Improving sea buckthorn flavonoids (SF) stability and bioacccessibility is of more practical significance for evaluating the total bioacccessibility of such foods. Therefore, we prepared nanoparticles using zein and gum Arabic (GA) by anti-solvent precipitation to encapsulate SF. Nanoparticles were characterized and assessed for their effect on the stability, release, bioaccessibility, absorption, and antioxidant properties of SF in the in vitro digestion and cell line. The uniform, regular nanoparticles achieved 77.19 % encapsulation efficiency. The SF retention rates during long-term storage (60.46 %) and in vitro digestion (53.76 %) demonstrated that nanoparticles exhibited good stability and bioaccessibility compared to free SF. Furthermore, cellular absorption, the free radical scavenging rate for ABTS (85.26 %) and DPPH (80.48 %), as well as inhibitory effects on intracellular ROS further demonstrated that bilayer nanoparticles could successfully protect and exert biological characteristics of SF. This study evaluated the overall bioaccessibility of sea buckthorn flavonoids using a nanoparticle delivery system, which holds even greater significance for guiding the development of this category of natural foods.

In this study, two polysaccharides [sodium alginate (ALG) and sodium carboxymethyl cellulose (CMC)] were selected to establish zein/sophorolipid/ALG (ALG/S/Z) and zein/sophorolipid/ALG (CMC/S/Z) nanoparticles to encapsulate 7,8-dihydroxyflavone (7,8-DHF), respectively. The results showed that polysaccharide types significantly affected performance of ternary nanoparticles, including CMC/S/Z possessed lower polydispersity index, particle size and turbidity, but higher zeta potential, encapsulation efficiency and loading capacity compared to ALG/S/Z. Compared to zein/sophorolipid nanoparticles (S/Z), both ALG/S/Z and CMC/S/Z had better stability against low pH (pH 3~4) and high ionic strengths (150~200 mM NaCl). Hydrophobic effects, electrostatic interactions and hydrogen bonding were confirmed in ternary nanoparticles fabrication via Fourier-transform infrared spectroscopy. Circular dichroism revealed that CMC and ALG had no evident impact on secondary structure of zein in S/Z, but changed surface morphology of S/Z as observed by scanning electron microscope. Encapsulated 7,8-DHF exhibited an amorphous state in ternary nanoparticles as detected by X-ray diffraction and differential scanning calorimetry. Furthermore, compared to S/Z, ALG/S/Z, and CMC/S/Z remarkably improved the storage stability and bioaccessibility of 7,8-DHF. CMC/S/Z possessed a greater storage stability for 7,8-DHF, however, ALG/S/Z exhibited a better in vitro bioaccessibility of 7,8-DHF. This research provides a theoretical reference for zein-based delivery system application.Keywords:Zein;7,8-dihydroxyflavone;sophorolipid;polysaccharide;ternary nanoparticles

There are multiple obstacles for the storage and digestion of orally administered bioactive macromolecules. This study developed a low-cost and sustained-release delivery system (sporopollenin exine capsules with zein/tannic acid modification) of proteins with excellent storage stability, and at the same time provided insights into the sustained-release mechanism through exploring the interaction between zein and tannic acid (TA). β-Galactosidase (β-Gal) was utilized as a model protein and loaded into sporopollenin exine capsules (SECs), which were then coated with the zein/TA system. Under the optimized zein/TA conditions, the zein/TA system showed better performance than the zein alone system in the sustained release of β-Gal, with the residual activity of about 70.26% after 24 h of simulated digestion. Evaluation of the storage stability demonstrated a β-Gal residual activity of nearly 90% for 28 days at 25 °C. Additionally, FTIR analysis demonstrated that the stability of the zein/TA system depends on both hydrogen bonding and certain covalent bonding through the Schiff-base reaction, and the sustained release is regulated by the bonding strength.

The interfacial-bulk phase distribution behavior of antioxidants is closely related to their anti-oxidative efficiency. In this study, the dynamic distribution behavior of gallic acid (GA) in a zein particles-Tween 20 co-stabilized emulsions (CPE) and its impact on the oxidative stability of CPE were elucidated via a combined experimental and Dissipative Particle Dynamics (DPD) method. As the concentration of TW20 increased, the competitive displacement of Zp from the interface was observed. Consequently, the interfacial loading of Zp decreased, leading to a corresponding decrease in the content of GA on the interface. The study's pseudo-phase model provided quantitative data indicating that the interfacial partition percentage of GA decreased from 70.72% to 48.63%, while the interfacial adsorption rate of GA decreased from 0.039 to 0.015. A notable discovery was made in emulsions solely stabilized by Zp, where 17.58% of GA was lost at the interface through free diffusion. However, in CPE, this loss was significantly reduced to 9.12%. This reduction was achieved by maintaining an appropriate concentration of TW20 (ranging from 0.19 to 1.91 mM), which facilitated a higher interfacial distribution of GA in CPE. Additionally, inhibiting the free diffusion of antioxidants at the interface, as indicated by the diffusion coefficients ranging from 20.51 to 4.45, contributed to the improved oxidative stability of the CPE. The study not only provided insights into the phase-interface distribution behavior of antioxidants in emulsions but also offered in-situ determination methods to guide the interfacial engineering of emulsions.

