Detection of di(2-ethylhexyl) phthalate in edible vegetable oils using a sensitive aptasensor based on carbon nanomaterials and copper metal-organic framework

Zimo Zhao,Da Cai,Yangyang Shao,Jie Tian,Lei Wang,Yanjie Dong

In this work, we designed a simple, disposable, highly sensitive electrochemical aptasensor to detect di(2-ethylhexyl) phthalate (DEHP) in edible vegetable oils. The aptasensor was created by decorating polyaniline multi-walled carbon nanotubes (PANI-MWCNTs), Cu metal-organic framework (CuMOF), and gold nanoparticles (AuNPs) on a screen printing carbon electrode (SPCE). With its large surface area , CuMOF modified the electrode by improving the adhesion rate of gold nanoparticles , thereby improving the detection limit of the sensor. The distinct peak in the square wave voltammetry (SWV) was used to measure DEHP. The sensor had high stability, excellent repeatability, reproducibility, and specificity, with a wide linear range (0.1–100 ng/mL) and a low detection limit (0.03 ng/mL). When the aptasensor was used to analyze the DEHP content in edible vegetable oils, the recovery rate was between 95.11 % and 98.29 %, and the results were consistent with the GC-MS measurements.

Highly graphitized carbon with enhanced π–π interactions as efficient solid phase extraction adsorbent for ultra-sensitive analysis of aflatoxin B1 in vegetable oils

Qi Yu,Wentao Yan,Tao Liu,Jing Zhou,Hui Chen,Guorong Fan,Zongde Wang,Limin Lu,Lan Zhang

Aflatoxin B1 (AFB1) threatens food safety due to its persistence in oils. Carbon-based solid-phase extraction (SPE) methods are effective for detecting AFB1 in aqueous food matrices, but employing it in oils is challenging due to non-polar environments. We developed highly graphitized carbon materials (HGC) with enhanced π-π interactions for AFB1 extraction in oil through a transition metal (Fe, Co, Ni)-assisted carbonization process. Adsorption experiments revealed that FeO/Fe 3 O 4 /HGC exhibited a superior AFB1 adsorption capacity of 1179.99 μg g −1 , outperforming Ni/Co-HGC and pure carbon by 4–6 times. Density functional theory revealed the electron-deficient graphitized carbon structures supported by magnetic FeO/Fe 3 O 4 clusters enhance π-π interactions with AFB1, with pore filling and hydrophobicity further aiding adsorption. Combining FeO/Fe 3 O 4 /HGC-SPE with HPLC-FLD achieved ultra-sensitive AFB1 detection in vegetable oils (2.0 pg g −1 limit). This study provides an effective method for AFB1 detection in vegetable oils, supporting the monitoring and control of contamination to enhance food safety.

Dual Control of 3-MCPD Esters in Vegetable Oils: Formation Pathways Modulated by Storage, Heat, Chlorides, and Mitigation via Antioxidant and Mesoporous Silica Nanoparticle

Haina Yuan,Zixiang Zhu,Gongshuai Song,Gongnian Xiao

This study investigated the formation and mitigation of 3-monochloro-1,2-propanediol (3-MCPD) ester in vegetable oils under storage, thermal processing, and chloride supplementation. Prolonged storage (>6 months) markedly accelerated formation (80.8–190 μg/kg·month -1 ), a rate substantially higher than in the initial 6 months (15.2–71.9 μg/kg·month -1 ), underscoring a previously underestimated risk in long-term stored oils even if levels remain below EU limits. Thermal treatment revealed a matrix-dependent dynamic equilibrium, with soybean oil peaking at 220°C (1250 μg/kg) and rapeseed oil at 180°C (997 μg/kg). Among chloride salts, CaCl 2 induced the highest 3-MCPD ester level (2189 μg/kg), revealing the critical, previously detailed role of metal cation properties (coordination capacity, charge density) beyond the mere presence of Cl - . Antioxidants provided dose-dependent mitigation (up to 49% suppression), though their efficacy was limited by thermal stability. Most significantly, mesoporous silica nanoparticles (MSNs) demonstrated exceptional efficacy, achieving a 98% adsorption removal rate of 3-MCPD esters from oil, with a high fitted maximum capacity (Q max = 412.5 μg/g). The combined strategy of antioxidant application followed by MSN treatment offers a novel, practical, and industrially viable solution for significantly reducing 3-MCPD ester exposure in oils and lipid-rich foods.

