Methyl parathion (MP), an organophosphorus pesticide, exhibits potent insecticidal activity. However, the high toxicity of MP residues poses a serious threat to the environment and food safety. To achieve highly sensitive detection of MP, an electrochemical sensor was developed utilizing a composite modifier comprising multi-walled carbon nanotubes (MWCNTs), zirconia (ZrO 2 ), and curcumin (CM). MWCNTs provide a three-dimensional interconnected carbon conductive network. Owing to their inherent high electrical conductivity and large specific surface area (derived from their one-dimensional hollow nanostructure), this network accelerates electron and ion transport. ZrO 2 nanoparticles exhibit specific affinity for phosphorus-containing functionalities (including P S) within MP molecules, promoting analyte enrichment; the electropolymerized curcumin forms a redox-active mediator layer that facilitates MP reduction. This synergistic combination results in superior sensing performance. Under optimized conditions, the developed MWCNTs@ZrO 2 /CM sensor exhibits a linear detection range for MP from 0.01 to 10 μM and achieves a limit of detection (LOD) of 7.13 nM (S/N = 3). The fabricated sensor demonstrated excellent repeatability and reproducibility. Moreover, the sensor displayed high accuracy and practicality for MP determination in real fruit juice samples, underscoring its potential for food safety monitoring.

Postharvest preservation urgently demands innovative solutions bridging atomic precision with practical scalability. Here, a distinctive photocatalysis-driven self-assembly strategy is presented that fundamentally diverged from conventional high-temperature syntheses by enabling precise single-atom coordination under ambient conditions. This approach, utilizing α-lipoic acid (α-LA) as coordination ligand, achieved the mild assembly of S-coordinated Cu single-atom nanozymes (Cu/CNS) while significantly enhancing their enzymatic activity. The resulting material demonstrated unprecedented multi-enzyme mimetic activities (catalase-, oxidase-, and glutathione oxidase-like) with catalytic efficiency surpassing conventional nanozymes by orders of magnitude. The Cu/CNS exhibits near-perfect antimicrobial efficacy against Escherichia coli ( E. coli ), Staphylococcus aureus ( S. aureus ), and Botrytis cinerea ( B. cinerea ) through synergistic mechanisms. When integrated into chitosan-gelatin films (Cu/CNS@CS-Gel), it forms active packaging with pH-responsive behavior, exceptional barrier properties, and mechanical strength. Crucially, the synthesis is simple, scalable, and environmentally adaptable. Using strawberries and kiwifruits as representative examples, Cu/CNS@CS-Gel more than doubled the shelf life while efficiently maintaining nutritional quality. Beyond food packaging, this coordination chemistry platform is generalizable to other metal-ligand systems, offering a versatile toolbox for sustainable agriculture. By bridging atomic-level design with practical feasibility, the work advances sustainable nanozyme implementation in food systems.

Idesia Polycarpa ( I. Polycarp a) is a newcomer of edible oil crops in China, with rich oil in ripe fruits. Phenolic compounds in six I.polycarpa oil (whole fruit oil from Leibo, LWFO; pulp oil from Leibo, LPO; seed oil from Leibo, LSO; whole fruit oil from Puan, PWFO; pulp oil from Puan, PPO; and seed oil from Puan, PSO) were analyzed using untargeted metabolomics, and their roles in antioxidant activity were also investigated. Thirty-one phenolic compounds were tentatively identified in I. Polycarpa oils, primarily belonging to salicinoid analogues and p -coumaroyl derivatives; and their contents varied greatly from trace to 85.84 mg/kg oil (idescarpin in LSO). Multivariate analyses clearly differentiated the oils of I.Polycarpa fruit in according to fruit parts and geographical origins, with twelve phenolics as the discrimative markers. Furthermore, phenolic extracts from the oils, especially LSO and PPO, exerted strong scavenging activity toward DPPH and ABTS radicals. Eight phenolics such as dimethyl coniferin, 2-hydroxyphenol-1-O- β -D-glucopyranosyl-(6->1)- α -L-rhamnopyranoside, 1-O-(2-hydroxyethyl)-4-O- p -coumaroyl-glucopyranose, tanegoside A, 1-O-(2-hydroxyphenyl)-4-O- p -coumaroyl- β -D-glucopyranose, mono-O-acetylated p -coumaroyl idesin, and p -coumaroyl salicortin were the crucial compounds that played important roles in antioxidant potential. Overall, the findings suggested these phenolics as chemical markers for the differentiation and functional evaluation of I. Polycarpa oils.

