Antioxidant synergistic effects of Osmanthus fragrans flowers with green tea and their major contributed antioxidant compounds

Mao Shuqin,Wang Kaidi,Lei Yukun,Yao Shuting,Lu Baiyi,Huang Weisu

The antioxidant synergistic effects of Osmanthus fragrans flowers with green tea were evaluated, and their major antioxidant compounds contributed to the total amount of synergy were determined. The antioxidant compounds in O. fragrans flowers with green tea were identified by LC-MS and quantified by UPLC-PDA. The synergistic antioxidant interactions between O. fragrans flowers with green tea and their antioxidant compounds were tested using the Prieto’s model after the simulated digestion. The main antioxidant compounds in O. fragrans flowers were acteoside and salideroside, whereas the main antioxidant compounds in green tea were caffeine, gallic acid, and L-epicatechin. The significant synergistic effect between O. fragran s flowers and green tea was observed and among nearly all of the combinations of their antioxidant compounds. Among the combinations, acteoside and gallic acid contributed most to the antioxidant synergy between O. fragrans flowers and green tea. However, the simulated digestion decreased this antioxidant synergy because it reduced the contents and the antioxidant capacities of their compounds, as well as the antioxidant synergy among the compounds.

Medicinal plant acid-treatment for a healthier herb tea and recycling of the spent herb residue

Hong-Wen Gao,Dong-Dong Ma,Gang Xu

Many kinds of medicinal plants are used in the treatment of disease, and a proportion of these plants grow tenaciously in soils contaminated with heavy metals. An example of one such medicinal plant is the herb Thlaspi rotundifolium L., which accumulates selenium (Se), and has anti-oxidation, anti-aging, anti-cancer and immunity-adjusting properties, but also simultaneously hyperaccumulates harmful metals such as Cd and Zn from the soil. An interesting model named ‘digging metals@plant then backfilling’ has been suggested, where the metals are removed from the plant by acid treatment, then the nano-pores imprinted with the heavy metals are backfilled from the drinking water. Experimental studies of this idea indicate that it can remove unwanted substances from the herb itself and also from the drinking water, ensuring the safety of the herb tea. Additionally, the Se normally embedded in the herb was not noticeably lost. Thus, this model provides a sustainable solution for the disposal of heavy metals using metal-accumulating plants.

Impact of carboxymethyl cellulose on mucin-tea polyphenol interactions: insights into protein-polysaccharide-polyphenol ternary systems

Yi Li,Yuehong Liu,Kexian Chen,Shan Huang,Yue Zhang

Mucin-TP binding is dominated by hydrogen bonding and van der Waals forces. • CMC does not appear to alter the mucin-TP interaction mode. • CMC likely weakens mucin-TP interaction binding via competitive and steric effects. • CMC with High MW, low DS show stronger inhibition on mucin-TP at acidic pH. Polysaccharides and polyphenols frequently coexist in food systems and are consumed simultaneously, yet how these interactions influence polyphenol behavior in the gastrointestinal tract remains insufficiently understood. In this study, the effects of carboxymethyl cellulose (CMC) with different concentrations, molecular weights and degrees of substitution on mucin-tea polyphenol (TP) interactions were systematically investigated. Turbidity and zeta-potential measurements indicated that the addition of CMC reduced aggregation of mucin-TP complexes and increased the negative surface charge. Fluorescence spectroscopy further showed that CMC weakened TP-induced quenching of mucin intrinsic fluorescence, suggesting competitive interactions or conformational interference. Thermodynamic analysis suggested that TP-mucin binding was likely driven primarily by hydrogen bonding and van der Waals forces. Although CMC did not alter the apparent interaction mode, it significantly decreased the binding affinity, particularly under acidic conditions simulating the gastric environment. Moreover, the inhibitory effect became stronger with increasing molecular weight and decreasing degree of substitution of CMC. Molecular docking supported these results, revealing that CMC may compete for mucin binding sites or directly interact with TP molecules. These findings provide molecular-level insights into how food polysaccharides modulate mucin-polyphenol interactions and contribute to a better understanding of the factors affecting interaction behaviors of polyphenols and their gastrointestinal bioavailability. This study may offer useful implications for designing polysaccharide-based delivery or modulation systems for dietary polyphenols in food and health-related applications.

