Astaxanthin (AST), a potent antioxidant, holds great promise for skin health and cosmetic applications but is limited by poor water solubility and stability. This study presents the development of zein nanoparticles modified with gum arabic (GA) for the encapsulation of AST, serving as a topical nanocarrier for AST to enhance its dermal bioavailability and topical delivery. The optimized zein-GA-AST nanoparticles (Z-GA-AST) exhibited a spherical nanostructure with a mean particle size of 199.03 ± 4.63 nm (PDI <0.2) and achieved a high encapsulation efficiency of 90.34 ± 1.74 %. FT-IR spectroscopy analysis confirmed the successful encapsulation of AST within the nanoparticles. The AST-loaded nanoparticles exhibited significantly superior antioxidant activity compared to free AST. At an equivalent astaxanthin concentration of 10 μg/mL, the ABTS and DPPH radical scavenging efficiencies of the nanoparticles were at least 153 % and 128 % higher than those of free AST, respectively. The incorporation of GA enhanced the physicochemical stability and astaxanthin retention of the nanoparticles under various conditions, including different salt ion concentrations, temperatures, and storage durations, by facilitating the formation of a more compact nanostructure. The skin permeation behavior of the nanoparticles was evaluated using Franz diffusion cells and porcine skin. The results demonstrated that Z-GA2-AST1 exhibited significantly higher skin retention (48.37 %) and lower astaxanthin permeation (10.20 %) compared to free astaxanthin. This study provides valuable insights into the preparation and characterization of biocompatible nanoparticles for AST encapsulation, could become a potential formulation for topical delivery applications in cosmetics and topical drug delivery systems.

Summary Grapefruit juice was investigated using pulsed electric fields (PEF) with (electric field strengths: 0, 5, 10, 15, 20 and 25 kV cm −1 ; flow rate: 80 mL min −1 ; pulse frequency: 1 kHz at 40 °C for 600 μs). Total phenolics, DPPH, total antioxidant capacity (TAC), total anthocyanins, total carotenoids, sugars and physicochemical properties of grapefruit juice were studied. In addition, the effect of PEF treatment on micro-organisms was also observed. Results indicated that no significant change was observed in pH, Brix, titratable acidity, sugars, total anthocyanins and colour attributes with the increase in pulsed electric strength as compared to control treatment. However, significant decrease in nonenzymatic browning (NEB) and viscosity while an increase in cloud value, DPPH, TAC, total phenolics and total carotenoids, while reduction in the activity of micro-organisms, was also observed with the increase in pulsed electric strength as compared to control treatment. This study suggested that PEF at 25 kV cm −1 could improve the quality of grapefruit juice.

en Isobolographic analysis was used to assess the antioxidant interactions (synergism, addition, and antagonism) of 4 common vegetables (tomato [T], carrot [C], eggplant [E], and purple potato [P]). The lipophilic (L) extracts of T and C (main carotenoids), the hydrophilic (H) extracts of E and P (main phenolics) were mixed by the certain ratios (1:9, 3:7, 1:1, 7:3, 9:1, w/w) and their antioxidant activities were investigated by 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2’-Azinobis-(3-ethylbenzthiazoline-6-sulphonate) (ABTS) radical scavenging assays, respectively. Most of the binary mixtures (LC-HE, LC-HP, HE-HP, LT-HE, and LT-HP combinations) showed the synergistic antioxidant effects. In DPPH assay, the greatest antioxidant activity of vegetable combinations was 1:9 LT-HP (EC 50 : 2.45 ± 0.13 mg/mL), followed by 9:1 HE-HP (EC 50 : 3.62 ± 0.12 mg/mL) and 1:9 LC-HE (EC 50 : 3.74 ± 0.47 mg/mL). In ABTS assay, the greatest antioxidant activity of vegetable combinations was 9:1 HE-HP (EC 50 : 4.20 ± 0.10 mg/mL), followed by 7:3 HE-HP (EC 50 : 4.41 ± 0.63 mg/mL) and 1:1 HE-HP (EC 50 : 5.35 ± 0.85 mg/mL). Among these combinations, 1:1 LC-HE combination showed the highest synergistic antioxidant effects in DPPH assay (synergistic rate: 87.4%), and 7:3 LC-HE combination showed the highest synergistic antioxidant effects in ABTS assay (synergistic rate: 87.0%). The mixtures of phenolics and carotenoids with suitable ratios in vegetables effectively enhanced the synergistic antioxidant effects. Practical Application pt In this study, the results indicate that the combination of different vegetables with suitable ratios could improve the antioxidant activities through synergistic effects of phytochemicals. Also, isobolographic analysis could be well used in evaluating the antioxidant interactions between antioxidants.

