Improved cooking quality and reduced in vitro digestibility in germinated highland barley noodles through synergistic modification with guar gum and Na2CO3

Wentao Pan,Sheng Huang,Huiliang Wen,Zhibing Huang,Jianhua Xie

This study investigated the synergistic effects of hydrocolloids (guar gum, GG; xanthan gum, XG; and carboxymethyl chitosan, CMC) and alkaline salts (Na 2 CO 3 and NaHCO 3 ) on germinated highland barley noodles. Hydrocolloids reduced cooking loss, breakage rate, and thermal decomposition of noodles while improving elongation, hardness, springiness, and chewiness. GG exhibited the most significant effects. The synergistic modification of GG (0.4 %) and Na 2 CO 3 (0.4 %) further optimized these properties, improving color and sensory evaluation scores. GG and alkaline salts enhanced intermolecular hydrogen bonding (OH···O), creating denser and more uniform noodles. The increases in degree of order (DO, 1047 cm −1 /1022 cm −1 ) and degree of double helix (DD, 995 cm −1 /1022 cm −1 ) indicated a more ordered structure. Resistant starch content increased from 18.27 % to 30.23 % and predicted glycemic index (pGI) decreased from 71.09 % to 58.15 %, offering benefits for diabetic health. This study improved the cooking quality and reduced the pGI of traditional noodles and broadened the application of germinated highland barley in noodle production.

Conversion of D-galactose and guar gum hydrolysate to D-tagatose using L-arabinose isomerase immobilized in sodium alginate-silica hydrogel

Yan Wen,Yan Zhang,Na Lü,Zehui Xuan,Lili Lu

D-tagatose is an attractive functional sweetener, and its production via enzymatic synthesis is simple and environmentally friendly; however, it faces challenges related to enzyme and substrate costs. In this study, a novel and cost-effective method for synthesizing D-tagatose was established using L-arabinose isomerase (L-AI) immobilized within a sodium alginate (SA) composite hydrogel, with the low-cost guar gum as the starting material. Eight inorganic or organic materials were individually combined with SA to encapsulate L-AI. The immobilized enzyme prepared with SA and 50-nm SiO 2 particles demonstrated superior properties, including enhanced mechanical strength and improved reusability, compared to enzymes immobilized with other carriers. The structure of the immobilized enzyme was characterized by scanning electron microscopy, Fourier-transform infrared spectroscopy, and X-ray diffraction. The D-tagatose synthesis reaction using the immobilized enzyme was optimized through both single-factor and statistical methods. The maximum yield of D-tagatose reached 30.12% from 1 M D-galactose at 68°C, with a productivity of 6.78 g/L/h. The immobilized enzyme was reusable for 20 cycles of reaction at 60°C, retaining over 55% of its initial activity and accumulating a high amount of 863.74 g/L D-tagatose. Furthermore, it efficiently converted guar gum hydrolysate into D-tagatose, retaining over 50% enzyme activity and yielding 114.32 g/L of D-tagatose after 10 cycles. The excellent enzyme reusability and the exploration of an economic substrate would significantly reduce production costs in large-scale D-tagatose synthesis in the future.

Sodium alginate/gelatin/guar gum oral delivery ternary composite hydrogel beads loaded with Anzhong decoction: Gastric floating retention and controlled release

Chuyi Wang,Jingxin Chen,Nan Chen,Bingru Zhang,Wenyan Wu,Weiran Lin,Yuxin He,Jin Zhang,Yudong Lu,Zixing Yan