Modified Atmosphere Packaging (MAP) technology holds significant potential for preserving fruits and vegetables. In this study, we explored a novel MAP gas regulation technology that regulates selective gas permeation and achieves gas equilibrium within the package. Inspired by natural leaf stomata that regulate plant respiration, we fabricated polyethyleneimine-modified porous chitosan microspheres (PEI-PCM) that mimic the function of stomatal ‘switches’ in order to enhance respiratory regulation. And PEI-PCM were introduced into the gelatin-tannic acid (GT) film to construct a biomimetic porous chitosan microsphere-composite gelatin-based film (GT@PEI-PCM, GTPP) for the preservation of perishable fruits (litchi and waxberry). GTPP film can control and regulate gas exchange driven by CO 2 concentration levels, achieving atmospheric equilibrium within 24 h and preventing oxidative damage to fruits. In addition, GTPP films demonstrated excellent tensile strength as well as water resistance, antibacterial, and antioxidant properties. The incorporation of modified microspheres could regulate the gas permeability and selectivity (CO 2 /O 2 : 0.79–2.53) of the gelatin-based films, which successfully prolonged the freshness of litchis and waxberries. Overall, this innovative gas permeation control strategy provides a novel concept for improving MAP technology.

Fruity aroma substances hold potential for enhancing the sensory properties of non-nutritive sweeteners. This study investigated the effects of six fruit-derived aroma compounds (isoamyl isovalerate, ethyl butyrate, isoamyl butyrate, ethyl 2-methylbutyrate, linalool, and phenethyl isobutyrate) on the sweetness and bitterness of Rebaudioside A (Reb A). Sensory evaluations revealed that these compounds significantly improved sweetness perception in 0.03 % Reb A solutions, with ethyl 2-methylbutyrate (1 mg/kg) exhibiting the strongest enhancement. T-I analysis demonstrated reduced bitterness intensity and duration, particularly for phenethyl isobutyrate. Molecular simulations indicated that aroma compounds lowered the binding free energy between Reb A and the T1R2 sweet receptor, stabilizing interactions via hydrogen bonds and steric hindrance. These findings elucidate the molecular mechanisms underlying odor-induced taste enhancement, offering practical strategies for optimizing Reb A's flavor profile in sugar-reduced products.

This study was to investigate the effects of different nonthermal treatments on quality attributes, anthocyanin profiles, and gene expressions related to anthocyanin biosynthesis during low-temperature storage, including pulsed light (PL), magnetic energy (ME), and ultrasound (US). Among these treatments, 1 min US treatment was the most effective method for improving fruit quality and increasing total anthocyanin contents (by 29.89 ± 3.32%) as well as individual anthocyanins during low-temperature storage of 28 days. This treatment resulted in high color intensity, intact cellular architectures, and positive sensory evaluation. In contrast, PL and ME treatments displayed negative effects on quality improvement, leading to the destruction of cell architectures and inhibiting anthocyanin levels. Furthermore, qPCR analysis revealed that the structural genes (C4H, CHS1, CHS2, CHI, F3H, ANS, and GST) related to anthocyanin biosynthesis and transport were the target genes and upregulated in response to the cavitation effect of US treatment.

