Transformation of W/O/W emulsions and O/W/O emulsions for co-loading selenium-enriched peptide and vitamin E: Design and characteristics

Fang Xie,Yuan Fang,Xin Liu,Xin Cong,Yangchao Luo,Jiaojiao Zhou,Zia-ud Din,Shuiyuan Cheng,Jie Cai

Double emulsions (e.g., O/W/O and W/O/W emulsions) have important applications in healthy food development for food industry. Herein, we prepared O/W/O and W/O/W emulsions by two-step emulsification method only using two food grade emulsifiers (Octenyl succinate starch ester (OSA starch) and polyglycerol polyricinoleate (PGPR)), respectively. The optimal process parameters (in external emulsion and internal emulsion) for the preparation of O/W/O and W/O/W emulsions were systematically studied. It is noteworthy that the facile conversion of the two O/W/O and W/O/W emulsions could be achieved by changing the order of emulsifier addition. The double emulsions can be used for co-loading of plant-derived selenium-enriched peptide (Se-peptide) and vitamin E (V E ) with efficient loading rates, and the emulsions of encapsulated Se-peptide and V E have good antioxidant properties. The results of fuzzy numerical sensory evaluation and electronic nose showed that both emulsion systems were effective in masking the odor of Se-peptide.

Investigation on fluorinated alumina catalysts prepared by the fluorination of γ-Al2O3 with CHF3 for the isomerization of E-1-chloro-3,3,3-trifluoropropene

Shiwei Feng,Chengping Zhang,Hengdao Quan

As an environmentally friendly cleaning agent, Z -1-chloro-3,3,3-trifluoropropene (HCFO-1233zd( Z )) can realize industrial production by the isomerization of HCFO-1233zd( E ). Herein, various isomerization catalysts with different structures, compositions and acid properties were prepared through the fluorination of γ-Al 2 O 3 with CHF 3 by controlling the activation conditions. For the first time, the catalysts for HCFO-1233zd( E ) isomerization were systematically studied by XRD, N 2 physisorption, XPS, SEM, MAS NMR spectroscopy, NH 3 -TPD and py-IR. The active site of this reaction was revealed and the catalyst deactivation mechanism was proposed. It turned out that HCFO-1233zd( E ) isomerization prefers to occur at Lewis acid sites with moderate density and strength. The amorphous particles composed of γ-Al 2 O 3 , Al 2 O 3 (F) and α-AlF 3 ( R 3 ¯ c R3¯c ) at 450 °C exhibit highly catalytic activity for HCFO-1233zd( E ) isomerization. After 100 h evaluation, it was found that residual γ-Al 2 O 3 can be fluorinated by HCFO-1233zd( E ) to form needle-like structures which could induce the amorphous Al 2 O 3 (F) particles to reorganize and give cubic structures, where the Lewis acid properties were enhanced, leading to catalyst deactivation.

Characterizing the key aroma compounds of barley malt from different origins using GC-E-Nose, HS-SPME-GC-MS, and HS-GC-IMS

Mingtao Ma,Ziqiang Chen,Bing Huang,Xingguang Chen,Hua Liu,Zhengcong Peng,Peilin Dong,Jian Lu,Dianhui Wu

The origin of malt is a crucial factor influencing malt flavor. In this study, the volatile compounds of barley malt from four different producing areas were comprehensively characterized by gas chromatography electronic nose (GC-E-Nose), gas chromatography-mass spectrometry (GC-MS), and gas chromatography ion mobility spectrometry (GC-IMS). GC-E-Nose analysis revealed significant differences in volatile flavor compounds among malt samples from different origins. GC-MS identified 71 volatile compounds, with aldehydes being the most abundant in all four samples. GC-IMS identified 50 volatile compounds, and obtained the most abundant aldehydes included butyraldehyde, 3-methyl-2-butyraldehyde. etc not detected by GC-MS. The combination of GC-MS data with odor activity value (OAV) analysis identified 24 flavor compounds as key aroma compounds (OAV ≥1). Partial least squares discriminant analysis (PLS-DA) model combined with one-way analysis of variance (ANOVA) was used to screen out seven volatile markers: 1-penten-3-ol, decanal, ethyl butyrate, ethyl acetate, ethyl isovalerate, isoamyl acetate, and dimethyl sulfide. The integration of these techniques provided a better characterization of flavor compounds and their differences in malt from different origins. The results provided theoretical guidance for the factory to improve malt flavor quality.

