Novel pectin derived from sweet potato residue was modified by high hydrostatic pressure (HHP)-assisted pectinase and then used for Pb 2+ removal from aqueous solutions. The removal characteristics and mechanisms were also investigated. Results showed that modified sweet potato pectin exhibited greater adsorption performances for Pb 2+ than that of natural ones, and showed excellent eco-friendly properties and good potential for adsorption of some other heavy metals (such as Cu 2+ ). The adsorption curves were much more conformed to Langmuir model, and the highest capacity for Pb 2+ adsorption was 263.15 mg/g with 1.00% pectin at pH 7. Chemical adsorption process of pectin for Pb 2+ absorption involved O-containing functional groups (O–H, COO-), cation exchange, and along with electrostatic interactions. Overall, the results in this study indicated that sweet potato pectin modified with HHP-assisted pectinase had the potential to become an environmentally friendly coagulant-flocculant agent for the heavy metal adsorption, especially for Pb 2+ .

There is an increasing demand for obtaining pectin from new sources. Red radish ( Raphanus sativus L . ) pomace pectin extracted by alkali was low-methoxyl pectin with esterification degree of 10.17 %, galacturonic acid content of 69.71 % (wt), and average molar weight of 78.59 kDa. The pectin primarily consisted of rhamnogalacturonan I and homogalacturonan domains. The predominant monosaccharides of the pectin were galacturonic acid (46.32 mol%), arabinose (16.03 mol%), galactose (10.46 mol%), and rhamnose (10.28 mol%), respectively. The red radish pomace pectin solution exhibited a shear-thinning behavior. NaCl could induce gelation of red radish pomace pectin, and the gel properties of red radish pomace pectin were considerably affected by the NaCl concentration. As the NaCl concentration (0.25–0.50 mol/L) increased, the rate of gelation accelerated, and the time to gelation point appeared earlier. There was an optimal NaCl concentration (0.50 mol/L) for the pectin to form a gel with the greatest solid-like properties, gel hardness (33.84 g) and water-holding capacity (62.41 %). Gelation force analysis indicated gel formation mainly caused by electrostatic shielding effect of Na + and hydrogen bonding. This research could facilitate the applications of the red radish pomace pectin in the realm of edible hydrocolloids .

As an important organ of the human body, effective protection of the skin during trauma is crucial. An ideal wound dressing should have adhesion, adsorption of wound secretions, and good antibacterial properties . Two kinds of natural polysaccharide-based hydrogels, carboxyethyl chitosan/oxidized pectin hydrogel (CEC/OP) and carboxyethyl chitosan/oxidized pectin/polyethyleneimine hydrogel (CEC/OP/PEI), were reported by using carboxyethyl chitosan as the matrix, and oxidized pectin and branched polyethyleneimine as the crosslinking agents. Both hydrogels could be formed in a short time and exhibited the pH responsively due to the presence of imine bond. Compared with carboxyethyl chitosan/oxidized pectin hydrogel, polyethyleneimine containing hydrogel can form gel quickly, a more compact and stable three-dimensional space network structure was formed, which exhibited better swelling performance, the swelling ration, rheology property, self-repair ability, and antibacterial performance. When the mass fractions of carboxyethyl chitosan and oxidized pectin solutions are 4 wt% and 9 wt%, respectively, the hydrogel exhibited an antibacterial efficiency of >96 % against both Staphylococcus aureus and Escherichia coli . After adding 0.75 wt% polyethyleneimine, the antibacterial efficiency of hydrogel could reach up to >98 %. More importantly, the polyethyleneimine containing hydrogel has a significant effect in the treatment of bacterially infected wounds.

The objective of this research was to devise a functional hydrogel was synthesized using pectin (PE), acrylic acid (AA), dimethyldiallyl ammonium chloride (DC), and polyvinyl alcohol (PVA), designed to adsorb both cationic and anionic dyes concurrently. The low methoxy pectin formed double network hydrogel through chemical and physical crosslinking with AA and PVA respectively. DC is combined into the hydrogel system through copolymerization reaction. Analysis of hydrogel's physicochemical properties was conducted using techniques such as infrared spectroscopy, texture analysis, thermogravimetry , and scanning electron microscopy. Dyes adsorption studies showed that the LP/AA/DC/PVA-2 hydrogel, prepared at the molar ratio of AA to DC of 1:2, exhibited higher adsorption efficiency for methylene blue (MB) and Congo red (CR). Kinetics and isotherms studies indicated that the adsorption behavior conformed to the pseudo-second-order kinetic model and Langmuir isotherm model. By the Langmuir isotherm fitting, the maximum adsorption capacities of MB and CR by LP/AA/DC/PVA-2 were recorded to be 222.65 mg/g and 316.46 mg/g, respectively. The adsorption mechanism is dominated by the hydrogen bonding and electrostatic interactions. Further, the adsorption and desorption experiments demonstrated that LP/AA/DC/PVA-2 hydrogel have excellent reusability.

