In the quality control of braised meat products, the content of spice extract in braised soup is often used as one of the important indexes to evaluate its flavor and quality. However, the existing research methods mostly rely on chromatography-mass spectrometry for quantitative analysis, which has some problems such as complex operation, long period, high requirements for equipment and professional technology. To enable rapid detection of spice extracts while reducing analytical costs and improving efficiency, this study took the main extracts of star anise, Sichuan pepper and chili peppers, namely shikimic acid xanthoxylin and capsaicin, as the research objects. By preparing AuNPs as the substrate material, a rapid classification and recognition method for SERS spectra of the three different spice extracts was constructed. The results showed that the Raman signals of three spice extracts could be obviously enhanced by using AuNPs as substrate, with good reproducibility ( RSD < 5.5 %). SERE spectrum could clearly distinguish the differences of SERS peaks of shikimic acid, xanthoxylin and capsaicin. Principal component analysis (PCA) and linear discriminant analysis (LDA) further confirmed clear visual classification of the spice extracts. Finally, based on the SERS spectra of different concentrations, the digital quantitative equations of SERS spectra of three spice extracts were constructed. This work provides a theoretical foundation and technical framework for rapid detection of spice extracts based on SERS technology.

Rapid pathogen typing is essential for precise antimicrobial therapy; however, conventional methods are time-consuming. Although surface-enhanced Raman spectroscopy (SERS) provides quick detection, current methods rely on expensive recognition molecules or suffer from weak signals due to electrostatic repulsion-induced inefficient SERS-active nanoparticle adsorption with bacterial surfaces. Herein, we present a bioreceptor-free AI-powered SERS biosensing strategy for rapid and accurate pathogen typing. Through protonation under acidic conditions, the method regulates bacterial surface charge to overcome electrostatic repulsion between bacteria and SERS nanoparticles. It maintains bacterial viability and allows rapid in situ assembly of the SERS-active platform directly on bacterial surfaces, thereby preserving pathogen integrity, improving detection reliability, and significantly enhancing Raman signals. Integrated with machine learning, it delivers 99 % accuracy in typing three common bacterial meningitis pathogens, accompanied by a perfect AUC–ROC value of 1.0. The entire process, including sample pretreatment, surface charge modulation plus nanoparticle adsorption, SERS acquisition, and machine-learning typing, is completed in as little as 15 min. Cost-effective and user-friendly, this method eliminates the need for bioreceptors and complex processing, demonstrates robust performance in clinical samples, and shows broad applicability in public health, food safety, environmental monitoring, and emergency diagnostics.

Benefiting from their low price, high performance stability, and moderate-to-high detection sensitivity, surface-enhanced Raman scattering (SERS) substrates made of noble metal-free materials have received much attention in the past few years. Improving the SERS sensitivity of non-noble metal materials is of great significance. Here, we propose a strategy of combining ultrathin graphene oxide (GO) sheets with plasmonic non-noble metal materials to enhance SERS sensitivity. By leveraging the adsorption property of GO and plasmonic hotspots of MoO2 nanoparticles (MoO2-NPs), the enrichment of target molecules around hotspots can be realized, thereby achieving high detection sensitivity. Highly surface-roughened plasmonic MoO2 nanospheres are wrapped by ultrathin-GO sheets, forming an ultrathin-GO/MoO2-NP hybrid. GO sheets with a huge specific surface area and high adsorption ability can trap analyte molecules in the locations near or in hotspots of MoO2-NPs. A uniform film of ultrathin-GO-wrapped MoO2-NPs shows a high enhancement factor of ∼1.12 × 108 and good spectral homogeneity (relative standard deviation, RSD = 9.7%). The detectable concentration limit for rhodamine 6G molecules is ∼10 pM, demonstrating high SERS sensitivity. In addition, the ultrathin-GO/MoO2-NP hybrid also exhibits excellent structural and chemical stabilities. The fabricated GO/MoO2-NP hybrid has promising applications in the SERS-based detection of trace chemical molecules.

