Nanoplastics and di(2-ethylhexyl) phthalate (DEHP) are ubiquitous emerging contaminants that are transferred among organisms through food chain in the ecosystem. This study evaluated the trophic transfer of polystyrene nanoplastics (PSNPs) and DEHP in a food chain including Chlorella pyrenoidosa , Daphnia magna and Micropterus salmoides (algae-crustacean-fish) and lipid metabolism at a higher trophic level in fish. Our results showed that the PSNPs and DEHP accumulated in C. pyrenoidosa or D. magna were transferred to the M. salmoides , of which the DEHP were not biomagnified, while the PSNPs were trophically amplified by the food chain. It is suggested that more PSNPs might be accumulated by higher level consumers in a longer food chain. Additionally, the trophic transfer of PSNPs and DEHP resulted in antioxidant response and histopathological damage in M. salmoides . Moreover, the lipid biochemical parameters and lipid metabolism related genes ( fasn , hsl , cpt1a , atgl , apob , fabp1 , lpl , cetp ) of M. salmoides were significantly affected, which indicated disturbance of lipid metabolism. This study offers great insight into the transfer of contaminants by trophic transfer and their negative effects on organisms at higher trophic levels, which cause human exposure to MNPs and organic contaminants in the ecosystem.

Fishy odor was always generated in hairtail fish balls, decreasing the quality and reducing commercial acceptance. Improving the flavor of hairtail fish balls is a challenge in recent seafood industry. Extracts from sage leaves, oregano leaves and grape seeds (SOG) were proved to be effective in reducing the fishy odor in hairtail fish balls. The primary antioxidants were catechin, epicatechin and rosmarinic acid in SOG with the antioxidant capacity of 0.09 ± 0.01 mg gallic acid equivalents (GAE)/mL. Gas chromatography mass spectrometry (GC-MS) showed that about 50% volatility off-flavor compounds including aldehydes, ketones, alcohols and hydrocarbons, were reduced by the application of SOG. Inhibition of fishy odor by SOG was directly related with the reduced thiobarbituric acid reactive substances value (TBARs value) and total volatile basic nitrogen (TVB-N), which was likely due to the decreased lipid oxidation and bacteria growth, respectively. These results suggested the beneficial potential for SOG in inhibiting fishy odor formation and improving flavor of hairtail fish balls during storage.

Solid-phase extraction (SPE) was combined with dispersive liquid-liquid microextraction based on solidification of floating organic droplet (DLLME-SFO) as a pretreatment technique for the simultaneous analysis of 11 organochlorine pesticides (OCPs) and 5 polychlorinated biphenyls (PCBs) in fish tissue. Gas chromatography with electron capture detector was used for the identification and quantification of these compounds. In the newly developed method, the acetonitrile extractant of the fish sample was cleaned up by commercialized SPE cartridges packed with acid alumina, and then mixed with water, sodium-chloride, and n-pentadecane for the purpose of target analyte enrichment via DLLME-SFO process. Effect of the parameters including SPE packing material, amount and chemical nature of extraction solvent, water volume, and salt concentration on the signal responses were investigated, and the recoveries of this method ranged between 70.1% and 112.3% at three spiked levels under the optimized conditions. The calibration curves were found to be linear in the range of 1.56–312.5 μg L −1 , and the limits of detection ranged from 0.372 to 1.12 μg kg −1 . Comparing the other reported pretreatment method, the presented one was sensitive, time-saving, and environmentally friendly.

Sensitive quantification of mercury distribution in fish is challenging because of insufficient sensitivities of conventional analytical methods, the limited mass of organs (tens of micrograms to several milligrams), and dilution of analyte concentration from sample digestion. In this work, a simple and robust approach coupling multiwall carbon nanotubes assisted matrix solid-phase dispersion (MWCNTs-MSPD) to single-drop solution electrode glow discharge-induced cold vapor generation (SD-SEGD-CVG) was developed for the sensitive determination of mercury in limited amount of sample. Mercury species contained in a limited amount of sample can be efficiently extracted into a 100 μL of eluent by MWCNTs-MSPD, which are conveniently converted to Hg0 by SD-SEGD-CVG and further transported to atomic fluorescence spectrometry for their determination. Therefore, analyte dilution resulted from sample preparation is avoided and sensitivity is significantly improved. On the basis of consumption of 1 mg of sample, a limit of detection of 0.01 μg L–1 (0.2 pg) was obtained with relative standard deviations (RSDs) of 5.2% and 4.6% for 2 and 20 μg L–1, respectively. The accuracy of the proposed method was validated by analysis of three Certified Reference Materials with satisfying results. To confirm that SD-SEGD-CVG-AFS coupling to MWCNTs-MSPD is a promising method to quantify mercury distribution in fish, this method was successfully applied for the sensitive determination of mercury in seven organs of common carps (muscle, gill, intestine, liver, gallbladder, brain, and eye) after dietary of mercury species. The proposed method provides advantages of minimum sample dilution, low blank, high sample introduction efficiency, high sensitivity, and minimum toxic chemicals and sample consumption.

