In this study, bound polyphenols were extracted from mung bean skin dietary fiber by acid hydrolysis or alkaline hydrolysis. It was found that alkaline hydrolysis was more thorough than acid hydrolysis, the highest yield of bound polyphenols was 37.638 (mg FAE/g). In addition, the compositions of bound polyphenols were identified and quantified by UPLC-ESI-QTOF-MS/MS and UPLC-ESI-QqQ-MS/MS. In the study of antioxidant properties, we found that with the increase of polyphenol concentration, the scavenging rate of DPPH free radical, the absorption ability of oxygen free radical and the inhibition of ABAP were increased. Moreover, the inhibition rate of bound polyphenols on α-amylase and α-glucosidase increased in a dose dependent manner. The results could provide perspective for using the bound polyphenols in mung bean skin as the functional components of health food.

In this work, the inhibition effects of oroxyloside on two α -amylase from porcine pancreas (PPA) and Bacillus subtilis (BSA), as well as two α -glucosidase from Aspergillus niger (ANG) and Saccharomyces cerevisiae (SCG), were systematically compared using spectral analysis, computer simulation, and mm-PBSA calculation. Oroxyloside displayed the most potent inhibitory activity on ANG, followed by PPA, BSA, and SCG. Meanwhile, oroxyloside exhibited a mixed-type inhibition against BSA, PPA, ANG, and SCG. Oroxyloside interacted with enzyme residues mainly by hydrogen bonds and van der Waals forces, leading to the changes in the microenvironment and the secondary structure changes of enzymes, and ultimately exerting inhibitory effects. The optimal binding modes and the stability of four complexes were predicted by computer simulation. The free energy decomposition of critical residues was calculated using mm-PBSA. Oroxyloside was identified as a potential inhibitor of four enzymes, exhibiting significantly stronger inhibitory activity than acarbose.

Cassava starch was enzymatically modified using Glyco Transferase “Amano” L (GLT), a 4-α-glucanotransferase capable of converting α-1,4 into α-1,3 glycosidic linkages. The effects of different enzyme concentrations on structural, physicochemical, rheological, and digestive properties were investigated. Increasing GLT dosage caused progressive surface erosion and decreased short- and long-range molecular order, while overall chemical composition remained unchanged. Relative crystallinity declined from 30.10% to 17.61%, accompanied by reductions in peak, final, and setback viscosities, indicating weakened granule integrity and lower retrogradation tendency. In vitro digestion showed that rapidly digestible starch decreased from 63.42% to 48.16%, while resistant starch (RS) increased from 7.42% to 18.33%. Notably, the modified starch exhibited higher RS content but lower viscosity, contrasting with the conventional correlation between high RS and high setback viscosity. This unique behavior arises from linkage rearrangement rather than recrystallization. GLT modification thus provides a green and controllable approach to produce low-glycemic, low-viscosity starch ingredients suitable for functional and texture-controlled foods.

In organic degradation, a prevalent perspective that biogenic manganese oxides possess enhanced catalytic ability compared to their chemical counterparts remains experimentally unvalidated. In this study, biogenic α-Mn 2 O 3 was proven to be superior to its chemogenic counterpart in atrazine degradation. In native degradation, biogenic α-Mn 2 O 3 achieved a 35.39–65.09 % degradation efficiency, while commercial α-Mn 2 O 3 showed no such ability. This is because biogenic α-Mn 2 O 3 generated greater amounts of reactive oxygen species than commercial α-Mn 2 O 3 (the contribution order for atrazine degradation was 1 O 2 > • OH >> O 2 •−) . In advanced oxidation, only periodate was efficiently activated by biogenic α-Mn 2 O 3 , achieving a 79.79 % degradation efficiency. Comparatively, the corresponding efficiency for commercial α-Mn 2 O 3 was 18.58 %. This discrepancy is due to the significantly higher levels of • OH and O 2 •− generation in the biogenic α-Mn 2 O 3 /periodate system (the contribution order was • OH > O 2 •− ). Importantly, the (332 ) and (222) crystal planes of biogenic α-Mn 2 O 3 exhibited a higher catalytic ability than the (211) plane in activating periodate to produce • OH and O 2 •− . The N(8)-C(10), C(17)-C(23), and N(9)-C(17) bonds in atrazine were susceptible to attack by • OH, while the C(3)-Cl(7) bond was liable to be attacked by O 2 •− , ultimately resulting in the formation of seven intermediates.

