A novel fluorescent probe , 3-(4-((hydroxylamino)methyl)-1H-pyrazol-1-yl)-7-methoxyl coumarin (HAPMC), has been designed and synthesized. The compound exhibits exceptional fluorescence properties due to a coumarin-pyrazolyl fluorophore. Moreover, it incorporates an N -hydroxylamine functional group capable of reacting with aldehydes to yield nitrone derivatives under mild conditions. This unique combination renders it an ideal derivatization reagent for aldehyde analysis. A standard method was established for the quantitative analysis of eight fatty aldehydes by utilizing high-performance liquid chromatography with fluorescence detection (HPLC-FLD) and a pre-column derivatization process, which has low detection limits (0.3–1.2 nM), satisfactory reproducibility (intraday and interday relative standard deviations in the range of 1.29 %-2.92 % and 1.73 %-3.45 %), and an extensive linear range (25–5000 nM) with excellent linearity (R 2 ≥ 0.9989). The spiked recoveries of the fatty aldehydes range from 89.6 % to 106.0 %. The greenness and sustainability of our approach are reinforced by evaluations conducted with the AGREE and RGB 12 algorithms. The established method was successfully applied to the qualitative and quantitative detection of fatty aldehydes in nine real vegetable oil samples, including peanut, canola, rice, soybean, olive, rapeseed, corn, sunflower, and blended oils. The fatty aldehydes are known to have adverse effects on human health due to their carcinogenic and mutagenic properties. The findings revealed that hexanal and nonanal were the most prevalent saturated fatty aldehydes, with a notable increase in the total aldehyde concentration observed as the temperature and duration of heating increased. Compared to alternative analytical techniques, this pre-column derivatization method utilizing HAPMC displayed simplicity, reliability, and sensitivity. The results demonstrate the potential for broad application of this approach in various important research domains, including food quality control, environmental monitoring, and medical research.

Adulteration of high-value oils such as olive and camellia oil poses serious challenges to market integrity and consumer safety. This study develops a comprehensive, model-free marker library for high-throughput detection of single and multivariate adulteration across nine vegetable oils (olive, camellia, sesame, rapeseed, flaxseed, soybean, peanut, industrial hemp seed, and sunflower seed oils) using untargeted metabolomics via UHPLC-Q-TOF-MS. We identified 34 characteristic markers, including 9 confirmed by reference standards, such as hydroxytyrosol in olive oil, camelliasaponins in camellia oil, and sesamin in sesame oil, which are uniquely present in specific oils and absent in others. The method enables reliable qualitative screening of adulteration at levels as low as 5% without dependence on chemometric models. Validation using binary and multicomponent blends confirmed its robustness and specificity. In commercial sample analysis, adulteration was detected in 16.0% of olive oils (4/25) and 12.7% of camellia oils (7/55), with results consistent with regulatory findings. This work establishes the first integrated marker library for simultaneous screening of nine vegetable oils, offering a standardized, high-throughput tool for large-scale market surveillance that bridges the gap between discovery-based omics and routine regulatory practice.

In the present work, a rapid, accurate and cost-effective method has been developed for the simultaneous quantification of phenolic compounds in oil using mixed-mode solid-phase extraction (SPE) coupled with chemical labeling UHPLC-MS/MS. Mix-mode SPE weak cation cartridges were selected to enrich and purify phenolic compounds in oil, and hydroxyl moiety was dansylation as stable-isotope internal standard. The major parameters that affected the extraction and chemical labeling efficiency were investigated, and the method was fully validated. The limit of quantifications and the limit of detections were 0.002 µg kg −1 ~ 0.10 µg kg −1 and 0.006 µg kg −1 ~ 0.30 µg kg −1 , respectively. The recoveries were 61.2% ~ 129.3% with intra-day and inter-day precision less than 12%. The results for 38 rapeseed oils revealed that 14 phenolic compounds, including canolol, phenolic acids, phenolic alcohols, tyrosol and vanillin from trace levels to relatively high content.

Capsaicinoids are pungent components in hot peppers, which have been detected in waste cooking oil. However, trace analysis of capsaicinoids in edible and crude vegetable oils is a challenging task due to the complex matrix. In this study, a simple liquid-liquid extraction and solid phase extraction (SPE) coupled with RP-UPLC-ESI-MS/MS method was developed for the quantification of capsaicinoids in edible and crude vegetable oils to screen the adulteration with waste cooking oil. This method was used to simultaneously determine 3 capsaicinoids (capsaicin, dihydrocapsaicin, and nordihydrocapsaicin) with capsaicin-d3, and dihydrocapsaicin-d3 as internal standards. This method allows the complete analysis of a sample in only an hour, even including sample preparation and chromatographic separation. The linear range of 3 capsaicinoids ranged between 0.5 and 40 µg/kg. The limit of detection (LOD) and limit of quantification (LOQ) for capsaicinoids were calculated as 0.15 and 0.5 µg/kg, respectively. Quantitative recoveries ranging from 92.9% to 105% were obtained by the analysis of spiked oil. The relative standard deviations were less than 5% (n = 6). The established method can potentially overcome the interference of triacylglycerols and fatty acids in edible and crude vegetable oils, and have been successfully applied to analyse real oil samples. This method provided a rapid and reliable method for the detection of adulteration of vegetable oils with waste cooking oils.