The estuarine ecological environment faces significant threats from contaminants of emerging concern (CECs); yet, the risk posed by CECs to resident organisms remains poorly understood. Here, we employed tiered toxicity testing to investigate the adverse effects and potential mechanisms of tris (1-chloro-2-propyl) phosphate (TCPP) on the early life stages of an estuarine fish, Mugilogobius chulae . TCPP affected the development of M. chulae embryos, including survival, morphology, hatching, and behavior. A concentration-dependent transcriptomic analysis showed that TCPP disrupted 12 neurodevelopment-related KEGG pathways in M. chulae embryos, with five of the 30 % top-ranked pathways related to neurotransmitter signaling. Besides the cholinergic synapse signaling pathway, the glutamatergic signaling pathway (including NMDAR and AMPAR subtypes) may also mediate TCPP-induced neurodevelopmental toxicity. The NMDAR subtype GRIN2B was downregulated at high concentrations. Molecular dynamics simulations revealed a strong interaction between TCPP and GRIN2B, with TCPP binding to the residues Ile153 and Ile188. The results suggest that NMDARs play a crucial role in TCPP-induced neurodevelopmental toxicity toward M. chulae. AOP network analysis predicted that TCPP may impact cognitive functions and memory. Our study provides a novel testing strategy for identifying the mechanisms of toxicity of CECs, a crucial component of ecological risk assessment.

In this study, we present a simple and rapid boronate affinity extraction methodology for the HPLC-MS/MS analysis of four nitrofuran metabolites (NFMs) including SEM, AOZ, AHD and AMOZ in fish samples. To enhance the efficacy of this approach, mesoporous poly(GMA-EGDMA) microspheres, abundant in cis-diols, were synthesized for boronate affinity extraction. Meanwhile, 4-fluoro-3-formylphenyl boronic acid was utilized for the derivatization of NFMs, facilitating the immobilization of boronate ligands onto their molecular structures. Compared to the Chinese national food safety standard GB 31656.13–2021, the boronate affinity extraction eliminates the need for extraction solvents and centrifugation, streamlines the pretreatment process, and maintains a mild extraction environment. Furthermore, the poly(GMA-EGDMA) microspheres exhibited excellent reusability, retaining their performance over six adsorption-desorption cycles. The NFMs demonstrated excellent linearity (R² > 0.999) across the range of 0.5 to 50 µg kg⁻¹ . The quantitative limit was established at 0.5 µg kg⁻¹ . The recoveries of spiked tilapia samples ranged from 94.2 % to 110.7 %, while intra-day and inter-day RSDs were below 5.9 %. This method emerges as an economical, straightforward, rapid, and sensitive alternative for monitoring of NFM residues in aquatic products.

Fermented fish products are vital sources of umami peptides. In this study, a hierarchical graph attention network-based model was developed to identify candidate umami peptides. Via an integrated approach combining metagenomics, molecular docking, attention weight analysis, molecular dynamics simulations, and experimental validation, three novel umami peptides (GYSSYK, LYSDSK, and TRTKASY) were identified from the Suanyu system, a traditional fermented fish product. It was revealed that T1R1 and T1R3 could form stable complexes with these peptides involving critical residues: GLU301, ARG277, LYS328, SER384, ASP147, GLN278, and HIS71. In sensory evaluation, candidate peptides showed high umami properties with umami threshold values of 0.28 (±0.14) mg/mL. Overall, this study presents a hierarchical graph attention network-based screening methodology for the rapid screening and in-depth study of umami peptides.

In this study, threeLactiplantibacillus plantarum, namely 3-14-LJ, M22, and MB1, with high acetate esterase activity, acid, salt, and high-temperature tolerance were selected from 708 strains isolated from fermented food. Then,L. plantarumstrains MB1, M22, and 3-14-LJ were inoculated at 107CFU/mL in the model and 107CFU/g in actualSuanzhayusystems, and the effects during fermentation on the physicochemical properties, amino acid, and volatile substance were investigated. The results showed that the inoculated group had a faster pH decrease, lower protein content, higher TCA-soluble peptides, and total amino acid contents than the control group in both systems (p< 0.05). Inoculation was also found to increase the production of volatile compounds, particularly esters, improve the sour taste, and decrease the bitterness of the product (p< 0.05).L. plantarumM22 was more effective than the other two strains in stimulating the production of isoamyl acetate, ethyl hexanoate, and ethyl octanoate. However, differences were discovered between the strains as well as between the model and the actual systems. Overall, the isolated strains, particularlyL. plantarumM22, have good fermentation characteristics and have the potential to become excellentSuanzhayufermenters in the future. Keywords:Lactiplantibacillus plantarum;fermented fish;esters;volatile compounds;starter culture;protein metabolism