Sensomics-Assisted Characterization of Key Flowery Aroma Compounds in Lu’an Guapian Green Tea Infusion (Camellia sinensis)

Jieyao Yu,Chi-Tang Ho,Zhi Lin,Yin Zhu,Zhihui Feng,Dejiang Ni,Shengchun Zeng,Xuehong Zeng,Yijun Wang,Jingming Ning,Liang Zhang,Xiaoting Zhai,Xiaochun Wan

The volatile fraction was isolated from the premium and common grade of Lu’anGuapian green tea infusion by solvent-assisted flavor evaporation distillation. With the application of aroma extract dilution analysis, a total of 52 aroma-active compounds were revealed in the flavor dilution (FD) factor area of 32-8192. Besides, five additional odorants with higher volatility were identified using solid-phase microextraction. The aroma profiles, FD factors, and quantitative data of premium Guapian (PGP) and common Guapian (CGP) showed apparent differences. The intensity of the flowery attribute was significantly higher in PGP than in CGP, while cooked vegetable-like was the most outstanding odor note in CGP. The recombination experiment and the omission test of PGP clarified that dimethyl sulfide, (E,E)-2,4-heptadienal, (E)-β-ionone, (E,Z)-2,6-nonadienal, 2-methylbutanal, indole, 6-methyl-5-hepten-2-one, hexanal, 3-methylbutanal, γ-hexalactone, methyl epijasmonate, linalool, geraniol, and (Z)-3-hexen-1-ol were the key odorants of PGP tea infusion. The omission and addition tests of flowery odorants manifested that (E)-β-ionone, geraniol, and (E,E)-2,4-heptadienal, with higher odor activity values in PGP than in CGP, contributed to the flowery attribute most. The difference in the concentration of the abovementioned odorants with flowery odor notes could be one of the main factors which led to the difference in aroma quality between the two grades of Lu’an Guapian.

Tea polyphenol radical scavenger loaded UV absorber for corrosion resistant and weathering resistant epoxy coating fabrication

Jinke Wang,Lingwei Ma,Xiaolun Ding,Haowen Xu,Yue Wang,Miao Zhao,Chenhao Ren,Dawei Zhang

In this study, a robust coating with enhanced corrosion resistant and weathering resistant properties was developed by incorporating novel UV resistant fillers into epoxy matrix. Tea polyphenol (TP) functioned as the free radical scavenger, which was encapsulated into mesoporous silica nanoparticles with UV absorption ability (MSN-TP) to obtain the UV resistant filler. With the incorporation of 2 wt% MSN-TP fillers in the epoxy matrix, the uniform distribution of MSN-TP nanoparticles could block the penetration of corrosive media and hence strengthening the barrier property of the coating. Moreover, the free radical scavenging ability of TP and the UV shielding effect of MSN functioned simultaneously to alleviate the weathering degradation of epoxy coating, which exhibited stabilized surface properties (including macro and micro morphology, FTIR , CLSM , gloss, and WCA) and good barrier performance during accelerated weathering exposure test. Such a robust EP/MSN-TP coating can considerably prolong the long-term protection during outdoor service life.

Analysis of volatile emission of tea (Camellia sinensis) shoots in response to temperature-dependent postharvest treatments

Die Hu,Wei Chen,Aiqing Miao,Xiaoyan Qiao,Hongling Xia,Chengying Ma

Volatile blends contain numerous information about the emitters. Volatile organic compounds (VOCs) have been used as biomarkers to monitor agri-products’ state during postharvest management. We placed tea shoots at 15 °C or 25 °C after plucking and wondered if the emitted VOCs may reflect the freshness of these plucked tea shoots or differentiate tea shoots experiencing different postharvest treatments . Headspace solid-phase microextraction combined with gas chromatography-mass spectrometry was applied in this research to profile volatiles that were released from plucked tea shoots. Twenty-nine VOCs were found from all tea shoots samples, and the composition of released VOCs varied under different temperatures. Assessed by PLS-DA and two-way ANOVA, fourteen volatiles were selected as putative markers. All the markers were detected under the low-temperature condition, but not under the room-temperature condition. Transcriptome analysis showed that low temperature caused less variation in gene expression compared to room temperature. Many genes in volatile biosynthetic pathways had similar expression trends in either condition, while some changes occurred with a delay in the low-temperature environment. The study advances the understanding of the physiological changes of tea shoots subjected to temperature-dependent postharvest treatments .