Three annexin genes may be involved in the ripening progress of strawberry fruit. Phytohormones and calcium regulate the expressions of three annexin genes during strawberry fruit ripening.
Abstract Plant annexins are multi-functional membrane- and Ca 2+ -binding proteins that are involved in various developmental progresses and stress responses. Three annexins FaAnn5a , FaAnn5b and FaAnn8 cDNA obtained from strawberry fruit encode amino acid sequences of approximately 35 kDa containing four annexin repeats, Ca 2+ -binding site, GTP-binding motif, peroxidase residue, and conserved amino acid residues of tryptophan, arginine and cysteine. During fruit development, the transcript levels of FaAnn5a and FaAnn5b increased while FaAnn5b declined after 3/4R stage. The expression patterns of annexins suggested their potential roles in strawberry fruit development and ripening. Expressions of annexin genes were also highly correlated with hormone levels. In addition, exogenous abscisic acid (ABA) enhanced the expressions of FaAnn5a and FaAnn8 while exogenous auxin (IAA) retarded it. However, both ABA and IAA promoted the transcript levels of FaAnn5b , indicating the independent regulation of annexins in fruit likely due to multi-functions of their large family. The responses of annexin genes to exogenous ABA and IAA inhibitors verified the involvement of annexins in plant hormone signaling. Besides, calcium restrained the expressions of FaAnn5s ( FaAnn5a and FaAnn5b ) but promoted the expression of FaAnn8 . Effects of calcium and ethylene glycol tetraacetic acid (EGTA) on the transcript levels of annexins confirmed that calcium likely mediated hormone signal transduction pathways, which helped to elucidate the mechanism of calcium in fruit ripening. Therefore, FaAnn5s and FaAnn8 might be involved in plant hormones’ regulation in the development and ripening of strawberry fruit through calcium signaling in the downstream.

Abundant volatile compounds are predominant contributors to fruit aroma in various species. Plant hormones and transcription factors are pivotal for volatile compound production in fruit. Jasmonate (JA) regulates the biosynthesis of volatiles such as aldehydes and alcohols, but a possible mechanism by which JA-induced MdMYC2 regulates aldehyde and alcohol biosynthesis in apple fruit has not been described. To study the effects of JA on the critical volatiles of ‘Ruixue’ fruit, gas chromatography‒mass spectrometry (GC‒MS) was used to determine the content of volatiles in fruits treated with JA. Our results showed that JA treatment effectively improved fruit quality during storage of ‘Ruixue’ fruit; for instance, sweetness increased and aroma volatiles accumulated. Furthermore, we identified the transcription factor (TF) MdMYC2 (MD16G1274200), whose expression increased 1.5- to 2.0-fold in JA-treated fruits. Subsequently, MdMYC2 overexpression dramatically increased volatile biosynthesis in apple calli (1.6-fold) and tomato calli (2.1-fold). Furthermore, MdMYC2 upregulated MdLOX5a transcription (3-fold) by binding to its promoter according to dual-luciferase and yeast one-hybrid (Y1H) assays. Collectively, these findings provide beneficial information to illustrate the mechanisms by which JA regulates volatile biosynthesis in fruit.

Quaternized cellulose ester (Q y CE) with tunable alkyl chain lengths was synthesized via esterification followed by the Menshutkin reaction. By direct blending of Q y CE and dopamine (DA), water-soluble and transparent DA/Q y CE complexes were prepared. Q y CE effectively restricted covalent polymerization and non-covalent self-assembly of polydopamine (PDA) through steric confinement, cation–π interactions, hydrophobic interactions, and hydrogen bonding. This confinement resulted in enhanced fluorescence of the DA oligomer/Q y CE multifunctional complexes. The DA oligomer/Q y CE films formed after drying also exhibited outstanding tensile strength (~45.64 MPa). Furthermore, the resulting samples demonstrated excellent antioxidant activity with a DPPH radical scavenging rate exceeding 93 %, and strong antibacterial activity against Staphylococcus aureus (~99.90 %) and Escherichia coli (~100.00 %). Consequently, as a water-soluble coating material, the complexes effectively reduced dehydration shrinkage and oxidative deterioration of fruits, significantly extending their shelf life. The fluorescence of the film is sensitive to iron ions, enabling pattern design for anti-counterfeiting applications. These findings highlight that DA oligomer/Q y CE multifunctional complexes serve as a versatile and sustainable platform with potential in both food preservation and anti-counterfeiting.