Effects of different vegetable oils and ultrasonicated quinoa protein nanoparticles on the rheological properties of Pickering emulsion and freeze-thaw stability of emulsion gels

Kaiyue Cen,Xi Yu,Chengcheng Gao,Xiao Feng,Xiaozhi Tang

Quinoa protein isolate (QPI) dispersions were ultrasonicated to generate nanoparticles , which were applied to emulsify olive, rapeseed and corn oil to form stable Pickering high internal phase emulsions (HIPEs). The effects of different oil phases and ultrasonic intensity on the particle size, zeta potential, rheological properties and microscopic distribution of Pickering HIPEs were analyzed. The contact angle of QPI nanoparticles with 450 W ultrasonic treatment was 68.83 ± 3.32°, which was remarkably higher than natural particles of 53.69 ± 0.84°. Pickering HIPEs exhibited a three-dimensional network structure and high viscoelasticity. The storage modulus of HIPEs with olive oil was higher than HIPEs with rapeseed and corn oil. The HIPEs with high oleic acid content in oil phase showed high viscoelasticity, because the rheological properties of HIPEs were positively correlated with oleic acid content. Furthermore, QPI HIPE gels were prepared and the freeze-thaw stability of HIPE gels was analyzed. The HIPE gels emulsified by natural QPI showed weak freeze-thaw stability, while the HIPE gels stabilized by sonicated QPI exhibited high freeze-thaw stability. Microstructure of HIPEs by confocal laser scanning microscopy also confirmed the finding. Moreover, different vegetable oils had no significant effects on the freeze-thaw stability of the HIPE gels.

Dispersive Microextraction Based on “Magnetic Water” Coupled to Gas Chromatography/Mass Spectrometry for the Fast Determination of Organophosphorus Pesticides in Cold-Pressed Vegetable Oils

Qin Zhao,Qian Lu,Qiong-Wei Yu,Yu-Qi Feng

This article presents a novel application of dispersive microextraction based on “magnetic water” (m-water) for the purification of organophosphorus pesticides (methamidophos, omethoate, monocrotophos) from cold-pressed vegetable oils. In the present study, a trace amount of water (extractant) was adsorbed on bare Fe3O4 by hydrophilic interaction to form m-water. Rapid extraction can be achieved while the m-water is dispersed in the sample solution with the aid of a vigorous vortex. After extraction, the analyte-adsorbed m-water can be readily isolated from the sample solution by a magnet, which could greatly simplify the operation and reduce the whole pretreatment time. Several parameters affecting the extraction efficiency were investigated, and under the optimized conditions, a simple and effective method for pesticide analysis was established by coupling with gas chromatography/mass spectrometry (GC/MS). The linearity range of the proposed method was 2–100 ng/g with satisfactory correlation coefficients (R) of 0.9997–0.9998, and the limits of quantification (LOQ) for the target compounds were in the range of 0.70–1.27 ng/g. In addition, the reproducibility was obtained by evaluating the intra- and interday precisions with relative standard deviations (RSDs) less than 7.2% and 6.5%, respectively. Finally, the established “magnetic water” microextraction method was successfully applied for the determination of pesticide residues in several kinds of cold-pressed vegetable oils.