A facile approach was investigated to encapsulate and protect curcumin (Cur) by self-assembly of lysozyme (Ly) and carboxymethylcellulose (CMC) of different degrees of substitution (DSs). This work studied the influence of Ly–CMC coacervates on the binding, solubility and stability of Cur. The interactions of Cur with Ly–CMC coacervates were researched by UV–vis, steady-state fluorescence, synchronous fluorescence and circular dichroism spectra. These results were explained in terms of the formation of Ly–CMC coacervates with electrostatic interaction, which led to unfold the structure of Ly for providing Cur with more hydrophobic microenvironment than free Ly. Meanwhile, the CMC of higher DS provide more negative charges, and produce more attraction to Ly than that of lower DS values. Moreover, the coacervates of Ly–CMC of higher DS are found to be superior for enhancing the stability of Cur. Our work provided a new insight for understanding the biomolecule protective system based on protein/polysaccharide complexes.

Neohesperidin dihydrochalcone (NHDC), a sweetener derived from citrus, belongs to the family of bycyclic flavonoids dihydrochalcones. NHDC has been reported to act against CCl4-induced hepatic injury, but its mechanism is still unclear. We first discovered that NHDC showed a strong ability to scavenge free radicals. In addition, NHDC induces the phase II antioxidant enzymes heme oxygenase 1 (HO-1) and NAD(P)H/quinone oxidoreductase 1 (NQO1) through the activation of the nuclear factor (erythroid-derived 2)-like 2 (Nrf2)/antioxidant response element (ARE) signaling. Further assays demonstrated that NHDC induces accumulation of Nrf2 in the nucleus and augmented Nrf2-ARE binding activity. Moreover, NHDC inhibits the ubiquitination of Nrf2 and suggests the modification of Kelch-like ECH-associated protein 1 (Keap1) and the disruption of the Keap1/Nrf2 complex. c-Jun N-terminal kinase (JNK) and p38 but not extracellular signal-regulated protein kinase (ERK) phosphorylations were up-regulated by NHDC treatment. Taken together, NHDC showed its protective antioxidant effect against CCl4-induced oxidative damage via the direct free radical scavenging and indirect Nrf2/ARE signaling pathway.

The ultrasonic-assisted extraction of pigments from the Hylocereus undatus flowers was modeled using response surface methodology. A three-level, three-factor Box–Behnken design was employed to optimize three extraction variables, including liquid–solid ratio (X1), extraction time (X2), and ethanol concentration (X3), for the achievement of high absorbance. The statistical analysis shows that the model is significant to optimize the extraction variables (p < 0.01), and the independent variable (X3) and the quadratic term (X32) have a significant effect on the absorbance (p < 0.01). The optimized conditions are X1 of 42 : 1 mL g−1, X2 of 33.2 min, and X3 of 77.5%. Under these conditions, the experimental absorbance is 2.240 ± 0.095% (n = 3), which is in good agreement with the predicted value of 2.243. The evaluation of antioxidant activity by DPPH and hydroxyl free radicals, reducing power, and metal chelating ability indicate that the pigments from the H. undatus flowers possess significant antioxidant activity. HPLC analysis reveals that gallic acid, rutin, quercetin, kaempferol and isorhamnetin are the major components in the pigments.

Oleuropein (OE), the main polyphenol in olive leaf extract, is likely to decompose into hydroxytyrosol (HT) and elenolic acid under the action of light, acid, base, high temperature. In the enzymatic process, the content of OE in olive leaf extract and enzyme are key factors that affect the yield of HT. A selective enzyme was screened from among 10 enzymes with a high OE degradation rate. A single factor (pH, temperature, time, enzyme quantity) optimization process and a Box-Behnken design were studied for the enzymatic hydrolysis of 81.04% OE olive leaf extract. Additionally, enzymatic hydrolysis results with different substrates (38.6% and 81.04% OE) were compared and the DPPH antioxidant properties were also evaluated. The result showed that the performance of hydrolysis treatments was best using hemicellulase as a bio-catalyst, and the high purity of OE in olive extract was beneficial to biotransform OE into HT. The optimal enzymatic conditions for achieving a maximal yield of HT content obtained by the regression were as follows: pH 5, temperature 55 °C and enzyme quantity 55 mg. The experimental result was 11.31% ± 0.15%, and the degradation rate of OE was 98.54%. From the present investigation of the antioxidant activity determined by the DPPH method, the phenol content and radical scavenging effect were both decreased after enzymatic hydrolysis by hemicellulase. However, a high antioxidant activity of the ethyl acetate extract enzymatic hydrolysate (IC50= 41.82 μg/mL) was demonstated. The results presented in this work suggested that hemicellulase has promising and attractive properties for industrial production of HT, and indicated that HT might be a valuable biological component for use in pharmaceutical products and functional foods. Keywords:Olea europeaL.;hydroxytyrosol;oleuropein;enzymatic hydrolysis;hemicellulase

