In this work, chitosan (CS) emulsion films were prepared with grapefruit essential oil (GEO) Pickering emulsions (OGEOs) stabilized by amphiphilic octenyl succinic anhydride (OSA) konjac glucomannan (OSA-KGM) network. The droplet size of emulsion was regulated by altering oil content in OGEOs (10 %, 20 %, 30 % and 40 %, w/w). The structural and physicochemical properties of CS films with tunable emulsion droplets (OGEOs) were investigated. The droplet size of OGEOs increased with the increasing content of GEO. FT-IR revealed that the formation of CS-OGEOs films was attributed to hydrogen bonding. CS-OGEOs films with large droplets presented smoother surface, enhanced water resistance, UV-shielding property, mechanical properties, but increased water vapor permeability (WVP) compared with CS-OGEOs films with small droplets. In addition, CS-OGEOs films with large droplets also presented compact film structure, controlled release of GEO, high efficiency of DPPH free radical scavenging and antibacterial activity. To sum up, incorporation of emulsion droplets was a good strategy for improving the structural and physicochemical properties of CS films.

Uncontrollable bleeding is a crucial factor that can lead to fatality. Therefore, the development of hemostatic dressings that enable rapid hemostasis is of utmost importance. Hydrogels with injectability, self-healing ability, and adhesiveness hold significant potential as effective hemostatic dressings. Herein, a composite hydrogel was fabricated by the oxidized Konjac glucomannan and ε-polylysine. After the encapsulation of a hemostatic drug, etamsylate, an oxidized Konjac glucomannan/ε-polylysine/etamsylate (OKGM/PL/E) composite hydrogel that possesses favorable properties including injectability, self-healing ability, tissue adhesiveness, hemocompatibility and cytocompatibility was fabricated. The OKGM/PL/E hydrogel demonstrated the ability to effectively adhere red blood cells and seal wounds, enabling rapid control of hemorrhaging. In vivo wound healing experiments confirmed the hemostatic and wound healing efficacy of the OKGM/PL/E hydrogel, highlighting its potential as a valuable hemostatic dressing.

The growing prevalence of dysphagia among the aging population presents a significant challenge. Many highly nutritious foods, like salmon, are often unsuitable for the elderly due to their firm texture when heated. To address this concern, a combination of salmon myofibrillar protein (SMP), Konjac glucomannan (KGM), and different emulsion fillers—such as oil droplets, octenyl succinic anhydride (OSA)-modified potato starch emulsion, and high methoxylated pectin (HMP) emulsions—was selected to enhance the network of salmon protein gels with the aims to create potential applications as dysphagia-friendly foods. The International Dysphagia Dietary Standardization Initiative (IDDSI) test indicated that all gel samples were classified as level 5. The OSA-SMP-KGM gel exhibited notably higher cohesiveness ( P < 0.05), reduced adhesion, and enhanced mouthfeel. The OSA-SMP-KGM gel exhibited a smooth surface and excellent water retention (92.4 %), rendering it suitable for individuals with swallowing difficulties, particularly those prone to experiencing dry mouth. The yield stress of OSA-SMP-KGM gel was 594.14 Pa and stable structure was maintained during chewing and swallowing (γ e /γ v = 62.5). This study serves as a valuable reference for developing salmon-based products that are not only highly nutritious but also fulfill the criteria for a desirable swallowing texture.

Depolymerized konjac glucomannan (KGM) had better health benefits than natural KGM. Oxidation and enzyme-hydrolysis were two effective ways to prepare depolymerized KGM. Oxidized KGM (OKGM) and enzyme-hydrolyzed KGM (EKGM) varied in molecular structures, verified by nuclear magnetic resonance and atomic force microscope. The differences in chemical structure definitely influenced the fermentability of depolymerized KGM. Herein, effects of OKGM on in vitro fecal fermentation was investigated, comparing with EKGM at approximately same molecular weights. During fermentation, OKGM groups displayed slightly lower reducing sugar concentrations and higher residual carbohydrate contents than EKGM groups. After fermentation, OKGM groups produced more acetic acids and propionic acids than EKGM groups, while EKGM groups generated more butyric acids than OKGM groups. Meanwhile, relative abundances of the Firmicutes and Lactobacillus in OKGM groups were higher, while relative abundances of the Actinobacteria , Fusobacteria and Bacteroides was higher in EKGM groups. OKGM and EKGM differed in modulating gut microbiota.

