The increasing prevalence of harmful algal blooms (HABs), specifically those resulted by toxigenic Alexandrium spp., notably threats human health and aquatic ecosystem. Metal organic frameworks (MOFs), particularly copper- and zinc-based MOFs have emerged as promising materials to control HABs. However, their application safety needs to be assessed because of poor knowledge of their ecotoxicity to marine organisms. In this study, the toxicity of Cu-MOF and Zn-MOF was evaluated to Oryzias melastigma at embryonic and adult stages. The Cu-MOF exhibited a concentration-dependent mortality and hatching rate at concentrations ≥ 2.0 mg L −1 . The Zn-MOF exhibited similar effects when the exposure doses ≥ 80 mg L −1 . Additionally, adult fish after exposure to Cu-MOF showed significant mortality rate at higher concentrations (≥ 4.0 mg L −1 ), beside elevated oxidative stress markers. In contrast, Zn-MOF did not show mortality and oxidative stress although bioaccumulation of Zn 2 + occurred in tissues. Based on the safety assessment of MOFs to marine medaka, the dosages for application of Cu-MOF (≤ 1.0 mg L −1 ) and Zn-MOF (≤ 20 mg L −1 ) are safe for controlling A. minutum -forming HABs. This study hints that the application of MOFs in mitigation of HABs should be carefully evaluated to balance their benefits in contrast to ecological risks.

Cellular agriculture is a novel platform for addressing the issues of protein scarcity, environmental pressures, and food safety. However, expanding seed cells at a large scale remains a prerequisite for achieving industrial cultured meat production. We here propose the production of large-pore-sized edible porous microcarriers (EPMs) by using NaCl to precisely control ice crystal growth during cryogenic crosslinking. Muscle satellite cells (SCs) and adipose-derived stem cells (ASCs) from large yellow croakers exhibit remarkable adhesion, proliferation, and differentiation on gelatin-based EPMs. Following consecutive expansion, SCs and ASCs densities reach 6.25 × 10 5 and 5.77 × 10 5 cells/mL, leading to a 499-fold and 461-fold increase in cell numbers, respectively. Subsequently, the mature microtissues are incorporated into a bioink, thereby enabling successful three-dimensional printing of cultured fish fillets with sensory properties similar to native fish fillets. EPM-based cell expansion and food structuring techniques are promising in facilitating large-scale cultured fish meat production.

The ubiquitous occurrence of organic UV stabilizers (OUVs) poses a potential threat to marine fish, but the metabolism of OUVs in the body remains a missing piece of the puzzle in their ecotoxicology. This study investigated the in vitro metabolism of six OUVs in the liver microsomes of an economically valuable marine fish ( Lateolabrax japonicus ). The depletion of the six OUVs follows first-order kinetics in the microsomes, with in vitro depletion rate constants ( k depl ) ranging from 0.23 to 0.40/h. The intrinsic clearance ( CL int ) of 1H-benzotriazole (BT) was estimated to be 0.0026 μ L/(min·mg·protein). The enzyme inhibition experiments and molecular docking results highlight the importance of cytochrome P450 enzyme (CYP) 3A4 in OUVs metabolism. Among the 4 metabolizable compounds, some metabolites from hydroxylation, methylation, acetylation and conjugation were tentatively identified. In addition, the in vitro transformation rates can more accurately predict the whole-body bioconcentration potential via an in vitro to in vivo extrapolation (IVIVE) model.

This study aimed to investigate the impacts of the extent of reheating (75 ℃, 0–30 min) on the quality characteristics of pasteurized fish cutlets varying with refrigerating duration (0 ℃, 0–7 d), particularly those linked to protein deterioration and lipid oxidation. A progressive decline in the quality of pasteurized fish cutlets during 7-day refrigeration was observed, while more intensive reheating resulted in higher degrees of oxidation, hydrolysis and glycation of fish proteins, as demonstrated by the decrease in tryptophan fluorescence intensity and the increases in the levels of trichloroacetic acid-soluble peptides and total fluorescent advanced glycation end-products. A longer storage duration of pasteurized fish cutlets resulted in more thiobarbituric acid reactive substances (TBARS, from 0.172 ± 0.052 to 1.391 ± 0.084 mg malondialdehyde /kg) but less lipofuscin-like pigments (from 1039 ± 152 to 684 ± 187 AU), while reheating of pasteurized fish generally resulted in reduced levels of TBARS but increased levels of lipofuscin-like pigments. These somewhat opposite results based upon two lipid oxidation markers indicated the complexity of lipid oxidation and the dynamic changes of lipid oxidation products in biomatrix food systems during thermal processing and storage. Correlation analysis revealed the intertwining of protein oxidation, hydrolysis and glycation as well as lipid oxidation in pasteurized fish cutlets during refrigeration and reheating, collectively contributing to the decline in product quality.

