Possible physiological mechanism of exogenous vitamin E influencing shelf life, physicochemical quality, and microorganism of fresh-cut water chestnuts

Haixia Ye,Jinmin Wen,Shiyun Wang,Ying Zhang,Bingbing Wu,Siwei Liu,Xinru Chen,Yongqian Xiao,Chengtao Wang,Jianjun Hou,Ming Ni,Xian Xia,Yulin Li

Prolonging shelf life of fresh-cut water chestnuts (FCWC) by vitamin E (vit E) was investigated. Browning degree, decay degree, and edible quality (EQ) of FCWC were evaluated as evaluation indexes of shelf life. Meanwhile, total soluble solids concentration, titratable acid (TA) concentration, ascorbic acid (AA) concentration, hardness, ethylene concentration, polyphenol oxidase (PPO) activity, peroxidase (POD) activity, total phenols (TP) concentration, counts of thermophilic bacteria, yeasts, and molds colonies were analyzed. Shelf life of FCWC could be prolonged for 4 days by soaking them in 0.04% (v v −1 ) vit E anhydrous ethanol (1% [v v −1 ]) solution for 30 min. Vit E probably inhibited the increasing of PPO and POD activities, and the declining of TP concentration and hardness. Vit E had little effect on counts of thermophilic bacteria, yeasts, and molds colonies of FCWC. These results indicated that vit E could prolong shelf life of FCWC. Novelty impact statement Vitamin E (vit E) extents shelf life of fresh-cut water chestnuts for 4 days. Vit E inhibits browning by reacting with oxygen or by reducing polyphenol oxidase and peroxidase activities. Vit E has no effect on total soluble solids, titratable acid, ascorbic acid, and ethylene concentration.

Green preparation of nano-silver aqueous solution using fructose and evaluation of its antibacterial potential for cut carnation flowers

Zhenpei Pang,Guidong Lin,Yuheng Wu,Hongmei Li,Yunhao Sun,Hongjun Zhou,Shenggen He

The green synthesis of nano-silver (NS) has gained increasing attention owing to its cost-effectiveness and environmental friendliness. Herein, a novel one-step green preparation method of stable NS aqueous solution using Tollens reagent as the silver ion source, D-fructose as the reduction agent, and polyvinyl pyrrolidone as the stabilizing and capping agent is reported. The prepared NS solution had a pH value of 7.10, with approximately spherical NS particles in the range of 13.95–87.36 nm. The resulting NS solution was stable under normal temperature, boiling water bath, and acidic environment. The NS solution had a remarkable absorption peak at 410 nm in its ultraviolet–visible spectrum. The dynamic light scattering/Zeta analysis showed the average particle size of the NS aqueous solution was 183.5 nm, polymer dispersion index was 0.282, and the zeta potential of the green synthesized NS was –18.0 mV. Moreover, the NS solution exerted a strong inhibitory effect on the growth of the bacteria isolated from the vase water of cut carnation ‘Prince’ flowers. These findings indicate that the obtained NS solution is potentially a practical and effective antibacterial agent for preserving cut carnations and other cut flowers.

Pre-harvest ethylene control affects vase life of cut rose ‘Carola’ by regulating energy metabolism and antioxidant enzyme activity

Gong Bi,Huang Shuai,Ye Niu,Yuan Xue,Ma Huiling

We studied the role of ethylene control in regulating energy metabolism, antioxidant enzyme activity, and vase life of cut rose Rosa hybrida ‘Carola’. Rose flowers at stage II were sprayed with one of the following solutions: water (control), 10 μL L −1 1-methylcyclopropene (1-MCP), or 0.5 g L −1 2-chloroethanephosphonic acid (ethephon). After harvest, ethylene production rate, respiration intensity, energy charge (EC), activities of energy metabolism-related and antioxidant enzymes, and malondialdehyde (MDA) content were measured. Results showed that 1-MCP enhanced the activities of superoxide dismutase, H + -adenosine triphosphatase, Ca 2+ -adenosine triphosphatase, succinic dehydrogenase, and cytochrome c oxidase, increased adenosine triphosphate (ATP) content, maintained high EC levels, inhibited respiration intensity, reduced peroxidase (POD) and polyphenol oxidase (PPO) activity and MDA accumulation, and prolonged vase life. Ethephon promoted ethylene production and respiration intensity, increased POD and PPO activity, reduced ATP content and EC levels, and accelerated senescence. Our results support a novel role for ethylene control in regulating senescence of ‘Carola’.