The Effect of Guisangyou Tea on Abnormal Lipid Metabolism in Mice Induced by High-Fat Diet

Yan Zhu,Xianghui Zhou,Nan Ling,Qiming Yu,Huijuan Wang,Qizhen Du

This study was aimed to investigate the effect of Guisangyou tea (GSY tea) in improving abnormal lipid metabolism in mice with obesity induced by a high-fat diet (HFD). The results showed that intervention of the water extract of GSY tea (WE) decreased serum levels of lipids, and positively regulated the related antioxidant enzyme activities and the inflammatory factors in the serum and liver. In the liver, the mRNA and protein expression levels of sterol regulatory element-binding proteins-1 (SREBP-1), stearoyl-CoA desaturase-1 (SCD-1), fatty acid synthase (FASN), and acetyl CoA carboxylase (ACC) related to lipid synthesis were downregulated, and the mRNA and protein expression levels of the farnesoid X receptor (FXR) and small heterodimer partner (SHP) related to bile acid production were upregulated. The results demonstrate that GSY tea can improve abnormal lipid metabolism in obese mice by improving the body’s antioxidant capacity, regulating the inflammatory state, and reducing the synthesis of lipids and increasing the production of bile acids. GSY tea can be processed and utilized as a safe and effective resource for improving abnormal lipid metabolism. Keywords:Guisangyou tea;lipid metabolism;obesity;inflammation

Comprehensive analysis of environmental factors on the quality of tea (Camellia sinensis var. sinensis) fresh leaves

Wei Ran,Qinghui Li,Xinlong Hu,De Zhang,Zhi Yu,Yuqiong Chen,Mingle Wang,Dejiang Ni

“High mountain, cloud and mist produce high-quality tea”; however, the specific mechanism has not been fully understood. To explore the influence of environmental factors on the quality of tea fresh leaves, we firstly selected the same variety of tea plant growing at different altitudes in Xuan'en County, China. And then, based on the analyses of the physical and chemical properties of the soil where they grew, we comprehensively analyzed the composition and content of volatile and non-volatile substances in these tea fresh leaves harvested from 27 sampling sites. The relative contents of linalool and its oxides I and II, phenylethanol and nerol in paddy soil were higher than those in red soil and yellow soil, but the contents of acids and esters were significantly lower than those in other soils ( P < 0.05). Benzoic acid content and palmitic acid content are relatively high in red soil and yellow soil, respectively. The amino acid content of tea fresh leaves produced in paddy soil is significantly lower than that in red soil and yellow soil, while the contents of catechins and flavonol glycosides were significantly higher than that in other soils ( P < 0.05). The relative contents of EGCG, ECG and C in paddy soil were significantly higher than those in yellow soil and red soil. The content of alkaloids in red soil is high. With the increase of altitude, the content of amino acids gradually increased, and the catechins content showed a trend of first decreasing and then increasing; the phenolic acid content changes in accordance with catechins with the elevation; the flavonoids content (alcohols) glycosides did not change obviously in each altitude range. These results are helpful for us to fully understand the influence of environmental factors on the quality of fresh tea leaves.

Effects of processing methods on quality, antioxidant capacity, and cytotoxicity of Ginkgo biloba leaf tea product

