Alliin, a natural bioactive compound derived from garlic, exhibits potent antibacterial and antioxidant properties. However, its application in food and medicine is limited by degradation in the acidic gastric environment. In this study, we developed a novel pH-responsive delivery system based on hollow mesoporous silica nanoparticles (HMSNs) encapsulated within sodium alginate-starch (SA/ST) composite gel beads. The HMSNs were synthesized via a soft-template method and loaded with alliin, achieving an encapsulation efficiency of 31.5% and a drug loading capacity of 48.4%. The composite gel beads demonstrated excellent pH-sensitive behavior, with minimal alliin release (9%) in simulated gastric fluid (pH 1.2) and sustained release (91% over 36 h) in simulated intestinal fluid (pH 7). The system exhibited significant antioxidant activity, with DPPH and hydroxyl radical scavenging rates of 80.2% and 57.3%, respectively, comparable to free alliin. Furthermore, the beads showed strong antibacterial effects against Staphylococcus aureus and Escherichia coli , with inhibition rates of 80.65% and 72.73%, respectively, under intestinal conditions. This study highlights the potential of the alliin@HMSNs@SA/ST system as a smart delivery platform for functional foods and nutraceuticals, offering targeted protection and controlled release of bioactive compounds in the gastrointestinal tract.

Hyperuricemia (HUA) is a metabolic disease caused by elevated uric acid levels, with xanthine oxidase (XOD) as the key enzyme in uric acid production. Current treatments primarily use XOD inhibitors (e.g., allopurinol and febuxostat), but their lack of antioxidant activity limits their ability to counteract oxidative stress in HUA. Gallic acid (GA), a polyphenol with antioxidant properties, weakly inhibits XOD but is insufficient alone. Transition metal ions like Cu²⁺ are potent reversible XOD inhibitors, yet excessive concentrations cause toxicity. The coordination reaction effectively reduces metal ion toxicity while partially preserving the inherent antioxidant properties of polyphenols. Using gallic acid (GA) as a ligand with Cu²⁺, we synthesized Cu-GA complex, which forms a stable coordination polymer that minimally releases free Cu²⁺ in water. Cu-GA demonstrated superior XOD inhibition compared to allopurinol (AP), GA, and Cu²⁺ alone, functioning as a reversible inhibitor to reduce uric acid levels. Additionally, it maintained significant antioxidant activity while showing substantially lower cytotoxicity in LO2 and AML12 cells than free Cu²⁺. In conclusion, for Cu-GA, the coordination reaction retained the inhibitory effect of Cu 2+ on XOD, while conferring some antioxidant effects, and also reduced the biotoxicity of Cu 2+ .

Mesenchymal stem cell (MSC)-based cell sheet engineering holds great promise for periodontal tissue engineering and restoring damaged tissues. However, achieving optimal regenerative outcomes remains a challenge. This study introduces a novel approach that integrates melatonin-coated nanofiber fragments (mNFs) into dental follicle stem cell sheets (mNF-CSs) to enhance their regenerative potential. The mNF-CSs were engineered using electrospun poly-L-lactic acid (PLLA) nanofiber sheets fragmented into mNFs and coated with melatonin, a potent antioxidant and osteogenic agent. The mNF-CSs exhibited a homogenous morphology with sustained melatonin release over 21 days, providing a prolonged antioxidative effect critical for tissue regeneration. In vitro experiments demonstrated that mNF-CSs significantly reduced intracellular reactive oxygen species (ROS) levels and upregulated antioxidative proteins such as SOD1 and SOD2, resulting in improved cell viability, maintenance of stemness, and enhanced osteogenic differentiation potential of dental follicle stem cells (DFCs). In vivo studies using both a nude mouse and a rat periodontal defect model demonstrated that mNF-CSs promoted alveolar bone repair and periodontal tissue regeneration, with enhanced retention of MSCs at the defect site and increased expression of periodontal tissue-related markers. Transcriptome analysis revealed the upregulation of genes associated with biomineralization, odontogenesis, and autophagy pathways in mNF-CSs, suggesting their ability to modulate crucial cellular processes for tissue regeneration. Overall, mNF-CSs offer a promising strategy for enhancing periodontal tissue engineering applications, providing a platform for improving bone grafts and regenerative medicine strategies in the context of periodontal diseases.

Pickering emulsions stabilized by bio-based solid particles offer a promising approach for the sustained release and targeted delivery of bioactive substances. In this work, rosin-based carbon dots (RCDs) were synthesized through a simple one-step hydrothermal method and applied to stabilize oil-in-water (O/W) Pickering emulsions encapsulating volatile clove essential oil (CEO). The microstructure, surface charge, encapsulation efficiency, antioxidant activity, antibacterial efficacy, and stability of the emulsions were investigated. The optimized Pickering emulsion demonstrated outstanding functional properties, including an average droplet size of 42.6 nm, a high CEO encapsulation efficiency (72.34%), and potent DPPH radical scavenging activity (88.4%). Antibacterial efficacy significantly surpassed free CEO, showing expanded inhibition zones against both S. aureus and E. coli. Importantly, the emulsion exhibited excellent storage stability, anti-flocculation properties, and thermal tolerance, indicating its suitability for practical applications. This work provides a novel and environmentally friendly strategy for preparing Pickering emulsions using RCDs and expands the potential applications of rosin in the development of encapsulation and sustained-release systems for bioactive compounds.

