Tea polysaccharide conjugates (TPC) and bovine serum albumin (BSA) have emulsifying properties, but they have certain shortcomings when used alone as emulsifiers. This study aimed to combine TPC and BSA to form a complex for applications to achieve the complementary advantages between them. The TPC/BSA complex was physicochemically characterized, and the results showed an improvement in its surface hydrophobicity. TPC/BSA emulsions with different concentrations (0.20–1.00 wt%) were prepared using TPC/BSA complex as the emulsifier. The effects of heat treatment, pH, and metal ions on the stability of TPC/BSA and BSA emulsions were investigated, and TPC/BSA emulsion systems loaded with epigallocatechin gallate (EGCG) and epigallocatechin (EGC) were constructed. TPC/BSA emulsion droplets were smaller than 1.00 wt% TPC emulsion droplets, and the particle size of 0.20 wt% TPC/BSA emulsion increased slightly during storage at 25 °C. Further, 0.20 wt% TPC/BSA emulsions became less stable after heat treatment, whereas the particle size of other concentrations did not change significantly after treatment at 70 ℃–90 °C. TPC/BSA emulsions were more stable at pH 6.0–9.0. Both were less affected by Na + , weakly affected by Ca 2+ than BSA emulsion, and significantly affected by Al 3+ . TPC/BSA emulsion had a good protection effect on EGCG and EGC. The presence of EGCG and EGC improved the stability of the emulsion system, which remained stable for 90 days.

Porcine diaphragmatic tendon enables a high-modulus decellularized cardiac patch. • Tea polyphenols raise modulus to 392.6 MPa and strength to 67.8 MPa. • Crosslinking adds antioxidant activity and resistance to collagenase degradation. • GTP5 reduces implant-associated inflammation compared with uncrosslinked dECM. • The patch limits ventricular dilation and remodeling after myocardial infarction. Decellularized tissues have been widely used for tissue repair because of their intrinsic ability to modulate immune and inflammatory responses. However, their insufficient mechanical strength often limits their capacity to provide adequate structural support, thereby compromising synergistic therapeutic outcomes in applications such as myocardial and tendon repair. In this study, we developed a decellularization strategy for high-strength porcine diaphragmatic tendon, which enabled effective removal of cellular components while preserving the dense extracellular matrix structure responsible for its superior mechanical strength. After crosslinking with 5 mg/mL tea polyphenols, the resulting decellularized porcine diaphragmatic patch retained anisotropic characteristics comparable to those of native cardiac tissue and achieved a Young's modulus of 392.6 ± 96.8 MPa and an ultimate tensile strength of 67.8 ± 18.83 MPa. These values were higher than those reported for representative decellularized or acellular cardiac repair scaffolds, including decellularized porcine myocardial slices, small intestinal submucosa-derived extracellular matrix (SIS-derived ECM), decellularized pericardial scaffolds, and commercial cardiovascular patches. This strategy preserved the intrinsic mechanical strength of the diaphragmatic tendon while ensuring efficient DNA removal, enabling effective mechanical support and stress reduction in the infarcted myocardium. In addition, tea polyphenols as the crosslinking agent, conferring antioxidant properties while further enhancing the immunomodulatory and anti-inflammatory effects of the decellularized scaffold. In a rat myocardial infarction model, the tea polyphenol-crosslinked decellularized diaphragmatic tendon mitigated ventricular dilation and delayed adverse remodeling through the synergistic effects of mechanical support, antioxidation, and immunomodulation, highlighting its potential for myocardial repair and other therapeutic applications requiring both high mechanical strength and bioactivity.

Ice accumulation is an important challenge for daily life and industrial production. The photothermal effect offers a promising approach for active de-icing to address this issue. While the photothermal effect of polyphenol-metal ion complex is extensively studied in photothermal cancer therapy, its application in de-icing remains relatively unexplored. Herein, a durable photothermal superhydrophobic coating was designed by combining F-SiO 2 @Tp/Fe (Tea polyphenol-Fe 3+ ) nanoparticles and silicone resin using a one-step spray method. Due to the unique micro-nano structure, the resulting coating exhibited excellent superhydrophobicity, characterized by water contact angle (CA) of up to 159° and sliding angle (SA) of less than 2.5°. Additionally, the coating demonstrated reliable mechanical durability and chemical stability, as evidenced by its good performance in sandpaper abrasion, tape peeling and electrochemical corrosion tests. Moreover, owing to the efficient photothermal conversion of F-SiO 2 @Tp/Fe nanoparticles , surface temperature of the coating can quickly reach 81 ℃ under 1 kW/m 2 simulated sunlight irradiation (1 Sun). The prepared coating exhibits over three times delayed icing time under 1 sun irradiation at − 25 °C in comparison to the absence of light. And the coating also exhibits stable de-icing and defrosting cycle performance. These findings demonstrate effective synergistic effect of anti-icing and de-icing in the F-SiO 2 @Tp/Fe photothermal superhydrophobic coating, showcasing its promising application potential in practical engineering.

