sizes composites in the range of 6–40 nm were prepared by facile hydrothermal-assisted assembly approaches. The morphologies, pore sizes, specific surface area (SSA) and compositions of GO-MA x:y composites with and different GO-to-MA mass ratios (x:y) were characterized by scanning electron microscopy (SEM), N 2 adsorption-desorption isotherms, Fourier transform infrared spectroscopy (FT-IR) and X-ray photoelectron spectroscopy (XPS). To reveal the adsorption-desorption mechanism, effects of contact time, temperature, initial adsorbate concentration, pH value of the solution on the adsorption process were studied in detail. The adsorption capacities of 3D GO-MA 20:1 composite for organic contaminants including tert-butyl hydroquinone (TBHQ), p-aminophenol (PAP), p-nitrophenol (PNP), o-nitrophenol (MNP), hydroquinone (HQ), alizarin red S (ARS) and neutral red (NR) were 22.17, 116.4, 44.78, 36.96, 16.10, 39.92 and 24.23 mg g −1 , respectively. The adsorption capacities of GO-MA 30:1 composite for inorganic substances including Pb 2+ , Mn 2+ , Cr 2 O 7 2− , Cd 2+ , Cu 2+ , Nd 3+ , La 3+ , Y 3+ , Yb 3+ and Er 3+ were 84.76, 7.92, 13.6, 17.64, 30.56, 25.52, 12.48, 16.96, 23.32 and 30.32 mg g −1 , respectively. In addition, GO-MA x:y composites also exhibited high mechanical properties and good reusability.
