概述

脂肪酶在工业上用于拆分手性化合物和生物柴油的酯交换生产。

生化/生理作用

脂肪酶可催化三酰基甘油水解成甘油和游离的脂肪酸。脂肪酶裂解三酰基甘油的酯键，随后释放出游离脂肪酸，二酰甘油，单酰甘油和甘油。当水性介质被有机或双相水性/有机介质替代时，它也可以催化逆反应。

用途

高立体选择性，底物谱广，可催化水解、酯化、转酯、氨解等反应，可用来拆分消旋的醇、酸和制备手性化合物。

Candida antarctica lipase B (CalB) is structurally similar to several other lipases and has a flexible lid. Lipase B is a member of the alpha/beta hydrolase-fold family.

Biochem/physiol Actions

Lipases catalyze the hydrolysis of triacylglycerols into glycerol and free fatty acids.The lipase cleaves ester bonds of triacylglycerols with the subsequent release of free fatty acids, diacylglycerols, monoacylglycerols and glycerol. It can also catalyze the reverse reactions when the aqueous medium is replaced by an organic or a biphasic aqueous/organic medium.

Application

It has high stereoselectivity and a broad substrate spectrum, and can catalyze reactions such as hydrolysis, esterification, transesterification, and ammonolysis. It can be used for the resolution of racemic alcohols and acids, as well as the preparation of chiral compounds.