A new type of flavored wine was produced by macerating either green tea or black tea into Chardonnay wine and model wine respectively, where the physicochemical properties (pH, titratable acidity, color) were modulated. Significant ( p < 0.05) increases of total phenolic content and antioxidant activity (assessed by DPPH, FRAP and ABTS assays) were also observed in the tea macerated wines. A total of 160 phenolic and non-phenolic compounds were identified by HPLC-DAD-ESI-QTOF-MS/MS, where 55 phenolics were newly found in the tea macerated Chardonnay wine. The interaction between wine and tea phenolics led to additional 29 phenolic compounds and 4 non-phenolic compounds that were not found in either Chardonnay wine or tea. Catechin and epigallocatechin gallate were the most abundant phenolic compounds and contributed to the improved antioxidant activities. This study provided a promising prospect of tea as a novel additive in the production of flavored wine with enhanced functionalities.

Escherichia coli O157:H7 is one of the major foodborne pathogenic bacterial that cause infectious diseases in humans. The previous found that a combination of kojic acid and tea polyphenols exhibited better activity against E. coli O157:H7 than using either alone. This study aimed to explore responses underlying the antibacterial mechanisms of kojic acid and tea polyphenols from the gene level. The functional enrichment analysis by comparing kojic acid and tea polyphenols individually or synergistically against E. coli O157:H7 found that acid resistance systems in kojic acid were activated, and the cell membrane and genomic DNA were destructed in the cells, resulting in "oxygen starvation". The oxidative stress response triggered by tea polyphenols inhibited both sulfur uptake and the synthesis of ATP, which affected the bacteria's life metabolic process. Interestingly, we found that kojic acid combined with tea polyphenols hindered the uptake of iron that played an essential role in the synthesis of DNA, respiration, tricarboxylic acid cycle. The results suggested that the iron uptake pathways may represent a novel approach for kojic acid and tea polyphenols synergistically against E. coli O157:H7 and provided a theoretical basis for bacterial pathogen control in the food industry.

Oral cavity contains the second largest microbial community in the human body. Due to the highly vascularized feature of mouth, oral microbes could directly access the bloodstream and affect the host healthy systemically. The imbalance of oral microbiota is closely related to various oral and systemic diseases. Green tea extracts (GTE) mainly contain tea polyphenols, alkaloids, amino acid, flavones, and so on, which equipped with excellent anti-inflammatory activities. Previous studies have demonstrated the beneficial effects of GTE on oral health. However, most researches used in vitro models or focused on limited microorganisms. In this study, the regulatory effect of GTE on oral microbiome and the alleviative effect on oral inflammation in vivo were evaluated. The results showed that GTE could efficiently alleviate the inflammations of the tongue, cheek pouch, as well as throat. GTE effectively inhibited the activation of NF-κB through the upregulation of the anti-inflammatory cytokine interleukin (IL)-10, consequently leading to reduced expression of pro-inflammatory cytokines IL-6 and tumor necrosis factor-α. The indexes of spleen and thymus were also elevated by GTE in stomatitis mice. Moreover, GTE promoted the growth of probiotics Lactobacillus and Bacillus , inhibited the reproduction of pathogens Achromobacter , reversing the microbiota disorders in oral cavity. This study not only presents a novel approach for enhancing oral microecology but also facilitates the wider adoption of tea consumption.

Dark hawk tea, produced through pile-fermentation of Lauraceae family leaves, which is rich in various beneficial ingredients and health functions, relies heavily on microbial activity for its unique characteristics. However, the processing technology of dark hawk tea and the microorganisms' dynamic changes during its pile-fermentation remain largely unknown. In this study, based on the previous work, we optimized pile-fermentation parameters for analyzing changes in dark hawk tea's chemical components, volatile substances, and microbial diversity. The tea exhibited superior sensory scores and biochemical qualities under optimal conditions (35 °C, 62% water, 24 h), measuring 5.7 mg/g amino acid content. Gas chromatography-mass spectrometry (GC-MS) identified 108 volatile compounds, notably terpenes, ketones, and esters. Microbial analysis revealed Bacteroides and Faecalibacterium as dominant bacteria and Cladosporium and Mortierella as dominant fungi. Cladosporium prevailed in early fermentation, shifting to Mortierella later. Predicted metabolic pathways highlighted microbial functional genes predominantly participated in carbohydrate, amino acid, and energy metabolism during the pile-fermentation. These results hold important implications for expanding the variety of hawk tea products and deepening our understanding of microbial community dynamics through the pile-fermentation of dark hawk tea.

The use of two-dimensional heterostructure composite as electrode modification material has become a new strategy to improve the electrocatalytic activity and electroactive sites of electrochemical sensor. Herein, a soluble heterostructure, namely rGO-PSS@MXene, was designed and synthesized by integrating poly (sodium p -styrenesulfonate)-functionalized reduced graphene oxide into MXene nanosheets via ultrasonic method. The interactive heterostructure can effectively alleviate the self-stacking of MXene and rGO, endowing them with superior electron transfer capacity and large specific surface area , thereby producing prominent synergistic electrocatalytic effect towards rutin . In addition, the excellent enrichment effect of rGO-PSS@MXene for rutin also plays an important role through the electrostatic and π-π stacking interactions. The electrochemical characteristics of rutin on the sensor were examined in detail and a sensitive sensing method was proposed. Under optimized conditions, the method showed satisfactory linear relationship for rutin in the concentration range of 0.005–10.0 μM, with limit of detection of 1.8 nM (S/N = 3). The quantitative validation results in herbal medicine and commercial Tartary buckwheat tea were highly consistent with the labeled quantity and the results of HPLC determination, respectively, suggesting the sensor possessed excellent selectivity and accuracy. This proposed strategy for rutin determination is expected to expand the application of MXene heterostructure in electrochemical sensors, and is envisioned as a promising candidate for quality monitoring of drugs and foods.