A novel strategy that combines the chemometrics method with high performance liquid chromatography with fluorescence detector (HPLC–FLD) was developed for the simultaneous determination of seven phenolic antioxidants in six kinds of oil samples. After a simple dilution step, oil samples can be directly injected into the detecting system and the data were measured in a short time with a chromatographic system operating in the gradient elution mode. Since the chromatographic and spectral peaks among interesting analytes and interferences were heavily overlapped, second-order calibration method based on alternating trilinear decomposition (ATLD) algorithm which fully exploiting the second-order advantage was adopted. Successful resolution was obtained in the presence of different matrix interferences in different oil samples, and the developed approach allows the quantification of the antioxidants at levels found in edible vegetable oils, without the necessity of applying either preconcentration or extraction steps, moreover, a column washing is also not required. Meanwhile, the effectiveness and reproducibility of the proposed method were also validated by some statistical parameters like root mean squared error of prediction (RMSEP), limits of detection (LOD) and relative standard deviation (RSD). Then the proposed method was compared with several commonly selected methods in sample preparation, elution time and LOD.

The antagonistic effect of tocopherols and phytosterols was verified in three typical plant oil systems. • The antagonism mechanism where phytosterols disrupt tocopherol-triglyceride interactions was revealed. • A multi-scale framework was established to link molecular mechanisms with macroscopic performance. This study elucidates the interaction mechanism between tocopherols and phytosterols in vegetable oils and its influence on oxidative stability. The bond dissociation enthalpy (BDE) of α/γ-tocopherol and four phytosterols were calculated by density functional theory. It was found that the BDE of tocopherols were significantly lower than those of phytosterols, indicating the superior antioxidant activity of tocopherols. Molecular dynamics simulations show that the presence of phytosterols weakens the interaction between tocopherol and triglycerides, and the hydrogen bond density related to tocopherol in the system decreases. The experimental results further confirmed that the tocopherol-phytosterol combination exhibits a significant antagonistic effect. Furthermore, machine learning models with high accuracy (≥0.95) were constructed to predict the antioxidant performance of vegetable oils. These findings reveal the microscopic mechanism by which phytosterols interfere with tocopherols/triglyceride interaction, providing a theoretical basis for the combined application of antioxidants in vegetable oils.

Summary The formation of 4-hydroxy-hexenal (HHE) and 4-hydroxy-nonenal (HNE) in eight vegetable oils was investigated at 180 °C. HHE was only detectable in soybean (SBO), rapeseed (RO) and linseed oils (LO). HNE was measured in all tested oils, but was found mainly in corn (CO), sunflower (SO) and soybean oil (SBO). Oil-dependent formation of HHE/HNE was remarkably observed. Furthermore, different fatty acid methyl esters in tricaprylin, as model oil systems, were constructed to demonstrate their characteristic contribution to HHE/HNE formation. As expected, HHE and HNE originated from the oxidative degradation of methyl linolenate (MLN) and methyl linoleate (ML) respectively. Whereas low concentrations of MLN (<5.0%) and ML (<1.0%) produced no detectable HHE/HNE. The results suggested MLN/ML could induce both HHE/HNE formation and pro-oxidation at higher concentrations. Unexpectedly, methyl stearate and methyl oleate slightly promoted HHE/HNE formation, which might be attributed to free radical transfer mechanisms during thermal oxidation.

In this study, a rapid, effective method based on QuEChERS was optimised and validated for determination of perfluorooctanoic acid (PFOA) and perfluorooctane sulphonic acid (PFOS) in edible vegetable oils by high-performance liquid chromatography coupled with tandem mass spectrometry (HPLC-MS/MS). Samples were simply vortex extracted with methanol containing 1% ammonia solution and purified through C18, PSA and GCB, followed by determination with HPLC-MS/MS. The detection parameters, including the mobile phase composition, the chromatographic column, as well as the sample preparation conditions, such as the choice of extraction solvents and the dosage of C18, PSA and GCB cleanup agents were optimised. The quantification of target compounds was carried out using stable isotope internal standards to compensate for any matrix effect during the electrospray ionisation process in the mass spectrometry. The developed method has demonstrated commendable accuracy, with recovery percentages ranging from 93.76% to 108.96%, and exhibits excellent precision, as indicated by relative standard deviation not exceeding 20%. Furthermore, the method has been validated for its selectivity, linearity of response, and sensitivity. The proposed method is beneficial for gathering residue data on PFOA and PFOS, allowing for the evaluation of their contamination levels in edible vegetable oils available in the Chinese market and providing scientific backing for regulatory supervision.