Smart antimicrobial system based on enzyme-responsive high methoxyl pectin-whey protein isolate nanocomplex for fresh-cut apple preservation

Ying Xin,Zhenzhen Liu,Chenhao Yang,Chen Dong,Fusheng Chen,Kunlun Liu

The increase in pectin methylesterase (PME) activity on fresh-cut apple surface can smartly trigger the controlled release of bactericidal agents encapsulated within intelligent responsive Pickering emulsions. In this study, we developed a PME-responsive nanocomplex (W-H-II) to stabilize Pickering emulsion containing thyme essential oil (TEO), preserving fresh-cut apples. W-H-II, formed by heat-induced whey protein isolate (WPI) and high methoxyl pectin (HMP) (pH 4.5, 85 °C, 15 min, WPI:HMP ratio 1:2), exhibited good pH stability due to the stabilizing effects of hydrophobic, hydrogen bonding, and electrostatic interactions. The presence of PME triggered the demethylation of HMP within W-H-II, conferring PME response characteristics. Subsequently, a bacteriostasis experiment with pectinase-producing Bacillus subtilis provided evidence of PME-triggered TEO release from W-H-II-stabilized Pickering emulsion. Furthermore, microscopy techniques were employed to verify the demulsification behavior of the emulsion when PME activity ranged from 0.25 to 2.50 U mL −1 . Finally, the PME-responsive TEO Pickering emulsion effectively preserved fresh-cut apples. Stored for 6 days at 5 °C and 10 °C, as the PME activity on the apple surface increased, the decay rate of the coated group was 0 %, with a total colony count below 3.0 log CFU g −1 . This study introduces a novel intelligent preservation strategy for storing fresh-cut apples.

Synthesis, Antioxidant, and Antifungal Activities of β-Ionone Thiazolylhydrazone Derivatives and Their Application in Anti-Browning of Freshly Cut Potato

Cong Huang,Yuan Zhong,Rong Zeng,Jie Wang,Qingwen Fang,Shuzhen Xiao,Ji Zhang,Zongde Wang,Shangxing Chen,Dayong Peng

In order to develop a new type of antioxidants with high efficiency, a series of β-ionone thiazolylhydrazone derivatives were designed and synthesized from β-ionone, and their structures were characterized by1H-NMR,13C-NMR, FT-IR, and HR-MS. The antioxidant test in vitro indicated that most of the target compounds had high biological activity. Among them, compound1kexhibited very strong DPPH (1,1-diphenyl-2-picrylhydrazyl radical)-scavenging activity with a half-maximal effective concentration (IC50) of 86.525 μM. Furthermore, in the ABTS (2,2-azinobis (3-ethylbenzothiazoline-6-sulfonate) diammonium salt)-scavenging experiment, compound1mexhibited excellent activity with an IC50of 65.408 μM. Their biological activities were significantly better than those of the positive control Trolox. These two compounds, which have good free-radical-scavenging activity in vitro, were used as representative compounds in the anti-browning experiment of fresh-cut potatoes. The results showed that1kand1mhad the same anti-browning ability as kojic acid, and they were effective browning inhibitors. In addition, it is well known that microbial infection is one of the reasons for food oxidation. Therefore, we investigated the antifungal activity of 25 target compounds against eight plant fungi at a concentration of 125 mg/L. The results indicated that these compounds all have some antifungal activity and may become new potential fungicides. Notably, compound 1u showed the best inhibitory effect againstPoria vaporaria, with an inhibition rate as high as 77.71%; it is expected to become the dominant structure for the development of new antifungal agents.Keywords:thiazolylhydrazone;synthesis;antioxidant;antifungal;anti-browning

