Hemoglobin immobilized with modified “fish-in-net” approach for the catalytic removal of aniline

Jiayin Liu,Jingqi Guan,Ming Lu,Qiubin Kan,Zhengqiang Li

Blood is a waste product of the slaughter industry, while its main component hemoglobin (Hb) is a pseudo-peroxidase which is able to oxidize polycyclic aromatic hydrocarbons (PAHs) in the presence of H 2 O 2 . In order to use Hb for wastewater treatment, we encapsulated it in silica-based matrix by modified “fish-in-net” approach. The as-synthesized catalysts were characterized by SEM, TEM, BET and solid-state UV–vis spectroscopy. It was found that Hb was partially homogeneously dispersed in microspheres and showed more stable peroxidase-like activity than free Hb. Moreover, it had substantially increased storage stability as well as pH stability. It was used as biocatalyst to remove aniline in aqueous solution and gave a reduction of 65% aniline removal, while 76% in the presence of additive PEG. No significant activity loss was observed after ten runs. These experimental results suggest that the resultant product was a promising biocatalyst for aromatic wastewater treatment.

Co-encapsulation of fish oil and curcumin using complex coacervation followed by freeze-drying

Siyuan Chu,Lijia Chen,Wenjie Zhang,Huaiyue Sun,Xiaoyu Du,Zhengquan Wang,Xichang Wang,Jian Zhong

Nutrients co-encapsulation is a significant research focus in functional foods. This study developed a method to co-encapsulate fish oil and curcumin (Cur) using bovine bone gelatin (BBG)-chitosan (CS) complex coacervation, followed by freeze-drying with maltodextrin (MD) as a drying aid. The results confirmed that the successful encapsulation of fish oil/Cur droplets in the powder particles. As the MD/BBG mass ratios increased (0–8), several trends were observed for the powders: the oil loading capacity decreased progressively (17.7%–2.7%), oil encapsulation yields increased and then decreased (54.1%–27.9%), oil encapsulation efficiencies exponentially increased (75.6%–92.9%), Cur loading capacities exponentially decreased (0.82%–0.24%), Cur encapsulation yields exponentially increased (63.7%–85.9%), Cur encapsulation efficiencies linearly decreased (79.8%–73.4%), and peroxide values during the oxidative stability process logistically increased (19.5–44.5 mmol/kg oil at 1 h). During simulated small intestinal digestion, an MD/BBG mass ratio of 5 resulted in the highest percentage (92.8%) among all ratios tested (0–8). These results suggested fish oil can act as an effective carrier for Cur in functional powders, and that miscible nutrients can be co-encapsulated within complex coacervates. This work provided an efficient strategy for developing raw materials with co-encapsulated nutrients for functional foods and contributed to understanding the underlying mechanism of the multi-nutrient co-encapsulation.

Complex coacervation of dealkaline lignin with three different skin gelatins to encapsulate fish oil

Xin Chen,Guangyi Kan,Jingqi Zhang,Xinyue Li,Ting Zhang,Xichang Wang,Jian Zhong

The gelatin-anionic polysaccharide complex coacervation system represents a promising platform for developing oil powders. Herein, the complex coacervation of dealkaline lignin (DAL) with three types of skin gelatins (Bovine skin gelatin, BSG; porcine skin gelatin, PSG; cold water fish skin gelatin, CFSG) was explored for fish oil encapsulation. At optimal pH conditions, the particle sizes of the fish oil@gelatin-DAL complex coacervates were comparable (100-μm scale) across all three gelatin types. The resulting oil powders exhibited production yields of 58.7%–75.1%, loading capacities of 35.5%–44.5%, encapsulation efficiencies of 5.08%–8.66%, maximum peroxide values of 130.0–212.3 mmol/kg oil under 63 °C, and accumulative free fatty acid released percentages (49.3%–85.8%) in the in vitro digestion process. The differences were associated with the molecular interaction of gelatins with fish oil/DAL. All results suggested that DAL is a promising material to prepare oil powders in functional foods if low encapsulation efficiency is solved.

