Rheumatoid arthritis (RA) is a chronic autoimmune disease of yet undetermined etiology that is accompanied by significant oxidative stress, inflammatory responses, and damage to joint tissues. In this study, we designed chondroitin sulfate (CS)-modified tragacanth gum–gelatin composite nanocapsules (CS-Cur-TGNCs) loaded with curcumin nanocrystals (Cur-NCs), which rely on the ability of CS to target CD44 to accumulate drugs in inflamed joints. Cur was encapsulated in the form of nanocrystals into tragacanth gum–gelatin composite nanocapsules (TGNCs) by using an inborn microcrystallization method, which produced CS-Cur-TGNCs with a particle size of approximately 80 ± 11.54 nm and a drug loading capacity of 54.18 ± 5.17%. In an in vitro drug release assay, CS-Cur-TGNCs showed MMP-2-responsive properties. During the treatment of RA, CS-Cur-TGNCs significantly inhibited oxidative stress, promoted the polarization of M2-type macrophages to M1-type macrophages, and decreased the expression of inflammatory factors (TNF-α, IL-1β, and IL-6). In addition, it also exerted excellent anti-inflammatory effects, and significantly alleviated the swelling of joints during the treatment of gouty arthritis (GA). Therefore, CS-Cur-TGNCs, as a novel drug delivery system, could lead to new ideas for clinical therapeutic regimens for RA and GA. Graphical Abstract

In this study, the preparation of hydrogel beads through electrostatic interactions between Ι-carrageenan (IC) and ε-polylysine (ε-PL) using a dropwise method is reported. As the concentration of ε-PL increased, the degree of swelling of the hydrogel beads decreased. FTIR and XRD analyses revealed shifts in the absorption peaks, suggesting the formation of hydrogen bonding, electrostatic interactions in the hydrogel beads. TGA showed that the mass loss of the IC/ε-PL hydrogel beads was significantly lower compared to that of pure ε-PL. These results indicate that the IC component has a protective stabilizing effect on the hydrogel structure. ε-PL concentration of 2% yielded the highest encapsulation efficiency of curcumin (Cur) in the hydrogel beads. In vitro release studies showed that the hydrogel beads sustained the release of Cur and the release kinetics followed the first-order and Hixson-Crowell models. Collectively, these findings demonstrate that these hydrogel beads have the potential to be effective carriers of hydrophobic substances. Graphical

In order to improve the mechanical properties and UV resistance of polylactic acid (PLA) composites, a bio-based additive (ESO-CUR) was synthesized by one-pot method. A new environment-friendly toughening agent was synthesized by using epoxy soybean oil (ESO) as the core material and curcumin (CUR) as the curing agent. PLA composite material with toughening and UV resistance was prepared by melt blending process. Among them, the elongation at break of 6%ESO-CUR/PLA reached 20.26% in the tensile test, which was 11.8 times higher than that of pure PLA. In addition, 6%ESO-CUR/PLA has excellent UV resistance, and the UV protection factor (UPF) is increased from 3.1 to 15,485 of pure PLA. The results show that the new environmental protection toughening agent has a significant synergistic effect on improving the mechanical properties and UV protection properties of PLA. In order to reduce the white pollution caused by traditional plastics, it provides a new way to prepare biodegradable materials with excellent properties.

The present study developed a natural nano-assembled delivery system with curcumin (Cur)-synergistic bioactivity using natural oleanolic acid (OA). The OA self-assembled nanoparticles (OA NPs) were systematically prepared via region-limited self-assembly, with their size (20–600 nm) regulated by varying key preparation parameters. The XPS, FTIR, CAT, and MD revealed that the 3-hydroxy oxygen and 17-carboxyl oxygen of OA act as hydrogen bond donor and acceptor, respectively, to form hydrogen bonds. Together with van der Waals forces, these interactions drive the formation of hydrophilic surface-exposed nanoparticles. The OA NPs exhibited good biocompatibility, demonstrated by favorable blood safety (hemolysis rate <5 %) and low cytotoxicity (cell viability >90 %). The Cur was efficiently encapsulated into OA NPs, achieving a LC of 22.81 % and EE of 68.43 %. The encapsulated Cur showed significantly improved physicochemical properties, with a 29.02-fold increase in water solubility, a 3.64-fold enhancement in photostability, and a 2.77-fold improvement in thermal stability compared to free Cur. In vivo , OA NPs exhibited intestinal retention time three times longer than gastric retention, and release studies confirmed their intestinal-selective and sustained-release behavior, which followed the Korsmeyer–Peppas model. The Cur-OA NPs demonstrated optimal antioxidant activity, showing 2.45-fold higher potency (based on EC 50 values) than free Cur, attributable to the synergistic effect between Cur and OA NPs. This study highlights the potential of Cur-OA NPs as an oral antioxidant formulation and offers a promising strategy for developing natural nanocarriers with curcumin-synergistic bioactivity.