Konjac glucomannan (KGM)/zein blend films were successfully prepared by solution casting at different drying temperatures (40, 50, 60, 70 and 80 °C). The effects of drying temperature on the films' structural, thermomechanical, mechanical and water barrier properties were investigated. Microstructural observations indicated that zein particles were homogeneously dispersed in KGM continuous matrix, and the blend film dried at 60 °C showed the most compact and smooth surface. Dynamic mechanical thermal analysis curves showed that with increasing drying temperature from 40 to 60 °C, glass transition temperature (Tg) of films increased; however, with further increase in temperature, the Tg decreased, indicating the compatibility of film components was the highest when dried at 60 °C. The hydrophobicity of blend film dried at 60 °C was significantly stronger than that of other blend films, supported by the highest water contact angle, and the lowest swelling ratio and solubility. Moreover, the film dried at 60 °C showed the highest tensile strength , elongation at break, and the lowest water vapor permeability. Therefore 60 °C was preferred for KGM/zein blend film preparation. This study indicated that intermolecular interactions among film components were greatly influenced by the drying temperature, and should be carefully noticed for film preparation.

The bifidogenic effects of exopolysaccharide (EPS) of a medicinal fungus ( Cordyceps sinensis ) and a well-known food polysaccharide konjac glucomannan (KGM) with different molecular weight (MW) ranges were evaluated through in vitro experiments in liquid cultures of Bifidobacteria . Native EPS and KGM were partially degraded with power ultrasound (US) to improve the water solubility, and further hydrolysed with trifluoroacetic acid to much lower MW. The acid-hydrolysed fractions (EPS-AH and KGM-AH) supported the growth of all five tested bifidobacterial species, while the US-degraded high MW fractions, EPS-US and KGM-US, could only slightly support the growth of some species. All EPS fractions increased the acetic acid production of most bifidobacterial species. Most remarkably, the high MW EPS-US, EPS-AH and KGM-US fractions significantly enhanced the cell viability with much higher colony forming unit (CFU) counts, suggesting a protective effect of these high MW polysaccharides for the bacterial survival . The results have shown that MW was a significant factor on the bifidogenic properties of partially degraded EPS and KGM.

Konjac glucomannan/zeolitic imidazole framework-67 (KGM/ZIF-67) hybrid aerogels were prepared as novel adsorbents to remove malachite green (MG) from aqueous solutions. The impacts of adsorption temperature, solution pH, and ionic strength on adsorption capacity were investigated. The results show that ZIF-67 coordinates with the molecular chain of KGM and modifies the KGM aerogel. The adsorption equilibrium time of KZ2 for MG is 150 min. The adsorption process follows the pseudo-second-order and Langmuir models, with a maximum adsorption capacity of 2891.30 mg·g −1 at 30 ℃. MG adsorption using the hybrid aerogels is a spontaneous and endothermic process. This research shows that hybrid aerogels prepared using KGM and ZIF-67 are promising for use in new water purification applications.

Biopolymers , such as polysaccharides are increasingly concern in preparation of food packaging. However, those materials have weakness in properties of mechanics, hydrophobicity , and antibacterial, which limit their applications. In this work, we prepared emulsion (K-PL-CEOs) films with double network (DN) matrix by using konjac glucomannan (KGM) and Pullulan (PL), and incorporated with cellulose nanofibrils (CNF)-stabilized tea tree essential oil (TTEO) Pickering emulsions (CEOs). The effect of CEOs content on the structural and physicochemical properties of K-PL films was investigated. The results showed that CEOs were well dispersed in K-PL film forming matrix. The addition of CEOs could improve the thermal stability, UV-shielding, water resistance and mechanical properties of K-PL-CEOs films. Moreover, K-PL-CEOs films exhibited good antibacterial activity against E. coli and S. aureus . This paper demonstrated that K-PL-CEOs films can be potentially applied as food packaging.

