SBE (EC 2.4.1.18) is mainly found in plants and is a key enzyme involved in amylopectin synthesis. The determination of SBE activity is of great significance in research on starch biosynthesis, breeding of high-quality crop varieties, and genetic improvement of quality.
Determination principle: Amylose binds with iodine to exhibit characteristic light absorption at 660 nm. SBE reduces the amylose content, thereby decreasing the absorbance of the starch‑iodine complex at 660 nm. The percentage decrease in absorbance over a certain period reflects SBE activity.