In this work, a dummy molecularly imprinted polymers (MIPs) were developed as the selective sorbents for preparation of the high purity gingerols from ginger for the first time. The dummy template molecule with similar structural skeleton to gingerols, N-vanillylnonanamide, has been designed and synthesized. The performance of the MIPs and non-imprinted polymers (NIPs) were evaluated including selective recognition capacity, adsorption isotherm, and adsorption kinetics. Optimization of various parameters affecting dummy molecular imprinted solid phase extraction (MISPE), such as the type and flow rate of the loading solvent, the composition and volume of the eluting solvent, and the composition and volume of the washing solvent were investigated. Gingerols with the percent recovery of 80 and the percent purity of 99.1 were obtained from the extracts of ginger by MISPE. Besides, gingerols obtained by MISPE had more powerful activity of eliminating free radical compared with extracts before extraction with the MISPE column. Application of MIPs with a high affinity toward three gingerols provides a novel method for obtaining a group of compounds which have likely active groups from natural products.

The practical applications of grass plastic mulch films are limited because their residues turn into microplastics and enter the food chain. This study solves this problem by preparing a degradable cellulose–lignin–waterborne polyurethane composite grass paper film. First, waterborne polyurethane prepared using a mild method was composited with lignin via an addition reaction and the formation of hydrogen bonding between the –OH groups of lignin and the –NCO and –OH groups of polyurethane. Finally, the as-prepared polyurethane–lignin composite was applied as a coating on the surface of a paper-based material to prepare a grass paper mulch film. The relationship between lignin content and the molecular weight, thermal stability, mechanical properties, polymer network crosslinking density, antioxidant capability, and light transmittance of the coating was studied, revealing that higher lignin contents considerably improved the barrier and mechanical properties of the coating and grass paper mulching film. In particular, a lignin content of 20 % resulted in a grass paper mulching film with outstanding grass pressing performance and degradability. Therefore, the multifunctional, ecofriendly grass paper mulch film prepared from cellulose–lignin–waterborne polyurethane composite materials provides an innovative approach to solve the pollution problem of traditional grass plastic paper mulch.

Laminaria polysaccharides (LP) have been shown to effectively stabilize selenium nanoparticles (SeNPs), forming LP–SeNP complexes with enhanced bioactivity. However, the correlation between their bioactivity and physicochemical properties remains inadequately explored. This study used chemical reduction with LP as stabilizer to investigate how LP-to-selenium mass ratio (LPSMR), reaction time, and temperature influence particle size, selenium content, and 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity of LP–SeNPs. The results showed that enhanced DPPH scavenging correlated with higher selenium content and smaller particle size, primarily modulated by LPSMR and temperature. Under optimal conditions (LPSMR of 1; temperature of 25°C), the resulting LP–SeNPs exhibited uniform morphology with a particle size of 81.41 nm and selenium content of 653.91 mg/g. This stability was achieved through non-covalent interactions between LP and SeNPs, providing superior light and acid resistance compared to unmodified SeNPs. Notably, LP–SeNPs showed synergistic antioxidant effects, with lower half-maximal inhibitory concentration (IC 50 ) values for scavenging DPPH, hydroxyl, and superoxide anion radicals than LP or SeNPs alone, and enhanced hypoglycemic activity. Cytotoxicity assays confirmed LP–SeNPs had reduced toxicity compared to Na 2 SeO 3 and selenopeptide. These findings provide insights into the structure-activity relationships of LP–SeNPs and support their potential application as antioxidant and hypoglycemic agents.

Various biological activities of glabridin have been reported in literature, however, the bioavailability and clinical application was limited by its low water solubility. In this study, we developed a novel inclusion complex of glabridin and hydroxypropyl-β-cyclodextrin (HP-β-CD) that features improved solubility and bioactivity. The formation of the inclusion complex was supported by data from FT-IR, PXRD, SEM and NMR. Specifically, the NMR results indicated that the aromatic ring of glabridin was merged into and located at the narrow side the cavity of HP-β-CD. The in vitro tests showed that the formation of the inclusion complex led to 9 times increase in the DPPH radical-scavenging capacity and 20 times increase in the tyrosinase inhibitory activity compared to the free glabridin at the same concentration. Therefore, the glabridin/HP-β-CD inclusion complex adds a promising strategy for the clinical application of glabridin in the future.

To explore the potential of common beans as natural sources of bioactive compounds, the antioxidant properties and total phenolic content (free, soluble conjugate, insoluble-bound fraction) of 14 beans from China were evaluated systematically. The results showed that beans had diverse antioxidant capacities and the variation was very large. Black bean, flower waist bean, pearl bean and spring bay bean showed the strongest antioxidant activities among the 14 tested samples based on a combinative consideration of the results obtained by 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity (DPPH) assay, ferric reducing antioxidant power (FRAP) assay, and trolox equivalent antioxidant capacity (TEAC) assay. Furthermore, several phenolic compounds were detected; gallic acid and protocatechuic acid were widely found in these beans. The results implied that these beans were important natural sources for preventing oxidative stress diseases.
