DBE specifically cleaves the α-1,6 glycosidic bonds of amylopectin, producing linear glucose chains, and plays an important role in adjusting the chain length of amylopectin molecules. Determination principle: The 3,5-dinitrosalicylic acid method is used to measure the reducing sugars generated from amylopectin catalyzed by DBE, and the DBE activity is calculated based on the change in reducing sugar content.
