Drying methods on fruit quality and antioxidant activity of two rare edible fungi (Dictyophora rubrovolvata and Phallus impudicus L.)

Huijuan Liu,Dong Xiang,Zhifei Cheng,Lin Ma,Shuyu Yang,Jiao Xie

Fresh D . rubrovolvata and P . impudicus are perishable due to their high water content and strong postharvest respiration, which seriously affect their edible value and economic benefits. Drying performs the crucial role in maintaining the quality of edible fungi and extending their shelf life, while the extraction method after drying is also important to the material composition and functional properties of edible fungi. According to the color difference and texture indicators, 45 °C was found to be the optimal temperature choice for both hot-air and vacuum drying. In addition, polysaccharide content in the extract of dried D . rubrovolvata was higher than that of P . impudicus, while the polyphenol abundance in the extract of dried P . impudicus was better than that of D . rubrovolvata. Hot water extraction or thermal ultrasonic treatment was beneficial for the antioxidant activity in D . rubrovolvata and P . impudicus extracts. Based on the correlation analysis, it was showed that polyphenols contributed significantly more to the antioxidant capacity of D . rubrovolvata and P . impudicus, especially P . impudicus, than that of polysaccharides. The related results provided new insights into the improvement of product quality and the development of functional products for D . rubrovolvata and P . impudicus.

Magnetically actuated pandanus fruit-like nanorobots for enhanced pH-stimulated drug release and targeted biofilm elimination in wound healing

Zixin Zhu,Chenjun Huang,Laiyi Liu,Jiayi Wang,Xue Gou

Conventional antibiotic treatment struggles to eliminate biofilms in wounds due to the formation compact barrier. Herein, we fabricate magnetic pandanus fruit-like nanorobots (NRs) that function as drug carriers while exhibit excellent maneuverability for enhanced antibacterial tasks. Specifically, zeolitic imidazolate framework-8 (ZIF-8) is self-assembled on the surface of Fe 3 O 4 nanoparticles , loaded with a small quantity of ciprofloxacin , and covered with a layer of polydopamine (PDA). Energized by external magnetic fields , the NRs (F@Z/C/P) are steered in defined direction to penetrate the infection tissues, and effectively arrive targeted areas for pH stimulated drug release and near-infrared triggered phototherapy, contributing to an antibacterial rate of >99.9 %. The Zn 2+ in ZIF-8 and the catechol group in PDA form catechol-ZIF-8-drug structures, which effectively reduce drug release by 11 % in high pH environments and promote rapid drug release by 14 % in low pH environments compared to NRs without PDA. Additionally, F@Z/C/P can remove the biofilms and bacteria in Staphylococcus aureus infected wounds, and eventually be discharged from the infected site after treatment, leading to faster healing with an intact epidermis and minimal harm to surrounding tissues and organs. The study provides a promising strategy for tackling biofilm-associated infections in vivo through the use of multi-functional NRs.

Unlocking dual-mode enzyme activities on bacterial surface: Directional recognition and swift capture of Alicyclobacillus acidoterrestris from fruit juices

Bingzhi Li,Kun Cheng,Pengyu Chen,Linpin Luo,Liang Zhang,Ting Du,Tong Zhang,Qingqing Li,Yiyue Ma,Jing Sun,Maojun Jin,Jianlong Wang,Yiping Chen

The acidophilic and heat-resistant characteristics of Alicyclobacillus acidoterrestris ( A. acidoterrestris ) pose significant challenges to fruit juice production. Traditional thermal removal methods are often ineffective against this resilient bacterium. To address this issue, we developed a novel adsorbent, magnetic carbonation carbon-lysozyme nanohybrid (MCL), composed of magnetic nanoparticles with a thin carbon shell and covalently grafted lysozyme. The outer lysozyme facilitates binding to the bacterial surface through two modes: electrostatic attraction and chemical interaction, acting as a vital engine for bacterial adhesion. The ultrathin carbon coating enhances dispersion, reduces magnetic loss, provides more adsorption sites for lysozyme grafting, and ensures stable function in acidic environments. Benefiting from the large surface area of MCL and the specific peptidoglycan recognition structure of lysozyme, MCL exhibits rapid adsorption kinetics and can completely remove 10 4 CFU/mL of A. acidoterrestris from juice within 20 min. The MCL demonstrates excellent capture performance, negligible cytotoxicity, and no significant impact on juice quality, offering a promising non-thermal strategy to improve juice safety.

