First simultaneous detection and discrimination of CAP and MG. • Ratiometric detection of CAP and MG using dual excitation N-CDs. • CAP and MG exhibit distinct quenching mechanisms (IFE vs IFE/FRET). • A handheld smartphone platform with N-CDs/PVA film enables visual detection. • Satisfactory recovery is achieved in aquatic product samples. The expanding aquaculture industry, driven by growing demand for aquatic products, has raised serious concerns about residual chloramphenicol (CAP) and malachite green (MG) due to their detrimental impact on human health and the environment. Herein, a dual-excitation ratiometric fluorescence probe based on nitrogen-doped carbon dots (N-CDs) is developed for simultaneously detecting and discriminating CAP and MG. Employing a hydrothermal approach with 5-aminoisophthalic acid and biuret as precursors, the synthesized N-CDs possess two excitation peaks (286 nm and 348 nm) and corresponding emission maximum at 404 nm. The presence of CAP significantly quenches the 286 nm excitation peak of N-CDs via the internal filtering effect (IFE), while leaving the 348 nm peak largely unaffected. This selective quenching yields a linear range of 0.045–100 μM with a limit of detection (LOD) as low as 45 nM. In contrast, the fluorescence quenching by MG is mediated principally by fluorescence resonance energy transfer and IFE, leading to a pronounced quenching efficacy at two excitation wavelengths, thus achieving a low LOD (73 nM) within 0.073–125 μM. Furthermore, the ability to differentiate between CAP and MG in mixed samples is achieved through linear discriminant analysis and hierarchical cluster analysis, leveraging the differential quenching responses of N-CDs. Additionally, a smartphone-integrated sensing platform is constructed for the detection of CAP and MG, achieving satisfactory recovery rates in aquatic environments. In summary, this research establishes a dual-analyte ratiometric sensing approach for CAP and MG, offering a practical tool for food safety and environmental surveillance. Triethylamine (TEA) is a colorless organic liquid known for its high volatility that poses significant irritation to the human respiratory tract; meanwhile, TEA can be released from decaying fish, which can be monitored by a gas sensor. However, conventional TEA gas sensors typically require high operating temperatures, leading to a substantial energy consumption. To address food safety concerns and promote environmental sustainability, the advancement of a TEA sensor that works at room temperature is urgently needed. In our work, an FeWO4/f-MWCNTs-3 chemoresistive gas sensor was fabricated by the hydrothermal method, integrating FeWO4 with multiwalled carbon nanotubes treated with mixed acids (f-MWCNTs). The sensor demonstrates superior performance, owing to its elevated specific surface area, total pore volume, and synergistic effect of p–p heterojunctions. FeWO4/f-MWCNTs-3 demonstrates excellent reproducibility, moisture resistance, stability, a minimal detection threshold of 1 ppm, and relatively rapid response/recovery times of 15/63 s. It attains a 113% response at 100 ppm of TEA at 25 °C. The applicability of FeWO4/f-MWCNTs-3 for assessing fish freshness via TEA concentration analysis from pomfret fish stored at ambient temperature for 14 days was validated, indicating its significance in fish freshness detection methodologies. Additionally, the gas-sensing mechanism of this sensor was further explored using density functional theory (DFT).

This work describes the synergistic application of semi-complementary aptamer pairs and signals on–off ratio strategies on glassy carbon electrodes (GCE) for detecting lead ions (Pb2+) in fish. Gold nanoparticles (AuPNs) as the electrode substrate can provide added binding sites for the aptamers and improve the conductivity of the electrodes. Pb2+ aptamers containing ferrocene (Fc) molecules act as molecular recognizers in the sensing system. In the presence of target ions, Fc signals are affected by conformational changes of the aptamer. The “Ag nanowires@zeolitic imidazolate framework-8 with methylene blue (AgNWs@ZIF-8/MB)” can be semi-complementary to the Pb2+ aptamer after binding to single-stranded DNA (S1). However, S1/AgNWs@ZIF-8/MB self-assembled with Pb2+ aptamer (Apt) by hybridization incubation was quickly replaced by Pb2+ competitively, resulting in the loss of methylene blue (MB) signaling molecules. Hence, the internal reference signal (MB) and conformation change signal (Fc) comprise the ratio sensing system well. Morphology, spectroscopy, and electrochemistry methods have validated the modification and sensing behaviors. The used Apt has made considerable progress in analytical performance. In interference studies and stability checks, the ratio measurement signal IFc/IMB is a more reliable signal than the single signal readout. Following a log-linear relationship, this sensor provides a wide linear range. Furthermore, the proposed sensor can be used to determine Pb2+ in fish samples, and the results agree with those obtained using ICP-MS and recovery tests.

