Biodegradable cling film is an environmentally friendly alternative to traditional plastics which still requires the addition of preservatives to improve its ability to retain freshness. Lignin, which is a natural product with both safety and antioxidant effects, has become a potential preservative. In this study, lignin was extracted from pine and corn straw by deep eutectic solvent. The lignin yield was 40.54 % and 60.60 %, respectively. A series of CS/LNPs cling films were prepared by lignin nanoparticles as the main freshness preservation and chitosan (CS) as substrates. The film with 5 % lignin nanoparticles (CS/LNPs-5) demonstrated an 89.10 % DPPH radical scavenging rate, indicating superior antioxidant capacity. Moreover, the CS/LNPs-5 films showed good UV shielding ability, mechanical properties, and hydrophobicity. Remarkably, CS/LNPs-5 was applied to preserve perishable strawberries, which extended their freshness for up to 9 days. In this study, lignin nanoparticles were successfully used to prepare cling film with high antioxidant properties, which provides a new approach for lignin in food packaging.

This study evaluated the chemical composition and bioactivity of nine Dendrobium officinale from three cultivation modes (greenhouse, GC; understory, UC; and simulated wild, SWC) across China. Results demonstrated that UC-cultivated samples exhibited significantly higher flavonoid levels, antioxidant capacity, and α-glucosidase inhibition activity than those under GC/SWC modes. Using GC-IMS and UHPLC-TOF-MS, metabolomic profiling identified 27 volatile and 15 non-volatile biomarkers between different cultivation modes. Further KEGG analysis revealed the key signaling pathways of differential metabolites under different cultivation modes, including aminobenzoate degradation, phenylpropanoid biosynthesis, and phenylalanine metabolism. Overall, the cultivation mode significantly influences the chemical composition and biological activity of Dendrobium officinale , with the UC mode being relatively preferable. However, factors such as geographical distribution also play an important role. These findings provide actionable insights for quality control, cultivation optimization, and functional food/pharmaceutical applications of Dendrobium officinale .

The incorporation of antimicrobial functionalities into cellulose represents a significant advancement in biopolymer modification, enhancing its potential applications in biomedical and food sectors. In this study, we synthesized and characterized quaternary ammonium-functionalized cellulose (Q-Cell) and its intermediates, employing a three-step modification strategy (tosylation, amination, and quaternization). Structural and functional attributes of the derivatives were elucidated using SEM, TGA, FT-IR, and NMR ( 1 H and 13 C) spectroscopy. The optimized synthesis under an aqueous alkaline medium (H₂O/NaOH/triethylamine) at 5 °C for 5 h enabled selective functionalization while preserving the cellulose backbone integrity. A thorough assessment of the structural characterization and stability of the components revealed that the modified cellulose demonstrated superior antibacterial and antioxidant properties accompanied with enhanced thermal properties. The antimicrobial assessment revealed 100% inhibition of E. coli and S. aureus at 250 µg/L with MIC values of 4 and 8 µg/mL, respectively. Additionally, Q-Cell exhibited superior free radical-scavenging ability in superoxide, hydroxyl, and DPPH assays, attributed to electrostatic stabilization of radicals and charge-assisted hydrogen transfer mechanisms. These findings suggest that Q-Cell is a promising candidate for antimicrobial and antioxidant applications in biomedical, pharmaceutical, and food packaging industries.

Whey protein isolate (WPI), as a common emulsifier, is sensitive to environment conditions, reducing the multilayer emulsion stability. The covalent binding between WPI and polyphenols is commonly used to improve the physicochemical properties of WPI, and further improve the performance of multilayer emulsions. However, minimal studies are available that systematically examine the effect of different polyphenol-WPI complexes on the performance of multilayer emulsions. This study used three common polyphenols (i.e. luteolin, epigallocatechin gallate (EGCG), and rutin) for covalent coupling to WPI. The degree of covalent coupling of WPI and polyphenols was determined, suggesting the degree of covalent binding was EGCG > luteolin > rutin. Fourier transform infrared spectroscopy confirmed the potential coupling sites of WPI-polyphenol complexes. Fluorescence spectrum and circular dichroism spectrum determined changes in WPI structures. Among three WPI-polyphenol complexes, the WPI-EGCG (WPI-E) complexes displayed the best physicochemical characteristics, including emulsification property, antioxidant property, and thermal property. Then, the WPI-polyphenols complexes were used to fabricate multilayer emulsions for caffeic acid phenethyl ester (CAPE) encapsulation. The WPI-E complexes stabilized multilayer emulsion demonstrated the highest stability on pH, ionic strength, and temperature. The WPI-luteolin (WPI-L) stabilized multilayer emulsion presented the highest encapsulation rate, while the non-covalent complex WPI stabilized multilayer emulsion demonstrated the highest release rate during simulated in vitro digestion. This study helped us to better understand the structure-function relationships associated with the fabrication of multilayer emulsions from polyphenols.

