Litchi fruit has high commercial value and significant benefits for humans. However, pericarp browning, as the indicator of litchi fruit senescence, limits the shelf life of litchi fruit. Effect of α-lipoic acid (α-LA) that has great antioxidant potential, on litchi fruit senescence was investigated. Results showed that α-LA delayed pericarp browning and attenuated redox stress of litchi fruit, indicated by lower hydrogen peroxide (H 2 O 2 ) and superoxide radical (O 2 −· ) contents but higher hydroxy radical scavenging rate. Compared to control, α-LA treatment enhanced enzymatic: superoxide dismutase (SOD), catalase (CAT), ascorbate peroxidase (APX) and glutathione reductase (GR) as well as nonenzymatic antioxidants: glutathione (GSH) and ascorbate (AsA). Meanwhile, α-LA was protective against oxidative stress by inducing glutaredoxin ( LcGrx ), thioredoxin ( LcTrx ) and methionine sulfoxide reductase ( LcMsr ) expression levels. These α-LA-induced antioxidant systems directly increased the antioxidant capacity. Further research indicated that α-LA pretreatment maintained higher intracellular ATP level and activated extracellular ATP signaling through up-regulating LcDORN1s expression, indirectly increasing the antioxidant capacity. In conclusion, α-LA is effective to increase the antioxidant capacity and delay the pericarp browning of litchi fruit.

This study aimed to investigate the effects of brassinosteroid (BR) on disease development, disease resistance-related enzyme activities, gene expression, and proteomic change in tomato ( Solanum lycopersicum ) fruits infected by Alternaria solani . The results showed that BR pretreatment inhibited disease development and increased the activities of disease resistance-related enzymes. Fruits treated by brassinazole, the biosynthesis inhibitor of BR, are more sensitive to A . solani . BR could promote the gene expression of downstream and upstream in the systematic acquired resistance (SAR) pathways and the catalyzers in the biosynthetic pathways of phenolic and quinone compounds. The proteomic analysis showed that BR upregulated the expression of 2 proteins and downregulated the expression of 13 proteins. Furthermore, one upregulated protein was involved in the phenylpropanoid biosynthetic pathway. These results suggested that BR-mediated disease resistance in tomato fruits could share some SAR downstream genes and phenylalanine ammonia-lyase and also have distinct pathways. Practical applications Brassinosteroid treatment before harvest could be a useful strategy to improve the quality of tomato fruit and reduce postharvest losses caused by fungi disease.

A novel acidic polysaccharide (RTFP-3) was isolated and purified from Rosa roxburghii Tratt fruits. Structural analyses revealed that RTFP-3 is a homogeneous polysaccharide with a molecular weight of 67.2 kDa and mainly consists of arabinose (37.20%), galactose (34.40%), glucose (10.02%) and fucose (18.30%). The structural chain of RTFP-3 was proven to be composed of →6)-α-D-Galp-(1→, →4)-α-D-GalpA-(1→, →5)-α-L-Araf-(1→, →4)-β-D-Glcp-(1→, β-D-Glcp-(1→ and →3,4)-β-L-Fucp-(1→ residues by periodate oxidation–Smith degradation, methylation, and 1D- and 2D-NMR analyses. Bioassay results showed that RTFP-3 exerted favorable mixed type inhibitory activities against α-glucosidase, and its half inhibitory concentration (IC50) value was determined as 4.15 mg mL−1. RTFP-3 showed static type quenching of the intrinsic fluorescence of α-glucosidase, during which the binding process induced the conformational change of α-glucosidase. These results suggest that RTFP-3 has the potential to be a novel α-glucosidase inhibitory agent for use in functional foods.

Fruits are prone to suffer water-deficit stress and accelerated senescence after harvest. To understand the effect of postharvest water-deficit on the senescence progress of strawberry fruit, fruit peduncles were dipped into water or abscisic acid solution and stored at 20 °C with 50% relative humidity in the dark. The results showed that detached fruit without water supply through the peduncles suffered serious water-deficit stress with great weight loss and low moisture content. However, fruit absorbing water through their peduncles successfully avoided the water-deficit stress with a slight change of weight loss and moisture content. Water-deficit significantly promoted anthocyanin levels with increased PAL, C4H and DFR activities. The expressions of transcriptional factors that regulate anthocyanin biosynthesis ( FaMYB1 , FabHLH3 and FaTTG1 ) were also up-regulated under water-deficit stress. Meanwhile, stress elevated the abscisic acid level as well as FaNCED1 and FaASR expression in strawberry fruit. Furthermore, exogenous ABA application exhibited the similar features with water-deficit stress. These results suggested that postharvest water-deficit would accelerate anthocyanin accumulation in strawberry fruit and that abscisic acid may play a role in the response to water-deficit stress.

