Trypsin (EC 3.4.21.4) is an important digestive enzyme that catalyzes the hydrolysis of amide bonds. It hydrolyzes the substrate N‑benzoyl‑DL‑arginine‑p‑nitroanilide hydrochloride (BAPNA) to produce p‑nitroaniline, which exhibits a maximum absorption peak at 405 nm. The trypsin activity can be quantitatively determined by measuring the rate of increase in absorbance at this wavelength.