The half-life of the traditional Chinese medicine Anzhong Decoction (AZD) is relatively short. When administered orally, insufficient retention in the stomach and rapid clearance rates result in significantly reduced drug utilization efficiency. To address this limitation, we developed ternary composite sodium alginate/gelatin/guar gum hydrogel beads (SA/Gel/GG HBs) using ion-gelation technology. Research revealed that guar gum (GG) incorporation enhances hydrogen bonding and network heterogeneity, as confirmed by ATR-FTIR and rheological analysis. Specifically, the formulation containing 0.4% GG (SA/Gel/4GG) achieved an optimal balance of properties. It demonstrated an encapsulation efficiency of 76.09%, a loading capacity of 7.02% and a high-water retention of 85.24%. Crucially, SA/Gel/4GG sustained gastric flotation for over 6 h with a flotation rate exceeding 95.04%. This was attributed to its low-density closed-cell structure, featuring a density of 0.36 g/cm 3 and porosity of 17.10%. The optimized microsphere exhibited a first-order kinetic release mechanism with biphasic release characteristics. Within 6 h, 79.21% of AZD was released into gastric fluid, followed by sustained release in the intestine. The antioxidant activity of AZD against DPPH and ABTS was well preserved. This SA/Gel/GG system presents a promising gastric-floating oral delivery platform for traditional Chinese medicine compounds, effectively extending gastric retention and enabling controlled drug release.

Development of Guar Gum/Chitosan/Polyvinylpyrrolidone Smart Films Containing Purple Sweet Potato Extract for the Real-Time Monitoring of Shrimp Freshness

Sihui Yang,Pengfei Li,Ting Wang,Yanjiao Lan,Xiaoyu Peng

A biodegradable, antioxidant smart film was prepared using a solution casting method. Anthocyanins in purple sweet potato extract (PSPE) were added to guar gum (GG), chitosan, and polyvinylpyrrolidone matrices as antioxidants and smart pH indicators to determine the freshness of meat products. The resulting GCPP films were characterized, and the mechanical, antibacterial, and antioxidant properties of the films were measured. Cytotoxicity assays confirmed the nontoxic nature of the material, complying with food contact material standards. Furthermore, shrimp freshness monitoring tests validated its practical application potential. As the basic skeleton of the smart film, GG endowed toughness and ductility. Minimal amounts of PSPE were evenly distributed in the film, forming hydrogen bonds with the matrix molecules, and the cross-section of the smart film was smooth and continuous. PSPE improved matrix compatibility and minimally affected the hydrophilicity of the film. As the PSPE content increased, the opacity of the GCPP film increased from 3.91 ± 0.01 to 4.30 ± 0.05, and the UV-blocking rate increased from 61.10% to 99.99%. The elongation at break increased from 24.44% to 38.26%, while the tensile strength decreased from 41.71 ± 3.22 MPa to 35.42 ± 1.84 MPa. Moreover, the GCPP film was highly sensitive to pH changes. For example, in the shrimp freshness test, the GCPP film changed from meat-pink to brownish-yellow when the volatile base nitrogen was 18.24 mg/100 g. Therefore, this study provides an effective method to prepare smart films that are environmentally friendly indicators of food freshness.

Design and validation of antibacterial and pH response of cationic guar gum film by combining hydroxyethyl cellulose and red cabbage pigment

Menglong Chu,Nianrong Feng,Hu An,Guanglin You,Changshun Mo,Hongyang Zhong,Liuru Pan,Dongying Hu

A simple and feasible method was adopted to construct the antibacterial and pH response of cationic guar gum (CGG) composite films (CGG-HEC, RC) through using hydroxyethyl cellulose (HEC) as an enhancer and red cabbage (RC) as a smart active substance. The effect of different HEC content on the binary composite films (CGG-HEC) performance shows that the highest tensile strength (51.59 MPa) can be obtained by adding 10% HEC due to the good compatibility between CGG and HEC. The ternary composite film (RC3) with 10% HEC and 3% RC addition has good performance in all aspects, such as high tensile strength (65.41 MPa), appropriate water vapor transmission coefficient (1.08), and good thermodynamic stability. In addition, RC3 has good antibacterial properties against E. coli and Staphylococcus aureus , taking advantage of the antibacterial properties of CGG and RC. RC3 can respond to changes in environmental pH and has a significant color change, and also has a significant color change when detecting the deterioration of pork and soy milk. Therefore, the ternary composite film (RC3) has good mechanical properties, antibacterial and intelligent response characteristics, and may be used in intelligent antibacterial packaging.