The effect of nanoscale titanium dioxide (nano-TiO 2 ) particle size on the performance of chitosan/zein (C/Z) film loaded with red radish anthocyanin (RRA) was studied. The microstructure and spectral characteristic of films were evaluated by scanning electron microscopy (SEM), energy dispersive X-ray spectrometry (EDS), Fourier transform infrared spectroscopy (FT-IR), and X-ray diffraction (XRD). Results demonstrated that the smaller the size of nano-TiO 2 , the stronger the interaction with the film matrix, the tighter the network structure formed, and the smaller the existing aggregates. Incorporation of nano-TiO 2 improved the thermal stability, photostability, hydrophobicity and UV-Vis light barrier properties of films. However, the mechanical properties and swelling degree of films had been reduced to a noticeable extent. Moreover, the nanocomposite films exhibited excellent sensitivity to pH, and the color values of C/Z/R-25 nm and C/Z/R-100 nm films displayed a high correlation with the freshness of mushroom. These results were significant to enhance the stability of anthocyanin and prepare high-performance bio-based composite films for visual monitoring of food.

Janus droplets exhibit an asymmetric structure, where one droplet has two compartments with different properties. However, food-grade Janus droplets are rarely reported. In this work, food-grade Janus droplets composed of alcohol-soluble protein and alginate were fabricated for the first time by the one-step in-situ method. Segregative phase separation and interfacial equilibrium of zein and alginate solutions were the prerequisites for the formation of food-grade Janus droplets. Segregative phase separation occurred when the concentration of zein and alginate solutions was increased. The zein in the aqueous phase synergistically reduced the oil-water interfacial tension with polyglycerol polyricinoleate (PGPR), but the alginate weakened the interfacial ability of PGPR, resulting in an increase of oil-water interfacial tension. Therefore, the interfacial tension difference between zein/oil and alginate/oil could be regulated by changing the concentration of zein and alginate solutions, which was beneficial to the interfacial equilibrium. The droplet size of food-grade Janus droplets could be adjusted by the concentrations of zein and alginate solutions. In addition, the Janus droplet structure could be further controlled by the volume ratio of zein and alginate solutions. The destabilization of food-grade Janus droplets was dominated by coalescence and sedimentation. The construction of food-grade Janus droplets is expected to provide a structural basis for the construction of food-grade Janus particles and promote the development of food technology.

Peanut sclerotium blight is a globally widespread plant disease caused by Sclerotium rolfsii Sacc. , often leading to significant reductions in peanut crop yields. Due to its soil-borne transmission, effective control of this pathogen remains challenging. This study developed a tea tree oil (TTO) Pickering emulsion (Teb/TTO-PE 5 ) for delivering the fungicide tebuconazole (Teb) by using a covalent conjugate of sodium lignosulfonate (SLS) and deamidated zein (DA-zein) as stabilizers, with further stability enhanced by adding 0.3 wt% xanthan gum (XG), producing another TTO Pickering emulsion (Teb/XG/TTO-PE 5 ). The stability of Teb/XG/TTO-PE 5 was directly demonstrated by its ability to avoid phase separation after being stored at room temperature for 21 days. Additionally, it minimized droplet rebound and enhanced surface wetting, which facilitated efficient interfacial transfer during application. The dual active components in TTO Pickering emulsions exhibited controlled release behavior, enhancing both the targeting and control of the fungicide. Seed germination assays confirmed that the TTO Pickering emulsions did not significantly affect peanut seed germination. Pot experiments revealed that Teb/XG/TTO-PE 5 therapeutic intervention group maintained an average lesion rate of below 5 % in peanut plants infected with 21-day-old Sclerotium rolfsii Sacc. strains. The successful development of these Pickering emulsion fungicide delivery system offers an environmentally sustainable and crop-safe strategy for controlling peanut sclerotium blight.

Complex pollutants in wastewater, such as recalcitrant oils, organic dyes, and antibiotics, have posed significant environmental challenges that adversely affect ecosystems and human health. Herein, we successfully fabricated hierarchical bioinspired polyacrylonitrile (PAN)/Zein/bismuth oxychloride (BiOCl) fibrous membranes featuring ultrafast liquid transport channels and petal-textured energy conversion layers by integrating centrifugal spinning with the in-situ growth of BiOCl nanosheets. The membranes demonstrate an exceptional capability to treat oil/water mixtures and simultaneously remove soluble dyes, thereby offering a viable solution to the issues mentioned above. The strategic construction of liquid channels, coupled with the BiOCl photocatalytic layers, optimized the water transport pathway in the oil/water mixture and facilitated the formation of an effective hydrated anti-fouling layer, achieving a separation flux as high as 6498 L·m −2 ·h −1 . Additionally, the membranes exhibited outstanding pollutant degradation performance, with removal efficiencies of 94.1 % for Rhodamine B and 64.5 % for TC-HCl. This work comes up with new insight for the rational design of multifunctional fibrous membranes, opening a window for the prospect of treating environmental wastewater.

