Preparation and Application of Zwitterion Modified Starch Catalyzed by HRP-ACAC Binary System

Wenda Wang,Ning Zhang,Yifan Cui,Qiang Wang,Man Zhou,Ping Wang,Yuanyuan Yu

Enzymatic modification, compared with traditional starch (St) chemical modification methods, avoids using toxic solvents and toxic catalysts. The horseradish peroxidase (HRP), being the most commonly employed natural green initiator, has found extensive application in starch grafting modification as a substitute for chemical initiators. HRP-catalyzed grafting of starch with vinyl zwitterionic monomers has not been reported. Here, modified starch (St-PSBMA) is first synthesized by grafting zwitterionic sulfobetaine [2-(Methacryloyloxy)ethyl]dimethyl-(3-sulfopropyl) (SBMA) onto starch by HRP/Acetylacetone(ACAC) binary initiation system catalyzed. The modified starch-based hydrogel is then prepared by the repeated freeze-thaw method. Compared with native starch-based hydrogels, which bind water molecules only through hydrogen bonding, the ability of modified starch-based hydrogels to bind water molecules is enhanced by ionic solvation. The modified starch hydrogels also have excellent antiprotein adsorption and antibacterial properties due to the presence of a strong hydration layer. The modified starch-based hydrogel also has excellent sensitivity and stability when used as a sensor for detecting joint motion. The binary HRP initiating system, employed in this study instead of the traditional three-component HRP initiating system, offers a novel and promising approach for grafting modification of starch without the need for strong oxidant hydrogen peroxide.

Synergistic Effects of Freeze-Thaw Pretreatment and Ultrasound on the Structure and Digestibility of Starch–Lipid Complexes

Junhui Li,Jinjun Li,Yuanhao Deng,Yizhou Fang,Shan Li,Shiguo Chen

Starch inclusion complexes are gaining interest due to their enhanced functional properties and potential health benefits. Both freeze-thawing and ultrasound are recognized as effective physical methods to induce the formation of V-type starch inclusion complexes. However, the combined effects of these treatments on starch complex formation have not been fully elucidated. This study aims to investigate the synergistic impact of ultrasound and freeze-thaw treatments on the production of corn starch–glycerin monostearin complexes (GMS), examining their structural and digestive properties. The findings, supported by X-ray diffraction (XRD) and complexing index analyses, indicate a synergistic effect from the combined treatment in creating V-type starch–lipid inclusion complexes. Scanning electron microscopy (SEM) shows that the application of freeze-thaw cycles and ultrasound leads to the release of amylose molecules, enhancing their interaction with lipid molecules. The starch–lipid complexes formed through this process exhibit a highly ordered structure and increased resistance to enzymatic digestion in an in vitro model. These results offer valuable insights into the development of starch-based foods with slower digestibility, which could have implications for dietary management and the functional food industry.

Optimization of Ultrasound-Assisted Deep Eutectic Solvent Extraction and Bioactivities of Polysaccharide from Porphyra haitanensis

Wendie Hu,Bing Liu,Yao Wen

In this paper, ultrasound-assisted method and deep eutectic solvent (DES) are used to extract polysaccharides from Porphyra haitanensis . The single-factor experiment is carried out first, and then the response surface experiment is designed to obtain the optimal process conditions. The optimal extraction conditions are the molar ratio of choline chloride to oxalate of 1:1, the water content of DES of 60%, the solid–liquid ratio of 1:60 g mL −1 , the time of 120 min, the power of 200 W, and the temperature of 80 °C, with the extraction yield of 4.42%. And the yield of P. haitanensis polysaccharides (PHPs) is 3.14% and 3.31% by water immersion and ultrasonic water extraction, respectively, indicating that the DES extraction method is superior to these two methods, and the optimization effect is good. The extracted polysaccharides are tested for biological activity after separation and purification on DEAE and Sephadex G-75 columns. The results of α-glucosidase inhibitory activity and α-amylase inhibitory activity show that PHPs have certain antioxidant activity. 1,1-Diphenyl-3-nitrophenylhydrazine (DPPH) and 2,2-diazo-di-3-ethylbenzothiazolin-6-sulfonic acid (ABTS) free radical scavenging assays show that PHPs have certain antiglycemic activity.

Naematelia aurantialba ( N. aurantialba ) is a fungus rich in polysaccharides with medicinal and edible properties. Polysaccharides are the main active components of N. aurantialba ; however, their biological activities and functional properties have not been widely explored. In this study, the ultrasonic extraction process for N. aurantialba polysaccharides (NAP) is optimized, and the physicochemical, functional, and antioxidant activities of the homogeneous fraction (NAP) are investigated. The optimal extraction conditions are a liquid–solid ratio of 50 mL g −1 , ultrasonic power of 430 W, ultrasonic time of 32 min, resulting in an extraction rate of N. aurantialba polysaccharides of 48.68% ± 0.83%. NAP has a molecular weight of 915 kDa. The monosaccharide composition of NAP is as follows: mannose (59.04% ± 0.12%), xylose (23.89% ± 0.03%), glucuronic acid (14.07% ± 0.24%), galacturonic acid (2.12% ± 0.02%), and glucose (0.76% ± 0.02%). NAP exhibites water and oil retention capacities of 14.62 ± 0.25 g g −1 and 23.73 ± 0.85 g g −1 , respectively. Furthermore, NAP demonstrates favorable moisture absorption and retention properties. The results show that NAP has a significantly stronger antioxidant effect, as demonstrated by its concentration-dependent scavenging of ABTS, DPPH, and hydroxyl radicals.

