Sea buckthorn has lipid-lowering properties and is widely used in the development of functional foods. In this study, a probiotic ( Lactobacillus plantarum , Lp10211) with cholesterol-lowering potential and acid and bile salt resistant was screened for the fermentation of sea buckthorn juice. Changes in the active ingredients, such as sugars and phenolics, before and after fermentation, as well as their in vitro lipid-lowering activities, were compared. The contents of reducing and total sugars decreased substantially after fermentation. Lp10211 primarily utilized fructose for growth and reproduction, with a utilization rate of 76.9%. The phenolic compound content of sea buckthorn juice increased by 37.06% after fermentation and protected the phenolic components from degradation (protocatechuic and p -coumaric acids) and produced new polyphenol (shikimic acid). Enhanced inhibition of pancreatic lipase activity (95.42%) and cholesterol micellar solubility (59.15%) was evident. The antioxidant properties of the fermentation broth were improved. Notably, Lp10211 preserved the color and reversed browning in sea buckthorn juice. The collective findings indicate that fermentation of sea buckthorn juice by Lp10211 may enhance the functional components and lipid-lowering activity of sea buckthorn, which may provide a new approach for the development of lipid-lowering foods.

Rape moss is the tender stem of oilseed rape , which can be made into fermented vegetables via spontaneous fermentation. The aim of this study was to evaluate the effects of fermentation conditions on physicochemical components, volatile compounds, and antioxidant capacity of rape moss. The results showed that the optimal physicochemical parameters of fermented rape moss (FRM) were obtained with 70 % initial moisture content , 6 % salt addition, 7 days fermentation time, 15 °C fermentation temperature, while the strongest antioxidant capacity was achieved with 60 % initial moisture content, 7 % salt addition, 7 days fermentation time, 15 °C fermentation temperature. Additionally, 51 volatile compounds in FRM were identified by HS-SPME-GC-MS, mainly including ketones, alcohols and esters. Notably, Pearson correlation analysis revealed that protein and fat were significantly positively correlated with antioxidant activity in FRM (p < 0.01). These findings could provide a theoretical basis for the development and functional research of FRM products.

Resveratrol monoesters, synthesized by esterifying with lipophilic groups, excel in lipophilicity, antioxidant activity, and bioavailability. This study selectively acylated resveratrol at 3-OH and 4’-OH using lipozyme RMIM (from Rhizomucor miehei ). Seven 3-resveratrol monoesters (3-RC 2:0 – 18:0 ) and seven 4’-RC 2:0 – 18:0 were prepared, purified and identified. Their antioxidant capacity and bioaccessibility were innovatively studied, focusing on substitution and acyl chain length effects. Results showed that 3-RC 2:0 – 18:0 consistently outperformed 4’-RC 2:0 – 18:0 in SET assays for antioxidant activity. Notably, 4’-RC 2:0 – 8:0 performed better oxygen radical absorption capacity than 3-RC 18:0 . 3-RC 2:0 even showed better ABTS radical scavenging capacity than Trolox and TBHQ. 3-RC 2:0 /RC 4:0 displayed higher antioxidant efficacy than medium- and long-chain counterparts, excluding 3-RC 16:0 . In the gastric and intestinal phases, 4’-RC 2:0 – 18:0 showed slightly higher retention due to enhanced lipophilicity compared to 3-RC 2:0 – 18:0 . RC 2:0 /RC 12:0 – 18:0 showed better retention properties during digestion. In summary, 3-RC 2:0/16:0 exhibited exceptional antioxidant capacity and digestive stability. These findings suggest resveratrol derivatives' potential in lipid-based foods, pharmaceuticals, and cosmetics.

Oxidative stress induced by reactive oxygen species (ROS) can adversely affect tissue repair, whereas endowing biomaterials with antioxidant activity can improve the in vivo microenvironment, thereby promoting angiogenesis and osteogenesis. Accordingly, this study utilized epigallocatechin-3-gallate (EGCG), a material known for its reducing properties, oxidative self-polymerization capability, and strong binding characteristics, to modify a bioactive core–shell fibrous membrane (10RP-PG). Compared to the 10RP-PG fibrous membrane, the EGCG-modified fibrous membrane (E/10RP-PG) exhibited superior hydrophilicity, excellent cell adhesion, and compatibility. Moreover, the EGCG-modified fibrous membrane can effectively scavenge free radicals, ameliorate the local microenvironment, and foster angiogenesis (enhancing the expression of angiogenic genes in human umbilical vein endothelial cells (HUVECs) by 1.58 times and promoting vascular generation area upon subcutaneous implantation by 4.47 times). The enhancement of angiogenic activity of the E/10RP-PG fibrous membrane further promoted cartilage degeneration and absorption, as well as new bone formation, thus facilitating the repair of bone defects. This study provides a new strategy for promoting bone defect repair through the surface modification of biomaterials with an antioxidant agent, and the fabricated E/10RP-PG fibrous membranes show promise for guiding vascularized bone regeneration.