Sterculia nobilis Smith pericarp is a by-product of tropical and subtropical fruit Sterculia nobilis Smith, the functional activity and phytochemical composition of which have not been widely reported. In this work, LC-ESI-MS/MS-MRM technique was used for the qualitative and quantitative analysis of 16 phenolic compounds in the ethyl acetate fraction of Sterculia nobilis Smith pericarp extract (EAF). Luteolin-7-O-glucoside, epicatechin gallate and apigetrin were the principal phenolics in the EAF. The hypoglycemic activity of EAF was examined by α-glucosidase and α-amylase inhibition models. EAF inhibited both α-glucosidase and α-amylase activities reversibly and uncompetitively with half-inhibitory concentration (IC 50 ) values of 69.390 ± 1.410 μg/mL and 2.151 ± 0.044 mg/mL, respectively. Enzyme inhibition mechanism of EAF was studied by spectroscopic methods. The results showed that EAF altered the secondary structure and microenvironment of tyrosine and tryptophan residues of the enzymes. This research demonstrates that Sterculia nobilis Smith pericarp is a potential raw material for production of functional foods at low cost.

Curcumin (CCM) is a natural ingredient with anti-cancer activity. However, the application of CCM is limited in clinical medicine due to its high hydrophobicity and low bioavailability. Hence, it is necessary for development of a feasible strategy for efficient drug delivery and cancer cell-selective targeting. In recent years, nano-scaled metal-organic frameworks (NanoMOFs) have received much attention as an attractive drug delivery carrier due to their unique features of their various sizes, adjustable pore structures , high stability, and easy surface modification. Here, we report a novel composite nanomaterial (denoted as ZIF-8&α-lip) for CCM loading by one-pot method. This synthetic method is simple and rapid, and the final product (CCM@ZIF-8&α-lip) can be obtained within 20 min. In addition, the obtained CCM@ZIF-8&α-lip shows greater growth inhibition of HepG2 cells in comparison with CCM@ZIF-8. Therefore, ZIF-8&α-lip can be used as an ideal drug carrier and propose a new strategy to improve nanoMOFs performance for efficient drug delivery.

As a natural flavonolignan, silibinin is reported to possess multiple biological activities, while the inhibitory potential of silibinin on carbohydrate-hydrolyzing enzymes is still unclear. Therefore, in this study, the inhibitory effect and underlying mechanism of silibinin against α-amylase/α-glucosidase were investigated. The results indicated that silibinin showed a strong inhibitory efficiency against α-amylase/α-glucosidase in noncompetitive manners and exhibited synergistic inhibition against α-glucosidase with acarbose. However, interestingly, the inhibitory effect of silibinin was significantly hindered in various milk protein-rich environments, but this phenomenon disappeared after simulated gastrointestinal digestion of milk proteins in vitro. Furthermore, silibinin could combine with the inactive site of α-amylase/α-glucosidase and change the microenvironment and secondary structure of the enzymes, thereby influencing the catalytic efficiency of enzymes. This research suggested that silibinin could be used as a novel carbohydrate-hydrolyzing enzyme inhibitor, and milk beverages rich in silibinin had the potential for further application in antidiabetic dietary or medicine.

Acute liver injury (ALI) is an injury to liver tissue caused by viruses, drugs, alcohol, and oxygen deprivation, and is one of the most common and serious clinical disorders. Hydroxytyrosol (HT) is a naturally occurring polyphenolic compound isolated from forsythia and has excellent anti-inflammatory properties. However, the effect and mechanisms of HT in ALI remain unclear. We used the LPS/D-GalN induced experimental ALI mouse model and AML12 cells to reveal the efficacy and potential mechanisms of HT in ALI, and HE staining was used for the evaluation of pathologies. A biochemical assay was used to detect changes in liver function, RNA-seq was conducted to reveal the underlying mechanisms of HT for ALI, and WB, RT-qPCR, and IF were used to assess the effects of HT action. Furthermore, an in vitro ALI model against HT in AML12 cells induced by LPS/D-GalN was used to assess the HT protection mechanism. HT significant alleviated LPS/D-GalN-induced ALI in the mice by suppressing inflammatory. In terms of RNA-seq, HT improved the TNF, ECM-receptor interaction, and PI3K/AKT signaling pathway, and it downregulated the mRNA levels of VCAM-1, CXCL5, TNF-α and IL-6 in the liver. Mechanically, HT alleviated LPS/D-GalN in the mice by targeting TNF-α, thereby inhibiting the TNF-α/PI3K/AKT signaling pathway.