BACKGROUND The stabilization of oil-in-water (O/W) emulsions has long been explored. Assembly of polymer networks is an effective method for stabilizing O/W emulsions. Konjac glucomannan (KGM) is a plant polysaccharide and the network of KGM gel is a good candidate for stabilizing O/W emulsions based on its high viscosity and thickening properties. However, natural KGM has strong hydrophilicity and is not able to offer interfacial activity. Octenyl succinic anhydride (OSA) is a hydrophobic molecule, which is widely used as thickener and stabilizer in food emulsions. In this work, the amphiphilic biopolymer (OSA-KGM) was fabricated by modifying the KGM with OSA. Furthermore, OSA-KGM biopolymer was used to prepare O/W emulsions, which were then freeze-dried and used to prepare oleogels as fat substitute for bakery products. RESULTS OSA-KGM had advanced hydrophobicity with water contact angle 81.13° and adsorption behavior at the oil–water interface, with interfacial tension decreasing from 18.52 to 13.57 mN m −1 within 1 h. The emulsification of OSA-KGM remarkably improved the stability of emulsions without phase separation during storage for 31 days. Oleogels with OSA-KGM showed good thixotropic and structure recovery properties (approximately 100%) and low oil loss (from 69.5% to 50.4%). Cakes made from oleogels had a softer texture than cakes made from peanut oil and margarine. CONCLUSION Amphiphilic biopolymer OSA-KGM shows advanced interfacial activity and hydrophobicity. This paper provides an insight into preparing stable O/W emulsions with a new biopolymer and oleogels potentially applied as fat substitute in bakery products. © 2022 Society of Chemical Industry.

The exploration of strategy to synthesize nanofibril film for functional applications is of great scientific and technological interest. This paper demonstrates that nanofibril film, made of biodegradable konjac glucomannan (KGM) and polyethylene oxide (PEO), performs better physical and chemical properties than solvent casting film. We fabricate a nanofibril film by electrospinning method. To collect consistent and uniform nanofibers, we explore the effect of the proportion of KGM and PEO. At proportion of KGM: PEO = 1:10, the as-prepared nanofibers are consistent in size with an average width of 200 nm. We further characterize the nanofibril film by Fourier transform infrared spectrum (FT-IR) and X-ray diffraction (XRD). The results show physical crosslinked networks between KGM and PEO chains, and modifications of the crystallization of the polymers. In addition, we disperse grape seed extract (GSE) into the electrospinning solutions to prepare bioactive nanofibril film. The as produced nanofibril film demonstrates good water vapor barrier and antioxidation function.

To selectively separate chalcopyrite from pyrite, the effect of konjac glucomannan on the flotation separation of chalcopyrite from pyrite was investigated in this study. The results of single mineral flotation tests showed that konjac glucomannan had a stronger depression effect on pyrite than traditional organic depressants (Starch, Dextrin, Guar gum) with the pyrite recovery less than 5% at the pH range of 5–11, while it had little influence on chalcopyrite flotation over the whole pH range. Flotation tests of mixed minerals were conducted to further study the selective depression effect of konjac glucomannan, and a copper concentrate with CuFeS 2 grade of 83.69% and Cu recovery of 85.64% could be obtained from a feed containing 47.20% CuFeS 2 . This was due to the greater adsorption of konjac glucomannan on the surface of pyrite than that on chalcopyrite surface, which was also proved by the results of zeta potential measurements, adsorption measurements, and FTIR studies. Furthermore, XPS test results manifest that konjac glucomannan adsorbed on pyrite was via physical adsorption. Hydrogen bonding and Bronsted acid-base interaction were considered as the main driving forces.

Biomaterial-host interactions significantly affect tissue repair, which is modulated by macrophages. In this study, a polysaccharide, konjac glucomannan (KGM), was acetylated with different degrees of substitution (DS), and the acetylated KGM (AceKGM)-based fibrous membrane was designed to modulate the activity of macrophages for accelerating wound healing. AceKGM was biocompatible and easily dissolved in organic solvents. The adhesion force between Raw264.7 cells and the AceKGM substrate was quantitatively detected by atomic force microscopy (AFM). The enzyme-linked immunosorbent assay (ELISA) results showed that the AceKGM fibrous membrane enhanced macrophage expression of anti-inflammatory and pro-regenerative cytokines, and the DS of AceKGM significantly affected membrane bioactivity. The full-thickness mouse skin wound repair experiments indicated that the AceKGM-containing fibrous membranes significantly accelerated wound healing by promoting re-epithelialization, tissue remodeling, and collagen deposition. In summary, AceKGM-based fibrous membranes have potential as bioactive scaffolds for wound regeneration.