Tobacco smoke-induced lung disease remains a major global health threat. Reactive oxygen species (ROS) present in cigarette smoke including superoxide (•O2–), hydroxyl radicals (•OH), and hydrogen peroxide (H2O2) contribute substantially to oxidative injury, yet conventional acetate filters are ineffective at removing these gaseous free radicals. Here, we report manganese-doped hollow cerium oxide (Mn–CeO2) nanospheres as robust antioxidative nanozymes for scavenging gas-phase ROS. Mn–CeO2 exhibits enhanced superoxide dismutase (SOD)-like, catalase (CAT)-like activities and superior •OH scavenging compared with undoped CeO2. After being filled into a commercial cigarette filter, Mn–CeO2 removed over 56.2% of targeted ROS from smoke under our test conditions. In a mouse passive-smoking model, cigarette filters filled with Mn–CeO2 markedly reduced pulmonary inflammation and histological lung injury relative to the controls. Serum biochemical markers showed no significant systemic toxicity. Our research demonstrates that manganese doping significantly improves the ROS scavenging performance of CeO2 nanozymes and suggests a feasible route to reduce cigarette smoke-derived oxidative damage.

Pork trimmings, a major and underutilized by-product of pork processing, possess considerable potential for further exploitation. In this study, antioxidant peptides were isolated and identified from fermented pork trimmings, and their protective mechanisms against ethanol-induced oxidative damage in HepG2 cells were investigated. Utilizing a strategy integrating peptidomic analysis with molecular dynamics simulations, four novel peptides—VGWGR, LPPPR, LGPRYR, and WGGR—were identified, and their specific molecular interactions with Keap1 were elucidated. Among these, VGWGR exhibited the strongest binding affinity to Keap1, outstanding free radical scavenging capacity in vitro , and significant cytoprotective effects. Mechanistic studies further revealed that VGWGR activates the Keap1/Nrf2 pathway, leading to substantial upregulation of downstream antioxidant proteins (HO-1 and NQO1) and increased activities of endogenous antioxidant enzymes. This study not only enhances the value-added utilization of pork trimmings but also supports the potential of VGWGR as a functional food ingredient.

Inspired by the pore structure of plant leaves, this study fabricates a konjac glucomannan/polylactic acid (KGM/PLA)-based composite film that mimics the passive thermal regulation mechanism of natural stomata, enabling highly efficient cooling. By integrating xanthan gum (XG)-stabilized KGM/PLA matrices and hexadecyltrimethoxysilane-carvacrol@zinc oxide/cellulose nanocrystal nanosheets (HDTMS-CRV@ZnO/CNC NSs), the composite film exhibits potent antibacterial activity (25.22 ± 1.5 mm inhibition zone against Staphylococcus aureus ) and extends produce shelf life by over 7 days. The film also demonstrates outstanding optical properties, achieving 91.06 % solar reflectance (0.3–2.5 μm) and 91.40 % infrared emissivity (8–13 μm), which enables sub-ambient cooling of ∼10 °C under sunlight. Practical tests show the film maintains an internal temperature of 27.18 °C at 35 °C ambient conditions, effectively preserving the freshness of strawberries and tomatoes compared to deteriorated control samples. This work presents an innovative approach to intelligent food packaging, combining preservation functionality and environmental adaptability for sustainable food storage applications.

The present study examined the effect of α-amylase on complex carbohydrates in longan seeds and assessed the feasibility of using these carbohydrates as tanning agents. Enzymatic and hot-water extracts were purified and analyzed for their structural components and physicochemical properties. Enzymatic extraction with ultrasonic assistance yielded higher levels of bioactive components in longan seed polysaccharides (LSPs) than the non-enzymatic method. Dialdehyde longan seed polysaccharides (DLSPs) were prepared using LSPs and NaIO 4 . The effects of different NaIO 4 concentrations on molecular size, aldehyde content, other chemical compositions, structural characteristics, and tanning performance of DLSPs were evaluated. Increasing NaIO 4 concentrations decreased total sugars, polyphenols, and saponins, while raising protein content. The oxidant broke glycosidic bonds and oxidized o -dihydroxyl groups, forming reactive aldehyde groups. The DLSP-tanned leather exhibited a shrinkage temperature of 76.4 °C and tensile strength of 17.03 MPa. The tanning performance and bioactivity of DLSPs stem from lower molecular weight and high aldehyde and hydroxyl content. These polysaccharide samples exhibited good permeability and cross-linking reactivity within the collagen fiber network. Therefore, DLSPs are a promising new type of chromium-free tanning agents.