Flexible pressure sensors have broad application prospects in the field of human vital sign monitoring. However, the challenge of achieving excellent performance while maintaining low cost and energy consumption remains a bottleneck in further expanding their application. This study endeavors to tackle the challenge by improving the performance of flexible poly(L-lactic acid) (PLLA) piezoelectric sensors and fabricating the encapsulation layer with a fish-scale microstructure (FSm) via the Digital Light Processing (DLP) technique. The FSm sensor presented herein exhibits a high sensitivity of 24.54 mV·kPa −1 and excellent linearity (R 2 > 0.99) in the low-pressure range (<20 kPa), with an optimal parameter design (200 µm distance and 400 µm height) of the microstructure. As a result, a 477% increase in sensitivity is obtained compared to conventional PLLA sensors. Simulation analyses are conducted to evaluate the impact of fish-scale orientation on the detection of human swallowing signals. The physiological pressure signals associated with the swallowing process are recorded using the FSm sensor in a wearable format. Moreover, the interference (additional) of vibration signals is effectively eliminated through further voice tests. The results indicated that FSm sensors hold promise for human swallowing health monitoring and action recognition, offering a novel approach to the treatment of swallowing disorders.

Molecular weight (MW), tripeptide proportion (TP), and amino acid composition are critical parameters that influence the functional properties and flavor of peptides used in collagen beverages. This study evaluates three detection methods for analyzing MW and TP parameters in two oligopeptide products (Mw < 1 kDa): collagen peptides (CP) and collagen tripeptides (CTP). Additionally, the stability of a chromatographic protocol was validated. For CTP characterization, we innovatively constructed multi-index quantitative models of hydroxyproline (Hyp), Gly-Pro-Hyp (GPH), and TP, and proposed a standardized improvement scheme for TP calculated with Mp < 500 Da (Mp, peak molecular weight). Peptide profiles were identified by UHPLC-Q-Orbitrap-MS 2 , and the amino acid distribution was visually depicted by Seqlogo. The frequency statistics of amino acids in N- and C-terminal, combined with free amino acids and flavor profiles, were used for multimodal correlation analysis. The results indicate that compared with CP, CTP with lower MW and higher GPH exhibited stronger odors of sulfides, aldehydes, and ketones, and enhanced umami and saltiness, despite having similar peptide distribution and high-frequency hydrophobic amino acids at both terminals (Pro, Gly, Leu, Val, Ser, and Phe). These advances in methods not only provide technical standards for industrial production but also provide a theoretical framework for quality optimization and flavor of peptide-based foods.

Traditional plastic packaging materials have brought serious environmental pollution and a number of health risks; so the development of biodegradable polymers as an alternative has received increasing attention. Here, active packaging materials with antioxidant, antimicrobial, and biodegradable properties were prepared using poly(lactic acid) (PLA) and chitosan loaded with quercetin. The experimental results demonstrate that the PLA/chitosan/quercetin film achieved an impressive ABTS radical scavenging rate of up to 98.2%, and the inhibition rates against Gram-negative (E. coli) and Gram-positive (S. aureus) bacteria were 87.60% and 80.45%, respectively. Furthermore, the composite film exhibited excellent oxygen barrier properties and biodegradability. Shelf life tests demonstrate that the PLA/chitosan/quercetin film retarded fish spoilage by 2 days compared to commercial polyethylene film. Additionally, the color changes in the film showed significant correlation with fish freshness, serving as an effective freshness indicator. Therefore, the PLA/chitosan composite film containing quercetin has a good application prospect in fish preservation and intelligent monitoring of fish freshness.

The development of highly specific rapid detection method for antibiotics residue was critically imperative in complex environmental samples was due to its environmental and health risk. Here, a highly specific biomimetic Fe 3 O 4 @SiO 2 -formylphenylboronic acid molecular imprinted polymer (FS-FPBA MIP) was constructed, which was coupled with gold nanoparticle-based colorimetric sensor, for rapid detection of antibiotics Kanamycin (Kana) in fish pond. Firstly, a boronate affinity-controlled oriented surface imprinting strategy was employed to immobilize Kana as the template molecule onto a Fe 3 O 4 @SiO 2 substrate functionalized with boronic acid, resulting in a MIP layer with a well-defined thickness. Subsequently, when NaCl and Kana sample were added to gold nanoparticles (AuNPs), the FS-FPBA MIP specifically recognized Kana. Accordingly, the color of AuNPs solution quickly changed from wine red to dark blue due to charge shielding and charge neutralization effects. By taking a photo with a smartphone and using the software “Color Identifier” to read the RGB data, a rapid visual detection of Kana was achieved. The FS-FPBA MIP-colorimetric sensor exhibited a desirable linear response for Kana in the concentration range of 0-150 nM, with a low detection limit of 4.3 nM (3 σ / k ). Finally, the magnetic FS-FPBA MIP was successfully applied for selective extraction and colorimetric detection of different Kana samples in pond water, sediment, and surrounding soil with the relative recoveries ranging from 90.03% to 104.53%. This highly specific enrichment and visual sensor offered a promising biomimetic recognition platform for rapid detecting antibiotic residues.