The purpose of this study is to investigate the effects of the interfacial layer number on the storage stability and in vitro digestion of fish oil-loaded primary, secondary, tertiary, and quaternary multilayer emulsions stabilized by gelatin particle and polysaccharides (anionic alginate and cationic chitosan), prepared using a layer-by-layer electrostatic deposition technique. The results demonstrate that the emulsion creaming stability during the storage process and the emulsion droplet stability against the gastric phase are dependent on the interfacial layer number. But, the interfacial layer number in the multilayer emulsions has no obvious effects on the droplet stability against droplet coalescence during the storage process and against the small intestinal phases of gastrointestinal tract models. Moreover, it also has no obvious effect on the sustained free fatty acid release of multilayer emulsions. This study can advance the fundamental understanding of multilayer emulsions and promote their potential applications.

The effects of l -arginine (Arg)-assisted ultrasonic treatment on the molecular and interfacial characteristics of myosin and emulsifying properties of the emulsion were evaluated to ascertain the underlying mechanism in improving the emulsion stability. Ultrasonication induced the exposure of residues of native myosin, which was increased by the addition of Arg (40 mM). Furthermore, in terms of emulsions containing Arg, the higher the ultrasonication intensity was, the greater the increase in adsorbed protein (from 15.43 ± 0.28% to 50.49 ± 1.65%) and π value, and the decrease in droplet sizes (from 4098 nm to 2324 nm) ( P < 0.05). Moreover, the increase in the ordered structures of interfacial myosin induced by Arg and ultrasonication favoured the formation of a protein gelation network. In summary, Arg-assisted ultrasonic treatment improved the stability of the emulsion by inducing the exposure of native myosin and facilitating the formation of ordered structures of interfacial myosin.

A disposable surface-enhanced Raman scattering (SERS) substrate was prepared by successively spraying silver nanoparticles (AgNPs) and gold nanoparticles (AuNPs) onto commercial filter paper using an inexpensive consumer sprayer. The strong surface enhancement of AgNPs and chemical stability of AuNPs can be advantageously combined. The substrate exhibited excellent SERS activity for malachite green (MG), methylene blue (MB), and crystal violet (CV) under 785-nm excitation, with limits of detection (LODs) of 4.3 × 10 −9 , 2.0 × 10 −8 , and 8.1 × 10 −8 M, respectively. The substrate exhibited long-term stability, and it can be stored under ambient conditions for 4 weeks with a relative standard deviation of less than 3% among peak intensities. The substrate also showed good reproducibility with a relative standard deviation of 7.1% among different substrate peak intensities. The substrates enable on-site determination of residual fishery drugs and distinguish MG, MB, and CV mixtures in spiked fish within 5 min, and the average recoveries in fish scales and fish meat were better 90.1% and 76.9%, respectively. The method exhibited rapidity, simplicity, and high sensitivity and is expected to be used for the screening of additives in food.