Study on Preparation and Properties of Pickering Emulsions Prepared by Carboxymethyl Starch-Xanthan Gum Nanoparticles

Zheng Cai,Canjia Chen,Rui Huang,Rui Zhang,Wei Zhou,Chao Huang,Yong Hu,Fenglin Song,Yun Chen

In this work, carboxymethyl starch-xanthan gum nanoparticles (CXN) with different ratios are prepared by ethanol precipitation method. The effects of different ratios, NaCl content, and pH on the particle size and zeta potential of the nanoparticles are investigated, as well as the rheological properties and stability of the CXN emulsions. The results show that with the increase of xanthan gum (XG), the particle size, and zeta potential of the nanoparticles decrease and the prepared emulsions have higher shear stress and viscosity, as well as greater thermal and storage stability. Changes in pH and NaCl concentration significantly affect the particle size and zeta potential values of the nanoparticles. Excess acids or bases increase the viscosity of the emulsions. At low salt concentrations (0.05 M), the emulsion viscosity increases significantly, after which the emulsion viscosity decreases with increasing salt concentration. Neutral pH conditions at room temperature are not conducive to the stability of the emulsions. At high temperatures (100 °C), high salt concentrations, excessive acids or bases can destabilize emulsions. This study provides a new way to reduce the particle size of nanoparticles and a feasible strategy for developing long-term stable Pickering emulsion.

Study on Dispersion Technology of Pigment Powder and Its Interaction Based on Octenyl Succinate Starch and Arabic Gum Complex

Qin Chen,Xingyu Chen,Shiqing Song,Lingyun Yao,Huatian Wang,Di Zhao,Min Sun,Qian Liu,Chuang Yu,Tao Feng

High concentrations of pigment powders present significant challenges for dispersion stability in cosmetic formulations, the dispersion of iron oxide yellow paste may lead to flocculation, reducing its stability. This study employed octenyl succinate starch (OSA starch) and Arabic gum (AG) as composite wall materials to encapsulate iron oxide yellow and to optimize the dispersion system for water-soluble pigment powders. Transmission electron microscopy (TEM) and scanning electron microscopy (SEM) confirmed the formation of a well-structured microcapsule, significantly smaller than the original iron oxide yellow particles. Accelerated stability tests indicated that the microcapsule structure enhanced system stability, with improved performance observed at higher OAF solution concentrations. The contact angle measurements, which were consistently below 90°, demonstrated that the microcapsule structure enhanced the wettability and hydrophilicity of the OAF solution, thereby improving skin adhesion. The encapsulation of iron oxide yellow using OSA starch and AG underscores the potential application of natural hydrocolloids and modified starches in the cosmetics industry.

Spray-Drying Assisted 3D Printing to Manufacture Beef Products

Peng Liu,Ziwan Zhou,Wenchang Zhou,Chunjia Liu,Nanfang Wang,Fan Zhang

Potato starch (PS), a naturally occurring carbohydrate biopolymer, is commonly used in the meat industry to enhance the processing and nutritional properties of meat products. This study utilizes spray drying to produce PS-based powders for the production of 3D printed beef products. The effects of incorporating PS-based materials at 1% concentrations into beef pastes are investigated, focusing on the impact on product texture, cooking properties, printing accuracy, freeze-thaw stability, and color. Additionally, the suitability of the 3D printed beef products for individuals with dysphagia is assessed using the International Dysphagia Diet Standardization Initiative (IDDSI). The 3D printed beef products containing PS-based powders are successfully manufactured and maintained their structure during printing and cooking. The addition of these powders improve moisture content, cooking yield, lightness, and reduced diameter reduction, redness, hardness, cohesiveness, and chewiness. Moreover, the results suggest that P-N, can be classified as potential level 6 diets (soft and bite-sized) according to the IDDSI framework.

Optimization of Amylose to Amylopectin Ratio and Degree of Substitution in Quaternized Starch as a Tool to Improve Paper Strength

Shaomin Kang,Jiaqi Guo,Igor S. Makarov,Mohammad Rizwan Khan,Huining Xiao,Junlong Song

Cationic starch serves as a prevalent wet-end additive in the papermaking industry. Yet, the definitive effects of the ratio between the two principal components—amylose (AM) and amylopectin (AP)—and the degree of substitution (DS) on the mechanical strength enhancement of paper sheets remain incompletely understood. This study synthesizes a series of quaternized amylose (QAM) and quaternized amylopectin (QAP) with varying DS levels and blended these derivatives in diverse ratios. Subsequently, these mixtures are integrated into pulp suspensions to ascertain the DS and the AM-to-AP ratio that optimize paper strength. These results indicate that a QAM-to-QAP blend with a DS of 0.08 at a ratio of 2:8 yielded the most pronounced improvement in paper mechanical properties. This precise formulation significantly enhances tensile, burst, and tear strength indices, increasing by approximately 55.0%, 44.4%, and 78.4%, respectively, under the most favorable conditions and with an additive dosage of 1 wt.%. This investigation provides substantive and actionable knowledge for selecting starch additives in the wet-end of papermaking, which can significantly augment the efficiency and efficacy of paper manufacturing processes.