An 8-week feeding trial was conducted to evaluate the effect of fish-meal replacement on growth performance, protein synthesis and immune response of juvenile Pacific white shrimp, Litopenaeus vannamei reared at low salinity (7‰). Five isonitrogenous and isolipidic diets were formulated to contain graded levels (25, 20, 15, 10 and 5%) of fish-meal. High quality alternative solutions were performed, crystalline amino acids, phytase, mannan oligosaccharides and some micro-nutrients were supplemented in the low fish-meal diets. Each diet was randomly assigned to triplicate tanks, each tank with 30 shrimp (mean weight 0.3 g), the shrimp were fed 3 times a day. Weight gain and survival were decreased with the decreasing dietary fish meal levels. When dietary fish-meal decreased, the gene expression of TOR, Raptor and eIF4E2 in hepatopancreas were decreased with the decreasing fish meal levels, eIF4E2 in intestine was decreased while 4E-BP was increased with the decreasing fish meal levels. The mRNA level of SOD in hepatopancreas decreased, and the expression of GPx and CAT increased with the decreasing FM levels. The Toll pathway was affected by dietary FM levels, the expression of Toll2, TNFSF, MyD88, Rho and p38 in intestine were increased with the decreasing FM levels. The results indicated that at low salinity condition, fish meal level lower than 15% would inhibit the protein synthesis and harm to the health of shrimp.

A water-soluble inclusion complex for butachlor was prepared by complexation with (2-hydroxypropyl)-β-cyclodextrin (HP-β-CD). Phase solubility results indicated a 1:1 stoichiometric ratio with an apparent stability constant of 864.3 M–1 in the obtained solid complex. The formation of the complex was confirmed by 1H nuclear magnetic resonance, Fourier transform infrared, and differential scanning calorimetry spectra. Coupled with the molecular docking results, butachlor was considered to be completely included in HP-β-CD cavity. Butachlor complexation with HP-β-CD decreased its adsorption capacity and enhanced its mobility in soil. The inclusion complex displayed better herbicidal activities than free butachlor. The 96 h median lethal concentration values of the inclusion complex and free butachlor was 2.30 and 0.65 mg L–1, respectively, for zebrafish, indicating that the complexation could significantly reduce toxicity to fishes. The present study provides an approach to develop environment-friendly formulations using CDs for herbicides.

To find a suitable medium for muscle satellite cells ofLarimichthys crocea, herein, the effect of different basal media and coating materials on the proliferation of piscine satellite cells (PSCs) was explored. Firstly, two basal media, namely F10 and DMEM/F12, were selected as experimental materials, and high-sugar DMEM was the main basal culture medium used with fish muscle cells as a control. The results showed that the PSCs proliferated better in F10 than in DMEM/F12 or DMEM. Secondly, the effects of rat tail collagen, polylysine and matrix coatings, as compared with no coating, on the proliferation and later differentiation of PSCs were also investigated. Our results indicated that there was no significant difference between coating and no coating on the proliferation of PSCs in the F10-based medium. Meanwhile, it was found that the myotubes were washed out, and only those under matrix-coated conditions remained intact in the process of differentiation. The results also suggested that PSCs could still differentiate into myotubes without their stemness being affected after proliferation in the F10-based medium. Hence, this study identified an efficient proliferation medium based on F10 basal medium that could shorten the culture time and maintain the stemness of PSCs, thus providing a basis for large-scale cell expansion and cell-culture-based meat production in the future. Keywords:different basal media;coating materials;proliferation;piscine satellite cells;differentiation;cell culture meatKey Contribution:In this study, we obtained an efficient medium for the rapid proliferation and maintained cell stemness of muscle satellite cells fromLarimichthys croceafor the first time; this can be used in large-scale industrial production.

A universal surface-enhanced Raman scattering (SERS) substrate with tuneable plasmonic behaviour and long-term stability was synthesized and characterized, and the substrate was applied in the sensitive detection of fungicide malachite green (MG) in fish fillets. Temperature-responsive poly (N-isopropyl acrylamide) (pNIPAM) template and anisotropic Au nanorods (NRs) were synthesized to prepare pNIPAM @ Au NRs nano-hybrids with dynamically optical and SERS properties and high stability. Results showed that excitation wavelength-dependent SERS efficiency could be tailored by temperature-induced swelling and collapse of the nano-hybrids, thus anticipated optical and SERS properties of the composites could be obtained. Furthermore, the SERS performance, uniformity, long-term stability analysis, and MG in fish evaluation showed that the detection of MG in fish tissues was realized with a limit of detection of 1.58 × 10 −9 M (0.73 ng/g), and the pNIPAM @ Au NRs composites could serve as effective SERS substrates allowing trace level detection of contaminants for the food industry.
