Macroporous materials templated using high internal phase emulsions (HIPEs) are promising for various applications. To date, new strategies to create emulsion-templated porous materials and to tune their properties (especially wetting properties) are still highly required. Here, we report the fabrication of macroporous polymers from oil-in-water HIPEs, bereft of conventional monomers and crosslinking monomers, by simultaneous ring-opening polymerization and interface-catalyzed condensation, without heating or removal of oxygen. The resulting macroporous polymers showed drying condition-dependent wetting properties (e.g., hydrophilicity–oleophilicity from freezing drying, hydrophilicity–oleophobicity from vacuum drying, and amphiphobicity from heat drying), densities (from 0.019 to 0.350 g cc−1), and compressive properties. Hydrophilic–oleophilic and amphiphobic porous polymers turned hydrophilic–oleophobic simply by heating and protonation, respectively. The hydrophilic–oleophobic porous polymers could remove a small amount of water from oil–water mixtures (including surfactant-stabilized water-in-oil emulsions) by selective absorption and could remove water-soluble dyes from oil–water mixtures. Moreover, the transition in wetting properties enabled the removal of water and dyes in a controlled manner. The feature that combines simply preparation, tunable wetting properties and densities, robust compression, high absorption capacity (rate) and controllable absorption makes the porous polymers to be excellent candidates for the removal of water and water-soluble dyes from oil–water mixtures.

Nobiletin (NOB), a lipid-soluble polymethoxyflavone with potent antioxidant, antimicrobial, and anti-inflammatory properties, suffers from poor stability and pH sensitivity, limiting its bioavailability. In this study, Pickering high internal phase emulsions (HIPEs) stabilized by soy protein isolate (SPI) and κ-carrageenan (KC) were developed to encapsulate and protect NOB. The emulsions, containing a 75 % medium-chain triglyceride (MCT) volume fraction, were optimized by investigating the effects of pH and KC concentration on the key properties such as the creaming index, particle size, zeta potential, microstructure, and rheology. Results showed that under optimal conditions (pH 7 and 1.0 % KC), the SPI/KC HIPEs exhibited improved physicochemical properties. Furthermore, encapsulation of NOB in HIPEs significantly improved its stability against UV exposure, heat, and storage conditions. Additionally, simulated gastrointestinal digestion studies revealed that the SPI/KC HIPEs improved the digestion stability and bioaccessibility of NOB, with controlled release in the intestinal phase. Moreover, the SPI/KC HIPEs facilitated increased cellular uptake and bioavailability of NOB, with clathrin-mediated endocytosis and macropinocytosis as primary absorption pathways. The encapsulated NOB also showed enhanced inhibition of inflammatory markers, including NO, IL-6, and TNF-α. These findings suggested that SPI/KC HIPEs provided a promising delivery system for improving the bioavailability and bioactivity of hydrophobic compounds.

The functionalized modification of proteins from more sustainable resources is urgently required. Herein, the fibrillization of oilseed proteins derived from different sources was conducted, and the conformation-fibrillization relationship was further elaborated by systematically comparing the physicochemical and functional properties of amyloid fibrils. The results indicated that fibrillization-induced alterations in particle size and ζ-potential, ThT fluorescence intensity, surface hydrophobicity, flexibility and rheological property differed among proteins due to their diverse proportions of secondary structure and subunit compositions. Compared with soy proteins, walnut proteins were more likely to be hydrolyzed into peptides with a smaller particle size (108.6 nm) and fibrillated at a higher conversion rate (65.4%). The sesame proteins featured by a higher level of β-sheet exhibited increased surface hydrophobicity and flexibility of fibrils, resulting in higher viscosity due to the formation of cluster-like fibrillar aggregates. The rapeseed protein fibrils derived from cruciferin and napin demonstrated the lower digestibility (20.51%) as they displayed strong resistance against acid and proteolytic digestion during in-vitro digestion. Furthermore, among four oilseed proteins, short-flexible fibrils from sesame and walnut proteins could adhere firmly to oil/water interface, maintaining a gel-like structure of HIPEs with excellent printing accuracy and high self-supporting capacity.

A series of well-defined core cross-linked star (CCS) polymeric ionic liquids (PILs) were synthesized via a three-step approach. First, the styrenic imidazole-based CCS polymer (S-PVBnIm) was prepared by the RAFT-mediated heterogeneous polymerization in a water/ethanol solution, followed by the quaternization of S-PVBnIm with bromoalkanes and anion exchange. The CCS polymers were characterized by gel permeation chromatography (GPC), nuclear magnetic resonance (NMR) spectroscopy, Fourier transform infrared spectroscopy (FTIR), thermal gravimetric analysis (TGA), and differential scanning calorimetry (DSC). The obtained CCS polymers were used as the effective emulsifiers for oil-in-water high internal phase emulsions (HIPEs). Multiple oils with different polarity including n -dodecane, undecanol, toluene and octanol were emulsified using 0.5 wt% S-PVBnIm aqueous solution under the acidic condition to form HIPEs with long-term stabilities. The excellent emulsification properties of CCS PILs were demonstrated by HIPE formation for a variety of oils. The properties of HIPEs in terms of emulsion type and oil droplet size were characterized by the confocal laser scanning microscopy (CLSM). The intriguing capability of CCS PILs to stabilize HIPEs of various oils holds great potentials for the practical applications.
