Conventional lipid extraction from fish by-products typically relies on high water input and disruption by thermal or hydrolysis to break emulsions and release oil. This study introduces a fundamentally reversed mechanism by micro-aqueous extraction (MAE). This method induces oil release via limited hydration and reassembly of the soft matter without heat or dilution. This MAE approach first dehydrates fish by-products until moisture content reaching ~18%, reassembly forming a protein–lipid matrix of high internal phase emulsion gel (φ ~75%). Upon controlled micro-aqueous hydration and low-shear agitation, structured proteins aggregate and destabilize oil droplets and release entrapped oil. Compared to heat extraction (HE), MAE achieved higher oil recovery (94.3% vs. 76.4%), shortened processing time by 35%, and decreased oil total oxidation value (TOTOX 1.33 vs. 2.88). Life cycle assessment confirmed lower environmental burden with 62% reduction in CO₂ emission. The fish meal obtained by MAE retained superior emulsifying activity and structural integrity. Mechanistically, micro-aqueous hydration reduced α-helix content of proteins and decreased oil droplet stability, thereby promoting demulsification. In contrast, drying at 60 °C resulted in lower turbidity and smaller aggregation size of myofibrillar proteins compared to drying at 30 °C, which enhanced their interfacial stabilization. Rheological analysis further revealed that water-limited restructuring of the myofibrillar network played a critical role in controlling viscoelasticity (as reflected by G', G'') and extraction efficiency. This work reveals a counterintuitive pathway for oil recovery, governed by moisture-regulated soft-matter reorganization, which presents a low-energy, high-yield, and sustainable approach for fish by-product valorisation.

W/O/W double emulsion systems offer the ability to co-deliver water-soluble and oil-soluble bioactives, making them a promising choice for multifunctional delivery applications. This study focused on the development of a whey protein isolate-based W/O/W emulsion encapsulating fish oil and anthocyanins, with the addition of sodium alginate (SA) into the external aqueous phase. The physicochemical properties, emulsion stability, anthocyanins encapsulation efficiency (EE), and anthocyanins release during simulated gastrointestinal digestion were studied. The results indicated that the physical stability of W/O/W emulsions improved with increasing SA, attributed to the higher viscosity and the protective coating of SA on the WPI-stabilized interface. However, the EE of anthocyanins in SA-reinforced W/O/W emulsions was found to be lower. Excessive SA concentration, such as 1.0%, was observed to be unfavorable to maintaining the internal W 1 /O interface integrity. Overall, the double emulsion structure effectively regulated the release of anthocyanins throughout the digestion process. The study concluded that W/O/W emulsions containing 0.75% SA achieved optimal stability and controlled-release characteristics. These findings offer valuable insights into fabricating double emulsions for multifunctional delivery purposes, showcasing their potential applications in the food and pharmaceutical industries.

In this research endeavor, a novel emulsion delivery system was devised to enhance the retention of the fat-soluble active substance known as benzyl isothiocyanate (BITC). Fish skin gelatin (FSG) and pectin (PEC) were chosen as complex emulsifiers and collectively referred to as FSG-PEC. The interaction between FSG and PEC was examined by turbidity, flourier transform infrared, fluorescence, ultraviolet, methylene blue, and molecular docking. Emulsification activity, emulsification stability, contact angle, appearance structure, average particle size, zeta potential, oil droplet distribution, and retention rate of the encapsulated BITC, were evaluated to determine the optimal concentration ratio of the FSG-PEC complex for effectively safeguarding BITC. The results showed that the turbidity of FSG and PEC was minimal at pH 7, indicating relative stability of the complex. The primary molecular forces between FSG and PEC were electrostatic and hydrogen bond interaction. The interfacial stability, emulsifying activity and stability of FSG-PEC complex at a 2:1 ratio surpassed those of other ratios. Consequently, this optimal ratio was utilized to prepare FSG-PEC emulsion delivery system containing BITC. The resulting emulsion, stored for 14 days at 4 °C, demonstrated compelling attributes with a particle size of 433.33 ± 1.12 nm, a potential of −32.87 ± 0.35 mV, and a BITC retention rate of 59.87 ± 0.65%. The combination of the indicators finally concluded that 2:1 was the optimal ratio to construct the FSG-PEC complex emulsion delivery system. This study constitutes an initial exploration of the interaction dynamics between FSG and PEC, providing a theoretical foundation for subsequent applications.