A thermoresponsive composite carrier, γ-cyclodextrin metal–organic frameworks (γ-CD-MOFs) functionalized with N-isopropylacrylamide (PNIPAm) and soy hull polysaccharides (SHP), was developed to enhance curcumin (Cur) encapsulation and controlled release. X-Ray diffraction (XRD) confirmed that surface functionalization preserved the crystalline structure of γ-CD-MOF, while FTIR indicated hydrogen bonding as the primary interaction between γ-CD-MOF and Cur. Successful PNIPAm and SHP integration was verified by their characteristic functional group signals and the detection of nitrogen and sulfur elements via X-ray photoelectron spectroscopy (XPS). Thermal analyses revealed improved stability of the Cur-loaded composite. The encapsulation efficiency of Cur reached 56.60 ± 0.14 %. In vitro release studies demonstrated suppressed release below the lower critical solution temperature (LCST), with a cumulative release of only 16.51 ± 0.51 % at 25 °C. At elevated temperatures (37 °C and 45 °C), PNIPAm collapse triggered rapid release of 79.68 ± 0.78 % and 81.58 ± 0.31 %, respectively. Kinetic modeling showed Fickian diffusion at 25 °C and non-Fickian diffusion at higher temperatures, reflecting the combined effects of diffusion and matrix erosion. Overall, γ-CD-MOF-PNIPAm@SHP provides a stable, thermoresponsive platform for efficient encapsulation and temperature-triggered release of hydrophobic bioactives, highlighting the potential of MOF-polymer composites for targeted and stimuli-responsive delivery in functional food and pharmaceutical applications.

The efficient loading of proteins on bioactive substances had been a research hotspot in the fields of food science and industry in recent years. The complex of ultrasound-assisted phosphorylated cantaloupe seed protein isolate (UP-CSPI) and curcumin (CUR) was prepared by pH shift method to investigate the effects of different concentrations of CUR on the structure and functional properties of UP-CSPI. The results showed that with the increase of CUR concentration, the zeta potential, the antioxidant activity and emulsifying performance of the complex improved. The interaction between CUR and UP-CSPI was a spontaneous reaction driven by Gibbs free energy (ΔG<0). The enthalpy change (ΔH) and entropy change (ΔS)>0, indicating mainly hydrophobic interaction. Furthermore, CUR caused changes in the secondary structure of the UP-CSPI, β-turns increased from 38.33 % to 45 %–47 %, random coils decreased from 25.85 % to 13 %–14 %. In conclusion, the binding of CUR to proteins through pH shift had solved the problem of CUR instability and also provided new insights for the development and application of plant protein-based delivery systems.

The sensitive and specific detection of curcumin and vanillin are important for food safety, quality control, and consumer health protection. Here, a nitrogen-doped carbon quantum dots (N-CQDs)-based nanosensor was developed for the highly sensitive detection of curcumin and vanillin. N-CQDs were synthesized via solvothermal method using L-theanine and 2,4,6-trimethyl-1,3-phenylenediamine (2,4,6-TMPDA) as carbon precursors. The excitation wavelength of the N-CQDs was 360 nm and the emission wavelength was 455 nm. The structural features of N-CQDs were characterized by FT-IR, X-ray photoelectron spectroscopy (XPS), X-ray powder diffraction (XRD) and Raman spectroscopy. Subsequently, the effects of pH and NaCl concentrations on N-CQDs fluorescence were studied. More importantly, leveraging the quenched fluorescence for multi-molecule sensing, the selective and sensitive detection of curcumin and vanillin were achieved, with linear ranges of 0.010-50 μM and 0.10-50 μM, respectively, and LODs of 3 nM and 30 nM, respectively. Using the developed fluorescence method, curcumin in chicken essence samples and vanillin in montmorillonite powder, chocolate beans, high-mountain sugar, and plum sugar were quantified. The recovery rate for curcumin was 93.4-106%, and for vanillin was 93.0-110%. The measured contents were further validated by HPLC-UV. Overall, the high N-CQDs selectivity for curcumin/vanillin enables rapid, sensitive fluorescence food analysis.

This research primarily investigates the encapsulation of curcumin within curdlan-whey protein isolate(CUR-WPI) composite gels and the subsequent release of the encapsulated compound. Results demonstrated that the composite gel could effectively encapsulate curcumin, with the highest encapsulation rate reaching 83.6%. The main force for the gel to encapsulate curcumin was electrostatic interaction and hydrogen bond. Fluorescence spectroscopy showed that curcumin can bind to WPI through hydrophobic interactions and suppress WPI's natural fluorescence. The composite gel exhibits excellent water-holding capacity (WHC) and the favorable texture profile analysis (TPA), which improved the photostability (2.57 times) and storage stability of curcumin (6.09 times). Moreover, the release rate of curcumin from the composite gel in intestinal fluid was higher than that in the stomach, which was related to the non-digestible characteristics of the curdlan and the dense network structure of the gel. The release kinetics results indicated that the main release mechanism of curcumin in the composite gel during the simulated digestion process was the diffusion mechanism. In conclusion, CUR-WPI composite gel is a good delivery carrier for curcumin, indicating its potential value for application in functional dairy products. Graphical

