Ferulic acid (FA) is a natural polyphenolic compound that has garnered significant attention due to its exceptional antioxidant, anti-inflammatory, and anticancer bioactivities. However, its poor chemical stability, low solubility, and insufficient bioavailability in practical applications severely limit its widespread use in the food, pharmaceutical, and cosmetics industries. To improve the stability and bioavailability of FA, this study used rice starch (RS), debranched starch (DBS) and soluble starch (SS) modified with octenyl succinic anhydride (OSA) as carriers to prepare three FA complexes, with the aim of improving their solubility and stability. The antioxidant activity, stability, and in vitro release behavior of the encapsulated FA were evaluated. Experimental results indicated that the encapsulation mechanism of ferulic acid by starch-based carriers involves hydrogen bonding, van der Waals force, and hydrophobic interactions. OSA-DBS exhibited the highest encapsulation efficiency, attributed to its compact cavity spiral structure. At the same time, OSA-SS and OSA-RS had lower encapsulation efficiencies due to their loose structure and mixed crystalline-amorphous structure, respectively. FA@OSA-DBS exhibited the strongest antioxidant activity and antibacterial ability, with significantly improved solubility and stability. In vitro release studies showed that FA@OSA-DBS exhibited a slow release rate in a simulated physiological environment, following a first-order kinetic model. The results indicate that the preparation of FA complexes using esterified starch can significantly improve the physical and chemical properties of FA by regulating the interfacial characteristics of starch. This finding lays the theoretical foundation for the development of phenolic acid-starch composite systems in the field of functional materials.

In order to investigate the effect of electron beam irradiation (EBI) pretreatment on the structure and physicochemical properties of octenyl succinic acid (OSA) esterified rice starch . In this study, rice starch was pretreated with EBI (2, 4, 6 KGy) followed by OSA esterification (3%, 6%). EBI pretreatment significantly increased the OSA-esterified starch's degree of substitution (0.0173–0.0305). However, the relative crystallinity of OSA-esterified starch decreased after EBI pretreatment. And the peak viscosity, trough viscosity and final viscosity of starch decreased significantly with the increase in irradiation dose. Moreover, EBI pretreatment significantly reduced gelatinization temperature and B 3 chain content of OSA-esterified starch, and significantly increased transparency, solubility, swelling power and A chain content. In addition, OSA-esterified starch's RDS content decreased and RS + SDS content increased after EBI pretreatment. The PCA results suggest that EBI may affect the physicochemical properties of starch by acting on its structure. The results showed that EBI pretreatment improved the physicochemical and functional properties of OSA-esterified starch, which is expected to broaden its application scope.

Native starch is difficult to use directly for microcapsule preparation due to its strong hydrophilicity, poor emulsification capacity, and large particle size. This study provides a novel strategy for developing essential oil-loaded microcapsules using Pickering emulsions stabilized by octenyl succinic anhydride (OSA) modified starch nanocrystals (SNCs). The SNCs were prepared via acid hydrolysis of corn starch and further modified with different amounts (3%, 6%, and 12% w /w) of OSA. The SNCs and OSA-modified SNCs (OSNCs) were used to encapsulate cinnamon essential oil (CEO) via interfacial crosslinking in Pickering emulsions, where SNCs/OSNCs (aqueous phase) served as the wall material and isophorone diisocyanate (oil phase) as the cross-linker. The resulting microcapsules (CEO@SNCs, CEO@3%OSNCs, CEO@6%OSNCs, CEO@12%OSNCs) were characterized on physicochemical properties. All OSNC-based microcapsules exhibited superior performance, featuring smaller particle sizes (around 600 nm vs. 2960 nm for CEO@SNCs), higher CEO loading capacity (about 90% compared to 72% for CEO@SNCs), and enhanced long-term stability across a broad temperature range (4–54 °C). Microencapsulation notably improved the functional performance of CEO. In particular, the CEO@6%OSNCs microcapsules demonstrated a release profile consistent with the first-order kinetic model, indicating sustained release behavior, along with effective antioxidant activity and enhanced antifungal efficacy (against B. cinerea and R. stolonifer ). The effect of modification treatments on the structure and function of starch-polyphenol complexes has become a hot research topic. Therefore, this study aims to systematically investigate the structural reorganization and digestibility modulation of octenyl succinic anhydride modified rice starch (OR)-caffeic acid complexes (ORCA) under gradient high pressure homogenization (HPH) pressures (50, 80, and 110 MPa). HPH promoted the interaction between starch and CA compared to the non-HPH-treated samples. Among the HPH-treated samples, ORCA exhibited more complete granular structures and higher thermal stability (311.65 °C) than the rice starch-CA complexes (RCA). Dual modification significantly improved resistant starch content. The underlying mechanism by which ORCA and HPH treatments regulated starch digestibility involved HPH-driven structural reorganization, which promoted the formation of a new densely ordered structure and crystalline barrier. This study provides theoretical support for the design of starch-based functional foods with anti-digestive properties.