Substituting renewable lignocellulose for fossil fuels is crucial for economic development and environmental protection. Deep eutectic solvents (DESs) demonstrate efficacy in facilitating the fractionation of high-purity lignin and cellulose during lignocellulose pretreatment. In this study, agricultural by-product passion fruit husks underwent pretreatment using DESs comprised of choline chloride (ChCl) and organic acids, aiming to efficiently separate cellulose and lignin. Among the various DESs tested, ChCl combined with lactic acid (LA) exhibited optimal performance in the pretreatment process. This combination demonstrated a remarkable synergistic effect in breaking down the lignin-carbohydrate complex bonds and deconstructing passion fruit husks. Characterizations of the cellulose rich solid residues were performed using FTIR, SEM, and XRD techniques, confirming the effectiveness of lignin removal and cellulose retention through the pretreatment. The regenerated lignin exhibited homogeneous distribution and well-preserved structure, as evidenced by 2D-HSQC analysis. Furthermore, it displayed notable antioxidant activity and antibacterial property. The mechanism underlying the pretreatment was elucidated through density functional theory (DFT) calculations, confirming hydrogen-bond interactions between DESs and lignin, which positively contributed to lignin dissolution. Additionally, hydrogen-bond properties between DESs and lignin were also revealed.

Bio-based active food packaging materials have a high market demand. We use coaxial electrospinning technology to prepare core–shell structured nanofibers with sustained antibacterial and antioxidant properties. The fiber core layer was composed of gelatin and tea polyphenols, whereas tea polyphenols provide antibacterial and antioxidant properties; the fiber sheath was composed of pullulan polysaccharides with antioxidant properties. By using a scanning electron microscope, it can be seen that the diameter distribution of the prepared nanofibers was uniform and the surface is smooth; using a transmission electron microscope, it can be clearly seen that the nanofibers have a core–shell structure; Fourier Transform Infrared and X-ray diffraction analysis indicate that the nanofibers have an amorphous structure; the 2,2-diphenyl-1-picrylhydrazyl free radical scavenging shows that nanofibers have higher antioxidant properties with the addition of tea polyphenols; antibacterial test showed that nanofibers had obvious inhibitory effect on the growth of Staphylococcus aureus and Escherichia coli ; and the nanofiber film dissolution test shows that nanofibers can be used as fast soluble active packaging. Finally, core–sheath-structured nanofibers can serve as active packaging for instant food, possessing both rapid water solubility and excellent antibacterial and antioxidant activity, making water-soluble nanofibers interesting applications in the field of food packaging.

In this study, nanofiber films were prepared by electrospinning technology with polyvinyl alcohol (PVA) and konjac glucomannan (KGM) as raw materials. Tea polyphenols (TPs) were incorporated in the above matrix, which increased physicochemical (thermal and mechanical characteristics) and antibacterial properties of the nanofiber films. The release behavior of phenolic compounds from PVA/KGM-TPs nanofiber films was determined in different food simulants; antioxidant and antibacterial activity of the films were also evaluated. The results showed that the addition of KGM increased the physical and chemical properties of the films. The tensile strength (TS) and elongation at break (EB) increased from 5.40 ± 0.33 to 10.62 ± 0.34 and from 7.24 ± 0.32 to 18.10 ± 0.91, respectively. PVA/KGM-TPs nanofiber films performed controlled release of TPs, with final release of 49.17% in 3% acetic acid, 43.6% in 10% ethanol, and 59.42% in 95% ethanol. The nanofiber films showed good antioxidation properties, with the free radical scavenging rate increasing from 1.33% to 25.61%, and good antibacterial properties with inhibition zones againstE. coliandS. aureusof 24.33 ± 0.47 mm and 34.33 ± 0.94 mm, respectively. In addition, the as-prepared films showed significant preservation performance for raw bananas at 25 °C.

This study aimed to evaluate the influence of ultrasonic degradation on the physicochemical and biological characteristics of Polygonatum cyrtonema polysaccharide (PCP, 8.59 kDa). PCP was subjected to ultrasonic treatment for 8, 16, and 24 h and yielded the degraded fractions PCP-8, PCP-16, and PCP-24 (5.06, 4.13, and 3.69 kDa), respectively. Compared with the intact PCP, PCP-8, PCP-16 and PCP-24 had a reduced particle size (decrements of 28.03 %, 46.15 % and 62.54 %, respectively). Although ultrasonic degradation did not alter the primary structure of PCP, its triple helical and superficial structures were disrupted, with degraded fractions demonstrating reduced thermal stability and apparent viscosities compared with those of the intact PCP. Furthermore, the functional properties of the degraded fractions were different. PCP-16 most favourably affected GLP-1 secretion, while PCP-8 and PCP-24 exhibited the strongest antioxidant and enzyme inhibitory activities, respectively. Hence, controlled ultrasound irradiation is an appealing approach for partially degrading PCP and enhancing its bioactivity as a functional agent.

