The demand for high-quality, nutritious, and sustainable food products has led to a significant interest in the development of durable and effective emulsions. Pickering emulsions are promising candidates but the currently adopted stabilizers still have limitations. Here in this study, we introduce a novel egg derived reconstituted lipid nanoparticles ( E -rLNPs) as stabilizer for Pickering emulsions. The lipids extraction from de-oiled egg yolk powder was firstly optimized using response surface methodology by Box–Behnken Design and then prepared into E -rLNPs by a straightforward solvent-diffusion method. The E -rLNPs were found to form stable Pickering emulsions that can resist to various environmental stresses. Moreover, the optimal Pickering emulsion offers excellent protection and significantly improves the oral availability of curcumin. This research presents a promising approach for the development of functional foods and nutraceuticals, showcasing the potential of natural food-derived rLNPs as stabilizers for Pickering emulsions, thereby advancing delivery technologies in the food science.

Improved capability to inhibit degradation of trianionic curcumin has been realized in this study. The interaction between trianionic curcumin (Cur 3− ) and gemini dodecyl or tetradecyl O -glucoside micelles , tetradecyltrimethylammonium chloride (TTAC) or hexadecyltrimethylammonium bromide (CTAB) micelles as well as gemini alkyl O -glucosides (AGs)/alkyl trimethyl ammonium halides mixed micelles have been characterized. It is demonstrated that Cur 3− cannot be incorporated into gemini AGs micelles since the lack of electrostatic attraction and degraded as rapidly as in aqueous phase. Cur 3− tend to reside at palisade layer − water interface of TTAC or CTAB micelles due to the strong electrostatic interaction while moderate electrostatic interaction allows Cur 3− to locate more deeply in the palisade layer of mixed micelles. Additionally, mixed micelles tend to form a more compact and hydrophobic palisade layer than pure TTAC and CTAB ones. These factors bring about enhanced fluorescence intensity and blue − shift of emission maxima, improved fluorescence anisotropy and quantum yield, as well as reduced decay rate of Cur 3− in mixed micelles than in pure TTAC and CTAB ones.

Curcumin, a molecule of labile natural product, has multiplex pharmacological effects, including antioxidant, antimicrobial, and anticancer effects as well as anti-Alzheimer’s disease (AD) properties. However, the drawbacks of curcumin such as poor stability and bioavailability seriously limited its application in drug development. Numerous literature studies suggested the conversion of curcumin to metal complexes and explored the clearance of β-amyloid fibrils by curcumin conjugates. However, the research about the inhibition effect of curcumin complex on τ protein aggregation is progressing slowly, and its interactive orientation with the related proteins from the steric effect has been ignored. Inspired by the perspective on interactive orientation, we conjugated curcumin molecule on the positive-charged scaffold of Ru(II) complexes (bipyridine for Ru1, phenanthroline for Ru2) to construct an octahedral structure. After being conjugated with a ruthenium octahedral framework, curcumin exhibited a stronger ability to not only inhibit aggregation of R3, the τ peptide corresponding to the third repeat unit of the microtubule binding domain (residues 306–336 in full τ) (Ru1 with an IC50 of 0.5 μM and Ru2 with an IC50 of less than 3 μM) but also disaggregate R3 fibers with dose-dependence through an exothermic and dynamic process. Autodock simulation was applied to get a hairpin-docking mode in the inhibition of R3 aggregation. Herein, our results provide a rational strategy emphasizing the interactive orientation from an octahedral steric structure to design the anti-AD drugs with natural compound.