A novel polynomial correction method, order-adaptive polynomial correction (OAPC), was proposed to correct reflectance spectra with operator differences, and convolutional neural network (CNN) was used to develop analysis model to predict behenic acid in edible oils. With application of OAPC, CNN performed well with coefficient of determination of correction (R 2 cor ) of 0.8843 and root mean square error of correction (RMSE cor ) of 0.1182, outperforming partial least squares regression, support vector regression and random forest with OAPC, as well as the cases without OAPC. Based on 16 effective wavelengths selected by combination of bootstrapping soft shrinkage, random frog and Pearson’s correlation, CNN and OAPC exhibited excellent performance with R 2 cor of 0.9560 and RMSE cor of 0.0730. Meanwhile, only 5% correction samples were selected by Kennard–Stone for OAPC. Overall, the proposed method could alleviate the impact of operator differences on spectral analysis, thereby providing potential to correct differences from measurement instruments or environments.

A deep eutectic solvents-based ferrofluids (DES-FFs) material was prepared by combining small-sized Fe 3 O 4 magnetic cores with a ternary choline chloride/sesamol/coumarin (1:3:1) DESs. The material was used for single-step magnetic-assisted liquid-liquid microextraction (MALLME) and determination of 15 pyrethroids (PYs) in vegetable oils by GC–MS/MS. The small-sized Fe 3 O 4 material improved colloidal stability of DES-FFs and enabled rapid phase separation (<10 s). The DES-FFs might leverage enhanced π-π stacking interactions between sesamol/coumarin and PYs, and optimal hydrophilicity-polarity matching, which collectively contributed to the high extraction efficiency for PYs. Comprehensive characterization (HRTEM, XRD, FTIR, TGA, etc.) validated the material's structural integrity, thermal stability and magnetic property. The developed method demonstrated high sensitivity (LODs: 0.91–3.03 ng/mL; LOQs: 3.02–10.09 ng/mL), significantly reduced matrix effect, and good precision (RSD ≤6.92%) for 15 PYs in vegetable oils, with recoveries ranging from 79.88% to 107.90%. Determination of 15 PYs was successfully achieved in both refined and crude vegetable oils.

Lateral flow immunoassays (LFIA) have been acknowledged as the promising on-site screening method for food survey. Monoclonal antibodies against benzo[ a ]pyrene (BaP) conjugated with enzyme-mimetic probes, a multi mode LIFA strips were systemically constructed and evaluated. The PBNPs@mAbs based LFIA could conduct triple measurement in 14 min. This assay had good limit of detections (LODs of 0.057, 0.035, and 0.106 μg kg −1 ), ultra calibration ranges (0.23–500, 0.076–56, 0.69–167 μg kg −1 ), and the recoveries ranging from 86 % to 105 % with the precision less than 11 %. Compared with the reported methods, the LODs were 175-, 285- and 94 folds enhanced, and dynamic linear ranges were greatly expanded. Finally, this novel PBNPs@mAbs LFIA assay with simplicity, rapidity, and sensitivity was successfully utilized for the determination of BaP in vegetable oils, which could be used as a superior enzyme-mimetic on-site analytic platform in food safety.

Summary The present work investigated the formation of three toxic aldehydes, malondialdehyde (MDA), 4-hydroxy-hexenal (HHE) and 4-hydroxy-nonenal (HNE), during deep-frying of different foods in corn oil (CO), rapeseed oil (RO) and linseed oil (LO). Besides, their contents in French fries (FF) and fried chicken breast meat (FCBM) were also explored. Results showed that the MDA/HHE/HNE levels in frying groups were all lower than those in control, indicating the incorporation into the fried foods. Apart from the different levels, MDA/HHE/HNE in FF and FCBM possessed similar variation tendencies, revealing the matrix-mediated distribution. The combined exposure assessment based on the threshold of toxicological concern (TTC) levels was conducted, and risks of exceeding the limitation values (1.5 μg kg bw −1 day −1 ) for HNE in CO and HHE in LO were exhibited. The consumption of both FF and FCBM should be regulated, considering the levels of MDA, HHE and HNE these fried foods may contain.