We investigated the effects of 2-Octen-1-ylsuccinic anhydride (OSA) modification and ultrasound on the structure, interface, and emulsification ability of fucoidans (FUCs). A modified polysaccharide emulsion system containing melatonin with high stability was established. The results demonstrated that the interfacial tension of the modified FUCs decrease gradually and the amphiphilicity was improved. The 9 %-OSA-FUCs emulsions ultrasonicated at 400 W presented the smallest volume-average droplet diameter (1.34 ± 0.03 μm) and the storage stability were also remarkably improved by the processing method. Meanwhile, the emulsion system enhances melatonin bioaccessability, effectively shielding it from the gastrointestinal environment and ensuring stable delivery to the small intestine for optimal absorption. At the same time, the emulsion system improves the bioaccessability of melatonin (55.32 % > 24.20 % of melatonin) and effectively delay the release of FFA in first 10 min (17.72 % < 21.98 %). This study provides insights into rational modification strategies for functional polysaccharide-based emulsifiers and designing delivery systems for chemically labile hydrophobic bioactive components.

Elevated glucose levels, multiple pro-inflammatory cytokines and the generation of excessive reactive oxygen species (ROS) are pivotal characteristics within the microenvironments of chronic periodontitis with diabetes mellitus (CPDM). Control of inflammation and modulation of immune system are required in the initial phase of CPDM treatment, while late severe periodontitis requires a suitable scaffold to promote osteogenesis, rebuild periodontal tissue and reduce alveolar bone resorption. Herein, a whole-course-repair system is introduced by an injectable hydrogel using phenylboronic acid functionalized oxidized sodium alginate (OSA–PBA) and carboxymethyl chitosan (CMC). Epigallocatechin-3-gallate (EGCG) was loaded to simultaneously adjust the mechanical property of the OSA–PBA/CMC + EGCG hydrogel (OPCE). This hydrogel has distinctive adaptability, injectability, and ROS/glucose-triggered release of EGCG, making it an ideal drug delivery carrier. As expected, OPCE hydrogel shows favourable antioxidant and anti-inflammatory properties, along with a regulatory influence on the phenotypic transition of macrophages, providing a favourable immune microenvironment. Apart from that, it provides a favourable mechanical support for osteoblast/osteoclast differentiation regulation at the late proliferation stage of periodontal regeneration. The practical therapeutic effects of OPCE hydrogels were also confirmed when applied for treating periodontitis in diabetic rats. In summary, OPCE hydrogel may be a promising whole-course-repair system for the treatment of CPDM.

In this study, octenyl succinic acid sodium starch (OSAS) decorated with chitosan (CS) of different molecular weights (50–150 kDa) and concentrations (10–30 mg/mL) was used to stabilize an emulsion coencapsulating with vitamin A (V A ) and vitamin D (V D ). The effect of CS decoration on the thermal and UV stability of the emulsion, as well as the underlying mechanism, was elucidated. The incorporation of CS increased the retention rates of V A and V D by 11.36–25.52 % and 3.65–20.54 %, respectively, when exposed to 100 °C for 30 min, and by 13.35–33.05 % and 15.97–37.49 %, respectively, under ultraviolet (UV) exposure for 12 h, respectively. The OSAS/CS complexes were absorbed at the oil–water interface through electrostatic interactions and hydrogen bonding, forming thick interfacial film barriers, and regulating emulsion viscoelasticity to achieve protection against thermal and UV damage. CS decoration increased the thickness, relative crystallinity, and thermal degradation resistance of the interfacial films to mitigate thermal interference with the emulsion. The OSAS/CS complex barriers shielded UV by forming longer molecular chains or ring structures at the interface, enhancing amide functionality, and promoting intermolecular hydrogen bonding. This research could provide a reference for designing practical delivery systems for heat-sensitive and UV-sensitive nutrients like V A and V D .

The objective of the present work was to investigate the effects of the mixture of nonionic/ionic surfactants on nanostructured lipid carriers (NLCs). Nonionic surfactant (polyethylene–poly(propylene glycol), Pluronic F68) and ionic surfactant (octenylsuccinic acid modified gum arabic, GA-OSA) were chosen as emulsifier for NLCs. The NLCs systems, which were composed of lipid matrix, modified 4-dedimethylaminosancycline (CMT-8), and various emulsifier agents, were characterized with dynamic light scattering (DLS), high performance liquid chromatography (HPLC), transmission electron microscopy (TEM), small-angle X-ray scattering (SAXS), differential scanning calorimetry (DSC), in vitro release, and phagocytosis assay. This mixture of nonionic/ionic surfactants showed significant effects on physical properties including particle size, polydispersity index (PDI), entrapment efficiency, and particle morphology. Compared with single stabilizer, this mixed nonionic/ionic surfactant system provided NLCs with better drug carrier properties including prolonged release profile and low phagocytosis by phagocyte. We expect that these explorations can provide a new strategy for the development of lipid nanoparticles as drug delivery.