The inhibition mechanism of starch digestion by a natural plant active ingredient isoliquiritigenin was studied. The results indicated that isoliquiritigenin effectively decreased the starch hydrolysis through increasing the content of resistant starch, and inhibiting the activities of α-amylase and α-glucosidase. The content of resistant starch increased by 18.85% with the addition of isoliquiritigenin at 8% content. Multispectral analyses showed isoliquiritigenin combined with α-amylase or α-glucosidase to form stable complexes by non-covalent bonds, leading to the enzyme's structure to be loose, which was supported by the results of unstable conformations and an increase in the freedom of amino acid residues of the enzymes in molecular dynamics simulation. Molecular docking demonstrated that isoliquiritigenin bound to the amino acid residues 304–310 nearby the active pocket of α-amylase, and inserted the active site of α-glucosidase competing with the substrate to bind the crucial amino acid residues (Asp215, Asp352 and Glu411), thereby inhibiting α-amylase and α-glucosidase activity. These findings highlight the development potential of isoliquiritigenin as a hypoglycaemic dietary supplement.

α-SiAlON, as a solid solution of α-Si 3 N 4 , exhibits excellent mechanical properties, making it attractive for structural applications at both room and elevated temperatures. α-SiAlON ceramics stabilized by Li, Mg, Ca, Y, Mn, and rare-earth cations have been extensively investigated. In contrast, Na-stabilized α-SiAlON has received little attention, and the synthesis of single-phase Na α-SiAlON has not yet been reported. In this work, nearly single-phase Na α-SiAlON powders were prepared by combustion synthesis for the first time. The effects of starting composition and α-Si 3 N 4 diluent content on the phase composition and microstructure of the synthesized products were systematically investigated. Increasing the m and n values promoted the formation of α-SiAlON and suppressed the formation of β-SiAlON. The α-Si 3 N 4 diluent content strongly influenced the phase evolution and microstructure of the products. Nearly single-phase Na α-SiAlON powders were obtained at an appropriate α-Si 3 N 4 diluent content. The Na α-SiAlON powders mainly consisted of rod-like and equiaxed grains. Based on the experimental results, a dual-pathway formation mechanism was proposed, involving the direct precipitation of α-SiAlON crystal from a supersaturated Na–Si–Al–O–N liquid phase and heterogeneous nucleation on undissolved α-Si 3 N 4 particles. This work establishes combustion synthesis as an effective route for the preparation of high-purity Na α-SiAlON powders and advances the understanding of their formation mechanisms.

The inhibitory mechanism of engeletin against α-glucosidase was investigated for the first time by fluorescence spectroscopy and molecular docking. The results showed that engeletin could inhibit α-glucosidase in a noncompetitive inhibition mode with a half-maximal inhibitory concentration value of 48.5 ± 6.0 µg/mL (0.11 ± 0.014 mmol/L). It was found that engeletin could cause static fluorescence quenching of α-glucosidase by forming a complex with α-glucosidase. The thermodynamic parameters indicated that the combination of engeletin and α-glucosidase was driven by hydrophobic force. The molecular docking results confirmed that some amino acid residues of α-glucosidase (Trp391, Arg428, Glu429, Gly566, Trp710, Glu771) could interact with engeletin by hydrogen bonding.

A neoteric round sieve diatomite (De) decorated with sea-urchin-like alpha-type iron trioxide (α-Fe2O3) synthetics was prepared by the hydrothermal method and further calcination. The results of the electromagnetic (EM) parameters of α-Fe2O3-decorated De (α-Fe2O3@D) showed that the minimum reflection loss (RLmin) of α-Fe2O3@D could reach −54.2 dB at 11.52 GHz and the matched absorber thickness was 3 mm. The frequency bandwidth corresponding to the microwave RL value below −20 dB was up to 8.24 GHz (9.76–18 GHz). This indicates that α-Fe2O3@D composite can be a lightweight and stable material; because of the low density of De (1.9–2.3 g/cm3), the density of α-Fe2O3@D composite material is lower than that of α-Fe2O3(5.18 g/cm3). We found that the combination of the magnetic loss of sea-urchin-like α-Fe2O3and the dielectric loss of De has the most dominant role in electromagnetic wave absorption and loss. We focused on comparing the absorbing properties before and after the formation of sea-urchin-like α-Fe2O3and explain in detail the effects of the structure and crystal shape of this novel composite on the absorbing properties.Keywords:diatomite;α-Fe2O3;microwave absorption