A fish-skin-inspired wearable scale-ionogel composite for impact protection and motion sensing

Tianyu Xu,Zimu Li,Lin Mei,Hanshen Huang,Jie Tian,Zijian Mei,Shuting Liu,Xiaoming Liu,Xinglong Gong,Tianzhi Luo

A bioinspired rigid-flexible composite with fish-skin architecture was developed. • Tough ionogel (25.85 MJ/m 3 ) with excellent environmental stability. • The composite exhibits a ballistic limit velocity (157.48 m s −1 ) and high specific energy dissipation (2.44 kJ/m). • Stable CNT conductive network enables sensitive, linear, and cyclic strain sensing. • Smart protectors integrate impact mitigation and real-time motion/impact monitoring. High-performance intelligent protective armor necessitates a synergistic combination of soft wearability, excellent impact resistance, and energy absorption capability. These requirements are becoming increasingly critical in modern society. Here, we report a rigid-flexible coupled bioinspired composite (APCIG-NCF) with a mechanically asymmetric architecture, which integrates impact mitigation and motion sensing. The composite adopts a hierarchical design in which an acrylic acid-based ionogel (APCIG) is covered by rigid nylon‑carbon fiber (NCF) scales. APCIG attenuates impact force and effectively absorbs impact energy through its high toughness (25.85 MJ/m 3 ) and reversible energy dissipation mechanisms. Moreover, owing to the rigid NCF, APCIG-NCF exhibits strong resistance to localized subsonic projectile impact, with a limit penetration velocity of up to 157.48 m s −1 . Additionally, carbon nanotubes inside APCIG establish a stable conductive network, enabling remarkable strain-sensing performance with excellent linearity and outstanding cyclic stability. Leveraging these properties, intelligent knee and elbow protectors were fabricated, achieving superior anti-impact performance and in situ monitoring. This work provides a new design strategy and material platform for the development of next-generation smart wearable protective gear.

Desalination and flavor improvement of fish sauce via electrodialysis with charge-selective nanofiltration membranes

Xiaoru Feng,Jale Su,Xianbing Xu,Rina Wu,Guowan Su,Ling Zhang

Reducing sodium in fish sauce without weakening its characteristic umami and fermented aroma remains a major challenge for high-salt condiments. Here, electrodialysis with charge-selective nanofiltration membranes (ED-csNF) was evaluated as a selective desalination strategy capable of coupling ion removal with flavor retention and remodeling. ED-csNF significantly reduced salt content by 77.82%, while AAN increased from 0.83 to 0.98 g/100 mL, total FAAs from 58.67 to 91.26 mg/g, and total organic acids from 43.95 to 61.96 mg/g. In addition, the major umami amino acids, glutamic acid and aspartic acid, increased from 6.32 to 11.05 mg/g and from 4.86 to 8.66 mg/g, respectively. Sensory analysis confirmed a shift from a salty, fishy, and ammoniacal profile toward stronger umami, meaty, and soy sauce-like notes. Flavor analysis showed that ED-csNF selectively enhanced desirable aroma compounds, including alcohols, esters, ketones, and phenols whereas typical off-note compounds such as dimethyl trisulfide and several pyrazines were reduced. These results demonstrate that ED-csNF functions not only as a sodium-reduction technology but also as a flavor-selective processing platform for producing low-sodium fish sauce with enhanced sensory quality.

A Case Study on Fish Gelatin/Microcrystalline Cellulose Biomaterial Inks for Extrusion-Based Bioprinting

Yubo Tao,Jinbao Du,Tong Hu,Peng Li,Ling Pan,Fangong Kong,Jingfa Zhang

The development of printable, biocompatible, biodegradable, and cost-effective bioinks, or biomaterial inks, remains a focal point in extrusion-based bioprinting research. In this study, fish gelatin (FG) was reinforced with microcrystalline cellulose (MCC) to formulate biomaterial inks. These FG/MCC composite inks were fabricated into 3D scaffolds using an extrusion bioprinter. The influence of MCC concentration on printability was systematically evaluated. Fourier transform infrared spectroscopy (FTIR) and X-ray diffraction (XRD) analyses confirmed the formation of hydrogen bonds between MCC and FG, indicating molecular-level interactions. Notably, MCC incorporation enhanced the rheological properties of the ink and significantly improved the compressive strength of printed scaffolds. Furthermore, MCC content modulated key scaffold characteristics, including porosity, degradation rate, swelling behavior, and microarchitecture. These findings demonstrate that FG/MCC composite hydrogels exhibit optimal properties for extrusion-based 3D bioprinting, offering a promising platform for tissue engineering applications.