To address the limitations of conventional packaging materials, this work synthesized the curcumin-loaded γ-cyclodextrin-metal-organic frameworks, Cur@CD-MOF, which was subsequently combined with the zein-chitosan (ZC) matrix to form the Cur@CD-MOF/ZC film. The structure, physiochemical property, curcumin release behavior, antibacterial/antioxidant activity and strawberry preservation performance of the Cur@CD-MOF/ZC film were investigated. Results confirmed that Cur@CD-MOF was successfully incorporated into the ZC matrix. The incorporation of Cur@CD-MOF made the Cur@CD-MOF/ZC films own smoother and denser microstructures, and have a lower water vapor permeability and light transmittance. The tensile strength of Cur@CD-MOF/ZC film (5.99 ± 0.55 MPa) was significantly higher than that of ZC film (3.37 ± 0.15 MPa). The release of curcumin from the Cur@CD-MOF/ZC film was delayed in humid environments, and interestingly, it became faster under acidic conditions compared to that under neutral conditions. Cur@CD-MOF significantly improved the antioxidant activity of Cur@CD-MOF/ZC film and its inhibitory effects against Escherichia coli and Staphylococcus aureus . Fruit preservation experiments showed that Cur@CD-MOF/ZC film effectively reduced the decay of strawberry. Moreover, Cur@CD-MOF/ZC film exhibited excellent preservation performances on other fruits and vegetables as well (winter jujube, broccoli, white mushroom, etc.), confirming their broad application potentials for the perishable produce preservation.

Edible coatings are an effective strategy for extending the postharvest shelf life of fruits and vegetables. In this study, we developed a chitosan (CS)-based composite coating (CS-AA-Cur) loaded with ascorbic acid (AA) and curcumin (Cur) to synergistically enhance the cold preservation of strawberries (4°C). The coating’s efficacy relied on a dual mechanism: a CS-based physical barrier minimized water loss and oxygen penetration, while synergistic antioxidants (AA and Cur) scavenged ROS, suppressing lipid peroxidation and significantly reducing MDA content. Results demonstrated that the CS-AA-Cur coating significantly improved the postharvest quality of strawberries compared to CS alone. It effectively maintained the physicochemical properties by significantly reducing (p < 0.05) weight loss, decay rate, and the accumulation of oxidative stress markers (MDA and H 2 O 2 ). Additionally, the coating delayed fruit softening by modulating the activity of cell wall-degrading enzymes. Notably, the coating containing 20 mg Cur (CS-AA-Cur 20) exhibited the most potent preservation effect on strawberries, extending their shelf life to 15 days. These findings confirm that by integrating a physical barrier with antioxidant synergistic mechanism, the CS-AA-Cur coating holds immense potential for the preservation of perishable produce.

Curcumin (Cur) is a highly pleiotropic anticancer agent that inhibits cell proliferation and induces apoptosis in cancer cells. A variety of nano-systems constituted by polymer–drug conjugates have been designed to overcome its shortages on water solubility, chemical instability, and poor bioavailability. However, most of them suffer from ineffective release of Cur in cancer cells in vivo . This work developed a novel flexible acid-responsive micelle formulation by covalently conjugating Cur on the hydrophilic terminals of pluronic F68 chains via cis -aconitic anhydride linkers. The synthesized F68-Cis–Cur conjugates can readily precipitate to form homogeneous micelles with average size about 100 nm in aqueous solution. In acid environments, F68-Cis–Cur conjugates would break down and subsequently release Cur rapidly, for the reason of pH-sensitive cleavage of cis -aconitic anhydride linkers. In vitro anticancer activity tests demonstrated that F68-Cis–Cur micelles induced higher cytotoxicity against both A2780 and SMMC 7721 cells than free Cur. It provided a larger decrease of mitochondrion membrane potential and induced cellular apoptosis. F68-Cis–Cur micelles remarkably increased cellular uptake of Cur than free Cur through caveolae-mediated endocytosis in an energy-dependent manner. This study demonstrates F68-Cis–Cur conjugation as a promising tool for improving intracellular drug delivery in cancer therapy.

