Thymol/waxy maize starch nanoemulsion (TWSN) was successfully prepared via dynamic high-pressure micro-fluidization (DHPM) and applied in pullulan-based active food packaging material (P-TWSN). The properties of TWSN and its effect on the structural and physical-chemical properties of P-TWSN were then investigated. Concurrently, the impact of TWSN (0, 5, 15, 20, 25 mL) on the storage quality and flavor substances of strawberries coated by film-forming solution (FFS) were investigated by gas chromatography-ion mobility spectrometry (GC-IMS). The results demonstrated that the prepared TWSN exhibited remarkable storage stability, maintaining a particle size of 127.9 ± 1.02 nm and a ζ-potential of −32.4 ± 0.42 mV. As TWSN concentration increased, P-TWSN exhibited a smooth and compact morphology, characterized by the presence of bubble-like pores and granular protrusions. Additionally, the FTIR peaks corresponded to the stretching vibration of -OH group of TWSN and related materials were shifted to lower wavenumbers. Furthermore, the materials with increasing content of TWSN exhibited excellent water solubility, enlarged WVP, stable thermal property and superior antibacterial capacity against gram-positive ( S.aureus ) than gram-negative ( E. coli ) bacteria. Strawberry samples sprayed by FFS with 20 mL TWSN exhibited the slowest decline in shrinkage, weight loss, titrable acidity, highest value of firmness, total soluble solids, and lower content of ascorbic acid and viable microorganisms in comparison with other dosages. Additionally, the contents of esters and alcohols in treated strawberries reached the summit on the fourth day of storage and subsequently declined, while the ketone content exhibited a downward trend with increasing TWSN, particularly in the samples with 20 and 25 mL TWSN. The studies identified an efficient method for preparing starch-based nanoemulsion by DHPM, which could be prospective in bio-active packaging materials.

Previous research indicated that the unfolding of trypsin induced by dynamic high–pressure microfluidization (DHPM) treatment had enhanced its hydrolytic stability. However, the unfolding trypsin is in a metastable state and will subsequently aggregate to be in the lowest energy state. In this study, monomethoxy polyethylene glycol-succinimidyl carbonates (mPEG–SC) was chosen to modify trypsin acted as a molecular patch. The results indicated mPEG–SC showed a significant effect on storage stability and thermal stability of unfolded trypsin. Compared to trypsin DHPM–treated under pressure of 100 MPa, further mPEG–SC modification increased the activity from 50% to 74% and from 70% to 87% after 4 °C for 8 days and 55 °C for 10 min, respectively. Fluorescence quenching demonstrated the conjugation of mPEG–SC and trypsin, and indicated molecular patch modification could inhibit the refolding of unfolded trypsin. Industrial relevance Dynamic high–pressure microfluidization (DHPM) is a promising technology that has been widely applied for innovative foods with modified functional properties or structure. Trypsin has been widely used in modern food industry and biological field. Either DHPM treatment or mPEG–SC modification enhanced the thermal stability of trypsin, while, the combination of the two enhanced the thermal and storage stability of trypsin more significantly. It is expected that this study can provide a new viewpoint and technical scheme for basic research on theory and application of enzyme modification .

Dynamic high pressure microfluidization (DHPM)-assisted extraction (DHPMAE) of lotus ( Nelumbo nucifera ) leaves polysaccharides (LLPs) was optimized by response surface methodology. The optimal extraction conditions were: liquid/solid ratio of 35:1 (v/m, mL/g), processing pressure of 180 MPa, processed two times, extraction temperature of 76 °C, extraction time of 50 min. Under the optimal extraction conditions, DHPMAE produced a higher polysaccharides yield (6.31%) than leaching (2.95%). Scanning electron microscope (SEM) analysis revealed that DHPM could reduce the particles size and make the surface more unconsolidated. The LLPs prepared by both methods showed similar FT-IR spectrum, and were consisted of the same monosaccharides , including rhamnose , fucose , arabinose , xylose , mannose , glucose and galactose . The content of each monosaccharide in extracts, however, was quite different. The average molecular weight of LLPs prepared by DHPMAE is 550 kDa, smaller than 578 kDa obtained by leaching. The LLPs prepared by DHPMAE exhibited stronger DPPH scavenging ability (IC 50 value of 0.38 mg/mL), HO scavenging ability (IC 50 value of 0.61 mg/mL) and reducing power. Therefore, DHPMAE can be a promising alternative to traditional extraction techniques for polysaccharides from plants, and lotus leaves might be a potential resource of natural antioxidants.