Isochoric freezing is a hot research topic among recent novel food preservation methods, and litchi fruit is highly perishable, requiring reliable preservation techniques to maintain its quality and extend its shelf life for fresh consumption. In the current study, the effects of isochoric freezing and storage (IFS) at −2.5 °C on the preservation of fresh litchis for 35 days were investigated as compared with traditional frozen storage (TFS) at −18 °C and chilled storage (CS) at 4 °C on physicochemical characteristics (mass change, total soluble solid content, ascorbic acid content, and 2,2-diphenyl-1-picrylhydrazyl free radical scavenging capacity), colour quality, aroma profile, texture, and water status. Results showed that IFS was superior to TFS and CS in terms of colour, texture, and water status of litchi aril. Hierarchical cluster analysis (HCA) integrated multiple parameters to assess the overall quality of stored litchis, further demonstrating that isochoric freezing best preserves litchi quality in a manner most similar to fresh fruit.

Background/Objectives:Androgenetic alopecia (AGA) is the most common hair loss disorder in dermatological practice. Its primary pathogenesis involves the conversion of testosterone to dihydrotestosterone (DHT) by type II 5α-reductase upon reaching dermal papilla cells (DPCs). DHT impairs DPCs’ activity and inhibits hair growth. Although the FDA-approved drugs finasteride and minoxidil show certain efficacy, they are also associated with severe side effects. This study aims to explore the effects ofTerminalia chebulafruit extract (TCFE) on hair growth and its underlying molecular mechanisms. Methods: We investigated the therapeutic potential of TCFE in hair follicle regeneration, employing a multi-level experimental approach combining in vitro analyses of DPCs, in vivo animal models of AGA, and ex vivo cultures of human hair follicles and scalp tissue. Results: First, RNA-seq analysis and RT-PCR validation revealed that TCFE treatment activated the Wnt and TGF-β3 signaling pathways in DPCs, particularly upregulating the AKR1C gene family, which is involved in DHT metabolism. TCFE also potently inhibited type II 5α-reductase activity and mitigated DHT-induced damage to DPCs. In an AGA mouse model, TCFE reversed the AGA phenotype with efficacy comparable to finasteride. However, unlike finasteride, TCFE specifically enhanced the expression of AKR1C1 and AKR1C3, indicating a distinct mechanism. Finally, in ex vivo organ cultures, TCFE suppressed hair follicle cell apoptosis, promoted proliferation, and thereby stimulated hair growth. Conclusions: These findings suggest that TCFE is a promising natural treatment for AGA, likely acting through multiple mechanisms, including Wnt pathway activation, 5α-reductase inhibition, and enhanced DHT degradation.

Many parts of Musa balbisiana have been used widely in traditional medicine, food, or cosmetic purposes. The present study is aimed at obtaining the extract-enriching bioactive compounds from M. balbisiana and determining the bioactive activities of the extract. Total polyphenols and saponins in the extracts were quantified. The response surface method (RSM) was used to optimize the extraction with methanol support. The optimal extraction conditions were at 120 min in 65°C at the material/solvent ratio of 1/36 (). The obtained extract containing 51.72 mg/gGAE of total polyphenols (TPC) and 41.66 mg/g of saponins (TSC) was evaluated for antioxidant, antibacterial, antifungal, and antidiabetic abilities. The extract of M. balbinasia fruit exhibited strong antioxidant activity. The IC50 112.57 μg/mL (DPPH) and 14.49 μg/mL (ABTS). The absorbance of the extract was at 250 ppm (RP assay). The antibacterial and antifungal inhibition exhibited a correlation with TPC and TSC. The extract inhibited Gram (+) S. aureus better than Gram (-) E. coli, while the inhibition percentage (I%) against A. flavus reached over 70% at 800 ppm. The IC50 value of the extract for anti-inflammatory activity was 187.91 μg/mL. The antidiabetic assessment revealed that methanolic extract showed quite strong inhibition with α-amylase (IC50 68.26 μg/mL) and α-glucosidase (IC50 72.61 μg/mL). The results of the study showed that M. balbinasia fruit is a potential source of bioactive phytochemicals, which can be used as a plant-based antioxidant, antibacterial, antifungal, anti-flammatorial, and antidiabetic agent. This is valuable information to support further studies to exploit and apply it in functional food, pharmaceutical, and cosmetic industries.