Preparation of granular cold-water-soluble corn starch by surface modification with poly(ethylene glycol)

Jiwen Wang,Wentao Zhai,Wenge Zheng

The main target of this study is to synthesize one kind of granular cold-water-soluble (GCWS) starch by grafting poly(ethylene glycol) (PEG) segments onto the surface of native starch granules. It is found that the grafting process could introduce long PEG chains onto the granule surface, resulting in the presence of special micropits on the granule surface, as characterized by SEM. The cold water solution test verified that the resultant PEG-grafted corn starches exhibited excellent cold-water-solubility. The XRD analysis and further polar optical micrograph (POM) observation indicated that the crystallites structure inside the PEG-grafted corn starches was fully preserved, since no gelatinization process was involved. The present study provides a new train of thought that we can adjust the physiochemical properties of starch granules with proper surface modification.

In Vitro Digestibility and Predicted Glycemic Index of Chemically Modified Rice Starch by One-Step Reactive Extrusion

Canxin Cai,Yaoqi Tian,Zhiwei Yu,Chunrui Sun,Zhengyu Jin

The in vitro digestibility of chemically modified rice starch by one-step reactive extrusion (REX) via esterification, acetylation, hydroxypropylation, and cross-linking or dual-modification (hydroxypropylation-cross-linking and acetylation-cross-linking) is investigated. After REX processing, pasting viscosity is decreased, while the viscosity of esterification samples is lower than that of cross-linking samples. Molecular structure analysis suggests that the degradation of starch molecules is retarded by esterification whereas enhanced by cross-linking. Dual modification (hydroxypropylation and phosphorylation, hydroxypropylation-cross-linking (HP-CL) sample) involving hydroxypropylation and phosphorylation (HP-CL sample) is more conducive to preventing enzyme hydrolysis than the other modifications. HP-CL sample achieves the lowest predicted glycemic index (pGI) value (88.1) and the highest RS content (15.3%). Thus, the one-step REX is a useful method for reducing rice starch digestibility or pGI value.

Study on the Flocculation Performance of a Cationic Starch-Based Flocculant on Humic Substances in Textile Dyeing Wastewater

Kexu Wang,Hongfei Liu,Yating Wang,Dishun Zhao,Jianhua Zhai

Dissolved organic matter is one of the difficult problems in the treatment of textile dyeing wastewater, among which humic substances are the most harmful to the environment and human health. Herein, cationic starch-based flocculants are prepared by free radical polymerization of corn starch (St) and methacryloyloxyethyl trimethyl ammonium chloride (DMC) in a redox-initiated system of ammonium persulfate and sodium bisulfite. Corn starch-graft-poly(methacryloyloxyethyl trimethyl ammonium chloride) is denoted as St-g-PDMC. The St-g-PDMC is comprehensively characterized in terms of structural (element analysis, Fourier transform infrared, X-ray diffraction, proton nuclear magnetic resonance spectroscopy), morphological (scanning electron microscopy), and thermal (differential scanning calorimetry) properties. Humic acid (HA) solution is selected to simulate negatively charged dissolved organic matter. The flocculation performance and mechanism of St-g-PDMC, cationic polyacrylamide (CPAM), and polymerized aluminum chloride (PAC) are systematically investigated. The experimental results show that St-g-PDMC functions mainly through the electric neutralization and bridging effect as the flocculation mechanism, CPAM using its own structure and the colloid formed by PAC through hydrolysis is more in line with the bonded bridging and net roll sweep trapping. The combined formulation of St-g-PDMC and PAC shows advantages over a single flocculant in the treatment of textile dyeing wastewater, and its cost is evaluated.

Determination of phosphoryl-oligosaccharides obtained from Canna edulis Ker starch

Jianhua Liu,Hu Li,Jinhong Wu,Fan Xie,Juan Zhang,Zhengwu Wang

Phosphoryl oligosaccharides (POs) are a new type of functional oligosaccharide that promote the absorption of calcium. Canna edulis Ker (edible canna) starch contains a small amount of phosphorus and may be a source in the production of POs. Herein, the POs fraction was separated from Canna edulis Ker starch for the first time using enzymatic reactions that produce isomalto-oligosaccharides (IMOs). Fourier transform infrared (FT-IR) spectroscopy, nuclear magnetic resonance (NMR) spectroscopy, and high-performance anion exchange chromatography (HPAEC) were used to determine the presence and composition of the isolated POs. The POs that were obtained from Canna edulis Ker starch were mainly composed of phosphoryl maltotriose, maltotetraose, maltopentaose, maltohexaose, and maltoheptaose. These findings provide new insight into the simultaneous production of IMOs and POs from Canna edulis Ker starch by enzymatic reaction.