Background Surface-enhanced Raman spectroscopy (SERS) amplifies Raman signals via localized fields on nanostructured metallic substrates. The fabrication of efficient substrates remains challenging, as nanolithography and templating are complex, while chemical reduction and self-assembly often suffer from low reproducibility and limited stability. Results A rapid electrochemical deposition strategy is reported to synthesize gold hexagonal nanostar by precise modulation of particle size and spacing. The formation process is governed by a voltage-dependent balance between Au + ion reduction kinetics and diffusion. Low overpotentials limit growth to small tip-localized features, while moderate potentials (−0.60 to −0.65 V) accelerate lateral expansion, increasing diameter and reducing spacing. At higher overpotentials (−0.70 to −0.75 V), diffusion-consumption imbalance drives vertical growth, widening spacing despite limited diameter gain. By programming deposition voltages and intervals, the gold hexagonal nanostars were tuned to an optimal diameter of 141.22 nm and an interparticle spacing of 14.72 nm. The resulting three-dimensional nanostructures generated abundant electromagnetic “hot spots,” with a 44-fold SERS improvement over conventional counterparts. The substrates exhibited excellent signal uniformity with a relative standard deviation as low as 4.27 %. The electrochemically active surface area via gold oxide stripping reaction, absorption rate and theoretical simulations were also computed. Significance The engineered SERS substrate was successfully administered for direct ultrasensitive detection of malachite green and levofloxacin with high recovery rates in real fish and aquaculture samples. This template-free, programmable approach provides a scalable pathway for constructing high-performance SERS substrates, offering significant potential for applications in food safety monitoring and environmental analysis.

A novel biosensing strategy based on the synergy of aptamer molecular recognition and surface-enhanced Raman spectroscopy (SERS) has been developed to address the growing problem of groundwater and soil contamination by the organophosphorus pesticide diazinon (DZN). By combining a high-affinity aptamer with a plasmonic resonance-enhanced substrate, a SERS biosensing interface with single-molecule detection capability was successfully constructed, and the electrochemical surface-enhanced Raman spectroscopy (EC-SERS) method using AgNPs-modified screen-printed electrodes (SPEs) was also used for sensitive detection of DZN. The results showed that the constructed SERS aptamer sensor was able to specifically identify diazinon in the system where multiple interfering pesticides coexisted, and the detection limit of the sensor for diazinon was up to 5.33 × 10 −10 M. The intensity of the characteristic peaks (602 cm −1 ) showed a good linear response with the concentration of DZN, which demonstrated very high detection sensitivity and specific identification function. The proposed EC-SERS method significantly improves the SERS signals of pesticides by potentiometrically modulating the plasmonic resonance coupling effect at the interface of AgNPs-modified electrodes, inducing an orientationally regularised arrangement of DZN molecules. The SERS aptasensor was used to detect diazinon in wastewater and subsurface soil with good recoveries (83.20%–117.78%), which were in good agreement with the results obtained by high-performance liquid chromatography. The results demonstrated that the SERS aptasensor has good sensitivity, stability, simplicity of operation, and specific identification, which provides a solution with ultra-sensitive response, rapid analysis, and strong anti-interference for the detection of trace pesticide.

We report a novel surface-enhanced Raman scattering (SERS) substrate for detecting p -nitroaniline (PNA) in real water samples, which possesses excellent sensitivity, good selectivity, and high SERS activity. Specifically, the uniform distribution structure of defect-graphene/Ag (DG/Ag) is obtained by acid etching graphene loading silver nanoparticles. The Molecularly imprinted polymer (MIP) film is copolymerized on the surface of DG/Ag by function monomer, crosslinker and template of PNA. A DG/Ag-MIP SERS substrate is obtained through polymerization of molecular imprinted polymer (MIP) on defect-graphene/Ag (DG/Ag) supporting materials . Our results signify that this new SERS substrate reveals excellent performance for PNA with an enhancement factor of 2.42 × 10 7 . Moreover, DG/Ag-MIP substrate exhibits outstanding capability to detect PNA molecules with detection limit approximately reaching 1.0 × 10 −14 M. These experimental results imply that the DG/Ag-MIP SERS substrate possesses potential application for sensing detection of PNA in environment.