Methyl parathion (MP), an organophosphorus pesticide, exhibits potent insecticidal activity. However, the high toxicity of MP residues poses a serious threat to the environment and food safety. To achieve highly sensitive detection of MP, an electrochemical sensor was developed utilizing a composite modifier comprising multi-walled carbon nanotubes (MWCNTs), zirconia (ZrO 2 ), and curcumin (CM). MWCNTs provide a three-dimensional interconnected carbon conductive network. Owing to their inherent high electrical conductivity and large specific surface area (derived from their one-dimensional hollow nanostructure), this network accelerates electron and ion transport. ZrO 2 nanoparticles exhibit specific affinity for phosphorus-containing functionalities (including P S) within MP molecules, promoting analyte enrichment; the electropolymerized curcumin forms a redox-active mediator layer that facilitates MP reduction. This synergistic combination results in superior sensing performance. Under optimized conditions, the developed MWCNTs@ZrO 2 /CM sensor exhibits a linear detection range for MP from 0.01 to 10 μM and achieves a limit of detection (LOD) of 7.13 nM (S/N = 3). The fabricated sensor demonstrated excellent repeatability and reproducibility. Moreover, the sensor displayed high accuracy and practicality for MP determination in real fruit juice samples, underscoring its potential for food safety monitoring.

In this study, chitosan-dialdehyde-β-cyclodextrin-curcumin (CS-DCD-CUR) and alginate dialdehyde (ADA) were alternately deposited on the surface of electrospun cellulose acetate (CA) nanofibers driven by Schiff base bonding and electrostatic attraction. With the increasing number of bilayers, the self-assembled nanofibers showed an increased average fiber diameter from 441 to 576 nm and had relatively rough surfaces. The improved thermal stability and tensile strength of self-assembled nanofibers were attributed to the interactions between CS-DCD-CUR and ADA. The self-assembled nanofibers exhibited pH-sensitive release characteristics under acidic conditions due to the weakening of the electrostatic interaction and the hydrolysis of Schiff-base. Moreover, the self-assembled nanofibers could be used for sustained and controlled release of the curcumin within 620 min and maintained the antioxidant activities . The highest radical scavenging activities against ABTS and DPPH radicals of the nanofibers were 24.75% and 83.56%, respectively. These results suggested that the layer-by-layer self-assembled nanofibers provided a pH-responsive sustained delivery system for bioactive substances with potential applications in functional foods.

The exploration of novel functional packaging films is of great scientific and technological interest. Herein, a novel chitosan/hollow g-C 3 N 4 /curcumin (CS-HCNS-Cur) biocomposite films was successful fabricated with integrated functions of slow release, antimicrobial activity and food freshness preservation. CS-HCNS-Cur films take the advantages of the excellent thermal stability and slow-release ability of HCNS to curcumin. Among the characterizations including scanning electron microscopy, transmission electron microscope, atomic force microscopy, fourier transform infrared spectroscopy, mechanical properties and the rheological properties measurements confirmed the successful fabrication of CS-HCNS-Cur films. The averaged water contact angle and water vapor permeability of this film were 105.83° and 105.03 × 10 −5 g·mm (m 2 ·h·kPa) −1 , respectively. This film showed pH-responsive and slow-release ability. Moreover, this film can effectively store bananas for 10 days. Therefore, CS-HCNS-Cur films have promising potential for applications in functional food packaging.

Polyethylene glycolated (PEGylated)curcumin-grafted-chitosan (PCC) conjugates were synthesized with three PEG/chitosan feed molar ratios (1/5, 1/7.5, and 1/10), namely PCC1, PCC2 and PCC3. Chemical structures of these conjugates were characterized by Fourier transform infrared (FTIR) and proton nuclear magnetic resonance (1H NMR). The degrees of substitution (DS) of PEG were 0.75%, 0.45% and 0.33%, respectively, for PCC1, PCC2 and PCC3by1H NMR analysis. Self-assembled PCC nanoparticles (NPs) were spherical as observed in transmission electron microscope images. Mitoxantrone (MTO)-loaded PCC NPs were prepared to analyze the particle size, zeta potential, drug loading, drug release and in vitro cytotoxicity. The MTO-loaded PCC3 NP (DS = 0.33%) possessed the smallest size (~183.1 nm), highest zeta potential (~+34.0 mV) and the largest loading capacity of curcumin (CUR, ~16.1%) and MTO (~8.30%). The release results showed that MTO-loaded PCC3 NP demonstrated the lowest percentage of MTO release and increased as pH decreased, but the CUR release could only be detected at pH 4.0. In the cytotoxicity study, MTO-loaded PCC3 NP displayed the highest cytotoxicity in HepG2 cell line and the best synergistic effect among the tested NPs. Our results suggest that the DS of PEG has impacts on the structures and functions of PCC NPs: the smaller DS of PEG was associated with the smaller size, the higher zeta potential, the slower drug release, and the higher cytotoxicity of NPs.Keywords:curcumin;mitoxantrone;synergism;PEG;chitosan nanoparticles