This experiment investigated the impacts of hydroxyproline (Hyp) supplementation in low fish meal diets on growth, antioxidant capacity, immunity and intestinal health of Litopenaeus vannamei . Six diets were formulated for the experiment, with the high fish meal diet containing 25 % fish meal (HF) and the remaining diets incorporating a mixture of soybean protein concentrate (SPC) and Clostridium autoethanogenum protein (CAP) replacing 15 % fish meal. These diets were supplemented with varying levels of Hyp (0 %, 0.2 %, 0.4 %, 0.6 %, and 0.8 %, designated as LF, H1, H2, H3, and H4, respectively). A total of 960 healthy shrimp (0.32±0.00 g) were divided into 6 groups at random; each group had 4 duplicates, each containing 40 shrimp. The shrimp were fed four times a day for a period of 51 days. The results indicated that dietary Hyp supplementation had no significant effects on growth performance and whole body composition of L. vannamei ( P > 0.05). The antioxidant enzyme activities of hemolymph and hepatopancreas were significantly decreased after fish meal was replaced, and were significantly increased after dietary Hyp supplementation ( P < 0.05). The expression of antioxidant-related genes in intestinal and hepatopancreas was significantly increased after dietary Hyp supplementation ( P < 0.05). In the intestine, the gene expression of penaeidins 3 ( pen3 ), dorsal , anti-lipopolysaccharide factor ( alf ) and crustins ( cru ) in the H2 group is the highest, and the gene expression of B-cell lymphoma-2 ( bcl2 ) in the H3 group is the highest ( P < 0.05). The genes expression of tumor necrosis factor-alpha ( tnf-a ), Bcl-2-assoxicated x protein ( bax ) and cytochrome c ( cyc-t ) in LF group reached the maximum ( P < 0.05). Intestinal H&E stained sections showed that low-fish meal diet reduced the mucosal folds height of shrimp, and H2 and H3 groups significantly increased the mucosal fold height of shrimp ( P < 0.05). Therefore, adding Hyp to the diet can improve the antioxidant capacity, immunity and intestinal health of L. vannamei .

A sophisticated Ultra-Performance Liquid Chromatography-Tandem Mass Spectrometry (UPLC-MS/MS) approach was devised for the concurrent quantification of pyrethroid pesticide residues in freshwater fish and shrimp. This analytical method involved ultrasonic extraction using acetonitrile, succeeded by sample purification employing Primary Secondary Amine (PSA) and Zirconium Dioxide Silica (Z-Sep+) following low-temperature centrifugation. Chromatographic separation was achieved with an ACQUITY UPLC BEH C18 column utilizing a mobile phase of a 2 mmol/L ammonium formate aqueous solution and methanol, with detection conducted through ESI + ionization in Multiple Reaction Monitoring (MRM) mode. The assay demonstrated exceptional linearity for seven pyrethroids across a concentration range of 0.5–10 μg/L, evidenced by correlation coefficients surpassing 0.999. Detection limits were established between 0.08 and 0.52 μg/kg, and the lower limits of quantification ranged from 0.28 to 1.72 μg/kg. Furthermore, recovery rates for blank samples were outstanding, ranging from 91.40% to 108.83% at concentrations of 1.0, 4.0, and 20.0 μg/kg, with Relative Standard Deviations (RSDs) between 0.94% and 8.13%. This methodology proved to be rapid, convenient, sensitive, and robust, offering stable recovery rates. Notably, it facilitated the detection of seven pyrethroid pesticide residues in freshwater fish and shrimp within an expedited timeframe of 15 min. This pioneering technique constitutes a significant advancement in the development of new methods for ensuring food safety.

In conventional fish soup processing, valuable aquatic resources like fish skins, bones, and scales are often squandered. This study was aimed at investigating if comminution combined with pressure-conduction treatment has the potential to enhance the reutilization of cooking residues. The different blending ratios of original soup (OS), made from the initial cooking of fish, and residue soup (RS), produced from processed leftover fish parts, were alternatively investigated to satisfy the new product development. Comminution combined with pressure-conduction treatment significantly increased the nutrient contents of calcium, soluble proteins and total solids in crucian carp soup (p< 0.05). With the increase in RS ratio, the decomposition of inosine monophosphate (IMP) and free amino acids was accelerated, but the accumulation of aromatic compounds was promoted simultaneously. In addition, the Maillard reaction may lead to a reduction in aldehydes, causing a diminution in the characteristic flavor of fish soup, while the formation of 1-octen-3-ol can enhance the earthiness of the fish soup. The electronic tongue test results and the sensory results showed that the blend ratio of OS and RS at 7:3 had a more significant umami and fish aroma (p< 0.05). Under this condition, the mixed soup has better nutritional values and flavor characteristics.