Silver nanoparticle (AgNP)/poly( N -isopropylacrylamide) (PNIPAAm) composite solution was electrospun followed by crosslinking to fabricate AgNP/PNIPAAm composite nanofiber mats. Embedded AgNPs were found to align along the PNIPAAm nanofibers, which generate more hotspots upon laser-induced plasmonic heating. This kind of AgNP/PNIPAAm mats show enhanced surface-enhanced Raman scattering (SERS) effect upon continuous pulsed laser irradiation, showing a ‘laser heating sensitive’ SERS effect. Laser-induced plasmonic heating can also tune the temperature-responsive interaction between PNIPAAm and analytes and has been applied in the on-site ‘laser heating sensitive’ separation and SERS detection of analytes. The composite nanofiber mats also showed good reproducibility and stability. What is more, this ‘laser heating sensitivity’ has also been applied in the direct SERS detection of adenosine in urea solution without urea interference. Together with the advantages of ease of large-scale fabrication, stable and ‘laser heating sensitivity’, AgNP/PNIPAAm mats might find application in sensitive multicomponent biosensing. Rapid analysis of pesticide residues is essential for food safety, and the efficient extraction pesticide molecules from the irregular surfaces remains huge challenges. In the present study, a proof-of-concept flexible surface-enhanced Raman scattering (SERS) patch for rapid label-free detections of thiabendazole (TBZ), triazophos (TAP), and chlorpyrifos (CPF) on the surfaces of vegetables and fruits was developed. The novel SERS patch was supported by a flexible polymethylsiloxane (PDMS), and a microhole array was arranged on the surface of the PDMS. Colloidal silver nanoparticles (AgNPs)-modified inverse opal photonic crystal (IOPC) structure was fabricated in the microhole. The patch simultaneously exhibited the characteristics of high sensitivity analysis, “sticky” and “absorbent” properties, which enabled it possible to extract pesticide molecules on complex surfaces quickly and efficiently by “press and peeled-off” procedure. The results indicate that the extraction efficiency was 55.13 ± 8.85 % on the apple surface, and the detection limits of TBZ, TAP, and CPF were 24.15, 37.56, and 4.21 ng cm −2 , respectively. Conceivably, the as-proposed strategy may also be applied to environmental monitoring and quality control in food production to ensure human life and health.

The detection of trace thiram is critically important due to its environmental persistence and biotoxicity. Conventional pesticide residue analysis faces fundamental limitations in sensitivity and accuracy due to low analyte recovery efficiency during sampling, making surface-enhanced Raman spectroscopy an ideal solution for trace thiram monitoring. In this study, we developed a high-performance SERS substrate based on in-situ synthesized silver nanoparticle-decorated indium tin oxide (AgNPs/ITO) glass, fabricated via cyclic voltammetry electrochemical deposition. The substrate demonstrated exceptional sensitivity for standard probe molecules such as R6G, achieving an enhancement factor (EF) of up to 8.62 × 10 6 with excellent signal uniformity and universality. For pesticide detection, the substrate exhibited a remarkably low LOD of 0.55 μg/L for thiram and enabled effective in-situ identification of thiram residues on vegetable leaf surfaces, demonstrating robust capability for practical pesticide residue analysis.