Dramatic fluorescence enhancement of PCN-224 and its application in “turn off” immunoassay for sensitive detection of E. coli O157:H7 in milk

Bolong Fang,Xin Liu,Juan Peng,Yuzhi Li,Zhiyong Gong,Weihua Lai

In this study, a type of luminescent porous coordination network-224 (PCN-224) in alkaline conditions was synthesized with the dramatic fluorescence enhancement by 20.4 times, which was explained by the fact that the decrease of Zr 4+ content in alkaline conditions resulted in the partial recovery of the electron cloud density of 4,4′,4′′,4′′′-(Porphine-5,10,15,20-tetrayl) tetrakis(benzoic acid) (TCPP). Given the large overlap between the excitation spectrum of PCN-224 and the absorption band of Ag nanoparticles (Ag NPs), the coating of the Ag layer on PCN-224 triggered the fluorescence quenching effect, which was applied to “turn off” fluorescence immunoassay for sensitive detection of Escherichia coli O157:H7 ( E. coli O157:H7) in milk. The proposed immunoassay reached a low limit of detection (LOD) of 3.3 × 10 2 CFU mL −1 , 29.7 times more sensitive than the conventional ELISA. It will provide a novel alternative strategy for sensitively detecting pathogenic bacteria in the field of food safety.

Formulation, characterization, and In vitro evaluation of lenvatinib-loaded solid lipid nanoparticles functionalized with Twenty-Polyglycerol vitamin E succinate for liver cancer treatment

Yanyan Zhou,Shengnan Luo,Zhe Jiang,Xiang Luo,Zhangsen Yu,Zhixin Wang,Kewu Zhu

Objective Lenvatinib (LEN), a first-line treatment for advanced hepatocellular carcinoma (HCC), faces limitations due to adverse effects and drug resistance. This study aimed to develop LEN-loaded solid lipid nanoparticles (SLNs) modified with Twenty-polyglycerol vitamin E succinate (PG20-VES@LEN-SLNs) to enhance therapeutic efficacy and compare them with Tween80-modified SLNs (Tween80@LEN-SLNs).Methods The formulation of LEN-SLNs was optimized based on particle size and polydispersity index (PDI) by screening lipid matrices (GMS, GMP, SA, CP, GB, GMD), surfactant types (Tween80, PG20-VES, TPGS1000, F68), and GMS:SPC ratios. Physicochemical properties were characterized using dynamic light scattering (DLS), transmission electron microscopy (TEM), differential scanning calorimetry (DSC), and Fourier-transform infrared spectroscopy (FTIR). Encapsulation efficiency (EE), drug loading (DL), and in vitro drug release profiles were evaluated. Cytotoxicity against HepG2, Huh-7, and L02 cells was assessed via MTT assay, while cellular uptake in HepG2 was visualized using Nile Red-labeled SLNs.Results Optimized PG20-VES@LEN-SLNs exhibited a smaller particle size (294.6 ± 10.4 nm vs. 308.6 ± 29.5 nm for Tween80@LEN-SLNs) and higher EE (80.7 ± 5.1% vs. 72.7 ± 4.0%). Both formulations showed sustained drug release over 48 h, significantly slower than free LEN (97.4% released in 24 h). PG20-VES@LEN-SLNs demonstrated superior cytotoxicity against HepG2 cells (IC50 = 36.47 μM) compared to Tween80@LEN-SLNs (IC50 = 42.49 μM) and free LEN (IC50 = 116.8 μM), with enhanced cellular uptake observed via confocal microscopy. In Huh-7 cells, PG20-VES@LEN-SLNs and Tween80@LEN-SLNs reduced the IC50 of lenvatinib from 189.21 μM (free LEN) to 18.04 μM and 18.41 μM, respectively. Conclusion PG20-VES@LEN-SLNs effectively improved LEN’s therapeutic index through sustained release, enhanced tumor cell targeting, and synergistic cytotoxicity. This study highlights PG20-VES as a multifunctional surfactant for advanced HCC nanotherapy, offering a promising strategy to overcome clinical limitations of LEN.