Antibiotics are a group of antibacterial drugs used in the treatment and prevention of bacterial diseases in humans, veterinary animals, and farmed fish. Inappropriate and excessive use of antibiotic therapy leads to antibiotic fragment in the water bodies thus affect the aquatic organisms . In this study, an amino group modified high surface area metal-organic framework (MOF) MIL-101(Cr)-NH 2 was used to prepare solid-phase microextraction (SPME) fiber to detect four different classes (total 6 ABs) of antibiotics for the first time from living tilapia fish ( Oreochromis mossambicus) by coupling SPME with high performance liquid chromatography-tandem mass spectrometry (LC-MS/MS). The extraction efficiencies of the custom-made fiber were superior as compared with the commercial C18, polydimethylsiloxane (PDMS), PDMS/divinylbenzene (DVB) and polyacrylate fibers. The custom-made fiber also exhibited excellent reproducibility with the low intra-fiber relative standard deviations (RSDs 1.5%–8.3%) and inter-fiber RSDs (7.3%–14.5%), which made it ideal for in vivo extraction in fish muscle. The as-prepared MIL-101(Cr)-NH 2 fiber was then used to determine antibiotics in the dorsal-epaxial muscle of living fish. Comparing to the traditional solid-liquid extraction (SLE) method, the SPME method showed reduced invasiveness and higher sensitivity than the SLE method. In general, this study explored a convenient, cost-effective and highly sensitive SPME method based on amino modified MOF for in vivo antibiotic detection in fish muscle.

A rapid synthesis of carbamazepine (CBZ) magnetic molecularly imprinted polymer (MMIP) was proposed based on reflux precipitation polymerization method. The synthesis time for the formation of MIP coating on MMIP was shortened to less than 4 h. The characterization of MMIP demonstrates the successful synthesis of the imprinted layer. The adsorption selectivity of MMIP was systematically evaluated and showed fast selective recognition for CBZ. The MMIP based magnetic solid-phase extraction (MSPE) combined with UHPLC-MS/MS was developed, and its feasibility was validated in four complex matrices of environmental water, sediment, fish muscle and liver. It was successfully applied for the analysis of environmental water, sediment, and different fish tissues. Four environmental water samples from different sampling sites were found to contain CBZ at concentrations < LOD or LOQ, while the sediment samples collected at the same location did not contain CBZ. Two out of three wild snakeheads were found to contain CBZ, and the liver showed the highest residue. The study of drug exposed snakeheads indicate CBZ tends to accumulate in liver, followed by brain, heart and kidneys, and finally muscle and gills. The proposed method displays high potential for analyzing CBZ in complex environmental and biological samples.

The presence of psychotropic drugs (PDs) in aquatic ecosystems represents an increasing environmental problem, posing a serious threat to human health and aquatic organisms. Lateral flow immunoassays (LFIA) have been widely used in the detection of PD contaminants. However, maintaining signaling tag reporting activity and achieving LFIA's multi-readout capability remain significant challenges to meeting a range of detection scenarios. Here, a rapid multifunctional LFIA has been developed for detecting diazepam (DAP), an emerging environmental and food safety PD contaminant, in lake water and fish samples. Copper hexacyanoferrate nanoparticles doped with Au and Pt (AuPt@Cu-HCF) were designed and manufactured as a multi-signal reporter with exceptional photothermal conversion efficiency and peroxidase-like enzymatic activity. This study integrates the colorimetric, photothermal, catalytic colorimetric, and catalytic photothermal effects of the AuPt@Cu-HCF nanozyme to form a “four-in-one” multi-readout LFIA. The multifunctional detection approach achieved four different detection signal outputs for DAP, with detection limits of 0.82 ng/mL, 12.82 pg/mL, 12.26 pg/mL, and 4.43 pg/mL for the basic colorimetric, photothermal, catalytic colorimetric, and colorimetric photothermal readout modes, respectively. This quadruplex-functional LFIA offers four different options with varying sensitivities and detection ranges, suitable for various application scenarios. It also allows multiple verifications for a single sample, enhancing detection accuracy.