Transcriptomic analysis of the effects of γ-aminobutyric acid treatment on browning and induced disease resistance in fresh-cut apples

Pengyu Zhao,Weidan Li,Chaoying Zhen,Ke Wang,Zhen Qin,Haiyan Gao

γ-Aminobutyric acid (GABA) has several physiological functions and broad application prospects. In this study, as a tool used for transcriptomics , RNA-seq sequencing was employed to determine the mechanism by which GABA slows browning and induces resistance against the growth of bacterial in fresh-cut apples. GABA altered the expression level of genes related to the synthesis of browning enzymes and phenolic substances in fresh-cut apples, which slowed the browning process during storage. Additionally, GABA promoted the gene expression of enzymes or proteins related to disease resistance, which resultantly induced disease resistance in fresh-cut apples. Notably, GABA maintained the integrity and stability of the cell wall composition and structure in apple tissues to reduce browning and induce disease resistance. Our findings revealed the mechanism by which GABA acts as a protective agent against browning and bacterial growth in for fresh-cut apples.

UV irradiation combined with high voltage electrostatic field alleviates surface discoloration in fresh-cut purple yam by regulating enzymatic browning

Jieni Liu,Leilei Wu,Fan Yinyin,Hongqian Hu,Yu Qiao,Qing Sun,Lihui Zhang,Dahui Liu

Fresh-cut purple yam is highly susceptible to enzymatic browning during storage, primarily driven by peroxidase (POD), while superoxide dismutase (SOD) serves as an oxidative-stress marker. This study investigated the effects of ultraviolet-C (UV-C), high-voltage electrostatic field (HVEF), and their combination (UV-HVEF) on browning inhibition and quality preservation. The combined treatment (UV-C at 68 W for 120 min followed by HVEF at 30 kV for 8 min) exhibited the strongest synergistic effect, achieving the highest L* value, total phenolics, flavonoids, and anthocyanins, along with the lowest browning degree after 8 days of storage. UV-HVEF induced tryptophan exposure and α-helix loss in these enzymes, leading to inactivation, while downregulating POD, phenylalanine ammonia-lyase (PAL), cinnamate-4-hydroxylase (C4H) expression and preserving p -coumaric acid at 54.56% higher than the control. Correlation analysis confirmed brightness positively correlated with phenolics and negatively with enzyme activities. Scanning electron microscopy revealed HVEF damaged starch granules, while UV-HVEF caused irregular morphology. Overall, UV-HVEF is an effective non-thermal strategy balancing enzyme inactivation with quality maintenance.

Photothermal antibacterial bilayer films from konjac glucomannan/shellac: A Prussian blue-engineered strategy for preservation of fresh-cut Benincasa hispida

Xin Lei,Yueguang Wang,Xianrui Chen,Jing Zhang,Xuan Lin,Wenjun Guo,Xiuqing Guan,Chengrong Wen,Di Zhang,Lin Wang,Jie Pang