The impacts of tea seed saponins (TSS) on intestinal injury, immune disorder, gut microbial dysbiosis and serum metabolome in cyclophosphamide (CTX)-induced mice were explored. The findings indicated that TSS significantly reversed the spleen index, protected intestinal mucosa , and increased the protein levels of tumor necrosis factor-α (TNF-α), occludin , interleukin-6 (IL-6) and immunoglobulin A (IgA) in colon and small intestine of mice. Microbiome analysis suggested that TSS shaped the gut microbial community structure, and mainly increased the proportion of Bacillus and Alloprevotella . The in vitro experiment further demonstrated the ability of TSS to promote the growth of Bacillus . Serum metabolome analysis showed that TSS significantly upregulated and downregulated 18 and 15 metabolites, respectively. Eight of these compounds were correlated with Bacillus and Alloprevotella . Over all, this work demonstrated that TSS could improve CTX-induced immune imbalance, intestinal barrier disruption and gut microbial dysbiosis, and was a potential candidate for regulating intestinal homeostasis .

In this work, a temperature-regulating and antimicrobial–antioxidant fiber membrane was fabricated using coaxial electrospinning technology. The tea tree oil (TTO) emulsion used as the core solution, polyvinyl alcohol (PVA) as the shell solution for coaxial electrospinning, has been demonstrated. Compared with the original PVA fibers, the average diameter of the fibers is increased after coaxial electrospinning, and the diameter increases with the core flow rate. The diameters corresponding to core flow rates of 0.05, 0.1, and 0.15 mL/h are 561, 597, and 849 nm, respectively. Via in vitro release experiment demonstrated that the quantity of TTO released from the composite membrane increased with the elevation of temperature. The inclusions TTO and polyethylene glycol give the film excellent antibacterial–antioxidant properties and a delayed thermal response. More intriguingly, core–shell fiber membranes containing TTO in the core part are effective in slowing down the formation of oxidation spots on the surface of banana compared with pure PVA membranes. Seven days after wrapping bananas with different membranes, the surface of banana in pure PVA film was full of oxidized spots, whereas banana in PVA core–shell fibers showed only one obvious spot.

This study was aimed to investigate the effect of Guisangyou tea (GSY tea) in improving abnormal lipid metabolism in mice with obesity induced by a high-fat diet (HFD). The results showed that intervention of the water extract of GSY tea (WE) decreased serum levels of lipids, and positively regulated the related antioxidant enzyme activities and the inflammatory factors in the serum and liver. In the liver, the mRNA and protein expression levels of sterol regulatory element-binding proteins-1 (SREBP-1), stearoyl-CoA desaturase-1 (SCD-1), fatty acid synthase (FASN), and acetyl CoA carboxylase (ACC) related to lipid synthesis were downregulated, and the mRNA and protein expression levels of the farnesoid X receptor (FXR) and small heterodimer partner (SHP) related to bile acid production were upregulated. The results demonstrate that GSY tea can improve abnormal lipid metabolism in obese mice by improving the body’s antioxidant capacity, regulating the inflammatory state, and reducing the synthesis of lipids and increasing the production of bile acids. GSY tea can be processed and utilized as a safe and effective resource for improving abnormal lipid metabolism. Keywords:Guisangyou tea;lipid metabolism;obesity;inflammation

Gene therapy that employs therapeutic nucleic acids to modulate gene expression has shown great promise for diseases therapy, and its clinical application relies on the development of effective gene vector. Herein a novel gene delivery strategy by just using natural polyphenol (-)-epigallocatechin-3-O-gallate (EGCG) as raw material is reported. EGCG first intercalates into nucleic acids to yield a complex, which then oxidizes and self-polymerizes to form tea polyphenols nanoparticles (TPNs) for effective nucleic acids encapsulation. This is a general method to load any types of nucleic acids with single or double strands and short or long sequences. Such TPNs-based vector achieves comparable gene loading capacity to commonly used cationic materials, but showing lower cytotoxicity. TPNs can effectively penetrate inside cells, escape from endo/lysosomes, and release nucleic acids in response to intracellular glutathione to exert biological functions. To demonstrate the in vivo application, an anti-caspase-3 small interfering ribonucleic acid is loaded into TPNs to treat concanavalin A-induced acute hepatitis, and excellent therapeutic efficacy is obtained in combination with the intrinsic activities of TPNs vector. This work provides a simple, versatile, and cost-effective gene delivery strategy. Given the biocompatibility and intrinsic biofunctions, this TPNs-based gene vector holds great potential to treat various diseases.