The digestibility of mulberry fruit polysaccharides (MFPs) and its effect on lipid digestion were investigated in the simulated saliva, gastric and intestinal model. Results showed that the saliva, especially the salivary amylase had no effect on MFPs, while the gastric juice had greater effects on the MFPs digestion than intestinal juice, which could be evidenced from the decrease in molecular weight (Mw) from 128.7 ± 6.1, 13.6 ± 1.4 and 2.9 ± 0.1 to 84.3 ± 4.7, 5.2 ± 0.1 and 1.2 ± 0.1 KDa, respectively. It was observed that the amount of reducing ends were increased from 0.051 ± 0.003 to 0.451 ± 0.011 mM and no monosaccharide was released from the polysaccharide during the whole digestion period, indicating that gastrointestinal digestion cleaves the glycosidic bonds and produces no free monosaccharide. In addition, under the simulated saliva, gastric and intestinal digestion conditions, MFPs could reduce the rate and extent of lipid digestion in a concentration-dependent manner. Our findings provide information on the digestibility of polysaccharides from Morus nigra L. in vitro .

Antioxidants are widely found or used in food, pharmaceutical, and cosmetics industries; thus, rapid and sensitive detection of antioxidants is of great interest. The present work reports a simple and fast electrochemical method for direct analysis of antioxidants in fruit juices by modulating the permeability of mesochannels on the electrode surface. This goal was achieved by growing vertical silica mesochannel array (SMA) with a channel diameter of 2–3 nm on the indium tin oxide (ITO) electrode surface using the cylindrical micelles (CMs) as the template. As-prepared electrodes, designed as CM@SMA/ITO, are only permeable to lipophilic antioxidants, e.g., retinol, with the hydrophobic hydrocarbon cores of CMs. After excluding CMs from silica mesochannels, the ITO electrode modified with bare SMA, namely SMA/ITO, possesses a high density of silanol groups on the channel wall and thus is only permeable to hydrophilic antioxidants, such as ascorbic acid (AA). Two types of sensors allowed the selective analyses of retinol and AA in buffer solutions and demonstrated a wide linear range for retinol (1–60 μM) and AA (10–2000 μM), respectively, and a low detection limit (0.65 μM for retinol and 0.52 μM for AA). Moreover, the SMA/ITO electrode can selectively determine the concentration of AA in orange juice. The CM@SMA/ITO electrode can measure the sum activity of lipophilic antioxidants, such as retinol, α-tocopherol, and others possibly coexisting, in carrot juice. In addition, the ultrasmall mesochannels and CMs could effectively exclude the access of large substances, rendering an excellent antifouling and anti-interference ability for direct analysis of antioxidants in fruit juices without sample pretreatment.

To diversify the aromas and enhance the quality of fruit wines, Zygosaccharomyces mellis LGL-1 (LGL-1), as a non-conventional yeast, was applied for fruit winemaking along with biochar facilitating the fermentation. Results demonstrated that LGL-1 exhibited higher synthesis of ethanol and esters compared to the commercial winemaking yeast CV171 during wampee/grape/litchi winemaking. Intriguingly, the main esters produced by LGL-1 were quite different from those of CV171, resulting in diverse flavors. Four kinds of food-grade biochar were applied to facilitate the fermentation of LGL-1 under the mimic solution of fruit juice (MSM medium) respectively, and results showed that the coconut shell granule biochar (G2) was the best choice with both substrate consumption and product formation improved significantly, especially with esters enhanced by 357.87%, owing to the reduced oxidation-reduction potential, improved intracellular ratio of NADH/NAD + and enhanced activities of esterase. When applied for wampee/grape/litchi winemaking, G2 could also facilitate the fermentation of LGL-1 with total content of esters in each wine improved by 173.7%, 71.8% and 44%. The total concentration of higher alcohols in wampee/grape wine was enhanced by 35.6% and 21.1%, but unchanged significantly in litchi wine. The content of total organic acids in grape wine and litchi wine was changed insignificantly but decreased by 16.7% in wampee wine, which might not affect the flavor based on the taste threshold of organic acids. Data above indicated that LGL-1 is a potential candidate for fruit winemaking, and the fermentation fortified by G2 is a promising method for improved aromas of fruit wine.

Drying conditions significantly impact the compositions and microstructures of polysaccharides, leading to various effects on their chemical characteristics and bioactivities. The objective of this study was to investigate how different industrial drying techniques, i.e., hot air drying, infrared drying, microwave vacuum drying, and freeze drying, affect the structural properties and biological activities of polysaccharides extracted from Rosa roxburghii Tratt fruit (RRTP). Results revealed that these drying methods significantly altered the extraction yield, molecular weights, monosaccharide ratios, contents of uronic acid and total sugars, gelling properties, particle sizes, thermal stability, and microstructures of RRTPs. However, the monosaccharide composition and functional groups of polysaccharides remained consistent across the different drying techniques. Biological activity assays demonstrated that RRTPs, particularly those processed through microwave vacuum drying (MVD-RRTP), exhibited excellent anti-linoleic acid oxidation, robust anti-glycosylation effects, and significant α-glucosidase inhibition in vitro. The outcomes of this research demonstrate that microwave vacuum drying serves as an effective pre-extraction drying method for RRTPs, enhancing their biological activities. This technique is particularly advantageous for preparing RRTPs intended for use in functional foods and pharmaceuticals, optimizing their health-promoting properties for industrial applications.