Partially Hydrolyzed Guar Gum Modulates Gut Microbiota, Regulates the Levels of Neurotransmitters, and Prevents CUMS-Induced Depressive-Like Behavior in Mice

Yanqiu Chen,Mei Wan,Yi Zhong,Tingfang Gao,Yuehan Zhang,Fen Yan,Da Huang,Yuanzi Wu,Zuquan Weng

Scope Depression is the leading cause of disability around the world; however, most antidepressants have drug tolerance and serious side effects. In this study, it is explored whether partially hydrolyzed guar gum (PHGG) is a safe food that exhibits protection in a mouse model of depression. Methods and Results PHGG is orally administered to mice with depression induced by chronic unpredictable mild stress (CUMS) in two animal experiments (prevention trial and intervention trial) to characterize the potentially protective effect of PHGG. The results in the prevention trial show that PHGG significantly inhibits the loss of body weight, and prevents CUMS-induced depressive-like behavior in mice. The beneficial effects may be associated with PHGG modulating the gut microbiota structure and then increasing the levels of short-chain fatty acids in mice feces and the levels of 5-hydroxytryptamine and dopamine in serum, striatum, and hippocampus. Besides, PHGG in the intervention trial is less effective than that in the prevention trial, but it may have a synergistic effect on improving depression with fluoxetine. Conclusions This study suggests that moderate daily intake of PHGG can contribute to relieving depressive-like behavior.

Sodium alginate/guar gum based nanocomposite film incorporating β-Cyclodextrin/persimmon pectin-stabilized baobab seed oil Pickering emulsion for mushroom preservation

Zhikun Yang,Mingrui Li,Yanxiao Li,Xiaowei Huang,Zhihua Li,Xiaodong Zhai,Jiyong Shi,Xiaobo Zou,Jianbo Xiao,Yue Sun,Megan Povey,Yunyun Gong,Melvin Holmes

The poor biological, mechanical and water-resistance properties of sodium alginate/guar gum film (SG) limit its application in food preservation. To overcome this disadvantage, we added β-Cyclodextrin/persimmon pectin-stabilized baobab seed oil Pickering emulsion (BOPE) to enhance the mechanical and water resistance properties of SG film, and added green synthesized silver nanoparticles (AgNPS) and Lycium ruthenicum extract (LA) to improve the biological properties of the film. The properties of BOPE was optimized using Box–Behnken design (BBD). Scanning electron microscope and Fourier transform infrared results revealed the change of structure and molecular interaction in the SG film after the addition of AgNPS, LA, and optimized BOPE. The 2.0%BOPE-loaded film containing AgNPS/LA with the enhanced mechanical, barrier, BO retention, and biological properties not only improved the preservation effect on mushroom ( A. bisporus ), but also maintained structural stability. Thus, the 2.0%BOPE-loaded SG/LA/AgNPS film has considerable potential in active packaging applications.

Mechanism analysis of enhancing the temperature and shear resistance of hydroxypropyl guar gum fracturing fluid by boron-functionalized nanosilica colloidal crosslinker