Structural analysis and in vitro fermentation characteristics of an Avicennia marina fruit RG-I pectin as a potential prebiotic

Jinwen Huang,Huiqi Wang,Huaqun Chen,Zidong Liu,Xuedong Zhang,Hao Tang,Shiying Wei,Wangting Zhou,Xinzhou Yang,Yonghong Liu,Longyan Zhao,Qingxia Yuan

Avicennia marina (Forssk.) Vierh. is a highly salt-tolerant mangrove, and its fruit has been traditionally used for treating constipation and dysentery . In this study, a pectin (AMFPs-0-1) was extracted and isolated from this fruit for the first time, its structure was analyzed, and the effects on the human gut microbiota were investigated. The results indicated that AMFPs-0-1 with a molecular weight of 798 kDa had a backbone consisting of alternating →2)-α-L-Rha p -(1→ and →4)-α-D-Gal p A-(1→ residues and side chains composed of →3-α-L-Ara f -(1→-linked arabinan with a terminal β-L-Ara f , →5-α-L-Ara f -(1→-linked arabinan, and →4)-β-D-Gal p -(1→-linked galactan that linked to the C-4 positions of all α-L-Rha p residues in the backbone. It belongs to a type I rhamnogalacturonan (RG-I) pectin but has no arabinogalactosyl chains. AMFPs-0-1 could be consumed by human gut microbiota and increase the abundance of some beneficial bacteria, such as Bifidobacterium , Mitsuokella , and Megasphaera , which could help fight digestive disorders . These findings provide a structural basis for the potential application of A. marina fruit RG-I pectic polysaccharides in improving human intestinal health.

On-site visual detection of patulin in fruit juice via FRET ratiometric sensor utilizing portable device integrated with smartphone

Tianlin Wang,Meijun Lu,Yanbing Shen,Qinqing Han,Songming Wang,Tongyao Li,Tiange Li,Xianqing Huang,Libin Wan,Lianjun Song

Excessive levels of penicillin (PAT) in fruit juice pose significant risks to food safety and human health. In this study, a ratiometric fluorescence sensor with on-site visualization detection capability had been developed for PAT detection based on Förster resonance energy transfer (FRET) in this study. This strategy utilized MIL-101(Cr) with a wide absorption peak as the energy acceptor, while nitrogen/sulfur-doped graphene quantum dots (N,S-GQDs) conjugated with PAT aptamer with stable blue fluorescence serves as the energy donor, triggering the FRET effect and quenching the blue fluorescence. When exposed to PAT, the aptamer preferentially binded to PAT, separating the donor and acceptor, thereby interrupting the FRET effect and recovering the blue fluorescence. Assisted by the red internal reference fluorescence of gold clusters (AuNCs), the fluorescence changes were observed from red to blue with the concentration range of 0.01–300 ng/mL of PAT and a low limit of detection at 3.29 pg/mL. More importantly, a portable detection device integrated with smartphone was designed for on-site visual PAT detection with satisfactory results. This strategy could provide new opportunities for on-site qualitative and quantitative detection of PAT in actual foods.

Tannic acid crosslinked chitosan/gelatin/SiO2 biopolymer film with superhydrophobic, antioxidant and UV resistance properties for prematuring fruit packaging

Huanyang Yu,Yan Wang,Rundong Wang,Yuan Ge,Liyan Wang

The environmental pollution caused by plastic films urgently requires the development of non-toxic, biodegradable, and renewable biopolymer films. However, the poor waterproof and UV resistance properties of biopolymer films have limited their application in fruit packaging. In this work, a novel tannic acid cross-linked chitosan/gelatin film with hydrophobic silica coating (CGTS) was prepared. Relying on the adhesion of tannic acid and gelatin to silica, the coating endows CGTS film with excellent superhydrophobic properties. Especially, the contact angle reaches a maximum value 152.6°. Meanwhile, tannic acid enhanced the mechanical strength (about 36.1 %) through the forming of hydrogen bonding and the network structure. The prepared CGTS films showed almost zero transmittance to ultraviolet light and exhibited excellent radical scavenging ability (∼76.5 %, DPPH). Hence, CGTS film is suitable as a novel multifunctional packaging material for the agriculture to protect premature fruits, or the food industry used in environments exposed to ultraviolet radiation and rainwater.