The acidophilic and heat-resistant traits of Alicyclobacillus acidoterrestris ( A. acidoterrestris ) present a formidable challenge to fruit juices production safety. To address the limitations of conventional thermal sterilization, a novel bacterial capture device MPDEL has been developed. This innovative device utilizes dopamine-coated magnetic nanoparticles that are covalently linked with lysozyme, enabling efficient and rapid capture of A. acidoterrestris in acidic juices, followed by facile magnetic-controlled separation for subsequent removal. Lysozyme not only recognizes and directional anchors the bacterial surface, but facilitates the adhesion of polydopamine to the bacterial surface. Benefiting from the abundant binding sites and rapid adsorption kinetics, this un-thermal treatment completely removes 10 4 CFU/mL of A. acidoterrestris from the juice within a span of 20 min. The MPDEL exhibits high capture performance, negligible cytotoxicity and no discernable impact on juice quality, offering a novel option for the removal of A. acidoterrestris from fruit juices.

Scalable production of carbon materials from sustainable and renewable biomass as electrode materials in supercapacitors (SCs) has garnered considerable attention. However, the practical applications of the carbon-based SCs are still been hindered by the low energy density . Herein, hierarchical porous carbons (HPCs) with very high specific surface area and controlled porosity were synthesized by a facile method, which employed Hippophae rhamnoides fruit (HRF) extraction residue as raw materials, and KOH as the activation agent. The prepared carbon (HRF-NPC-2) exhibited a well-developed hierarchical pore structure , which gave an ultra-large specific surface area (SSA) of 2362.8 m 2 g −1 with a pore volume of 1.27 cm 3 g −1 . Electrochemical studies showed that the HRF-NPC-2 based electrode achieved an ultra-high specific capacity of 385.0 F g −1 at 1 A g −1 , and the symmetric supercapacitor in an ionic liquid electrolyte (1 M EMIMBF 4 ) achieved superior energy densities of 36.28 Wh kg −1 at 687.5 W kg −1 , and 43.82 Wh kg −1 at 1715 W kg −1 . Most importantly, the HRF-NPC-2//HRF-NPC-2 symmetric SCs can simultaneously light 88 LED lights for over 10 min, indicating great potential for practical application. The proposed simple fabrication strategy could be extended to convert other biomass waste into useful energy storage materials for supercapacitors .

This study aimed to investigated the structural and physicochemical properties of two pectic polysaccharide fractions (RTFP1-2 & RTFP2) isolated from Rosa roxburghii Tratt fruit by anion-exchange and size-exclusion chromatography purification, as well as their protection on Bifidobacterium spp. against antibiotic damage. RTFP1-2 had a relatively lower molecular weight of 1.12 × 10 5 Da and RTFP2 had a higher molecular weight of 5.06 × 10 5 Da. Chemical composition analysis revealed that both RTFP1-2 and RTFP2 consisted of galacturonic acid (53.13 %, 64.73 %), galactose (27.26 %, 20.04 %), arabinose (3.57 %, 2.94 %), rhamnose (2.32 %, 1.67 %) and glucose (13.73 %, 10.62 %), respectively. These two pectic polysaccharides mainly contained homogalacturonan and rhamnogalacturonan I domain. RTFP1-2 and RTFP2 were resistant to in vitro gastrointestinal digestion with no more than 18 % (w/w) hydrolysis. Minimum inhibitory and bactericidal concentration (MIC and MBC) determination showed RTFPs could notably promote bifidobacterial survivals against three commonly used antibiotics with MIC increasing to ≥ 64 μg/mL and MBC to ≥ 512 μg/mL. The protection attributed to the viscous layers formed by the RTFPs surrounding the bacterial cells to prevent antibiotics from accessing to the bacteria. The viscous RTFP1-2 and RTFP2 also promoted the cohesion among bacterial cells and enhanced bacterial biofilm formation. The results suggested that RTFPs could be potential prebiotic additives used alone or supplemented with probiotic bacteria.

This study investigated the effectiveness of novel and innovative pretreatments (NIP) using thermoultrasound and microwave-mediated freeze-thaw (TSFT, MWFT) for improving the mid-infrared drying of dragon fruit, as compared with recent pretreatment methods using cold plasma (CP), ultrasound (US), edible coating (EC), microwave and infrared blanching (MWB, IRB). Except for EC, all selected pretreatment methods induced ultrastructural changes, resulting in accelerated moisture removal and reduced drying time. In addition, all the pretreatments also induced modifications in colour, structure, and texture, with NIP demonstrating superior outcomes for colour, rehydration, shrinkage, and hardness properties. Blanching pretreatments (MWB and IRB) improved phytochemical and antioxidant properties, including total phenolics, betacyanin, betaxanthin, CUPRAC, hydroxyl radical scavenging, and ABTS, except for ascorbic acid, which was better preserved by TSFT. The study underscores the time-saving and quality enhancement advantage of NIP, over other recent methods for improving mid-infrared drying.
