本试剂盒通过两步酶解法测定抗性淀粉含量：首先，α-胰淀粉酶和淀粉葡糖苷酶将非抗性淀粉水解为D-葡萄糖，剩余的不溶性沉淀即为样品中的抗性淀粉；随后，用强碱溶液溶解该沉淀，再用淀粉葡糖苷酶将其水解为葡萄糖。分别测定两步所得葡萄糖含量，即可计算出非抗性淀粉与抗性淀粉的含量。
This kit determines the content of resistant starch by a two-step enzymatic hydrolysis method. First, α-amylase and amyloglucosidase hydrolyze non-resistant starch to D-glucose, and the remaining insoluble precipitate is the resistant starch in the sample. Subsequently, the precipitate is dissolved with a strong alkaline solution and then hydrolyzed to glucose by amyloglucosidase. By measuring the glucose contents obtained in the two steps separately, the contents of non-resistant starch and resistant starch can be calculated.