Chuanbao Zhang,Yanling Wang,Ziyue Wang,Hangyu Wang,Shinan Liang,Ning Xu,Di Li

With the increasing depth of reservoir development, the temperature and shear resistance of fracturing fluids needs to be further improved. In comparison with traditional crosslinking agents, nano-crosslinkers have superior crosslinking properties and can enhance the temperature and shear resistance of fracturing fluids. However, the synthesis of nano-crosslinkers is complicated and not sufficiently explained to elucidate the crosslinking mechanism. In this study, a nanosilica colloidal crosslinker with a larger size and more crosslinking sites was synthesized by a simplified method using nanosilica. The structure and crosslinking mechanism of nanosilica crosslinkers were explored using FTIR, XPS , TGA , and SEM. The results indicated that the nanosilica and organoboron were bonded through B-N bonds. The nanosilica crosslinker has good dispersion and excellent thermal stability. The thermal and shear stability of nano-crosslinked fracturing fluids was better than that of fracturing fluids formed with organoboron crosslinkers. Specifically, temperature resistance is enhanced by 7–18 °C and shear resistance by 5–20 mPa s. In addition, the gel-breaking fluid changes the wettability of the core surface and enhances the flow capacity of the oil. The results of FTIR showed the synergistic effect of hydrogen and covalent bonding between the crosslinker and guar gum molecules. The results of SEM indicated that the guar gum molecules are transformed from a linear structure to a membrane structure during the transformation of the fracturing fluid from a base fluid to a gel, which gave the gel water retention capacity and good proppant-carrying capacity. Furthermore, the nanosilica crosslinker is distributed on the surface of the membrane or located in the membrane by binding to the membrane. The interaction between the nanoparticles and the membrane structure enhances the strength of the membrane structure, which allows for better shear stability of the nano-crosslinked fracturing fluid at high temperatures.

Novel flexible hydrogels based on carboxymethyl guar gum and polyacrylic acid for ultra-highly sensitive and reliable strain and pressure sensors

Shu He,Zeng Liu,Xing Wu,Jia Liu,Hongli Fang,Wei Shao

To realize on stable and real-time monitoring of human activities, novel hydrogels using polyacrylic acid (PAA) and carboxymethyl guar gum (CMGG) were fabricated as wearable and flexible strain or pressure sensors in the presence of lignosulfonate (LS) and Al 3+ . Based on the co-existence of metal coordination bonds, hydrogen bonds and ionic interaction in this system, the obtained hydrogels exhibited desirable mechanical properties with good self-recovery ability. The hydrogels displayed good self-adhesion behavior and an ultra-high tensile sensitivity (gauge factor (GF) = 24.30), therefore, they could precisely detect human joints movements such as elbow, wrist, and finger bending as well as tiny movements and external stimuli such as swallowing, smile, frown, pulse, speaking, writing, and even the falling of different liquid drops. Additionally, the hydrogels showed excellent self-healing ability with the healing efficiency as high as 100 % after 30 h. Most importantly, the healed hydrogel could perform the same sensing performance as before. Based on these distinguished characteristics, this hydrogel represents great potentials in wearable and flexible sensors for long-term and stable health monitoring application.

Physicochemical Properties and Bioactivity of a New Guar Gum-Based Film Incorporated with Citral to Brown Planthopper, Nilaparvata lugens (Stål) (Hemiptera: Delphacidae)

Xiubing Gao,Can Guo,Ming Li,Rongyu Li,Xiaomao Wu,Anlong Hu,Xianfeng Hu,Feixu Mo,Shuai Wu

The brown planthopper (BPH), Nilaparvata lugens (Stål), is the most notorious rice insect pest. In order to repel BPH effectively while being environmentally friendly, a new film based on guar gum incorporated with citral (GC film) was formulated. A toxicity bioassay of citral and guar gum at different proportions (ratios of 3:1, 2:1, 1:1, 1:2, and 1:3 inw/w) of GC film-forming emulsion to BPH was performed with the rice stem dipping method. Results showed that the most effective ratio of citral to guar gum was 1:1 with the median lethal concentration (LC50) of 4.30 mg/mL, far below the LC50of guar gum (GG)/citral individual (141.51 and 44.38 mg/mL, respectively). The mortality of BPH adults and nymphs in the third instar treated with different dilution multiples of GC film-forming emulsion ranged from 46.67% to 82.22% and from 37.78% to 71.11%, respectively. These indicated that GC film-forming emulsion had a direct toxicity on BPH, and the mixture of citral and GG had synergistic interactions. Subsequently, Fourier-transform infrared spectroscopy showed that the incorporation of guar gum with citral was successful and did not result in the formation of new chemical bonds. The GC film exhibited a darker color and rougher surface topography with larger apertures and deeper gullies (Ra = 1.42 nm, Rq = 2.05 nm, and Rmax = 25.40 nm) compared to the guar gum film (GG film) (Ra = 1.00 nm, Rq = 1.33 nm, and Rmax = 16.40 nm), as determined by transmission electron microscopy and atomic force microscopy. The GC film exhibited a 50.4% lower solubility in water (30.30% vs. 15.00%) and 71.3% oxygen permeability (8.26 × 10−9vs. 2.37 × 10−9cm3/m2·d·Pa) (p <0.05) but did not demonstrate any significant difference in mechanical properties, such as thickness (39.10 vs. 41.70 mm), tensile strength (41.89 vs. 38.30 N/mm2), and elongation at break (1.82% vs. 2.03%) (p <0.05) compared to the GG film. Our findings established a link between physicochemical properties and bioactivity, which can provide useful information on developing and improving GC films and may offer an alternative approach for the control of BPH in the near future.