Fengnan Li,Isaac D Boateng,Xiao-Ming Yang,Yuanyuan Li,Weimin Liu

BACKGROUND Ginkgo biloba leaves contain beneficial flavonoids, bilobalide (BB), and ginkgolides. However, the toxic ginkgolic acid (GA) limit its application. In this study, various traditional processing methods were used to prepare G. biloba leaf tea (GBLT), including white tea, black tea, dark tea, green tea, and freeze-dried as control, followed by investigations of their effects on quality, antioxidant capacity, bioactive components, and cytotoxicity of the tea products. RESULTS Results showed that different processing methods significantly impact the tea products' quality indexes and the principal component analysis (PCA) and hierarchical cluster analysis (HCA) corroborated it. White tea had the highest total sugar (TS) and GA content and the most potent cytotoxicity on HepG2 cells. However, TS and GA content and the cytotoxicity of GBLT markedly decreased during fermentation and fixation. Moreover, white tea possessed higher total phenolic content (TPC), total flavonoid content (TFC), and more vigorous antioxidant activities than green tea, black tea, and dark tea. Terpene trilactones value was stable, but different catechins contents fluctuated according to the manufacturing process of different GBLTs. Among the four GBLTs, dark tea combining fixation and fermentation had the lowest GA content and cytotoxicity, less bioactive components reduction, appropriate quality, and stronger flavor. CONCLUSION These findings demonstrate that fixation and fermentation help reduce GAs during the manufacturing of GBLT. However, their ability to retain bioactive substances needs further optimization in future studies. © 2023 Society of Chemical Industry.

Influence and optimization of long-time superfine grinding on the physicochemical features of green tea powder

Zhangfeng Zhao,Zhengwei Dai,Xuming Jiang,Liaoyuan Yu,Meijuan Hu,Jiyu Peng,Fei Zhou

Superfine grinding is a crucial step in green tea powder (GTP) processing. In this work, the time-resolved changes of physicochemical properties (physical properties, main active components, etc.) of GTPs were investigated, and ball milling time (BMT) for tea grinding was optimized. Variable importance in projection was used to evaluate the importance of modification of each physicochemical parameter on BMT, and a multi-objective fuzzy optimization model was used to obtain the optimal BMT. The BMT range was 2–30 h, and the results showed that BMT had a significant influence on the physicochemical properties of GTP. The mean particle size decreased from 257 to 10.6 μ m and the color became lighter as the BMT increased. The main active components decreased markedly when BMT increased form 18–24 h. Mean particle size and color difference dramatically correlated with BMT and could be described by a one-phase exponential decay function. The optimal BMT was 18 h and high quality GTP could be obtained under this condition with small particle size, bright green color and rich in theanine and total tea polyphenols (TTPs).

Gelatin/sodium alginate multilayer composite film crosslinked with green tea extract for active food packaging application

Peng Shan,Kun Wang,Fuyou Yu,Lunzhao Yi,Liping Sun,Hui Li

With the increasing environmental concern and consumption demand for fresh food of human being, development of biodegradable and active food packaging films is highly desirable. In this study, an active multilayer food packaging film was fabricated using gelatin (GEL) and sodium alginate (ALG) as matrix biopolymer , green tea extract (GTE) derived from green tea waste as cross-linking agent and active ingredient. The film-forming method was based on simple layer-by-layer (LBL) casting. SEM and FTIR demonstrated the good compatibility of the film-forming substances and the formation of a more compact LBL multilayer composite film due to occurrence of increased intermolecular hydrogen bonding , thereby improving UV-shielding, mechanical strength , water vapor and oxygen barrier, water resistance and thermal stability. The multilayer composite film also exhibited high antioxidant and antibacterial activity . Particularly, slow release of GTE from multilayer composite film was observed. Moreover, the preservation study demonstrated that obtained active film could effectively maintain postharvest quality of Boletus bicolor Peck and extend shelf-life to 7 days under 4 °C storage, indicating its promising application potential for food preservation.

Green Synthesis of Nano-Zero Valence Iron with Green Tea and It’s Implication in Lead Removal

Du Changsheng,Chen Haijun,Gao Weidong,Sun Wu,Peng Lei,Xu Nan

The nano-zero valence iron (nZVI) via green synthesis for heavy metal remediation has attracted many attentions due to its low-cost, environmental-safety, relative reproductivity, and high stability. However, influence of synthesis conditions on the physiochemical properties of nZVI via green tea extracts and the responding suspensibility, which is required for high reactivity, has not been fully elucidated. In this study, we investigated the zeta potentials, sedimentation and lead (Pb 2+ ) removal capacity of various nZVIs synthesized using green tea extracts. The results showed that the tea extracts extracted at 80 o C presented an excellent activity, which contributed to the outstanding suspensibility and reaction activity of nZVI synthesized in a volume ratio of 1:1 (tea extraction versus Fe 2+ solution). Thus, the optimized nZVI was successfully prepared with a Pb 2+ removal capacity (377.3 mg/g), which was seven times stronger than 50.31 mg/g of traditional chemical synthesized nZVI.