Curcumin, a bioactive compound characterized by its limited solubility in water and low bioaccessibility, which requires an effective delivery system to enhance stability and absorption. This research focused on creating Pickering emulsions stabilized by zein-adzuki bean seed coat polyphenol-sodium alginate composite nanoparticles (ZAS) to improve curcumin delivery. The effects of different concentrations of sodium alginate (SA) on the properties of ZAS were investigated. Fourier transform infrared spectroscopy (FTIR) showed that there were hydrophobic and hydrogen bonds interactions between SA and nanoparticles, and Differential Scanning Calorimetry demonstrated an improvement in thermal stability. Accelerated oxidation experiments showed that ZAS stabilized Pickering emulsions had good anti-oxidant capacity. In comparison to the control group, the addition of SA increased the loading rate of curcumin to 81.65 ± 1.56 % with improved bioaccessibility (27.99 ± 0.26 %) and in vitro digestion stability (55.72 ± 0.22 %). The findings indicate that ZAS nanoparticles modified with SA markedly enhance the stability of Pickering emulsions, while also attaining a high loading efficiency of 81.65 % and bioaccessibility of 27.99 %. This suggests their potential utility in functional food applications.

This study developed a dual-channel pH indicator utilizing hydrophobin to enhance the compromised structural integrity of bio-based pH indicator films affected by moisture, while also addressing the limitations in pH response sensitivity and stability associated with single-mode detection. This indicator facilitates stable and real-time pH monitoring under daylight and ultraviolet illumination, incorporating zein with anthocyanins and carbon dots. To reduce interference from the inherent coloration of zein on colorimetric performance, activated carbon was utilized for decolorization, and the adsorption kinetics, along with optimal operational conditions, were systematically examined. The findings demonstrated that decolorization attained equilibrium after 5 h at 55 °C. Composite film analysis experiments revealed that the incorporation of anthocyanin and carbon dots improved matrix compatibility through hydrogen bonding interactions, leading to a denser microstructure and thereby enhancing the thermal stability and water insolubility of the composite film. The label demonstrated a sensitive and distinct dual-channel response, with color difference ( ΔE > 5) across various pH conditions, confirming excellent color response capability. This study effectively developed a zein-based intelligent indicator label, exhibiting high sensitivity and reliability in detecting pH variations, indicating significant potential for monitoring the spoilage of perishable foods such as seafood and dairy products.

Colorimetric active double-layer composites of [email protected] were developed via direct electrospinning functional nanofibers on colorimetric film. In the structure, oxidized sodium alginate cross-linked carboxymethyl chitosan (CO) was used as colorimetric film matrix to incorporate the anthocyanins extract from Oxalis triangularis ssp. papilionacea (OTA); while the blend of gelatin/zein (GZ) was used as fibrous matrix for linalool (L) encapsulation. Besides good barrier and water resistance, the outer-layer of CO-OTA showed colorimetric sensitivity towards pH-stimuli with reversible color changes. The inner-layer of GZ-L exhibited good antibacterial activities against Staphylococcus aureus and Escherichia coli . The volatile release of L from fibrous matrix was well controlled and mainly followed Fickian diffusion. Moreover, the antioxidant activity of the composites is source from the released linalool. The high reliability on milk freshness monitoring and double shelf-life extending at 25 °C suggest the potential of [email protected] in colorimetric active food packaging.

This work fabricated natamycin-loaded zein-casein nanoparticles (N-Z/C NPs) by a pH-driven approach and applied to control postharvest peach brown rot caused by Monilinia fructicola . When casein and phosphoric acid were used as a stabilizer and neutralizing acid, respectively, NPs with mean particle sizes < 100 nm and zeta-potentials < −30 mV could be obtained. The NPs could increase the aqueous dispersibility of natamycin and showed high stability against environmental changes, which could be attributed to both hydrophobic stacking and hydrogen bonds between natamycin and zein. Besides, the effects of N-Z/C NPs on the storage of peach were assessed in vitro and in vivo . Nanoencapsulation did not affect the antifungal activities of natamycin. The NPs with 20 and 80 µg/mL of natamycin could basically inhibit the spore germination and mycelial growth of M. fructicola , respectively. The N-Z/C NPs coatings exhibited better results than natamycin in controlling of peach brown rot.