Properties of Guar Gum/Pullulan/Loquat Leaf Extract Green Composite Packaging in Enhancing the Preservation of Chinese Water Chestnut Fresh-Cut Fruit

Kok Bing Tan,Meixia Zheng,Junyan Lin,Yujing Zhu,Guowu Zhan,Jianfu Chen

Loquat leaf extract (LLE) was added to guar gum and pullulan as an environmentally friendly packaging film (GPE) to preserve Chinese water chestnuts (CWCs). The effect of the amount of LLE on the guar gum/pullulan composite film was investigated. The optimal amount of LLE was 4% (GPE4), with lower water vapor permeability (WVP) and greater mechanical strength, antioxidant, and comparable antibacterial performance than many pullulan-based films. Upon packing the CWCs for 4 days, the weight loss rate of GPE4 was only 1.80 ± 0.05%. For GPE4, the POD activity, the soluble solid content, and the vitamin C (Vc) content of the CWCs were 21.61%, 36.16%, and 26.22% higher than those of the control sample, respectively. More importantly, GPE4 was effective in preserving the quality of CWCs after 4 days of storage, better or at least comparable to non-biodegradable plastic wrapping (PE). Therefore, it can be concluded that GPE films hold significant promise as a sustainable alternative packaging material for preserving fruit-based foods like CWCs, potentially replacing PE in the future.

Design of Schiff base modified guar gum supported palladium complex with multiple coordinated sites and its application towards aryl halides cyanation reaction

Yahao Dong,Jie Yang,Yihan Liu,Jie Gao,Zeyu Yang,Xianbin Jia,Jiaojiao Zhang,Zhiguo Hu,Xinjuan Li

As a significant polysaccharide, owing to fascinating properties, ease of availability and biocompatibility, natural guar gum (GG) has received extensive attention in foods, pharmaceuticals and industrial applications. However, the catalytic applications for GG were not fully explored. Additionally, traditional cyanation methods for preparing significant aryl nitriles often rely on highly toxic cyanide sources, prompting the need for greener alternatives. For exploring and extending full potentials of GG, it is essential that the design and study of this polysaccharide is deemed as new bio-support in heterogeneous catalysis through further chemical modification. In this study, a novel 5-hydroxymethylfurfural (HMF) modified GG supported Pd catalyst (GG-SB-Pd) was projected and synthesized by using multidentate coordinated functionalized GG as stabilizer agent for immobilizing palladium. The resulting catalyst could be utilized as an efficient catalyst in the construction of aryl nitriles in cyanation reactions with non-toxic cyanide sources. More importantly, dependent on the multiple coordinated sites (hydroxyl, furyl and imine moieties) with palladium on this polysaccharide, this catalyst was able to efficiently enhance catalytic performance and prevent metal leaching (<1%). In addition, it was proved that the Pd composite could be simply recollected by centrifugation for 5 cycles. A possibly cooperative multifunctional structure was also proposed. Accordingly, this study furnishes valuable insights into the design and fabrication of polysaccharides in potential application of organic transformations.