Polysaccharide modified fish gelatin intelligent hydrogels for reliable monitoring freshness of shrimp (Litopenaeus vannamei)

Qingfang Ying,Shengnan Zhan,Qiuyu Lu,Wenge Yang,Ru Jia,Gaoshang Li,Tao Huang

This study utilized κ-carrageenan (κC), konjac glucomannan (KGM), and xanthan gum (XG) to develop fish gelatin-anthocyanin intelligent hydrogels. The gelation properties, structural characteristic of hydrogels in monitoring shrimps (Litopenaeus vannamei) freshness were explored. The results showed that the addition of polysaccharides to fish gelatin (FG) notably enhanced gelation properties and color stability. During storage of shrimp at 4 °C, the intelligent hydrogels exhibited a progressive color change from transparent to brown. This color change demonstrated a strong linear relationships with total viable counts (TVC) and a significant nonlinear correlations with total volatile basic nitrogen (TVB-N) levels, indicating the intelligent hydrogels’ high reliability and potential for practical application. This approach offers a novel method for assessing and monitoring the quality of fresh aquatic products.

Superior ammonia nitrogen adsorption capacity and reusability biochar microsphere applied in live fish transportation

Ling Peng,Tao Yin,Zhiyong Song,Shanbai Xiong,Ru Liu,Juan You,Qiling Huang

Ammonia nitrogen is a major stressor that negatively affects the welfare of fish during transportation, leading to considerable economic losses. However, there is a lack of effective materials to adsorb ammonia nitrogen in water during the transportation. In this study, we prepared a biochar microsphere, chitosan loaded magnesium biochar microsphere (CS-Mg-SB-M), which showed the superior ammonia–nitrogen adsorption efficiency and reusability compared to the materials prepared with either magnesium impregnation or chitosan modification alone. The removal rate of ammonia nitrogen reached 83.41 % in water containing 50 mg L −1 ammonia nitrogen. The Pseudo-second-order kinetics and Langmuir isotherm models fitted the adsorption process well, suggesting that chemical and monolayer adsorption play a dominant role in ammonia nitrogen adsorbed by CS-Mg-SB-M. The adsorption mechanism of ammonia nitrogen removal by CS-Mg-SB-M involved the synergistic effects of physical absorption (colossal surface area and pore size) and chemical absorption (including coordination bonds, hydrogen bonds, and ionic bonds) according to results of SEM, XRD, FTIR and molecular dynamic simulation. In practical applications, CS-Mg-SB-M demonstrated 33–53 % ammonia nitrogen absorption efficiency, elevating survival rates to 40–60 % alongside measurable enhancements in muscle quality (e.g., cellular structure, drip loss, whiteness, brightness, and redness) of fish after 24 h of transporting in high-density and individual packing modes. This study represents the first application of feasible material to remove ammonia nitrogen in the live fish transportation system, concurrently enhancing survival rate and muscle quality.

Rapid detection of histamine in fish based on the fluorescence characteristics of carbon nitride

Xiaobin Lin,Chengyi Hong,Zhengzhong Lin,Zhiyong Huang

Histamine is an organic nitrogen-containing compound produced by the decarboxylation of histidine and is toxic in high intakes. Therefore, Histamine detection is an important work for food safety. In the present study, a rapid detection method for histamine in fish was established based on the fluorescence activity of graphite phase carbon nitride (g-C 3 N 4 ). After calcinating the mixture of melamine , potassium chloride , and sodium chloride, g-C 3 N 4 was obtained with strong fluorescence and good dispersity in solutions. The strong blue fluorescence of g-C 3 N 4 at 420 nm was fairly selectively quenched by histamine with linear range from 5 μmol L −1 to 800 μmol L −1 , and the detection limit was 0.61 mg kg −1 (3σ/K, n  = 9). The fluorescent method was applied to histamine detection in different kinds of fish, and the data were validated by the method of high-performance liquid chromatography. The results indicated that the established fluorescent method was suitable for the rapid detection of histamine in fish with high accuracy, sensitivity, and stability.