The aim of this study was to investigate the effect of ultrasonic treatment on the physicochemical properties and bioactivities of polysaccharides fromSargassumsamples (SPs) extracted with different solvents. The alkali-assisted extraction of polysaccharide (SPA), acid-assisted extraction of polysaccharides from (SPB), and hot water extraction of polysaccharides (SPCs) were perofrmed onSargassum. Ultrasonic treatment was performed with the SPA, SPB, and SPC in turn, and named USPA, USPB, and UPSC, respectively. The results showed that SPs mainly consisted of mannose, glucose, xylose, rhamnose, galactose, fucose, glucuronic acid, mannuronic acid and guluronic acid. The molecular weight of SPA (434.590 kDa) was the lowest under different solvent extractions, and the molecular weights of SPA, SPB, and SPC were reduced after sonication. SPA had a high carbohydrate content of (52.59 ± 5.16)%, and SPC possessed a high sulfate content of (3.90 ± 0.33)%. After ultrasonic treatment, the biological activities of SPs were significantly increased. Theα-glucosidase inhibition assay reflected that the IC50 values of the ultrasonic treatment SPs were significantly reduced, and USPA showed the best activity, with an IC50 of (0.058 ± 0.05) mg/mL. Antioxidant assays demonstrated that USPC exhibited greater DPPH- and ABTS-scavenging capacity. In the anti-glycosylation assay, SPs after sonication demonstrated excellent inhibition of glycosylation products and protein oxidation products, with USPA showing the highest inhibition rate. In conclusion, the biological activities of SPs were enhanced after ultrasonic treatment. This study provides a theoretical reference for their use in food and medicines.

The clinical treatments of maxillofacial bone defects pose significant challenges due to complex microenvironments, including severe inflammation, high levels of reactive oxygen species (ROS), and potential bacterial infection. Herein, we propose the de novo design of an efficient, versatile, and precise electron-donable heterojunction with synergetic Ru-Cu pair sites (Ru-Cu/EDHJ) for superior biocatalytic regeneration of inflammatory mandible defects and pH-controlled antibacterial therapies. Our studies demonstrate that the unique structure of Ru-Cu/EDHJ enhances the electron density of Ru atoms and optimizes the binding strength of oxygen species, thus improving enzyme-like catalytic performance. Strikingly, this biocompatible Ru-Cu/EDHJ can efficiently switch between ROS scavenging in neutral media and ROS generation in acidic media, thus simultaneously exhibiting superior repair functions and bioadaptive antibacterial properties in treating mandible defects in male mice. We believe synthesizing such biocatalytic heterojunctions with exceptional enzyme-like capabilities will offer a promising pathway for engineering ROS biocatalytic materials to treat trauma, tumors, or infection-caused maxillofacial bone defects.

In this study, arabinoxylan (AX) was used as a substrate, and tea polyphenol (TP) as a functional additive to create degradable, non-polluting, and antioxidant packaging materials. The effects of different TP concentrations on light transmittance and antioxidant activity of the AX-TP composite films were analyzed. The colors of the films gradually deepened with increasing TP content. The maximum scavenging rate of 1,1-diphenyl-2-picrylhydrazyl (DPPH) free radicals using the AX-TP composite film solution of 59.13 ± 2.19 % was achieved at the TP concentration of 2.0 %. AX-TP composite films with different TP concentrations were applied to the surfaces of grapes, and the sensory quality, shriveling and decay rates, titratable acid, and weight loss rate of grapes during storage were evaluated using data from different experimental groups. The AX-TP composite films coated on grapes reduced the transpiration of water in the fruit and delayed grape spoilage, demonstrating an excellent preservation effect. These results show that AX-TP composite films increase the shelf life of fresh grapes.

In this study, the optimal ratio of starch and polyvinyl alcohol (PVA) was successfully selected by response surface method. The novel packaging films were fabricated by immobilizing Kyoho skin extract (KSE) within starch/PVA composite film by the casting method. The mechanical property, PH sensitivity, and other properties of films with different KSE content (1–5 mL) were studied. The starch/PVA film with 3 mL KSE (SPK3.0 film) showed more uniform structure than the starch/PVA film in microscope. At the same time, the film has strong mechanical properties and low water barrier capacity. Infrared analysis of the film further revealed hydrogen bond interaction between film matrix and KSE. The smart packaging film displayed distinguishable changes of color from purple to green in pH (1–13). Furthermore, the smart films possessed excellent antioxidant. Therefore, the SPK films had the potential application potential in the field of packaging. Highlights Barrier properties and antioxidant activity were enhanced significantly by the addition of KSE. The film components are connected by hydrogen bonds so that they have good compatibility. The functional film shows different colors in the range of pH 1–13.