PB@MSN-CIN nanoparticles enabled CIN release with NIR-triggered photothermal conversion. • S/P-HK bilayer films combined PB@MSN-CIN-loaded P-HK inner layer with a hydrophobic SHL-QCT outer layer. • Regulating the SHL-QCT layer thickness improved moisture barrier, UV shielding, and photothermal retention of the bilayer films. • Under NIR treatment, the optimized S/P-HK film suppressed microbial growth, browning, and water loss of fresh-cut Benincasa hispida . Fresh-cut vegetables are highly susceptible to microbial growth, enzymatic browning, and moisture loss, creating a need for environmentally sustainable active packaging with effective barrier and antimicrobial functions. In this study, a multifunctional bio-based bilayer film (S/P-HK) was developed using the thickness of the hydrophobic outer layer as a key design variable. The inner active layer (P-HK) comprised a konjac glucomannan/hydroxyethyl cellulose matrix containing cinnamaldehyde (CIN)-loaded mesoporous silica nanoparticles coated with Prussian blue (PB@MSN-CIN), whereas the outer layer was composed of quercetin-containing shellac (SHL-QCT). SEM revealed a compact bilayer structure, while FT-IR, XRD, and TGA indicated intermolecular interactions and good thermal stability. Increasing the thickness of SHL-QCT layer enhanced moisture-barrier performance and heat retention under near-infrared (NIR) irradiation. Among which, the S20/P-HK film exhibited nearly complete UV shielding, strong antioxidant activity (DPPH and ABTS radical scavenging rates >80%), excellent antibacterial activity (antibacterial rates >99.99% against Escherichia coli and Staphylococcus aureus ), and controlled release of CIN. During preservation of fresh-cut Benincasa hispida , the S20/P-HK film with NIR irradiation significantly inhibited microbial growth, suppressed the browning index to 0.90 ΔOD₄₂₀·mL/g, and restricted weight loss to 0.26% over 10 days. These findings demonstrate a promising thickness-regulated bilayer design that integrates moisture-barrier protection, NIR-responsive CIN release, and photothermal antibacterial activity for active packaging. Future studies should validate the applicability of S/P-HK films to other perishable foods and evaluate their antifungal efficacy. Fenton-induced self-catalyzed exfoliation-leaching coupling reactions towards short-cut and closed-loop recycling of spent lithium-ion batteries

Lei Yi,Xuanhao Zhang,Lingli Jiang,Yunlong Xie,Yulan Chen,Lu Yuan,Xin Peng,Xiangping Chen

The rapid growth of retired lithium-ion batteries (LIBs) from new energy vehicles and energy storage systems has posed a severe challenge for the disposal of spent batteries. Conventional recycling technologies generally require large amounts of chemicals and energy input, accompanied with potential secondary environmental contaminations. Herein, an environmentally benign recycling strategy based on Fenton advanced oxidation process (FAOP) was proposed to liberate cathode materials of lithium iron phosphate (LiFePO 4 , LFP) from current collectors (Al foils) and extract Li from liberated the LFP, followed by a closed-loop regeneration of cathode materials was achieved using recovered resources (Li 3 PO 4 and FePO 4 ). Specifically, Fe(II) in waste LFP can activate H 2 O 2 to generate active oxide species of 1 O 2 and free radicals (•OH or •O 2 − ), enabling simultaneous degradation of polyvinylidene fluoride (PVDF) binders and selective leaching of Li, which lead to the effective separation of LFP from Al foils and selective extraction of Li. Under optimized conditions, the cathode material peeling efficiency and lithium leaching efficiency reached 98.99% and 96.78%, respectively. Then, the leaching residues can be separated as Al foil sheets and FePO 4 powders, while Li + in the leaching solution was precipitated as Li 3 PO 4 . The regenerated LFP synthesized using recycled Li 3 PO 4 and FePO 4 exhibits comparable electrochemical performances to commercial cathode materials. This developed strategy provides an efficient and green route for the closed-loop recycling of spent LIBs with low chemical consumption.

EGCG-functionalized deacetylated konjac glucomannan/carboxylated cellulose nanofiber films: Development, characterization, and application in antibacterial preservation of fresh-cut fruits

Yang Cao,Yile Zhao,Zhixin Li,Di Wu,Chen Chen,Aili Jiang,Xiangzheng Yang,Da Wang,Xian Li,Kunsong Chen