An underwater vest containing an antioxidant MXene hydrogel for sensitive recognition of fish locomotion

Yang Chengxiu,Hu Jiafei,Liu Lihui,Wu Shaowei,Pan Mengchun,Liu Yan,Wang Haomiao,Li Peisen,Zhang Qi,Qiu Weicheng,Luo Huihui

The perception of fish locomotion is important for understanding their adaptive behaviors and ethological characteristics. However, the main strategy used for extracting fish attitudes involves the use of a vision-based monitoring system, which is limited in its range of observation and cannot perform tracking for long times. Here, we report the use of a wearable tagging electronic device, referred to as an underwater vest, to capture the surrounding flow field disturbances triggered by swimming or momentary postural changes. All of these goals were achieved by integrating a pair of pseudocapacitive pressure-sensing units and a flexible circuit board. Notably, additional conditions, such as variable hydraulic pressures and minimal changes in fish posture, require high stability and sensitivity of the sensing units. Thus, hybrid hydrogel electrodes were developed through cross-linking MXene with holey-reduced graphene oxide nanosheets and further modification with 1-ethyl-3-methylimidazolium dicyanamide ionic liquids, which increased the interfacial capacitance and long-term interfacial activity of the MXene. Consequently, the sensing unit exhibited ultrahigh sensitivity ( S max ~136,207 kPa −1 ) in an aquatic environment for 60 days and superior high-pressure resolution (10 Pa) within a wide working range of 1 MPa. Ultimately, an underwater vest integrated with such sensing units clearly distinguished and recorded fish locomotion. We believe that the designed device may open avenues in flow field monitoring and ocean current detection and provide new insights into the development of sensitive underwater tagging.

Optimization of extraction conditions and determination of purine content in marine fish during boiling

Tingting Li,Likun Ren,Dangfeng Wang,Minjie Song,Qiuying Li,Jianrong Li

Background Gout is the second most common metabolic disease affecting human health. The disease of gout is closely related to the level of uric acid, which is the end-product of human purine metabolism. Moreover, food is the main way of external ingestion of purine. Method A simple and time-saving method was developed to extract purines like adenine, hypoxanthine, guanine, and xanthine from marine fish by single factor design combined with Box–Behnken. The contents of these purines in the edible parts and internal organs of marine fish, as well as Scophthalmus maximus , were determined by high-performance liquid chromatography to investigate the relationship between the boiling process and purine content. Result The mixed-acid method was chosen for the extraction of purine bases and the extraction conditions were as follows: mixture acid 90.00% TFA/80.00% FA (v/v, 1:1); hydrolysis temperature 90.00 °C; time 10.00 min; liquid-to-solid ratio 30:1. The total purine content of the edible parts (eyes, dorsal muscles, abdominal muscles, and skin) was the highest in Scophthalmus maximus , followed by sphyraena , Sardinella , Trichiurus lepturus , Scomberomorus niphonius , Pleuronectiformes , Sea catfish , Anguillidae , and Rajiformes . Moreover, boiling significantly reduced the purine content in the marine fish because of the transfer of the purines to the cooking liquid during boiling. Scophthalmus maximus , Sphyraena , and Sardinella were regard as high-purine marine fish, which we should eat less. We also confirmed that boiling significantly transferred purine bases from fish to cooking liquid. Thus, boiling could reduce the purine content of fish, thereby reducing the risk of hyperuricemia and gout.

Sensitivity enhancement of pH indicator and its application in the evaluation of fish freshness

Wen Sun,Hui Li,Han Wang,Shan Xiao,Jihui Wang,Liang Feng

The sensitivity of pH indicators is always confined in acidic solvents used during the immobilization because of the large deviation from their color transition points. By regulating the pH of indicators using organic acid or base, the color transition points of indicators could be readily achieved and the sensitivity could be greatly enhanced. In this study, bromophenol blue was selected as an example to interpret this improvement. And Hue, Saturation and Value (HSV) color model was applied to obtain digital color information of pH indicators. In addition, other two kinds of pH indicators were chosen and regulated to their color transition points as well. The resultant indicators together with the original ones were composed to a colorimetric sensor array and utilized to determine fish freshness. Compared with the original indicators, much higher sensitivity in the detection of fish freshness was obtained by the pH regulated indicators.