Multi-layered gradient-structured TPU/CNTs aerogel with ultra-wide pressure detection capabilities for machine learning–assisted fruit recognition

Zhang Minyue,Liu Si,Liu Shun,Jia Gaoen,Zhan Pengfei,Liu Chuntai,Shen Changyu,Liu Hu

In recent years, as wearable electronics continue to advance toward flexible, lightweight, and versatile designs, flexible pressure sensors with wide response ranges and high sensitivity have shown tremendous research value and application potential. In this study, we fabricated TPU-based flexible pressure sensors with a multistage gradient porous structure using layer-by-layer freezing and solvent templating techniques. Due to the layered differences in Young’s modulus from varying porosities, these sensors exhibit high pressure sensitivity ( S , S MAX  = 34.08 MPa −1 ) and can accurately distinguish stresses across a wide range (0–1.2 MPa). Additionally, they demonstrate rapid response and recovery times (140 ms), durability over 3000 compression cycles, and the ability to detect both subtle movements (facial expressions and swallowing) and larger actions (joint bends, walking, and running). Furthermore, we developed a smart glove using these gradient-structured pressure sensors combined with a K-nearest neighbor (KNN) algorithm, enabling accurate identification of various fruit types. Notably, the TPU sensors also exhibit excellent thermal insulation and Joule heating properties, making them effective for human thermal management even in extreme temperatures.

Effects of different extraction methods on the trace components and volatile composition, antioxidant activity of Idesia polycarpa fruit oil

Zhang Dunhe,Peng Xiaowei,Chen Huijing,Tan Chuanbo,Wang Zhirong,Kan Jianquan

This study evaluated the effects of five extraction methods (fresh pressing, cold pressing, hot pressing, solvent extraction, and aqueous extraction) on the quality of Idesia polycarpa oil (IPO). The results revealed that the solvent–extracted oil (SEO) exhibited the highest efficiency. However, the fresh–pressed oil (FPO) exhibited outstanding quality characteristics. Specifically, the acid value and peroxide value of FPO were the lowest, and the retention rate of beneficial trace components such as α –tocopherol, squalene, β –sitosterol, stigmasterol, and carotenoids were rather prominent. It is worth noting that the five IPOs were similar in fatty acid composition and content (all rich in unsaturated fatty acids mainly composed of linoleic acid). Through analysis of volatile components and Orthogonal Partial Least Squares–Discriminant, 14 key biomarkers were identified. There were significant differences in the antioxidant capacity of five IPOs, and the aqueous–extracted oil (AEO) stands out the most, indicating that AEO is more effective at resisting radicals produced during oxidation. In conclusion, this study offers valuable data references for selecting extraction processes rationally in the oil industry. Graphical abstract

Preparation of amphiphilic chitosan incorporated with ursolic acid active coating films and its delay of postharvest papaya fruit ripening

Fengyan Liang,Jinwen Geng,Ziming Yang,Wanqi Cen,Miaoyu Zhao,Xunting Huang,Changbin Wei,Puwang Li,Kaidong Liu

Amphiphilic chitosan (DA-CS-AG) was synthesized and incorporated with ursolic acid (UA) to develop an active coating film. Characterization techniques confirmed the preparation of DA-CS-AG, and UA was successfully entrapped in the active coating films. With the weight ratios of UA to DA-CS-AG increasing from 1:20, 2:20–4:20, the coating films exhibited increased thickness, improved water resistance, higher tensile strength, and enhanced antioxidant and antibacterial properties. As the UA/DA-CS-AG weight ratio increased from 1:20–2:20, the films ’ UV-shielding capability, water vapor barrier properties, and elastic properties increased. However, these properties deteriorated when the weight ratio increased to 4:20. Preservation experiments of papaya fruits demonstrated that UA/DA-CS-AG-2 coating films delayed the ripening of papaya at 25 º C for 16 days based on appearance, color changes, quality indexes, and sensory evaluation. In conclusion, these active coating films can serve as packaging materials for fruits and vegetables.

