Low-salt sausages are gaining popularity due to health risks from high salt intake. In this study, the effects of electron beam irradiation (EBI) at various doses (0, 3, 6 kGy) combined with inclusion complexes (ICs) of tea-polyphenol/β-cyclodextrin/NaCl on the quality of low-salt Sichuan-style sausages during ambient storage (25 °C) were investigated. Additionally, machine learning algorithms were employed, and the accuracy and R 2 of both SVM and Extra Tree models exceeded 99.9%, highlighting the key oxidation biomarkers to establish the oxidation mechanism. ICs demonstrated enhanced antioxidant properties that effectively suppressed excessive oxidation in sausages accelerated by 3 kGy EBI, thereby reducing the oxidative products contributing off flavors while preserving desirable flavor compounds derived from spices, pepper oil and microbial metabolism. These findings offer novel insights into utilizing ICs and 3 kGy EBI for preserving low-salt Sichuan-style sausages while providing valuable information regarding potential volatile biomarker for detecting sausage oxidation levels.

Ready-to-eat sea cucumbers (RSC) cannot be preserved at room temperature due to severe autolysis. This study systematically examined the quality-preserving effects of tea polyphenol (TP) and N-(3-Dimethylaminopropyl)-N′-ethylcarbodiimide hydrochloride/N-hydroxysuccinimide (EDC/NHS), two cross-linking treatments, on RSC during storage at room temperature. The results demonstrated that both cross-linking treatments significantly delayed the deterioration of quality and exhibited antimicrobial effects, accompanied by enhanced the structural and thermal stability of collagen in RSC. Microstructural analysis further confirmed that TP and EDC/NHS strengthened the collagen fibers. Molecular docking simulations suggested that TP interacts with collagen primarily through non-covalent binding, whereas EDC/NHS achieves positional localization via electrostatic attraction, subsequently reinforcing the collagen structure through covalent amide bonds. Both strategies effectively slowed the deterioration of RSC during storage at room temperature, thereby providing a theoretical foundation for the development of advanced preservation technologies for RSC.

Due to the intricate components of wastewater and physical stacking of graphene oxide (GO), the current GO membranes exhibit the fatal defects of low porosity and poor anti-fouling ability. Herein, a three dimensional (3D) FeCo-PBA@GO functional microsphere was constructed via anchoring GO nanosheets onto hard template of 3D polymethyl methacrylate (PMMA) microsphere driven by hydrogen bond and van der Waals force. On this basis, the Prussian blue analogs nanocrystals (FeCo-PBA) grew in situ on such functional microsphere and further assembled onto porous polyacrylonitrile (PAN) fiber mat through the tannic acid assisted spraying technique, resulting in highly permeable and photocatalytic self-cleaning FeCo-PBA@GO/PAN fibrous composite membrane. Interestingly, the unique 3D nanostructure of FeCo-PBA@GO microsphere arranging on membrane surface effectively prevented the dense physical stacking of GO nanosheets and increased the oil repellence property, thereby regulating the water channel and breaking through permeability limitation of membrane. As a result, the composite membrane exhibited superior separation fluxes (˃3029 L m −2 h −1 ) for different oil/water (O/W) emulsions, with rejection rate above 99.0 %. Owing to rich active sites and enhanced electron/mass transport property of FeCo-PBA functional layer, the composite membrane could effectively degrade various dyes by peroxymonosulfate (PMS) activation, with the degradation efficiency of 93.1–96.9 % within 40 min and demonstrated favorable antifouling and photocatalytic self-cleaning ability after cycling separation of O/W emulsion. In addition, the generated multiple reactive oxygen species and photocatalytic mechanism were proposed. This work provides a versatile pathway to prepare multifunctional GO advanced membranes for large-scale treatment of complex emulsified oily wastewater.

Tea polyphenols transform under processing methods, but a systematic study on their changes in the same large-leaf tea cultivar is lacking. Here, Camellia sinensis var. assamica cv. Yunkang-10 leaves underwent six processing methods and were assessed using optimized nontargeted (UHPLC-Q-Exactive Orbitrap-MS) and targeted (UHPLC-QqQ-MS) polyphenomics, along with molecular networking analysis. 903 and 52 polyphenolic compounds (catechins, flavones and flavonols, and phenolic acids) were respectively relatively and absolutely quantified for the first time. Dark and black teas, with the lowest polyphenol content, differed from the other four tea types, although variations existed among these four teas. However, some flavonol and flavone aglycones (e.g. kaempferol, apigenin), as well as some phenolic acids (e.g. ellagic acid, gallic acid), exhibited higher levels in dark and black teas. Correlations between polyphenolic composition and electronic sensory characteristics were observed using E-tongue and E-eye. This study enriches understanding of polyphenol profiles in Chinese teas post diverse processing.

Green pea hulls are a byproduct of the processing of green pea and are rich in phenolic substances. In the present study, in vitro digestion, human colonic adenocarcinoma cell line (Caco-2) monolayer, and the Caco-2/macrophage cell lines of the murine origin (Raw264.7) coculture model were established to investigate the release of polyphenols, absorption, and transport of digestive products and their effects on inflammation and intestinal barrier. During the digestive process, polyphenols were constantly released from the pea hulls, reaching the maximum amount in the small intestine (total phenolic content (TPC): 5.41 ± 0.04 mg gallic acid (GAE)/g dry weight (DW)), and the digestive products (800 μg/mL) could reduce the secretion of NO (50.9%), IL-6 (50.6%), and TNF-α (24.6%) and inhibit the mRNA expression of cyclooxygenase-2 (COX-2) (37.2%) and inducible nitric oxide synthase (iNOS) (91.1%) compared with the lipopolysaccharide (LPS) group. A total of 12 phenolic components were quantified by ultraperformance liquid chromatography-linear ion trap orbitrap tandem mass spectrometry (UHPLC-LTQ-OrbiTrap-MS) technology. Kaempferol trihexoside in digestive products could be absorbed and transported (1.25 ± 0.13 ng quercetin/mL). The digestive products could promote the expression of claudin-1 (210.8%), occludin (64.9%), and zonulin occludin-1 (ZO-1) (52.0%) compared with the LPS group and exert anti-inflammatory effects after being absorbed. The results indicated that pea hull polyphenols could be continuously released and absorbed to play a positive role in protecting the intestinal barrier and anti-inflammatory activity.