Although much effort has been focused on the preparation of stable amorphous calcium phosphate (ACP) nanoparticles , the poor dispersity of ACP nanoparticles in aqueous solution remain an unresolved problem. In this work, hexametaphosphate ((NaPO 3 ) 6 ) was used as a green dispersant to disperse casein-stabilized ACP (casein-ACP) nanoparticles in aqueous solution. Characterization of casein-ACP nanoparticles by X-ray diffraction (XRD) proved that the casein-induced amorphous structures could maintained for at least 3 months at room temperature. Moreover, the effects of (NaPO 3 ) 6 solutions for dispersing casein-ACP nanoparticles in water was studied and their ability to stabilize aqueous casein-ACP dispersions was demonstrated by digital photos. A typical anticancer drug , curcumin (Cur), was employed to evaluate the drug loading abilities and drug release behaviors of prepared nanoparticles. The results showed that the resultants have high drug loading capacity and favorable pH-responsive drug release properties. Furthermore, this drug delivery system showed an excellent ability to damage A549 cells, indicated that the as-prepared casein-ACP-(NaPO 3 ) 6 nanoparticles are promising for the applications in drug delivery.

Hybrid liposomes, composed of amphiphilic chitosan and phospholipid , were prepared and used to evaluate the effect of amphiphilic polymers on the properties of liposomes. Successful preparation of the hybrid liposomes was confirmed using physicochemical characteristics, including morphology, particle size and zeta potential. Physical stability studies (exposure to solutions of increasing ionic strength and heat treatment) indicated that the hybrid liposomes had better ionic stability than amphiphilic chitosan-based polymeric liposomes and higher thermal stability than traditional phospholipid liposomes. Curcumin was then encapsulated in the hybrid liposomes. Compared with phospholipid liposomes, the hybrid liposomes displayed better storage stability and more sustained curcumin release. Cellular uptake experiments showed that the hybrid liposomes significantly increased the bioavailability of curcumin. The study highlights the potential of well-designed stable hybrid liposomes that increase the stability and bioavailability of lipophilic bioactive, such as curcumin.

Background: Alzheimer's disease (AD) is one of the most common causes of dementia, affecting many old people. Objectives: By designing and synthesizing intracerebral imaging probes, we tried to provide a new solution for the early diagnosis of AD. Methods: We designed and
synthesized bis-iodine-labeled curcumin, and verified its performance through in vivo and in vitro experiments. Results: In this study, bis-iodine-labeled curcumin (7, BICUR) was synthesized. In the in vitro mass spectrum binding assay, Kd values of BICUR with Aβ1-40 and
Aβ1-42 aggregates were 46.29 nM and 64.29 nM, respectively. Aβ plaques in AD brain adjacent sections were positively stained by BICUR, which was similar to some other curcumin derivatives. The Log P value of BICUR was 1.45. In the biodistribution experiment, BICUR showed the highest
initial brain uptake (5.87% compared to the blood concentration) two minutes after the tail vein injection and rapid clearance from the mouse brain. In the acute toxicity experiment, BICUR showed low toxicity, and the LD50 was >100 mg/kg. Moreover, BICUR showed a high stability
in vitro (86.68% unchanged BICUR after incubation for 120min in mouse brain homogenate). Besides, BICUR produced an enhanced CT imaging effect that could be sensitively detected in vitro, but it also showed an obvious differentiation from surrounding tissues after intracerebral injection.
Conclusion: All results suggested that BICUR could probably act as a targeted CT imaging agent for Aβ plaques in the brain.