The impact of S. cerevisiae strains on the aroma profile and physicochemical properties of Phyllanthus emblica L. fruit wine

Haibin Yuan,Yanlin Li,Jianhang Tu,Tianyang Wang,Kaixian Zhu,Hongfeng Jia,Huachang Wu,Ping Dong

Since the key aroma compounds and bioactive profiles of Phyllanthus emblica fruit wine (PFW) driven by different yeast strains remain unclear, this study aimed to systematically evaluate the effects of five Saccharomyces cerevisiae strains on physicochemical properties, bioactive components, and volatile organic compound (VOC) profiles in PFW. Using an integrated flavoromics approach with chemometric analysis, we identified 110 VOCs. FR and D254 enhanced ester concentrations and antioxidant activity respectively, whereas strain L2323 significantly altered aroma complexity by promoting specific esters and alcohols. Multivariate analyses identified methyl nitrate and n-propyl acetate as discriminant markers among strains. Aroma-activity analyses further highlighted ethyl hexanoate, isoamyl acetate, and n-propyl acetate as major aroma contributors with distinctive strain-dependent distributions. These findings provide critical guidance for yeast strain selection and fermentation optimization to improve PFW quality, offering new insights for the development of functional fruit wines.

Visible light-responsive amine-rich porous g-C3N4-chitosan/PBAT bilayer film with high antibacterial activity for fruit preservation

Xiaokang Jiang,Shujun Liu,Mengting Zhang,Zhaoning Xu,Zhengkun Yu,Yuying Ma,Guoliang Liu,Enlong Zhou,Hai Fan,Shuhua Zhu

Eutrophic fruits tend to deteriorate after harvest due to suffering from dehydration, microbial infection, and senescence. Therefore, the development of multifunctional preservation material is crucial to resist these alterations. In this study, well designed amino-rich porous carbon nitride (APCN) with excellent photocatalytic antimicrobial performance was first infused into the biodegradable chitosan (CS) matrix to obtain photoactive film (APCN-CS). Then the photoactive film was further casting onto the surface of poly (butylene terephthalate- co -glycol terephthalate) (PBAT) to fabricate APCN-CS/PBAT bilayer film with improved water-blocking performance. The design of the bilayer film aimed to integrate the water-blocking properties of PBAT film with the excellent photocatalytic antibacterial properties of APCN-CS film, thereby achieving synergistic advantages to prolong the shelf life of fruits. The incorporation of 5 % APCN displayed excellent photocatalytic killing performance against Escherichia coli ( E. coli ) and Staphylococcus aureus ( S. aureus ) under visible light irradiation, with the bactericidal efficiency up to 99.96 % and 99.75 %, respectively. Also, the film exhibits excellent antibacterial activity against fungi. The excellent antimicrobial performance could be attributed to the capturing effect of CS towards bacteria and production of reactive oxygen species (ROS) from APCN. Moreover, after decorating the APCN-CS film with PBAT layer, the bilayer films are tightly connected without any delamination owing to the strong hydrogen bonding interaction, presenting significant improvements in both mechanical strength and water-blocking performance. As a result, preservation experiments demonstrated that the APCN-CS/PBAT bilayer film could effectively extend the shelf life of mango. This research provides new insights for the prevention of fruit spoilage in food industry.

Shuo Shi,Jianxing Feng,Yanmin Liang,Hao Sun,Xuewei Yang,Zehui Su,Linpin Luo,Jianlong Wang,Wentao Zhang

Quantitative evaluation of the antioxidant capacity of foods is of great significance for estimating food’s nutritional value and preventing oxidative changes in food. Herein, we demonstrated an easy and selective colorimetric method for the total antioxidant capacity (TAC) assay based on 3,3’,5,5’-tetramethyl-benzidine (TMB), hydrogen peroxide (H2O2) and syntheticLycium barbarumpolysaccharide-iron (III) chelate (LBPIC) with high peroxidase (POD)-like activity. The results of steady-state kinetics study showed that the Kmvalues of LBPIC toward H2O2and TMB were 5.54 mM and 0.16 mM, respectively. The detection parameters were optimized, and the linear interval and limit of detection (LOD) were determined to be 2–100 μM and 1.51 μM, respectively. Additionally, a subsequent study of the determination of TAC in six commercial fruit and vegetable beverages using the established method was successfully carried out. The results implied an expanded application of polysaccharide-iron (III) chelates with enzymatic activity in food antioxidant analysis and other biosensing fields. Keywords:total antioxidant capacity (TAC);peroxidase;polysaccharide-iron complex;steady-state kinetics;Lycium barbarumpolysaccharide (LBP)