The detection of trimethylamine (TMA) is important not only for assessing the quality of seafood products but also for monitoring the environment. Biomass-derived carbon materials have been used for gas-sensitive detection because of their environmental friendliness, abundance, diversity, and chemical stability. In this work, the green waste of groundsel fibers (GFs) was used as a substrate, and ultrathin SnO 2 nanosheets were successfully grown in situ on GFs via a simple hydrothermal reaction (SnO 2 /CGFs). The structures and morphologies of the materials were characterized to detect TMA gas at room temperature. Compared with pure CGFs, SnO 2 /CGFs showed satisfactory selectivity for TMA (500 ppm), higher sensitivity, and a response/recovery time of 5.5/3.3 s. The SnO 2 /CGF sensor exhibits good long-term stability and repeatability for the detection of TMA gas. It exhibits good linearity in measuring TMA gas in the concentration range of 5–200 ppm with a theoretical detection limit of 0.475 ppm and monitored the spoilage process of sea bass at room temperature. The improved gas-sensitive performance of SnO 2 /CGFs is attributed to the unique microstructure, heterojunction formation, and abundance of oxygen species of SnO 2 on carbon tubes of biomass grown in situ.

Butylated hydroxytoluene (BHT), a widely used synthetic phenolic antioxidant, undergoes metabolic transformation in aquatic environments and organisms. However, the immunotoxic potential of its metabolites remains largely unexplored. Here, we combined density functional theory calculations, chemical analyses, and zebrafish bioassays to investigate the metabolism and immunotoxicity of BHT and its representative metabolites. Gas chromatography–mass spectrometry confirmed the presence of 3,5-ditert-butyl-4-hydroxybenzoic acid (BHT-COOH) and 2,6-ditert-butyl-p-benzoquinone (BHT-Q) in exposure water and larvae, whereas 2,6-ditert-butyl-4-hydroxymethylphenol (BHT-OH) was primarily detected in larvae. Exposure to environmentally relevant concentrations of BHT, BHT-COOH, and BHT-Q significantly increased macrophage and neutrophil numbers, weakened antibacterial resistance against Vibrio parahemolyticus, and induced oxidative stress with dysregulated immune markers and elevated tumor necrosis factor-α (TNF-α) levels. Comparative analyses showed that BHT-COOH and BHT-Q induced stronger immunotoxic responses than the parent compound, BHT. Additionally, high-throughput screening of the immune-related receptors using molecular docking identified the Interleukin-1β (IL-1β) signaling pathway as a critical mediator of these effects, as coexposure with an IL-1β inhibitor markedly attenuated immune disruption. Collectively, these findings demonstrate that BHT metabolites, especially BHT-COOH and BHT-Q, exhibit stronger immunotoxic responses than the parent compound, highlighting the importance of incorporating metabolite pathways into ecological risk assessments of synthetic phenolic antioxidants.

Biogenic primary diamines are a family of critical food spoilage biomarkers. To maintain food safety, it is necessary to implement highly efficient detection methods to monitor the levels of biogenic primary diamines in edible products. In this study, we report a 7-diethylaminocoumarin derivative, CMA-Cl, as a colorimetric and fluorescence lighting-up probe for detecting critical biogenic primary diamines including cadaverine and putrescine. The CMA-Cl probe underwent a nucleophilic substitution and condensation reaction with biogenic primary diamines, generating highly emissive compounds, which displayed strong emission at 475 nm with a fluorescence quantum yield of 36.4%. The CMA-Cl probe showed colorimetric and fluorescence dual-response towards biogenic primary amines with a significant linear relationship, good selectivity, and low limit of detection (209 nM). The probe demonstrated a good recovery (97–122%) for the determination of a typical biogenic primary diamine cadaverine during the spoilage of fish. Furthermore, CMA-Cl -loaded paper was fabricated for the real-time visual detection of a typical biogenic primary diamine cadaverine in fish samples based on distinct changes in color and fluorescence.