Flowerlike Ni–NiO composite as magnetic solid-phase extraction sorbent for analysis of carbendazim and thiabendazole in edible vegetable oils by liquid chromatography-mass spectrometry

Dan Zheng,Xizhou Hu,Xiaofang Fu,Zhenzhen Xia,Youxiang Zhou,Lijun Peng,Qiongwei Yu,Xitian Peng

A rapid, selective, and sensitive method was developed for the detection of carbendazim and thiabendazole in edible vegetable oil. Two benzimidazole analytes were pre-concentrated by magnetic solid phase extraction (MSPE) using flowerlike Ni–NiO composite as sorbents and followed by LC-MS/MS analysis. The flowerlike Ni–NiO composite sorbent displayed a high affinity towards benzimidazole analytes due to the reversible coordination interaction between the Ni(Ⅱ) ion and the electron-donating imidazole group. In comparison to the previous methods, this procedure is less time-consuming and simpler during sample preparation. The parameters affecting the extraction efficiency were optimized in detail. The method was validated according to SANTE/12682/2019. The limits of detection were in the range of 0.001–0.003 mg•kg −1 . The recoveries ranged from 89.3% to 110.7% with inter-day and inter-day precision less than 10.9%. The results indicate that flowerlike Ni–NiO composite might be a promising alternative for MSPE of benzimidazole compounds in foods.

Food matrixes play a key role in the distribution of contaminants of lipid origin: A case study of malondialdehyde formation in vegetable oils during deep-frying

Lukai Ma,Qiuxuan He,Yuanxin Qiu,Huifan Liu,Jihong Wu,Guoqin Liu,Charles Brennan,Margaret Anne Brennan,Lixue Zhu

Vegetable oils are increasingly replacing animal fats in diets, but malondialdehyde (MDA), a peroxidation product of these oils, has been regarded as toxic; this necessitated investigation of MDA formation during consumption. This study investigated MDA formation in four vegetable oils during frying French fries (FF) and fried chicken breast meat (FCBM) at 180 °C for 7 h. Results showed that MDA contents were lower in oils used for frying foods than in control oils, mainly because MDA was incorporated into the foods. MDA content was lower in FF, but higher in FCBM, due to the different food components. Model oil and food system analyses yielded similar results. MDA bound the hydrophobic helical structure in starch-based FF, but was exhibited greater reactivity with nucleophilic groups in protein-based FCBM, resulting in stronger interaction with FCBM than with FF. Our results indicated the existence of distinct mechanisms underlying MDA migration in different food matrixes.

Fast and sensitive UHPLC-QqQ-MS/MS method for simultaneous determination of typical α,β-unsaturated aldehydes and malondialdehyde in various vegetable oils and oil-based foods

Lukai Ma,Yun Cui,Feng Wang,Huifan Liu,Weiwei Cheng,Lianxin Peng,Charles Brennan,Soottawat Benjakul,Gengsheng Xiao

This study aimed to develop and evaluate a method for simultaneously analyzing malondialdehyde (MDA) and two typical toxic α,β-unsaturated aldehydes, 4-hydroxy-2-hexenal (HHE), and 4-hydroxy-2-nonenal (HNE), using ultra-high-performance liquid chromatography with triple quadrupole mass spectrometry (UHPLC-QqQ-MS/MS). The method possessed widely linear range (10–1000 ng/mL). The limit of detection (LOD) and limit of quantitation (LOQ) of MDA, HHE, and HNE were 2.0 and 5.0 ng/g, 2.0 and 5.0 ng/g, and 0.1 and 0.3 ng/g, respectively; the recovery rates all fall into 95.56–104.22 %. The method was sufficiently precise (<5%), and not affected by the analysis matrix. Application to 17 food products revealed total MDA, HHE, and HNE contents were 0.11–3.56, 0.05–3.32, and 0.09–3.70 μg/g, respectively. It will be useful in future research on the influence of food composition and main substrate structure on the generation and distribution of these three aldehydes and the implementation of corresponding control methods.