The treatment of osteochondral defects remains challenging due to the limited healing capacity of cartilage and the poor results of traditional methods. Inspired by the structure of natural articular cartilage, we have fabricated a biphasic osteochondral hydrogel scaffold using a Schiff base reaction and a free radical polymerization reaction. Carboxymethyl chitosan (CMCS), oxidized sodium alginate (OSA), and polyacrylamide (PAM) formed a hydrogel (COP) as the cartilage layer, while hydroxyapatite (HAp) was incorporated into the COP hydrogel to obtain a hydrogel (COPH) as an subchondral bone layer. At the same time, hydroxyapatite (HAp) was incorporated into the COP hydrogel to obtain a hydrogel (COPH) as an osteochondral sublayer, combining the two to obtain an integrated scaffold for osteochondral tissue engineering. Interlayer interpenetration through the continuity of the hydrogel substrate and good self-healing properties due to the dynamic imine bonding of the hydrogel resulted in enhanced interlayer bond strength. In addition, in vitro experiments have shown that the hydrogel exhibits good biocompatibility. It shows great potential for osteochondral tissue engineering applications. Keywords:biphasic scaffolds;self-healing hydrogel;osteochondral repair

Islets transplantation is a promising method to treat type 1 diabetes. Unfortunately, current islet encapsulation and transplantation strategies are difficult to simultaneously achieve the minimally invasive transplantation, rapid mass transportation, accurate positioning, long-term stability and easy retrieval. Herein, we present a novel strategy for islet encapsulation and transplantation that integrates the advantages of microencapsulation and macroencapsulation. Specifically, islets are first encapsulated in methacrylated carboxymethyl chitosan (CMCSMA) microgels by droplet microfluidic technology, and then oxidized sodium alginate-succinimide ester (OSA-NHS) as the assembling agent is added to time-sequentially assemble the islets-laden microgels. The as-formed microgel assembly (MA-CHO/NHS), or namely bioartificial pancreas, is injectable before transplantation due to the quick formation of dynamic Schiff base bonds, and becomes quite stable after transplantation with the slow formation of stable amide bonds. In addition, the interconnected micropores inside the microgel assembly is beneficial for mass transportation, and the abundant aldehyde and succinimide ester groups on assembling agent ensures good tissue adhesion. This injectable, tissue-adhesive, microporous, positionable and retrievable bioartificial pancreas can reverse the blood glucose levels of diabetic mice from hyperglycemia to normoglycemia for at least 90 days, and thus shows a broad application prospect in the field of diabetes treatment.

The escalating global health concern arises from chronic wounds induced by bacterial infections, posing a significant threat to individuals. Consequently, an imperative exist for the development of hydrogel dressings to facilitate prompt wound monitoring and efficacious wound management. To this end, pH-sensitive bromothymol blue (BTB) and pH-responsive drug tetracycline hydrochloride (TH) were introduced into the polysaccharide-based hydrogel to realize the integration of wound monitoring and controlled treatment. Polysaccharide-based hydrogels were formed via a Schiff base reaction by cross-linking carboxymethyl chitosan (CMCS) on an oxidized sodium alginate (OSA) skeleton. BTB was used as a pH indicator to monitor wound infection through visual color changes visually. TH could be dynamically released through the pH response of the Schiff base bond to provide effective treatment and long-term antibacterial activity for chronically infected wounds. In addition, introducing polylactic acid nanofibers (PLA) enhanced the mechanical properties of hydrogels. The multifunctional hydrogel has excellent mechanical, self-healing, injectable, antibacterial properties and biocompatibility. Furthermore, the multifaceted hydrogel dressing under consideration exhibits noteworthy capabilities in fostering the healing process of chronically infected wounds. Consequently, the research contributes novel perspectives towards the advancement of intelligent and expeditious bacterial infection monitoring and dynamic treatment platforms.

Hydrogel-based wearable sensors have gained great interest on account of their huge application in human-machine interfaces, electronic skin, and healthcare monitoring. However, there are still challenges in designing hydrogel-based sensors with high stability in a wide temperature range, superior adhesion, and excellent sensitivity. Herein, sensors based on oxidized sodium alginate (OSA)/polyacrylamide (PAm)/polydopamine-Ti 3 C 2 T X (PMXene) /glycerol/water (Gly/H 2 O) organohydrogels were designed. The organohydrogels exhibited excellent mechanical properties (elongation at break of 1037%, tensile strength of 0.17 MPa), predominant self-healing ability (self-healing efficiency of 91%), as well as high sensing stability in a wide temperature range (from −20 to 60 °C). The introduction of PDA (polydopamine) and viscous glycerin (Gly) provide organohydrogels with superior adhesion. Organohydrogels sensors demonstrated high sensitivity (Gauge Factor, GF = 2.2) due to the combination of ionic and electron conduction. Sensors could stably detect human movement under different strain levels at high and low temperatures, providing a new solution for wearable sensors in extreme conditions.