The oral route of administration is considered the optimal choice for treating chronic diseases due to its convenience and non-invasiveness, which can help prevent physical and mental harm to patients undergoing long-term treatment. However, challenges such as safety, gastrointestinal stability, and bioavailability of oral drugs often limit their effectiveness. Natural biomacromolecule micelles, known for their safety, stability, biocompatibility, and diverse functions, have emerged as promising carriers for oral treatment of chronic diseases like systemic lupus erythematosus (SLE) with fat-soluble drugs. This study introduces an innovative approach by developing an oral delivery system using chemically synthesized natural biomacromolecules to load artesunate for treating SLE. By synthesizing amphiphilic polymer micelles from pectin and casein through a carbodiimide reaction, a more stable structure is achieved. The hydrophobic core of these micelles encapsulates artesunate, resulting in the formation of an oral delivery system (PC-AS) with several advantages, including high drug loading and encapsulation efficiency, small particle size, negative potential, strong stability in the gastrointestinal tract, low toxicity and side effects, strong adhesion in the small intestine, and high bioavailability. These advantages facilitate efficient absorption of artesunate in the gastrointestinal tract, leading to improved bioavailability and effective alleviation of SLE-like symptoms in MRL/ lpr mice. By utilizing chemically synthesized natural macromolecular micelles for delivering artesunate in the treatment of SLE, this study overcomes the oral barriers associated with the original drug and presents a novel solution for the long-term oral treatment of chronic diseases.

Postoperative recurrence and metastasis of triple-negative breast cancer (TNBC) remain major clinical challenges due to immunosuppression and poor immune recognition of residual cancer cells. Here, we present a novel polysaccharide-protein hydrogel implant, composed of a trichosanthin (TCS)-IL2 fusion protein crosslinked with oxidized pectin, designed for sustained local immunotherapy following tumor resection. TCS is a plant-derived protein with immune-stimulatory properties. This in-situ forming gel (termed TL-pectin gel) delivers the TCS-IL2 (TL) protein to enhance dendritic cell (DC) maturation, improve antigen presentation, and reverse T-cell exhaustion, thereby stimulating tumor-specific cytotoxicity. In a mouse breast cancer model, the TL-pectin hydrogel effectively inhibited local tumor recurrence and reduced lung and brain metastases, demonstrating its potential to improve postoperative outcomes. Mechanistic studies indicated that TCS activated the NF-κB pathway, enhanced cytokine secretion and CD8 + T-cell differentiation, and IL2 maintained T-cell proliferation and activity. The hydrogel showed excellent biocompatibility and functioned as a controlled-release system to form a localized immunostimulatory microenvironment. This study suggests that TL-pectin gel is a promising candidate for clinical translation, offering a potential approach for adjuvant cancer immunotherapy.

In this study, a pH-responsive emulsion system was prepared, combining high-methoxyl pectin (HMP) with camellia oil glycerides (CG). The emulsion was characterized as O/W type, with HMP serving as the wall material and CG as the oil phase. The physicochemical properties, pH responsiveness, digestion stability, and encapsulated delivery capabilities of the HMP-CG emulsion were investigated. The emulsion showed an average droplet size of 480.47 ± 76.19 nm, possessing a negative charge and a pronounced core-shell structure. HMP package CG enhanced hydrophilic ability and enabled targeted release within the small intestine through the structural changes of HMP. The presence of HMP and CG increased droplet dispersion and target digestibility of the emulsion system, leading to sustainable small intestine-specific release. Overall, HMP-CG emulsion system, composed of natural materials, exhibited the ability to achieve targeted and controllable release via pH-responsive mechanisms, offering an alternative for developing gel materials incorporating fat-soluble substances.