Dextranase (EC 3.2.1.11) is primarily applied in food, sugar, and pharmaceutical industries. This study focuses on using a cold shockEscherichia coliexpression system to express marine dextranase SP5-Badex; enzyme activity increased about 2.2-fold compared to previous expression. This enzyme was employed to produce sweet potato porous starch, with special emphasis on the pore size of the starch. The water and oil adsorption rates of the porous starch increased by 1.43 and 1.51 times, respectively. Extensive Fourier transform infrared spectroscopy and X-ray diffraction revealed that the crystal structure of the sweet potato starch was unaltered by enzymatic hydrolysis. The adsorption capacities of the porous starch for curcumin and proanthocyanidins were 9.59 and 12.29 mg/g, respectively. Notably, the stability of proanthocyanidins was significantly enhanced through their encapsulation in porous starch. After 2.5 h of ultraviolet irradiation, the free radical scavenging rate of the encapsulated proanthocyanidins remained at 95.10%. Additionally, after 30 days of sunlight exposure, the free radical scavenging rate of the encapsulated proanthocyanidins (84.42%) was significantly higher than that (24.34%) observed in the control group. These research findings provide substantial experimental evidence for preparing sweet potato porous starch using marine dextranase.

Ultrasound-assisted extraction technology was utilized to extract total flavonoids from Chaenomeles speciosa (Sweet) Nakai, and response surface methodology was employed to optimize the extraction process. The anti-oxidant and lipoxygenase inhibitory activities were evaluated, along with an analysis of the type of inhibition. The results revealed that the optimal extraction conditions for total flavonoids from Chaenomeles speciosa (Sweet) Nakai were as follows: an ethanol concentration of 62%, a liquid-to-solid ratio of 15:1 mL/g, an ultrasonic temperature of 68°C, and an ultrasonic time of 40 min, resulting in a total flavonoid extraction rate of 10.18%. Antioxidant assays demonstrated that the Chaenomeles speciosa (Sweet) Nakai extract exhibited significant radical scavenging activities against 1,1-diphenyl-2-picrylhydrazyl radicals, 2,2’-azinobis (3-ethylbenzothiazoline-6-sulfonic acid ammonium salt) radicals, and hydroxyl radicals, with IC 50 values of 582 µg/mL, 538 µg/mL, and 1709 µg/mL, respectively. Furthermore, enzyme inhibition assays indicated that the Chaenomeles speciosa (Sweet) Nakai extract possesses notable inhibitory activity against lipoxygenase, with an IC 50 value of 2658 µg/mL. This inhibition is mediated through a mixed reversible inhibition mechanism.

The high-value utilization of enzymatic hydrolysis lignin (EHL) is essential for promoting the development of the biorefinery industry. This study investigated the enhancement of the antioxidant activity and ultraviolet (UV) absorption capacity of EHL through treatment with choline chloride (ChCl)-based acidic deep eutectic solvents (DESs). The yield, chemical structure, UV absorption properties, antioxidant activity, and thermal stability of the degraded and regenerated enzymatic hydrolysis lignin (DEHL) were analyzed. The results indicated that treatment with DESs effectively preserved the aromatic structure of EHL. Compared to untreated EHL, DEHL exhibited an increased O/C atomic ratio, a decreased UV transmittance, a significant reduction in weight-average molecular weight (Mw), and a notable increase in phenolic hydroxyl (ArOH) content. Notably, DEHL treated with ChCl–p-toluenesulfonic acid had the lowestMw(1586 g/mol) and the highest ArOH content. Except for the ChCl–malic acid and ChCl–acetic acid systems, all the other five DES treatments enhanced the antioxidant activity of DEHL to varying degrees. Among them, DEHL treated with ChCl–p-toluenesulfonic acid exhibited the highest antioxidant activity, with anIC50 DPPHvalue of 262.87 μg/mL.