This novel study explored how “roe rubbing” and “salt mixing” qualitatively transform fish roe into caviar, focusing on membrane phospholipids (PLs) and proteins. Salt mixing increased phosphatidylcholine (PC) concentration in membrane PLs, while DHA, linolenic acid, and linoleic acid levels decreased. After roe rubbing and salt mixing, Raman spectra of membrane PLs decreased at 1300, 1450, and 1655 cm −1 , indicating decreased torsional freedom of motion and C C telescopic vibration intensity. The hydrophobic environment formed by salt and interchain repulsion led to hydrogen bonding network, causing conformational changes in membrane proteins and increases in α-helix, β-sheet composition. Roe rubbing induced temporary disruption of protein chemical bonds, while eliminating contaminants mitigated off-flavors and improved the tissue condition. Salt caused osmotic pressure to release more lipids, which increased membrane thickness and consistent internal pore size, giving caviar elasticity and fullness. This work enhanced theoretical direction for caviar processing quality.

Triphenylmethane dyes have a wide range of applications in textiles, pharmaceuticals, food, and other fields. Malachite green (MG), fuchsin acid (FA), and crystalline violet (CV) were typical representatives of triphenylmethane dyes, and they are carcinogenic and mutagenic to aquatic organisms and environment. However, they need to be separated and enriched for their accurate quantification due to their low content. Therefore, it is important to develop a rapid and accurate enrichment method to monitor these dyes in aquatic systems for human health. In this paper, a novel QuEChERS adsorbent porous ZIF67/PAA/PES composite microspheres were prepared and applied for the rapid adsorption of triphenylmethane dyes in wastewater and fish samples, which improved the adsorption capacity and the analytical sensitivity of the targets. The experimental results demonstrated that the porous ZIF-67/PAA/PES composite microspheres exhibited excellent selective adsorption capacity of MG, FA, and CV, and after six adsorption–desorption cycles, the material adsorption amount can reach more than 90% of its original adsorption amount in wastewater. In addition, the porous ZIF67/PAA/PES composite microspheres were applied as QuEChERS adsorbents for the enrichment of MG and CV dyes in fish, and the adsorption rates of the dyes were 99.11% and 99.03%, with the RSDs of 1.58% and 1.27%, respectively. The limits of detection were 0.0093 and 0.0127 mg/L for MG and CV. Through the Langmuir adsorption isotherm models to predict the MG, FA, and CV of the maximum adsorption capacity were 5417.3622, 2119.9011, and 1654.1026 mg/g, respectively. Thus, the novel porous ZIF67/PAA/PES composite microspheres are more advantageous as QuEChERS adsorbents for sample pre-treatment and have very important research significance.

The strong spoilage capability and cold adaptability of Shewanella putrefaciens present a serious threat to the quality and safety of fish. This study aimed to investigate the synergic antibacterial effects of six phenolic acids (Gallic acid, GA; Caffeic acid, CA; Protocatechuic acid; Ferulic acid; Chlorogenic acid; p-Coumaric acid) in pairs against S . putrefaciens , and to illustrate the antibacterial mechanisms. The fractional inhibitory concentration index (FICI) of 15 combinations of phenolic acids against S. putrefaciens ranged from 0.5-0.75, suggesting synergistic or partial synergistic antibacterial effects of these phenolic acids. Time-kill curves and morphologic observation demonstrated that GA and CA (GC) exhibited the strongest synergistic effect against S. putrefaciens . GC synergistically damaged the structure integrity of S. putrefaciens , leading to the leakage of intracellular substances and inhibiting the activity of Na + K + -ATPase and respiratory chain dehydrogenase. Both GA and CA could bind to DNA and cause changes in DNA content. Proteomics analysis revealed that 399 proteins were affected in the GC groups, a number significantly higher than that in the single GA and CA groups. GC inhibited dissimilatory nitrate and sulfate reduction, and enhanced fatty acid degradation and assimilatory sulfate reduction, which might cause the imbalance of energy supply and ROS accumulation. Meanwhile, the antioxidant-related enzymes, efflux systems and some two-components systems were upregulated, while chemotaxis were inhibited. GC synergistically inhibited S. putrefaciens in turbot, and retarded the spoilage process. The results revealed multi-targeted synergistic antibacterial mechanisms of GC against S. putrefaciens , suggesting GC might be a good strategy for controlling S. putrefaciens and fish spoilage.