Optimized LC-MS/MS approach for trace detection of trans-4,5-epoxy-(E)-2-decenal: Advancing volatile organic compounds biomarker research in human

Ziyuan Zheng,Wenguang Yan,Wenlong Liu,Zihao Cai,Yanjun Ding,Jiang Ling

Volatile organic compounds (VOCs) play a critical role in human physiology, with their concentrations serving as key indicators of physiological states. Among these, trans-4,5-epoxy-(E)-2-decenal, a volatile organic compound found in mammalian blood, exhibits unique chemical reactivity and olfactory sensitivity due to its molecular structure, which is closely associated with lipid peroxidation processes. However, conventional detection methods, such as gas chromatography-olfactometry-mass spectrometry (GC-O-MS), suffer from limitations including inherent subjectivity, poor reproducibility, stringent operational requirements, and low throughput, which undermine their clinical reliability. To address these challenges, this study developed an optimized liquid chromatography-tandem mass spectrometry (LC-MS/MS) method for accurate qualitative and quantitative analysis. Given the poor detectability of aldehydes via LC-MS/MS, 2,4-dinitrophenylhydrazine (DNPH) derivatization was employed to enhance the chromatographic behavior and retention of the target compound. Additionally, HLB solid-phase extraction (SPE) columns was employed for purification to enhance the sensitivity of LC-MS/MS for the detection of trans-4,5-epoxy-(E)-2-decenal. Following derivatization, trans-4,5-epoxy-(E)-2-decenal demonstrated strong retention during chromatographic separation. The mobile phase, composed of acetonitrile and ultrapure water, exhibited significantly superior performance compared to combinations of acetonitrile with ammonium acetate buffer. Under optimized conditions, the LC-MS/MS method demonstrated excellent linearity for trans-4,5-epoxy-(E)-2-decenal within a range of 1–300 ng/mL, with correlation coefficient (R 2 ) of 0.9984, detection limit (LOD) of 0.3 ng/mL. The relative standard deviation (RSD) for spiked blood samples in the experiment was 12.53 %.

The soybean lecithin-cyclodextrin-vitamin E complex nanoparticles stabilized Pickering emulsions for the delivery of β-carotene: Physicochemical properties and in vitro digestion

Lei Hao,Junjiao Li,Jin Mao,Qi Zhou,Qianchun Deng,Zhaofei Chai,Lei Zheng,Jie Shi

In this work, soybean lecithin (LC) was used to modify β-cyclodextrin (β-CD) with hydrophobic fat chains to become amphiphilic (LC-CD), and vitamin E (VE) was encapsulated in former modified β-CD complexes (LC-CD-VE), the new Pickering emulsions stabilized by LC-CD-VE and LC-CD complexes for the delivery of β-carotene (BC) were created. The surface tension, contact angle, zeta potential, and particle size were used to assess the changes in complexes nanoparticles at various pH values. Furthermore, LC-CD-VE has more promise as Pickering emulsion stabilizer than LC-CD because of the smaller particle size (271.11 nm), proper contact angle (58.02°), and lower surface tension (42.49 mN/m). The interactions between β-cyclodextrin, soybean lecithin, and vitamin E were confirmed using Fourier transform infrared spectroscopy (FTIR), X-ray diffraction (XRD), nuclear magnetic resonance (NMR), and thermogravimetric analysis (TGA). The durability of Pickering emulsions was examined at various volume fractions of the oil phase and concentrations of nanoparticles. Compared to the emulsion stabilized by LC-CD, the one stabilized by LC-CD-VE showed superior storage stability. Moreover, for the delivery of BC, Pickering emulsions stabilized by LC-CD and LC-CD-VE can outperform bulk oil and Tween 80 stabilized emulsions in terms of UV light stability, storage stability, and bioaccessibility. This work could offer fresh perspectives on stabilizer alternatives for Pickering emulsion delivery systems.