A novel fluorescence-based sensor combining synchronous fluorescence spectroscopy (SFS) with molecularly imprinted polymers (MIPs) was fabricated with reverse microemulsion method. Tetracycline (TC), (3-aminopropyl) triethoxysilane (APTES), tetraethyl orthosilicate (TEOS) and carbon quantum dots (CDs) were used as template, functional monomer , cross-linker and signal sources respectively in the probe preparation. A synchronous fluorescence emission (λ em ) at 355 nm was observed for the prepared MIP-coated CDs (MIP@CDs) particles when the wavelength interval (Δλ) was set as 70 nm, and the synchronous fluorescence intensity could be rapidly and efficiently quenched by TC based on inner filter effect (IFE). The quenching efficiencies of synchronous fluorescence intensity was linearly fitted with tetracycline (TC) concentrations ranging from 0.1 to 50 μmol L − 1 with a detection limit (DL) of 9 nmol L − 1 (3 σ , n = 9). The MIP@CDs was used as a probe to detect TC in fish samples with the recoveries ranging from 98.4% to 103.1% and the relative standard deviation less than 6.0%. The results illustrated that the as-prepared MIP@CDs could be applied to the detection of trace TC in fish samples with rapidity, high sensitivity and accuracy.

Norfloxacin is an antibiotic in the fluoroquinolone family licenced for use in animals. However, residues in animal products can have negative consequences for consumers. As a result, residue detection in various food matrices must be considered. Norfloxacin accumulates in animal-derived foods, causing deleterious consequences in humans such as foetal deformity, renal failure and drug resistance. A built-in SERS-Au@Ag nanosensor coupled with GA-PLS was used to rapidly detect norfloxacin in the specimen of the spiked fish muscles due to the threat to human lives. A detection limit of 2.36 × 10 −5 μg/mL was realized in the spiked fish muscle sample for norfloxacin compared to the European Commission’s maximum threshold level of 100 μg/kg, indicating the sensor’s ability to detect and quantify norfloxacin at a relatively lower level. The recovery rates (RC) and coefficient of variation (CV) measured in the spiked fish muscle samples for norfloxacin analytes and their standard solutions were between 99.70–105.00% and 0.17–5.21%, respectively. The low CV values imply the reproducibility of the obtained data. The constructed model recorded residual predictive deviations (RPD) greater than three (3), demonstrating the robustness and resilience of the developed genetic algorithm-partial least squares (GA-PLS) model. GA-PLS-built models predicted all results within 4.07 s, which indicates the nanosensor’s ability to rapidly detect norfloxacin in fish to guarantee safety and public health. The SERS probe holds promise for rapid quantification of norfloxacin at microgram per milliliter level in fish to guarantee safety in commerce. Graphical abstract

In this study, gelatin films incorporated with gallic acid (GA) were applied to retard the quality deterioration of fish fillets, and ultrasound treatments were employed to enhance the preservation efficacy. Results demonstrated that ultrasound-assisted coating treatment enabled the fillets to meet stricter processing standards (TVB-N < 15 mg/100 g) within 5 days. Specifically, TVB-N values decreased from 27.07 mg/100 g in the control group to 14.47, 11.20, and 10.27 mg/100 g under ultrasound powers of 60, 120, and 240 W, respectively. Furthermore, ultrasound treatment resulted in a more than threefold increase in GA migration, contributing to preservation performance with improved antibacterial activity. Synergy values against Psychrobacter sanguinis , a representative spoilage microorganism on snakehead, were 2.84 for US + 2 mg/mL GA and 4.20 for US + 3 mg/mL GA, respectively, demonstrating a pronounced synergistic effect. Meanwhile, the characterization of the composite material provided crucial insights into the effects of ultrasound, including the enhanced water barrier capacity and mechanical strength. This improvement was attributed to cavitation-induced exposure of hydrophobic groups, as confirmed by the increase in water contact angle from 54.1° to a maximum of 75.1°. Spectroscopic analyses revealed that ultrasound facilitated interactions and increased the crystallinity of the film matrix. However, excessive ultrasound treatment (240 W) led to disordered microstructures and damaged physical properties of films. These findings provide a theoretical foundation for expanding the application of ultrasound technology in food preservation, with enhanced efficacy while minimizing potential adverse effects.