In this study, the optimal environmental condition for preparation of lactoferrin particles assembled via transglutaminase-induced crosslinking (TG-LF particles) was pH 8, 100 U/g of TG concentration, 50 °C and 2 h of crosslinking time. Contact angle of TG-LF particles was 79°. Then, corn oil-based oleogels were prepared with carnauba wax (CW), behenyl alcohol (BA) and CW-BA mixture at 1:4 ratio (MT). To investigate the effect of oleogels on oleogel-based Pickering emulsions, oleogel-based Pickering emulsions were prepared by a two-step method using different oleogels as the oil phase and the TG-LF particles as the emulsifier. In vitro digestion study revealed that CW oleogel-based Pickering emulsion had the highest lipolysis rate and curcumin bioaccessibility. This study demonstrated that TG-LF particle-stabilized oleogel-based Pickering emulsions had good performance in curcumin delivery, which provided a new idea for the preparation of Pickering emulsifier and enriched the knowledge in the field of oleogel-based Pickering emulsion.

Amphiphilic quaternized alginate-g-polytetrahydrofuran (QA-g-PTHF) graft copolymers were successfully synthesized via nucleophilic substitution of living PTHF+ chains obtained via cationic ring-opening polymerization with the −OH side functional groups in QA. This unique graft copolymer exhibits low cytotoxicity and anti-protein adsorption. The QA-g-PTHF nanospheres (328 ± 21 nm) loaded with curcumin exhibit ninefold higher anticancer effect to HeLa cells than pure curcumin due to the synergistic roles from the graft copolymer. Both the interactions of cationic quaternary ammonium with the negatively charged HeLa cell surface and the hydrophobic PTHF branches with the hydrophobic cell membrane result in a great improvement in the entrance of nanospheres into HeLa cells and effective drug release therein. The QA-g-PTHF/Ag nanocomposites prepared in situ during the synthetic process demonstrate more than 98% killing efficiency for Escherichia coli and Staphylococcus aureus. To the best of our knowledge, this is the first example of an amphiphilic, anti-protein, and antibacterial QA-g-PTHF copolymer with low cytotoxicity for potential anticancer applications.

ACP treatment enhanced encapsulation and controlled release of curcumin / resveratrol. • ACP promoted hydrogen bonding and electrostatic interactions in nanoemulsions • ZCR/SA-NE-3 min showed excellent emulsifying and antioxidant activity. • Nanoemulsions prepared with ACP-pretreated ZCR/SA nanoparticles effectively reduced TVC and MDA levels in refrigerated tilapia • Nanoemulsions prepared with ACP-pretreated ZCR/SA nanoparticles extended the shelf life of refrigerated tilapia from 4 to 8 days. Oxidative degradation and microbial contamination cause quality deterioration of aquatic products under refrigeration, posing a major challenge to their preservation. In this study, zein-curcumin-resveratrol‐sodium alginate nanoparticles (ZCR/SA NPs) were pretreated with atmospheric cold plasma (ACP) for 1–4 min. The ACP-modified NPs were further fabricated into antioxidant nanoemulsions (NEs), and the influences of ACP pretreatment on the physicochemical properties, encapsulation efficiency, and sustained-release performance of the resultant NEs were systematically explored. The ACP treatment significantly improved the loading efficiency and controlled release of curcumin and resveratrol ( P < 0.05). FT-IR and XRD analyses indicated the formation of stronger hydrogen bonding and electrostatic interactions within the NEs system, which improved structural stability. Among all samples, ZCR/SA-NEs-3 min exhibited the best emulsifying properties (ESI = 358.57 ± 14.60 min, EAI = 30.51 ± 1.52 m 2 /g) and strong antioxidant activity (DPPH: 74.7 ± 1.67%, ABTS: 76.4 ± 2.17%). Importantly, ZCR/SA-NEs-3 min could significantly delay the spoilage process of tilapia fillets during 8 days of storage. Compared with the control group, the total viable count decreased from 8.07 ± 0.04 to 5.20 ± 0.04 lg₁₀ CFU/g, the malondialdehyde content dropped from 1.57 ± 0.03 to 0.49 ± 0.01 mg MDA/kg, and the shelf life was extended from 4 days to 8 days. This study not only revealed the mechanism underlying property improvement of NEs by ACP-modified NPs, but also provided an eco-friendly and innovative strategy for efficient preservation of aquatic products.