Ultra-robust stretchable electrode for e-skin: In situ assembly using a nanofiber scaffold and liquid metal to mimic water-to-net interaction

Jinwei Cao,Fei Liang,Huayang Li,Xin Li,Youjun Fan,Chao Hu,Jing Yu,Jin Xu,Yiming Yin,Fali Li,Dan Xu,Hanfang Feng,Huali Yang,Yiwei Liu,Xiaodong Chen,Guang Zhu,Run-Wei Li

The development of stretchable electronics could enhance novel interface structures to solve the stretchability–conductivity dilemma, which remains a major challenge. Herein, we report a nano-liquid metal (LM)-based highly robust stretchable electrode (NHSE) with a self-adaptable interface that mimics water-to-net interaction. Based on the in situ assembly of electrospun elastic nanofiber scaffolds and electrosprayed LM nanoparticles, the NHSE exhibits an extremely low sheet resistance of 52 mΩ sq −1 . It is not only insensitive to a large degree of mechanical stretching (i.e., 350% electrical resistance change upon 570% elongation) but also immune to cyclic deformation (i.e., 5% electrical resistance increases after 330 000 stretching cycles with 100% elongation). These key properties are far superior to those of the state-of-the-art reports. Its robustness and stability are verified under diverse circumstances, including long-term exposure to air (420 days), cyclic submersion (30 000 times), and resilience against mechanical damages. The combination of conductivity, stretchability, and durability makes the NHSE a promising conductor/electrode solution for flexible/stretchable electronics for applications such as wearable on-body physiological signal detection, human–machine interaction, and heating e-skin.

Rapid Determination of Flavorings in e-Cigarette Liquid by Direct Analysis in Real Time (DART) Mass Spectrometry (MS) in the Quick Strip Mode

Xuerui Lou,Minglei Li,Weiwei Guo,Yingjie Fu,Hui Xi,Peng Li,Wuduo Zhao,Shihao Sun

Electronic cigarettes (E-cigarettes) have become popular around the world. An important reason is the variety of available flavors. However, many countries have imposed restrictions on flavor substances in E-cigarettes due to their potential health risks. Therefore, it is necessary to develop an effective way to identify flavorings in E-cigarette liquids. In this work, direct analysis in real time-mass spectrometry (DART-MS) in the quick strip (QS) mode was developed and applied to determine flavorings in the E-cigarettes. Vanillin, ethyl vanillin, maltol, and ethyl maltol were quantified. Meanwhile, the ionization efficiency of flavorings in the different solvents was compared in the QS mode, which revealed that the solvent boiling point was related to the analyte ionization efficiency. The effect of endogenous matrix (propylene glycol and glycerol) on flavoring ionization was also investigated. Calibration curves with satisfactory linearity (R2 > 0.99) were established from 1 to 1000 μg L−1. Good sensitivity (limits of detection [LODs] < 0.3 μg L−1), recoveries (92.6% to 104.7%), and acceptable repeatability (relative standard deviations < 14.6%, n = 5) were obtained. The limits of quantification (LOQs; 10–50 μg g−1) for the E-cigarette liquid sample were much lower than the regulatory limits. The developed method provided a simple way for rapidly determining flavorings in E-cigarettes.

Characterization of Qu-aroma of medium–high temperature Daqu from different production areas using sensory evaluation, E-nose, and GC–MS/O analysis

Deng Jie,Zheng Jia,Li Xing,Huang Dan,Ye Guangbin,Luo Huibo

Qu -aroma is a critical quality indicator for medium–high temperature Daqu (MT- Daqu ). Due to the differences in regional and environmental conditions, these differences are likely to cause variations in the Qu -aroma of MT- Daqu . Despite this, comprehensive research on the variations in Qu -aroma across different regions has been lacking. This study aims to address this gap to analyze the differences in Qu -aroma characteristics of MT- Daqu from seven distinct production areas. Sensory analysis identified seven broad aroma categories and 25 specific aromas characterizing the Qu -aroma of MT- Daqu samples. Chen aroma and roasted aroma were notably more prevalent in MT- Daqu samples from Sichuan compared to those from other regions ( P  <  0.05 ). In total, 123 volatile compounds were detected in MT- Daqu , with 42 classified as aroma-active compounds. Among these, 21 aroma-active compounds were identified as markers distinguishing Sichuan MT- Daqu from those produced in non-Sichuan regions, showing significant differences in their concentrations ( P  <  0.05 ). Additionally, six major aroma-active compounds were found to significantly contribute to the aroma differences between Sichuan and non-Sichuan MT- Daqu . This study delineates the distinct Qu -aroma characteristics of MT- Daqu from various SAB production areas. The insights gained from this research offer valuable guidance for optimizing flavor profiles in MT- Daqu production. Graphical