A bio-based antibacterial film was fabricated by combining EGCG with DKGM and CCNF. • EGCG exhibited good antibacterial activity when acting on fresh-cut fruit flesh. • EGCG interacted with the film via H-bond, thereby increasing its structural ordering. • The incorporation of EGCG also enhanced the thermal stability of the DKGM/CCNF films. • The films inhibited >80% S. aureus after being covered on fresh-cut apples for 1 h. Fresh-cut fruits are susceptible to microbial contamination that leads to quality deterioration. In short-term distribution scenarios oriented toward consumers, there is a need for active packaging materials that are contact-safe and capable of exerting rapid antibacterial effects. The present study incorporated epigallocatechin gallate (EGCG) into a deacetylated konjac glucomannan/carboxylated cellulose nanofibers (DKGM/CCNF) matrix to prepare bio-based antibacterial films loaded with low and high EGCG concentrations (LEG-DKGM/CCNF and HEG-DKGM/CCNF). The effects of EGCG incorporation on the structure, mechanical properties, and barrier performance of the composite films were systematically studied, and the films were applied to fresh-cut fruits. Results indicated that EGCG formed hydrogen bond interactions with the DKGM/CCNF network and altered the film's microstructure, enhancing thermal stability while reducing the tensile strength and elongation at break of the composite films. In vitro antibacterial tests demonstrated that EGCG-loaded composite films inhibited foodborne pathogens associated with fresh-cut produce contamination, including Staphylococcus aureus , Listeria monocytogenes , and enterohemorrhagic Escherichia coli , with more pronounced inhibition against S. aureus . Further using S. aureus -inoculated fresh-cut apple as a model, after short-term (1 h ) coverage with the films, LEG-DKGM/CCNF and HEG-DKGM/CCNF films achieved an inhibition rate of over 80% against S. aureus . In addition, fresh-cut apple storage tests showed that EGCG-loaded films reduced browning index and helped maintain the appearance and firmness of fresh-cut apples during storage. Overall, the EGCG-functionalized DKGM/CCNF films provide a feasible solution for developing bio-based antibacterial packaging with rapid antibacterial and preservation functions for fresh-cut fruits. LiRb2LaB2O6: a new rare-earth borate with a MOF-5-like topological structure and a short UV cut-off edge

Dongdong Xu,Fangfang Zhang,Yanzhou Sun,Zhihua Yang,Binghua Lei,Lili Liu,Shilie Pan

A new rare-earth borate LiRb2LaB2O6 (LB-1) has been synthesized using a high-temperature solution method. Interestingly, it shares its topological structure with the famous porous material MOF-5, which is formed from Zn4O(BDC)3 (BDC = 1,4-benzenedicarboxylate). The nodes [OZn4] and organic linkers [BDC] of MOF-5 are carefully substituted with La3+ rare-earth cations and the inorganic linkers [BO3] and [LiO4], respectively, in order to construct a pure inorganic open framework. LB-1 exhibits good thermal and water stability. Moreover, it possesses a short cut-off edge (<190 nm) and moderate birefringence (exp. 0.040@589.5 nm, cal. 0.038@589.5 nm). Further insights into the cut-off edge were given by first-principles calculations. The factors that influence the birefringence of LB-1 were discussed in view of the spatial arrangement of the [BO3] anionic groups.

Fabrication of γ-cyclodextrin-Based metal-organic frameworks as a carrier of cinnamaldehyde and its application in fresh-cut cantaloupes

Jinxin Che,Keqin Chen,Jaorao Song,Ying Tu,Okwong Oketch Reymick,Xiumei Chen,Nengguo Tao

Cinnamaldehyde (CA) is a promising antimicrobial agent for the preservation of fruits and vegetables due to its excellent antibacterial activity. The application is however, limited by its unstable and volatile properties. A biocompatible carbon dots hybrid γ-cyclodextrin-based metal organic framework (CD/MOF) was developed by the seed-mediated method to improve the encapsulation and sustained continuous release of CA. CD/MOF-0.5 exhibited a CA loading efficiency of 28.42% and a sustained release duration time of more than 15 days at 8  o C. The release kinetics results showed that the release behavior of CD/MOF-0.5 fitted well with the Korsmeyer–Peppas release kinetics model, indicating that its sustained release is mainly controlled by diffusion. Both the Fourier-transform infrared spectroscopy and X-ray photoelectron spectroscopy analyses revealed that CD/MOF-0.5 and CA molecules were linked by hydrogen bonds. Due to the high sustained release performance, CA-loaded CD/MOF-0.5 considerably inhibited the growth of Escherichia coli , hence preventing the spoilage of fresh-cut cantaloupes. CD/MOF-0.5/CA treatment also maintained the qualities of the fresh-cut cantaloupes, prolonging their edibility to five days. This work provides a promising strategy for the prevention of spoilage in food industry.