Fresh corn bracts were used as raw materials to prepare dietary fiber, dynamic high-pressure microfluidization technology (DHPM) was then conducted to modify the fresh corn bract insoluble dietary fiber (FCBIDF) to explore its effect on the physiochemical properties and structural characteristics of FCBIDF. Results showed that in the pressure range of 80–180 MPa, the water-holding capacity, water-swelling capacity, and oil-holding capacity of the dietary fiber of fresh corn bracts treated by DHPM significantly increased. When the DHPM pressure was 180 MPa, compared with the untreated group, they increased by 75.56%, 118.04%, and 78.58%, respectively. The particle size for FCBIDF treated by DHPM obviously reduced. The SEM images of the sample showed the loosened surface structure, the honeycomb-like porous feature appeared. Differential scanning calorimetry analysis demonstrated the enthalpy value of FCBIDF significantly reduced, and its thermal stability destroyed. XRD and FTIR analyses indicated the relative crystallinity of FCBIDF declined and some cellulose components redistributed and transformed into soluble dietary fiber. Those results provided a useful reference for physically modifying insoluble dietary fiber and increasing the added value of fresh corn bracts. Novelty impact statement Dynamic high-pressure microfluidization (DHPM) technology improved the water-holding capacity, water-swelling capacity, and oil-holding capacity of fresh corn bract insoluble dietary fiber (FCBIDF). The surface of FCBIDF treated by DHPM appeared holes and cracks, and the particle size decreased. The relative crystallinity of FCBIDF declined and some cellulose components redistributed and transformed into soluble dietary fiber after DHPM.

Cucumbers produce by-products such as cucumber pomace during processing and most of them are discarded without being utilized. To effectively utilize the waste, cucumber pomace is used to extract both insoluble and soluble dietary fibers (DFs) using compound enzyme method (ME), High pressure processing assisted ME (HPP-ME), and dynamic high-pressure microfluidization-assisted ME (DHPM-ME). The results showed that DHPM-ME improved the extraction rate of soluble DFs most effectively, increasing it from 1.74 % to 4.08 %. The modified DFs exhibited enhanced hydration properties and functional properties after HPP-ME- and DHPM-ME-mediated auxiliary treatment. Additionally, the modified DFs exhibited improved thermal stability, increased absorption peaks in the infrared spectra, decreased crystallinity, improved glucose and cholesterol adsorption ability, and delayed glucose adsorption. The cucumber pomace-derived modified DFs can be used as a functional food additive in bakery, meat, dairy products, and beverages, and their effective use can further enhance the economic benefits.

The acoustic parameters and operating conditions that determine efficiency of oil recovery from oily sludge are studied. Based on this, the mechanism of ultrasonic disintegration of oily sludge is analyzed. The results show that lower frequency ultrasound results in larger and more energetic cavitation bubbles that are more effective in the desorption of oil from solid particles. Moreover, acoustic intensity and treatment time that correspond to maximal oil recovery are found. Increasing the ratio of water to sludge and pH can reduce the slurry viscosity and facilitate the formation of HSiO 3 − , respectively, which improves the oil recovery efficiency. Moreover, Triton X-100 has better oil solubilizing effects than SDBS. After ultrasonic treatment, small amounts of asphaltenes are more stable on solid particles than other components. The heteroatoms such as S, N, and O in asphaltenes form hydrogen bonds with hydroxyl groups on the surface of the particles, impeding the desorption of oil. Mechanical effects such as shock waves and micro jets due to acoustic cavitation can break the hydrogen bonds between asphaltenes and solid particles, thereby facilitating oil recovery from oily sludge.

The superhydrophobic surfaces in harsh water environments (such as deep sea or extreme rainstorms) often suffer from irreversible air layer collapse or structural damage. However, the rough micro/nano-structures dominating superhydrophobicity are usually loose and fragile, which generate insufficient anti-wetting capillary pressure to deal with harsh water environments. Here, an electrostatic-field-assisted aerosolization deposition (EFAAD) method was proposed to fabricate a densified superhydrophobic surface featuring nonporous microlevel protrusion with nanoscale secondary modification. The mechanism of controllable deposition was investigated and spraying parameter configuration was optimized. The EFAAD coating showed exciting tolerance of high-speed jet impact (85.4 m/s, Weber number of 202588), ultrasonic micro jet impact (25 min), and hydrostatic pressure (5 MPa) for the coordinated structural robustness and air layer stability. Even though the superhydrophobicity of EFAAD coating was compromised under extreme conditions, the water film could dewet spontaneously induced by any bubble with radium than 130 μm. Moreover, the EFAAD coating has also proved comprehensive tolerance to tape peeling (more than 400 cycles), UV irradiation, and severe solution corrosion, exhibiting particularly promising for various high-water-pressure applications.