Ultrasound-assisted surfactant-enhanced emulsification microextraction using a magnetic ionic liquid coupled with micro-solid phase extraction for the determination of cadmium and lead in edible vegetable oils

Li Yao,Haitao Liu,Xie Wang,Wenzhi Xu,Yongqun Zhu,Hong Wang,Liangyu Pang,Chaowen Lin

A novel ultrasound-assisted surfactant-enhanced emulsification microextraction (UASEME) using a magnetic ionic liquid (MIL) coupled with micro-solid phase extraction was developed for the preconcentration of cadmium and lead in edible vegetable oils prior to analysis by graphite furnace atomic absorption spectrometry. MIL [C 4 mim] [FeCl 4 ] was used as the extractant, non-ionic surfactant Triton X-100 as the emulsifier and Fe 3 O 4 nanoparticles as the sorbent, while ultrasound was applied to assist the dispersion of the extractant and accelerate the mass transfer process. By mixing Fe 3 O 4 nanoparticles with the MIL after UASEME, the phase separation time was shortened and the separation can be simplified by applying an external magnetic field. Under the optimized conditions, the proposed method was validated and the results demonstrated that the method can produce satisfactory linearity, sensitivity, reproducibility and recovery for the analytes. Finally, the method was successfully applied for the determination of Cd and Pb in edible vegetable oil samples.

Rapid and Sensitive Detection of Aflatoxin B1, B2, G1 and G2 in Vegetable Oils Using Bare Fe3O4 as Magnetic Sorbents Coupled with High-Performance Liquid Chromatography with Fluorescence Detection

Zhang Hui-Xian,Zhang Ping,Fu Xiao-Fang,Zhou You-Xiang,Peng Xi-Tian

This paper reports a simple, sensitive and reliable method for the simultaneous detection of aflatoxin B1, B2, G1 and G2 in vegetable oils. Aflatoxins were extracted by magnetic solid phase extraction followed by high-performance liquid chromatography, then postcolumn photochemical derivatization and finally detected by fluorescence detector. Vegetable oil samples were first diluted with hexane and then commercial bare Fe3O4 nanoparticles were directly employed as sorbents to extract aflatoxins from complex vegetable oil samples, which significantly simplified the procedure of sample preparation and largely improved the sample analysis throughput. The effects of various parameters such as the amount of sorbent, loading, washing and eluting conditions were carefully optimized to improve the extraction efficiencies of aflatoxins. Under the optimal conditions, the limits of detection of four aflatoxins ranged from 0.01 μg/kg to 0.16 μg/kg, and squared regression coefficients (R2) >0.9990 were obtained within the linear range of 0.1–20 μg/kg (except for aflatoxin G2 with 0.5–20 μg/kg). Furthermore, the recoveries spiked at four concentration levels in a blank vegetable oil sample were from 82.6 to 106.2%, with inter- and intraday relative standard deviations <9.8%, indicating good accuracy and precision of the proposed method.

Dispersive Solid-Phase Extraction Using Microporous Sorbent UiO-66 Coupled to Gas Chromatography–Tandem Mass Spectrometry: A QuEChERS-Type Method for the Determination of Organophosphorus Pesticide Residues in Edible Vegetable Oils without Matrix Interference

Xuejin Mao,Aiping Yan,Yiqun Wan,Dongmei Luo,Hongshun Yang

A QuEChERS-type method without matrix interference was designed and developed to determine organophosphorus pesticide residues in edible vegetable oils, based on dispersive solid-phase extraction with cleanup using UiO-66 as sorbent. Microporous UiO-66 directly and selectively adsorbed organophosphorus pesticides and excluded interfering compounds. Clean analytes were obtained by elution and analyzed using gas chromatography–tandem mass spectrometry. The dispersive solid-phase extraction conditions (amount of adsorbent, extraction time, desorption solvent volume, and elution time) were optimized. The limits of detection of the pesticides in vegetable oils were 0.16–1.56 ng/g. Under optimized conditions, the average pesticide recoveries were 81.1–113.5%. The intraday and interday relative standard deviations for analyte recovery were <8.2 and <13.9%, respectively. Thus, the method is reliable and could detect organophosphorus pesticide residues in edible vegetable oils. Furthermore, UiO-66 can be easily recycled and reused at least 10 times, reducing the cost of analysis.