It is highly challenging to construct the best SERS hotspots for the detection of proteins by surface-enhanced Raman spectroscopy (SERS). Using its own characteristics to construct hotspots can achieve the effect of sensitivity and specificity. In this study, we built a fishing mode device to detect the receptor-binding domain (RBD) of severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) at low concentrations in different detection environments and obtained a sensitive SERS signal response. Based on the spatial resolution of proteins and their protein-specific recognition functions, SERS hotspots were constructed using aptamers and small molecules that can specifically bind to RBD and cooperate with Au nanoparticles (NPs) to detect RBD in the environment using SERS signals of beacon molecules. Therefore, two kinds of AuNPs modified with aptamers and small molecules were used in the fishing mode device, which can specifically recognize and bind RBD to form a stable hotspot to achieve high sensitivity and specificity for RBD detection. The fishing mode device can detect the presence of RBD at concentrations as low as 0.625 ng/mL and can produce a good SERS signal response within 15 min. Meanwhile, we can detect an RBD of 0.625 ng/mL in the mixed solution with various proteins, and the concentration of RBD in the complex environment of urine and blood can be as low as 1.25 ng/mL. This provides a research basis for SERS in practical applications for protein detection work.

Elucidating the differential oxidation of proteins and lipids is crucial for targeted flavor modulation in thermally processed fish products. This study constructed a mixed thermo-oxidation model to investigate the effects of fatty acids with different degrees of saturation (stearic acid: SA, oleic acid: OA, linoleic acid: LA) and myofibrillar proteins (MPs) on the oxidation mechanism and flavor changes of fish oil. MPs inhibited key lipid flavor precursors and double-bond volatile compounds. Co-addition of MPs with SA or LA promoted specific lipid accumulation and generated (Z)-2-decenal or (E, E)-2,4-nonadienal, respectively. Fatty acids and MPs, as free radical donors, significantly reduced triacylglycerols and sphingolipids in mackerel oil, with unsaturated fatty acids showing greater degradation. Aldehydes and ketones decreased, while alcohols and esters increased, suggesting the further oxidation of secondary flavor compounds. This study elucidated the regulatory mechanisms of fatty acids and MPs on fish oil oxidation, providing insights into flavor control in thermal processing.

An innovative core–shell magnetic molecularly imprinted polymers, Fe 3 O 4 @SiO 2 @MIPs, was elaborately tailored for specific separation and enrichment of olaquindox (OLA) and its metabolic marker methyl-3-quinoxaline-2carboxylic acid (MQCA). Herein, benefiting from the combination of functionalized magnetic nanoparticles (Fe 3 O 4 @SiO 2 ) and MIPs, Fe 3 O 4 @SiO 2 @MIPs not only possessed favorable magnetic properties and stability, avoiding tedious sample pretreatment process, but also demonstrated exceptional selective recognition ability and adsorption capacity, suppressing influence of coexisting interfering substances. Encouraged by prominent merits, Fe 3 O 4 @SiO 2 @MIPs-based magnetic solid phase extraction with HPLC method was developed, realizing simultaneous measurement of OLA and MQCA. Under optimal conditions, excellent linear ranges of 0–100 μg/L with detection limit of 0.175–0.271 μg/L were obtained. The proposed method was finally utilized for determination of OLA and MQCA in fish muscle and milk samples with satisfactory recoveries (80.56–95.26%) and relative standard deviation below 8.1%, furnishing a reliable and sensitive strategy for enrichment and detection residual veterinary drugs in food samples.

Whey protein hydrolysate (WPH), maltodextrin (MD), low methoxy pectin (LMP) and high methoxy pectin (HMP) were used to study the interface binding under high temperature sterilization conditions (121 °C, 15 min). The effect of competitive binding of MD and pectin with interface protein on the storage stability and gastrointestinal fate of fish oil emulsion was studied. The low-molecular-weight MD and the interface protein undergo a wide range of covalent binding through the Maillard reaction, while a small amount of high-molecular-weight pectin can form a protective shell with the interface protein through electrostatic interaction to inhibit the covalent reaction of MD, which was called competitive binding. However, due to the bridging and depletion flocculation of pectin, the emulsification stability of fish oil emulsion reduced. After 13 days of storage, compared with the particle size of the WPH fish oil emulsion (459.18 nm), the fish oil emulsion added with LMP and HMP reached 693.58 nm and 838.54 nm, respectively. In vitro digestion proved that WPH fish oil emulsion flocculated rapidly in the stomach (1.76 μm), while WPH-MD and WPH-MD-pectin fish oil emulsions flocculated slightly (less than800 nm). WPH-MD-pectin delayed digestion in the gastrointestinal tract, and HMP exhibited a better slow-release effect. This study provides reference for the design of multi-component functional drinks and other bioactive ingredient delivery system.