Vigna umbellata is an important homologous medicinal and food legume, and its fruit is rich in polyphenols. Acidic, alkaline (highest yield) and enzymatic methods were used to release bound polyphenols from rice bean skin dietary fiber. 44 compounds were identified from the alkaline hydrolysis products. With the increase of polyphenol concentration within a specific range, the scavenging rate of DPPH• and ABTS + • radicals and the reduction ability of ferric ions were increased. Rice bean skin dietary fiber bound polyphenols (RBSDF-BP) showed significant α -glucosidase inhibitory activity. The results showed that Hydrogen bonding and hydrophobic forces were the binding forces for RBSDF-BP to form a stable polyphenol-enzyme complex with α -glucosidase. Molecular docking revealed that the three polyphenols of RBSDF-BP had a strong affinity for the active site in the hydrophobic cavity of the enzyme. This study provides valuable discoveries for the potential application of RBSDF-BP as natural inhibitors of α -glucosidase. Chronic and infected wounds present significant clinical challenges due to fluctuating pH levels and persistent microbial contamination, which impede healing and increase the risk of complications. Traditional wound dressings lack the capacity to actively monitor and respond to changes in the wound microenvironment. In this study, we developed a multifunctional anthocyanin-based hydrogel that integrates pH-responsive antimicrobial release with real-time visual pH indication. Synthesized via a facile one-step free radical polymerization method, the hydrogel responds to microenvironmental pH shifts with visible color changes, enabling intuitive assessment of infection status. Simultaneously, it releases the antimicrobial agent chlorhexidine gluconate in a pH-dependent manner to enhance infection control. The hydrogel's structure and physiochemical properties, including swelling behavior, mechanical strength, and tissue adhesion, were thoroughly characterized. It also exhibited notable antimicrobial and antioxidant activities. In vitro studies demonstrated excellent cytocompatibility, while in vivo evaluation using a mouse alkali burn wound model revealed significant improvement in wound healing and inflammation reduction. This work provides a promising platform for intelligent wound care by combining diagnostic and therapeutic functionalities in a single, biocompatible material.

Bio-based waterborne polyurethane (WPU) films have attracted much attention to replacing plastic films in food packaging fields. Despite recent clear progress in constructing bio-based WPU films, it is still a challenge to fulfill suitable mechanical property, high water and gas-resistant behavior, outstanding UV-blocking performance, favourable antioxidant and antibacterial activities at the same time in a bio-based WPU film. Herein, curcumin (Cur)-loaded soybean oil-derived WPU multifunctional films are developed by an in-situ emulsion encapsulation method. The results indicate that Cur is homogeneously embedded in WPU film matrix, and interacts with WPU chain through hydrogen bonds to compactify film structure. And the incorporation of Cur can significantly enhance the overall performances of WPU films. The optimal WPU film displays favourable mechanical property with the tensile strength of 10.95 MPa and strain at break of 1511.02 %, high water barrier performance with water contact angle of 100.9° and water vapor permeability rate of 0.77 × 10 −10 g·m −1 ·s −1 ·Pa −1 , favorable gas barrier behavior with the oxygen and carbon dioxide permeabilities of 1.24 × 10 −10 g·m⁻¹ ·s⁻¹ ·Pa⁻¹ and 2.49 × 10 −10 g·m⁻¹ ·s⁻¹ ·Pa⁻¹ , and the nearly complete UV-blocking capability. Furthermore, the optimal WPU film demonstrates remarkable antioxidant activity with ABTS radical scavenging rate as high as 98.02 %, clear antibacterial ability with the inhibition rates of 89.35 % against E. coli and 98.33 % against S. aureus . Interestingly, the results of litchi preservation tests imply that Cur-loaded WPU films effectively delay litchis deterioration and extend litchis shelf life. This study provides a robust strategy for designing high-performance, bio-based active packaging films for fruit preservation application fields.

Spirulina platensis is a nutrient-rich cyanobacterium with immune-enhancing, anti-aging, and cholesterol-lowering properties. However, fresh Spirulina is highly susceptible to spoilage during storage. This study developed a preservation strategy based on curcumin encapsulated in hydroxypropyl- β -cyclodextrin (HBC-Cur) to improve the storage stability of fresh Spirulina . During storage, treatment of fresh Spirulina with 2 mg/mL HBC-Cur exhibited protective effects by synergistically inhibiting microbial growth and mitigating oxidative reactions. Chlorophyll content was retained at 74.39% of the initial level. In terms of lipid and protein oxidation, malondialdehyde (MDA) content decreased by 45.73%, and protein carbonyl formation was reduced by 19.69%, indicating effective alleviation of oxidative deterioration. In addition, biogenic amines remained at consistently low levels, with putrescine content reduced by 76.53% relative to the control after 8 days. During the late storage phase, oxidative rancidity and spoilage-related VOCs, including hexanal, heptanal, nonenal, propionic acid, and nitrogen- and sulfur-containing volatiles, significantly increased in the control, whereas the VOCs of HBC-Cur-treated Spirulina remained relatively stable. This approach may offer a potential strategy for preserving bioactive components and suppressing the formation of spoilage-related compounds in Spirulina with implications for the development of sustainable food storage technologies.