The present study sought to examine the impact of cold plasma (CP) treatment on the functionality, structural integrity, and bioactive properties of biomolecules such as starch and phenolic compounds in Xinong Black Spike whole flour (XBS-WF). XBS-WF was exposed to CP at 40 V for various durations. X-ray Diffraction (XRD) and Rapid Viscosity Analysis (RVA) revealed that CP treatment induced aggregation and cross-linking of starch and other molecules, leading to enhanced intermolecular interactions and improved starch crystallinity. In addition, Differential Scanning Calorimetry (DSC) showed enhanced thermal stability and increased enthalpy. Furthermore, CP treatment promoted the oxidation and cleavage of phenolic macromolecules into smaller, biologically active compounds, resulting in a notable increase in antioxidant and anticancer activities. These findings suggest that CP treatment can effectively improve the functional and qualitative properties of XBS-WF, particularly by modifying starch and phenolic macromolecules. This study provides a foundation for exploring the multiscale applications of the CP process on starch and phenolic macromolecules.

Tannic acid (TA), a naturally abundant plant-derived polyphenol, is known for its versatile properties, including antibacterial, antioxidant, adhesive and metal chelating properties. However, its high density of phenolic hydroxyl groups limits its applications in advanced material design. To address this, we introduce a green and efficient strategy to modify TA with cyclic carbonate to yield vinylated tannic acid (vTA) with precisely controlled vinyl substituent content. This modification preserves the beneficial properties of TA while imparting new functionalities, such as enhanced hydrophobicity, improved compatibility with hydrophilic macromolecules, and the ability to self-assemble into nanoparticles. The introduced aliphatic vinyl groups also enable vTA to serve as a versatile organic building block for the construction of functional materials through various chemical reactions, such as thiol-ene click chemistry, particularly as a bio-based aromatic resource. Given its unique dendritic structure and the presence of abundant phenolic hydroxyl groups, aliphatic hydroxyl groups, benzene rings, and alkenyl groups, vTA holds immense potential for applications in industrial and biomedical fields. This green synthesis method represents a significant advance in the sustainable modification of plant-derived polyphenols, offering a pathway for the development of next-generation functional materials with tailored properties using bio-based aromatic building blocks.

Although the potential of chitosan (CS) -based biomass packaging materials for food preservation is encouraging, their use is severely constrained by the poor mechanical, UV, antioxidant, and solubility qualities. This study successfully combined silver nanoparticles made from Catharanthus roseus extracts with chitosan (CS- Ca -Ag) to enrich the functions of CS film. The films' Young's modulus values (45.489 MPa) were considerably raised after adding the extract-biosynthesized silver nanoparticles, in contrast to the chitosan film, and their water vapor permeability (2.386 × 10 −12 g·mm −1 ·Pa −1 ·h −1 ) was greatly reduced. Furthermore, the antibacterial, antioxidant, and UV adsorption capabilities of CS- Ca -Ag films were significantly improved. The prepared Cs- Ca -Ag film had high biocompatibility and safety, making it suitable for strawberry coatings and chicken packaging. The CS- Ca -Ag film effectively limited the weight loss of fresh food, reduced nutrient loss, prevented microbial growth, and significantly extended food's shelf life. CS-based reinforced films containing Catharanthus roseus extract and silver nanoparticles showed potential food coating and packaging material applications.

Oleogels have significant potential for delivering lipid-soluble bioactive compounds. We here prepared a tea polysaccharide conjugate (TPC)-Xanthan gum (XG) complex using the emulsion template method and investigated its curcumin (Cur) loading capacity and in vitro digestion mechanisms. Results unveiled that XG interacts non-covalently with TPC, primarily through electrostatic interactions and hydrogen bonding, enhancing emulsion template formation and stabilization. In addition, XG improved the oleogel’s oil-binding capacity, gel strength, hardness, apparent viscosity, and other gel properties. Meanwhile, the complex oleogel-loaded Cur exhibited a high Cur encapsulation efficiency (>80%), increased antioxidant activity, an augmented free fatty acid release rate, and improved Cur bioaccessibility (>50%) and digestive stability. These findings provide a novel approach to designing oleogels for the effective delivery of lipid-soluble bioactive compounds.