In this study, ferulic acid (FA) was enzymatically grafted onto sugar beet pectin (SBP) via laccase catalysis. Structural characterization of sugar beet pectin-ferulic acid conjugates (SFC) with varying substitution degrees was performed using UV–vis, FT-IR, and NMR analyses. Mechanistic analyses revealed that phenolic hydroxyl groups (-OH) on FA reacted with carboxyl groups (-COOH) of SBP via enzymatic catalysis, forming covalent linkages. Additionally, amide bond formation between FA's carboxyl groups and amino groups (-NH₂) of pectin-associated proteins was observed. Compared to unmodified pectin, SFC exhibited reduced crystallinity, lower apparent viscosity, and smoother surfaces, whereas thermal stability and in vitro antioxidant capacity were markedly improved. Notably, SFC with high substitution (>159.60 ± 0.60 mg/g) effectively inhibited malondialdehyde (92.18 %) and peroxide (61.29 %) formation in linoleic acid oxidation systems, while demonstrating DNA (66.07 %) and protein (17.79 %) oxidation inhibition through reduced carbonyl generation. These findings highlight SFC's potential as a multifunctional antioxidant in food and pharmaceutical applications.

The effect of coating of oregano essential oil loaded zein pectin chitosan nanoparticles (Zein-PC-CS-OEO) to improve the quality of Harbin red sausage during storage was investigated. Firstly, Zein-PC-CS-OEO nanoparticles were prepared and characterized. Subsequently, Zein-PC-CS-OEO nanoparticles (EN-OEO) added sodium alginate solutions were successfully coated on the Harbin red sausage at different concentrations. All the sausages were stored at 20 °C and 65% relative humidity for 12 d, and subsequently sampled at 0, 3, 6, 9, and 12 d. The physicochemical properties, total number of aerobic bacteria, bacterial community structure and flavor characteristics for the Harbin red sausage were measured. Both lipid oxidation and the growth of dominant spoilage bacteria in Harbin red sausage are inhibited by EN-OEO coating, while the total aerobic bacteria count is reduced. These results indicate that the storage quality of Harbin red sausage is improved by EN-OEO coating. It is worth noting that the shelf life of the Harbin red sausage with 3% EN-OEO coating is extended to 9 d and the flavor characteristics of Harbin red sausage can be better preserved compared with the Control sample and the unencapsulated samples. This study provides a new thought for the preservation of Harbin red sausage as well as other low-temperature meat products.

Aronia melanocarpa Pectin (AP) was modified via alkaline/enzymatic/high-pressure enzymatic methods. High-pressure enzymatic pectin (HPP-AP) exhibited the lowest esterification degree with galacturonic acid content, optimal shear-thinning behavior, and emulsification performance. HPP-AP complexed with whey protein isolate (WPI) through hydrophobic interactions (exposed galacturonic acid–WPI residues) and hydrogen bonding (amide–hydroxyl groups), forming stable composite particles. These particles stabilized Pickering emulsions (20 % oil phase) encapsulating clove essential oil (CEO), demonstrating uniform interfacial adsorption (oil-in-water type), high encapsulation efficiency, and stability under diverse conditions (pH, temperature, centrifugation). The emulsions showed sustained CEO release (87.8 % at 7 days) and inhibited aspergillus Niger ( A. niger ) effectively. Coated onto non-woven fabrics, the emulsion formed a gel-network coating. During 12 d storage (4 °C), preservative pads delayed strawberry weight loss, texture/color deterioration, and moisture migration, extending shelf life by 6 d while maintaining quality in transport simulation. This work provides a novel strategy for plant essential oil-based active packaging

The cell wall (CW) serves as a protective barrier against toxic metals, with extensins (EXTs), proline (Pro), and hydroxyproline-rich glycoproteins playing key roles. These components regulate CW synthesis and assembly and can cross-link with pectin (Pec) to reinforce the CW structure. In this study, we investigated how exogenous proline [Pro (exo) ] promotes cross-linking between EXTs and Pec in CW to mitigate hexavalent chromium [Cr(VI)] stress in rice plants. Our physio-biochemical analyses revealed that Pro (exo) significantly modulated the relative growth rate and root phenotype of the rice seedlings under Cr(VI) stress. It also influenced the synthesis of CW components, altered the structure and composition of CW macromolecules, and enhanced Cr sequestration by CWs. Real-time quantitative PCR analysis demonstrated that Pro (exo) regulates the expression of OsSULTR1;2 , thereby affecting Cr translocation between the roots and shoots of rice seedlings. This regulation alleviated the inhibitory effects of Cr(VI) stress on growth. In addition, Pro (exo) stimulated the expression of several EXT, proline hydroxylases, and hydroxyproline O-arabinosyltransferase genes, promoting the formation of EXT–Pec cross-links. Furthermore, Pro (exo) activated genes involved in CW signaling pathways, enhancing the CW response to Cr(VI) stress signals, and effectively triggering adaptive strategies in rice plants. Overall, our findings provide a preliminary understanding of the molecular mechanisms by which Pro (exo) mediates EXT–Pec cross-linking, thereby influencing the CW structure, function, and signal transduction processes.