Background As one of the most common mycotoxins, Zearalenone (ZEN) not only contaminates cereal crops but also exists in processed grain products for its chemical stability. After entering human body through the food chain, ZEN exhibits remarkable bioaccumulation properties, which poses varying degrees of harmful effects to human health. The traditional chromatography instrumental methods require expensive equipment and complex experimental procedures. The aim of this manuscript is to develop a facile and accurate method for ZEN detection in food samples. Results Here, a SERS platform was developed for ZEN detection using COF and noble metal nanomaterial with nitroreductase (NTR)-like activity. First, magnetic COF loaded with gold nanoparticles (MCOF-Au) were synthesized as SERS enhancement substrates with partial NTR activity. Simultaneously, palladium-loaded dumbbell-shaped gold nanorods (AuNR/Pd) were prepared and served as the primary NTR in the 4-NTP/NaBH 4 system, significantly enhancing both catalytic activity and SERS signal. After nucleic acid functionalization, the two components assembled. The addition of ZEN regulated the assemble of AuNR/Pd on MCOF-Au. Following magnetic separation, the catalytic and SERS activities changed in the precipitate. Using the Raman peak of the output product 4-ATP at 390 cm −1 as the quantitative marker, the method showed a linear range in 0.001 μg/kg-1000 μg/kg. The LOD was calculated as 1.88 × 10 −4 μg/kg, and spiked recoveries in wheat flour and corn ranged from 88.91% to 115.78%, demonstrating high sensitivity and reliability for real-sample detection. Significance This aptasensor integrates the high sensitivity of Raman signals with the selectivity of aptamers, providing a robust and efficient tool for accurate ZEN detection in food. COF based nanocomposites are proved to have remarkable NTR activity and the catalytic product 4-ATP exhibits prominent Raman signal, making it suitable for quantitative detection. This design offers a versatile platform for food safety monitoring and public health protection.

Surface-enhanced Raman spectroscopy (SERS) has been widely used for trace analyte detection, largely depending on the design and fabrication of SERS substrates. Among the various types of substrates, hybrid materials that integrate plasmonic metals with functional semiconductors have attracted increasing attention due to their synergistic properties. This study presents the rational design and synthesis of CuxO/Au chimeric micro–nanoparticles as high performance substrates for SERS detection. The hybrids were fabricated via a galvanic replacement reaction, where Cu2O particles acted as both sacrificial templates and reducing agents for the deposition of Au nanostructures from HAuCl4 solutions. By systematically varying the HAuCl4 concentration, the morphology, composition, and interfacial properties of the resulting materials were precisely tuned. The optimized substrate, denoted as CuxO/Au-10, demonstrated remarkable SERS performance, attributed to the synergistic effect of electromagnetic enhancement from Au nanoparticles and chemical enhancement arising from charge transfer at the metal–semiconductor interface. The SERS activity was rigorously evaluated using nicotine as a probe molecule, showing high detection sensitivity. Furthermore, the practical applicability of the substrate was successfully demonstrated in a dynamic puff-by-puff analysis of tobacco smoke from both conventional cigarettes and heated tobacco products (HNB). SERS detection revealed significantly more complex and intense spectra for traditional cigarette smoke compared to the smoke from HNB cigarettes. This highlights the sensitivity and utility of CuxO/Au chimeric micro–nanoparticles for dynamic chemical analysis. This work not only offers a tunable synthesis strategy for high-performance SERS substrates but also paves the way for their application in complex environmental and analytical scenarios.

Recently, metal-organic frameworks (MOFs) based substrates have shown great potential for the quantitative analysis of food samples by surface-enhanced Raman scattering (SERS) due to their unique properties. Herein, we developed two UiO-66 MOFs/gold nanoparticles (AuNPs) based substrates by self-assembly, including UiO-66/AuNPs suspension substrate and UiO-66(NH 2 )/AuNPs/Nylon-66 flexible membrane substrate, for quantitative analysis of complex food samples by SERS. UiO-66/AuNPs suspension substrate was prepared for SERS-based determination of a carcinogenic heterocyclic amine in barbecue meat. UiO-66(NH 2 )/AuNPs/Nylon-66 membrane substrate was fabricated for the simultaneous separation, enrichment, and in situ analysis of Sudan Red 7B in chilli products. The heterocyclic amine and Sudan dye in real samples could be detected and quantified with the recoveries of 82.3–110% and 84.5–114% and relative standard deviations (RSDs) of 3.1–11.0% and 1.9–5.6% (n = 3) by use of these two substrates, respectively. These two UiO-66/AuNPs based substrates combined molecular enrichment and SERS activity, achieving excellent analytical accuracy and widening SERS application in practical food safety analysis.
